TRANSFORM YOUR HOME

It’s always interesting working off architects plans when designing a new kitchen for a customer. With nothing in place, no building work started it is hard for them to visualise just how the new space will look and they certainly don’t know how the new room will work.

The architects draw up something on plan showing them the outside elevations, so they know what the building itself will look like but there’s usually nothing about how the inside will look so it can be really tricky to imagine how they will use the new space.

For this particular project the plans were very unusual, the architect had designed the spacious new extension to the back of this already large home with three apex roofs to complement the existing roofline.

With three sets of tall glazed doors and numerous Velux windows being installed in the new kitchen/dining room, we knew it was going to be a space flooded with light, but this wasn’t evident until the final break through at the back of the house.

Our kitchen plans are drawn to scale based on the archtiects drawings, showing all the features in the new room, the bi-fold doors, the Velux windows, ceiling heights etc. so it is much easier to imagine how the room will look well before the space is actually built.

So, by the time the clients could see for themselves just how the space would look, all the kitchen plans had been finalised, the kitchen layout confirmed, colours, materials chosen, and electrical and plumbing plans prepared ready for first fix prior to the installation of the kitchen itself.

Then it was just a case of waiting until the new floors had been laid and the walls painted so the new kitchen could be installed.

The clients chose a natural green tone for the island (Little Greene Paint Company Invisible Green) echoing the colours of the garden beyond, whilst a more muted neutral tone (Little Greene Paint Company Slaked Lime Dark)was chosen for the main run to enhance the airiness of the room.

Burnished brass handles match the patina of the brass tap, electrical sockets and lighting used throughout, also picking up the gold details in the quartz worktops that mimic a natural marble without the inherent staining issues. Three brass stork wall lights highlight the sink area that also features space for a curated display on the built in shelf.

The adjacent laundry room is fitted to match the kitchen, with space for washing machine, tumble drier and a cute belfast sink, the perfect laundry room.

In May, the Welsh Parliament (formerly the Welsh Assembly) will be twenty-five years old. For John Griffiths, the constituency member representing Newport East, he will be part of a very small group (with three others) who have been there since the very beginning in 1999.

Now 67, John is Newport born and bred, and he is proud to represent the city which he and his family have always called home. Like others, he has used the power of politics to create a stronger and fairer Welsh society, and one with social justice and opportunity at its core.

During his twenty-five years in the Senedd, John has held number of key roles in the Welsh Government, most notably Counsel General and then Minister for the Environment and Sustainability. The latter was a role in which he oversaw the opening of the Welsh Coastal Path and the introduction of the levy of plastic carrier bags in Wales.

John now chairs the Senedd’s influential Local Government & Housing committee, which scrutinises and holds Welsh Government to account for policies, which includes work on homelessness, second homes, council-run leisure and library services, to name just a few. He also probes and asks questions of government ministers week in, week out in the Senedd chamber, including every Tuesday with the newly elected First Minister Vaughan Gething at First Ministers Question time.

Away from the Senedd, he campaigns tirelessly and takes up different issues and cases on behalf of the people of Newport East –whether that be on education, health, transport etc and much more. In his time as the Senedd member, he has worked with thousands of individuals and organisations across the city and continues to do so.

Romy is a young French bulldog who arrived in our care as a stray and it was very clear she was pregnant. An emergency scan and check up was booked. With medical confirmation we set about finding her a suitable foster home.

Romy settled well into her foster home. With the help of her amazing foster family, Romy and her babies were able to flourish. They have had experienced support and so much love.

Her foster family have said Romy is a beautiful girl with a gentle temperament who just craves any attention she can get.

Romy absolutely loves to have cuddles, she will sit and cwtch for hours. She is very friendly with kids and other dogs. Enjoys playing with toys and will fetch on occasions.

Still needs a little work on toilet training but is nearly there.

Romy is awaiting an operation on her eye.

She will be matched with her new family and will be placed in medical foster until her recovery is completed.

Once the vet is happy to sign her off, she can then be officially rehomed.

Ollie is a bit of a chatter box he likes to make people aware of his presence. He is so much fun.

He is working so hard on his dog social skills, and he is a great contender for training as he will do anything for a tasty treat.

Ollie will listen to every word you say. His favourite word is “Walkies”.

Ollie will need an active home, he likes to live in the fast lane.

He is learning to slow down and relax.

He will need to be enrolled on to training classes to help him progress further with socialisation and calming techniques.

Once Ollie has won you over, he will be your best friend for the rest of his life.

He could potentially live with another neutered female canine who is calm.

If these introductions go well, they will re-home the dog with you permanently.

