One of the reasons healthcare dining is so complicated is because we don’t cater to just one type of customer; we serve everyone. As a result, it’s essential to thoroughly understand each patient’s specific needs, ensuring that care is both effective and compassionate.
KEY INSIGHTS
Each of our menus is built to meet the DRIs (Dietary Reference Intakes) of the average patient population and is based on demographics of age, sex, and activity level. Since 70% of Morrison Healthcare hospitals share the same DRI—Female, Age: 51-70, Activity: Sedentary our corporate menus are tailored to this demographic in MenuWorks.
Depending on the persona type you serve— maternity, pediatric, elective surgery, those with chronic conditions, sudden acute conditions, or geriatrics—you may need to adjust your menu to meet the DRIs of your average patient population.

The greeting, the menu, the china, the uniforms, the presentation, the aroma … all of these details matter and come before the very first bite. A great food experience can bring joy and comfort to a tough situation. Transformation rarely happens all at ones, however; it often takes one step at a time. Change can often feel daunting, but there’s a clear formula for making real, sustainable change: Think differently. Talk differently. Act Differently. What worked yesterday isn’t enough for tomorrow.

It’s important to THINK about our patients as real guests with real choices versus a one-size-fits-all approach. From a 14-yearold boy that broke his leg to a 75-year-old grandfather with congestive heart failure to a 30-year-old proud new mom, they all have dramatically different wants and needs. Another shift in the way we THINK is going from trusting our “gut” to trusting the data. We never want to lose the value of our years of experience, but it it’s clear that blending that knowledge and the amazing amounts of data we have will absolutely transform the way we connect with our guests in the future.

THE MENUS
CHOOSING THE RIGHT MENU
We’re not just introducing one new Patient Menu, but rather a suite of four distinct core menus to meet your specific needs: a traditional seven-day rotation featuring daily chef specials, an integrated room service menu to be used in conjunction with the traditional menu (for those with a blended patient services program), a carefully-crafted standalone room service menu, and a dynamic long term care three-week cycle menu with daily features. Ultimately, your service style will dictate which menu to use. All menus feature an elevated selection of salads, handhelds, and desserts, each crafted to surprise and delight.

Our classic bedside menu effortlessly blends tradition with innovation. While preserving the core, it’s been infused with exciting, trend-setting dishes and daily specials that capture the true meaning of ‘the power of food.’ Catering to diverse nutritional needs, this menu features specifically-tailored versions for the top four diets: regular, heart-healthy, diabetic, and renal.
INTEGRATED ROOM SERVICE
The integrated room service menu is specifically designed to complement the traditional menu in accounts using a blended service model, with both bedside service and dining on call. The menu streamlines kitchen operations by offering the same daily special across both menus.

Crafted to elevate the patient experience and optimize production efficiency, the new core menus target the top 63 diets, with a special emphasis on the most requested ones— regular, heart healthy, consistent carb, renal, and low sodium. Simply put, these menus are ready to roll! Additional menu development is only necessary if your account requires extra menu cycles to accommodate a site-specific diet. Don’t forget to spice up your menu rotation with seasonal specials, holiday promotions, and/or refer to our menu mastering guide for regional favorites.

Use a mix of different training methods like—classroom learning and hands-on activities—to create a custom and comprehensive culinary learning experience. Once the team is fully equipped with the skills and knowledge needed to make the new culinary creations, put them to the test and have them cook for and participate in the patient expo. What’s different about this menu from previous menus?
With the goal to serve great food, not patient food, the menus are innovative, on-trend, and thoughtfully spread to the top four diets.
How do I start implementing the new menu?
Use the implementation spreadsheet and create a plan with your team. Choose your template, select your menu, host a patient expo, and set a launch date.
The entire team! RDO, Director, Culinary, Clinical Nutrition, Patient Services … everyone plays an important role in the success of the program. Who should be involved in the new menu implementation?
How long does a typical menu implementation take?
Timelines vary from account to account, but in most cases 3 months is the average implementation time. One of the biggest factors is technology.
Are we allowed to make changes to the recipes or product specifications for items on the new menu?
All of our recipes and product specs have been thoroughly vetted, so there should be no need to make any changes.
Where do I put my jello??
Not all menu items will be on the printed menu (ex. jello, popsicles, pudding). These items are built into the always available cycle in Menuworks.
