How these cattle are produced All the beef these cattle produce is done so in a sustainable manner. Ranch raised and grazed on native and irrigated pastureland. They are finished for up to 120 days on our farm during the growing season or on a complete vegetarian diet of quality forage and other plant products in a stress free environment. They have never been fed corn, animal fat or any animal by­products. Although not certified organic, this beef is raise without the use of synthetic growth hormones, sub­therapeutic antibiotics , chemically produced pesticide, herbicides or fertilizers. Our goal is to finish these animals in the most environmentally and economically sustainable manner as possible. Although they range on irrigated or native most of the year. During the dormant season and times of drought all possible efforts are made to feed these animals on locally produced forage and forage by products that help support community agriculture. No feedlots, no corn, our cattle roam free and always enjoy moving about their range. Your purchase of beef steers from Ganados del Rey also supports your community’s agricultural industry and your money stays in the community where it does the most good. These cattle are a product of Hidalgo County, NM. The Price The cost of the animal is figured quarterly. Payment is calculated from the live weight of the animal at time of slaughter on a per pound basis. Ask for quotes. Live animal weights range from 700 to 1000 pounds when finished. Payment for animal is due at time of slaughter. Processing Slaughter and processing is paid for separately to a custom processing facility. Under certain conditions we deliver the animal to the processor free of charge. We recommend and will deliver to Lee Jackson at Silver City New Mexico. He has a small clean custom processing plant and is dedicated to quality service and the humane treatment of the animals before slaughter. Carcases are dry aged and all cuts are double wrapped and frozen. The cost is $.95 per pound of the aged hanging carcass weight. Processing must be paid separately for when you pick up your beef. All carcasses are aged 14­21 days.


How much will it cost?

After all fees have been paid, you can expect your beef to cost you approximately $8.50 per pound across all cuts. This may very depending on costs of feed, price of cattle, yield and production.

Orders You can order either a whole steer or halves. A deposit is required on all orders, $400 for ½’s and $500 for a whole animal. To order, fill out the accompanying order form and return. A half carcass, cut and wrapped, will yield about 130­160 pounds of beef. All deposits are non refundable.

Cooking Suggestions for Desired Results

You will not believe the quality of this beef until you try it. The flavor and aroma are exquisite, buttery in impression with earthy overtones of our desert southwest environment. The texture of the steaks and roast are short grained for added tenderness. Once you have tried the ground beef you won’t want any other.

With more than ample marbling, the cooked beef is surprisingly more juicy as compared to commercial beef. Over cooking will make it dry and tough. When cooking a 4 pound roast preheat the oven to 300 degrees. Add whatever seasoning or rub you desire and with ½ cup of moisture either cooking wine or water in a roasting pan with a tight lid or foil, reduce heat to 250 and cook for about 30 min per pound. When cooking a steak, check degree of doneness by using a diner fork and pressing with the tines flat on the steak from the center to the out side and check for sponginess or firmness of the meat. The firmer the steak feels the more done it is. This method takes a little practice.

When cooking steaks or hamburgers, whether on an outdoor grill or in an iron skillet, sear both sides on a high heat to help hold the juices in. Although steaks can be safely eaten rare, always cook ground beef till it is well done or the juices are clear and not red or pink.

Total Cost of Your Beef After Processing and What it Will Yield

If you buy one whole steer with a 800 lb live weight @ the current price of $2.04 per lb, it will cost $1632 at the time it is killed. Each steer will weigh differently from 700 to900 lbs. They are weighed the day they go to the processor. I will send you an invoice at that time. Your deposit will be applied to the final purchase price.

Cost of processing is figured by the dry hanging weight which is the weight of the carcass after the dry aging is finished. This weight on a 800 lb live steer will be approximately 480lbs and cost you $ .95 per lb equaling $456.00, paid to the processor when you pick up your custom cut, wrapped and frozen beef. The total you will pay for the live steer and to have it processed will be $2088.

An eight hundred lb steer will yield approximately 240 of beef. The per lb cost across all cuts will average $8.70 each. All of the above cost are approximate depending on how much the live steer weighs at time of slaughter, how much it yields and how you want it cut up.