The theatre includes a 400-capacity auditorium, three large rehearsal rooms, a 60-seat studio and is home to Newport Playgoers Society who run the theatre through volunteers except for the manager Lisa Aston and caretaker.

Newport Playgoers Society perform at least eight plays a season, there is also a youth group affiliated to Newport Playgoers, the Dolman Theatre Works, who hold sessions every Saturday and put on a main stage show in December.

Musical societies regularly perform here too such as the New Venture players, Young Venture Players, mini venture players, Centrestage Cymru, Newport Operatic Society, STC Musical society, Glass Ceiling Theatre, Newport Pantomime and Musical Society.

As well as theatrical and musical groups, five local dance schools perform and practice at The Dolman Theatre, including The Sharon Higgins Academy of Dance who are the resident dance school.

None of it is particularly complicated, but it does genuinely have the ability to change the way you cook, and therefore the way you eat.

Don’t worry, we’re not going back to GCSE’s. But remembering one basic fact will help you understand why salt improves flavour – it draws water out of ingredients, concentrating the flavours that occur naturally in foods.

1. Use sea salt

While table salt is the most common variety of cooking salt found in much of the world, we believe it doesn’t belong anywhere near the kitchen. It’s cheap and easy to pour from a spout, but is often laden with anti-caking agents that can impart their own sour or bitter flavour to food. Rock salt – another popular choice – has a solid texture that we often find overpowering.

As the single most important ingredient in your kitchen, we’d suggest that it’s worth splashing out on sea salt. Ours is hand-harvested, organic-approved sea salt made from Anglesey sea water and absolutely nothing else. Expect a delicate balance of minerals, depth of flavour, and no bitterness. Use good sea salt and you’ll find it stronger so won’t need as much as you would with table salt.

2. Season in layers.

One of the biggest mistakes a cook can make is to only season their finished dish. Adding a small amount earlier on in a recipe, and then seasoning a little at every stage, will change the flavour in a way that adding a liberal sprinkle at the table cannot.

Use our Pure Sea Salt in a Finer Flake throughout the cooking process – whether this be sweating onions, roasting veg, salting pasta water, or boiling potatoes – and then our Pure Sea Salt, which is beautifully flaky, will keep its texture if you add a little as a finishing salt at the end for pops of flavour.

Also consider if there will be ready-salted ingredients in your dish. If you add olives, cheese, anchovies, cured meats or capers then you won’t need to add as much salt in the next stage.

3. Good cooks taste. A lot.

Perhaps this is obvious, but it can also be nothing short of revolutionary. You’ll notice in many professional kitchen piles of teaspoons by the saucepans, used to taste food at every stage of cooking.

Put a little dab of food on the end of a teaspoon and roll it across your palate – what is missing? Is the words of the excellent Samin Nosrat, is it Salt, Fat, Acid or Heat? Taste and adjust accordingly. Get into this habit, and you will transform your cooking

SMOKY FLAVOUR

Celeriacsteakswithpesto

Celeriac is so underrated but incredibly versatile and really deserves a better reputation; it can be blitzed into soups; raw in remoulades; as well as roasted or grilled in these rounds.

Serves 4

Ingredients

For the celeriac

1 celeriac (about 800g), sliced into 2cm rounds

1 teaspoon Pure Sea Salt

2 tablespoons extra virgin olive oil

1 teaspoon red wine vinegar

1 teaspoon Pure Sea Salt Smoked Over Oak

For the pesto

40g pine nuts

80g basil or mint

50g parmesan or vegetarian alternative

150ml good olive oil

2-3 garlic cloves

Method

1. Use a potato peeler to peel the skin from each round of celeriac and discard. Fill a large saucepan with 2 litres of water and bring to the boil. Stir in the pure sea salt and lower the celeriac rounds into the boiling water. Boil, in batches if the water doesn’t cover every slice, for 6 minutes. Drain in a colander and allow the steam to evaporate for a few minutes. Pat each round dry on kitchen paper.

2. Heat a griddle pan over a high heat on the hob for 5 minutes until smoking hot. Griddle the celeriac rounds, in batches so there is no overlap, for 5 minutes each side without moving the slices as they cook. This will help to form the characteristic grill marks on the slices. The rounds are done when they are soft to the point of a knife throughout. Toss the celeriac in a deep roasting tray with the oil, vinegar and smoked salt and cover with tin foil. Keep warm in a low oven while you make the pesto.

3. Place all of the pesto ingredients in a food processor and pulse until a chunky paste forms. Taste and adjust the seasoning according to your preference adding a pinch of salt, lemon or oil if you think it needs it.

4. Serve the celeriac rounds with a drizzle of pesto and some cooked rice or chunky bread for a more substantial meal.
