That’s how it started. They were all there. Twenty dogs or so, their owners, the bride and groom dressed to the nines. It was just another ordinary day on the Mornington Peninsula and none of the people who knew Mike and Dianna would even bat an eyelid – after all there was that sausage dog chariot made from aluminium and wood in which the duo could often be seen in riding down Main Street. Why not slip on a tux and a wedding gown on a Saturday morning at Royal Beach? Why not celebrate the love of two adored Dachshunds, especially when it was assumed the lady may be with child? Dog owner Mike Renwick explains. “My partner Dianna and I have had Hugo and Frankie since they were puppies. They are over 12 months now and love each other dearly so we thought why not having a Dachshund wedding? We do suspect that Frankie is going to have pups so we thought Hugo better do the right thing! I used to take a lot of wedding photos and thought it would be fun. We had a red carpet, jewels and flowers, and they were dressed in their best clothes. All the guests were dressed up as well!” (They included many canine companions from the I Love Dachshunds Facebook group). “We walked up to the Blackbird Café in Empire Street for the reception afterwards. The humans had coffee and wedding cake. The dogs enjoyed their treats. Hugo is very social and enjoyed every minute

of the event. Frankie is a little more reserved.” These two much loved family members were bought from breeders in St Albans and Brighton respectively and are now soon to produce their own offspring. Mike isn’t sure when this Mount Martha local sausage dog duo will become parents but one thing’s for sure, the adorable factor will be right off the Richter Scale! “You may now lick your bride,” offered Randall at the end of the ceremony, the two cuties forever linked in doggie bliss. Woof woof!

Join Hugh van Cuylenberg, the founder of “The Resilience Project”, to discover how to build resilience and how to develop positive mental health strategies to support young people. Why? Because 1 in 4 adolescents have a mental illness, 1 in 7 primary school children have a mental illness, 1 in 5 adults have a mental illness and 65 per cent of adolescents do not seek help for mental illness Being ‘resilient’, what does it mean? Resilience is “bouncing back” from difficult experiences; resilient people do not let adversity define them. We often ask ourselves, “How can I help my child build resilience?” Hugh has been working in education for more than 13 years and has developed “The Resilience Project” to support young Australians to be mentally healthy. “I went

into teaching, and I thought that by being a good, positive role model I’d be able to help kids to avoid mental illness,” he says. “However, I soon realised that it was not that simple so I went back to university to specialise in mental health education.” Hugh formed The Resilience Project, visiting schools to speak about the things students could do for their mental health. “Teachers and parents wanted to know more, so from there it just grew,” he says. The highlight of his teaching career was a year spent in India volunteering and living at an underprivileged school in the Himalayas. It was here that he discovered resilience in its purest form. Hugh met a student who was extraordinarily happy despite his lack of possessions or privilege. On watching the boy, he noticed his gratitude for everything from his drinking water to his too-small shoes. It was a turning point. “It was only

looking back on it that I realised what I’d experienced, and I reflected on it,” he says. While the psychological theories are complex, Hugh has broken it down to a simple equation: resilience and happiness are based on the three pillars - gratitude, empathy and mindfulness. Advising children and adults to practise these pillars, through activities such as a daily gratitude journal, which after 21 days, can rewire the brain to search for the positive aspects of life, has been life changing. People who master resilience can cope better when faced with challenges. They have the skills to handle emotional emergences and are adept at accepting what comes at them with flexibility rather than rigidity. They face these times knowing that, ‘times are tough but I know they will get better’. Even if they feel like they are broken for a time, there is still

a part of them deep inside that knows they won’t be broken forever. Resilience is something that we all need and Hugh offers real insight into how we can achieve this. As well as presenting to groups, Hugh works on programs for schools and has created curriculum for every year level from Prep to Year 12, in conjunction with teachers and consultants, which is linked to the national curriculum. Toorak College is passionate about student wellbeing and implements these resources to give students the tools to build resilience and develop mental health. We’re only half way through 2017 but it has already proved a vintage year for Peninsula sommelier Julia Sewell. Julia has just taken out the Ruinart Challenge UK for sommeliers, a competition in which she finished runner-up last year after reaching the finals of the Australian Challenge in 2014 and 2015. Her response upon hearing she was the winner this time? “Pure joy,” said Julia. “I’d done the competition a few times so it was very rewarding to finally win.” The Challenge was held on May 30 and saw 20 sommeliers from

restaurants across the UK battle it out in a blind tasting, in which the sommeliers were asked to correctly identify a line-up of four rosés. Julia is now off on an all-expensespaid trip to Champagne, France, with fellow winners. She’s looking forward to sharing her stories and experiences with the other winners and absorbing as much knowledge as she can. The Toorak College Dux of 2008 has been studying as a sommelier for nearly five years and has worked at The Fat Duck as junior assistant head sommelier. Despite the exciting win, Julia’s favourite part of the experience was the seminar. “They go into a good level of technical details that doesn’t feel

like it’s being simplified for the sake of brevity,” Julia said. With many rewarding sides to her career (besides all that fine wine), her favourite is working with a product that combines art and science, giving her “the opportunities for technical, cultural, philosophical and social expansion of the mind”. Travelling opportunities are another amazing perk of the business, and Julia also compliments the mentality of other like-minded wine lovers. “The culture of mentorship in this industry is great in that it allows you to exchange experiences and continue learning,” she said. We’ll drink to that!

In mid 2016 the Peninsula Grammar Music Department took a bold and unique step, introducing individual tuition in Music Production and Songwriting. After constructing an industry-standard production studio room and appointing platinum selling songwriter/producer Mr Lionel Towers, the program is now flourishing. Thirteen students from Years 8 to 12 are now writing and producing their own music. This month, the first fruits of the program go on display with the public release of the studio’s first mixtape - a digital collection of seven completed songs by Peninsula Grammar students showcasing the promising sounds of what could easily be our country’s next artistic contributors. “It’s fantastic to see composition; or more simply the creation of music becoming popular again for our students,” says Dr Richard Vaudrey, program creator and Head of Studio and Instrumental Music at Peninsula Grammar. “I wanted to foster this and expert guidance and the facilities to do more than simply learn other people’s music.”

Students within the program are establishing their own sound and enjoying every moment of the process. “With Mr Towers’ guidance I’ve created things that I’m legitimately proud of and it has given me the confidence to create music for the future,” says Year 11 student Jack Burmeister. For Year 9 student Matilda-Pearl McNamara-Muir, the classes allow her to explore music further. “I have always wanted to write my own songs but have never really known where to start. Laura and Michael Cole, Head Chef at Georgie Bass Café & Cookery in Flinders, won selection after a live cook-off at the recent Foodservice Australia tradeshow in Melbourne. Michael was linked with Laura through Chisholm, during his hunt for a commis chef a few months ago. They practiced dishes for the event together and they will compete together at the Bocuse d’Or Asia Pacific in Singapore (the semi-finals) next year. Skvor has been cooking since she was a young girl and her passion for food and cookery was fuelled when she featured on MKR (My Kitchen Rules) in 2016. Although she didn’t make the finals of the show, Laura credited her Chisholm teacher for teaching her the cookery fundamentals. “My dreams of working in a real kitchen are being realised with help from (teacher) Michael Simmons,” she said. “He is teaching solid foundations of cookery as well as inspiring us to continually be creative in our culinary endeavours and excel in our work kitchens.” Mr Simmons is equally proud of his students’ success and links with industry. “Without the work of Chisholm’s commercial cookery and hospitality team, we would not have had the industry links for this to occur. We look forward to the next chapter during the semi-finals which will determine the road to Lyon.” With chefs in hot demand, there’s never been a better time to enter the industry. How appropriate that a column designed to point you in the direction of the best Peninsula wines should be written by the founder of Wine Compass. Adam Nicholls, from Wine Compass, joins the Mornington Peninsula Magazine team from this issue as a regular wine columnist for our new section Peninsula Uncorked. Adam turned his back on a successful career as a digital marketing manager to pursue his dream of owning his own business and to follow his two passions: food and wine. Adam loved wine tours but thought they could be run better, so he combined his skills in digital marketing, his knowledge of the Peninsula and Yarra Valley wineproducing regions and an acute focus on customer satisfaction to launch Wine Compass in 2013. Since then, with the help of

Adam’s wife, Sara and the rest of the team, the business has grown substantially and has run more than 1000 tours. Wine Compass focuses only on groups looking to organise events or days out with friends and/or family, as well as corporate events and special occasions such as birthdays and hens’ parties. The itinerary is individually tailored after a consultation with the group and can include any preferences the group might have. “We can even mix things up with breweries, cideries, dairies (for cheese), distilleries and chocolateries,” Adam says. Wine Compass is a private company that’s not tied to any wineries, preferring small, boutique wineries that give guests a great experience, including behind-the-scenes access. The key, says Adam, is to make the tour fun and social.

As soon as I heard there was going to be an ice rink on the Sorrento foreshore I was excited. My four kids were swooshing around with the sound that only ice beneath your feet can make while glancing out to sea. If they were lucky they may see a dolphin or at least the ferry chugging to or from the Bellarine Peninsula. Ice and sea are strange bedfellows in Australia, but somehow the whole scene made complete sensory sagacity after chatting with the two people who have been integral to the project’s fruition. Natalie Garner from the Sorrento and

Portsea Chamber of Commerce has been busy over the last six months. There’s been negotiations, phone calls, liaisons with Mornington Peninsula Shire Council and the Department of Environment, Water, Land and Planning and plenty of talk, talk, talk. Winter is off-peak season in Sorrento and the Chamber has been searching for a way to generate activity for a long time. Enter Rod Stoller from event management company Logistics Events Australia – the Somerville-based business that creates, installs and removes these (not so) portable ice-rinks Australia-wide.

“It takes us about five days to set the rink up. We build a sub floor over the foreshore to ensure there’s no damage to the area. We are completely environmentally conscious. Then there’s masses of aluminium piping through which foodgrade glycol (freezing agent) and recycled tap water is pumped. The rink is 250sq m and is enclosed with roll-up plastic sides so you still get the full view. There’ll be a snow machine to create snow flurries and all skating aids are supplied.” Natalie continues. “We wanted to present something that was healthy, fun and unique, and an alternative to heading to the snow. Each session is 45 minutes and we open from 10am every day until July 16. They’ll be theme nights and the

We are the first coastal region in Victoria to do it.” “The Sorrento ice rink is part of a nationwide SKATINGAT winter festival which is travelling to Sydney, Perth, Canberra and Brisbane,” continues Rod, who has been in the events business for more than 12 years and on the Peninsula for 43. His business is family owned and operated and is a real local success story. “We like to make sure we leave the area exactly the way we found it,” he says. “It’s a big job. COLOUR ME JANINE

Janine Daddo’s eyes are like black beads. Smart, shiny and intense. Revealing yet guarded. This Peninsula based world renowned artist paints colour, emotion and organics – stories to lean on, learn from and enjoy in all their eccentricity and connectivity. Her ideas come thick and fast. They hitch a ride on her brush and give the thumbs up to an expansive and eclectic breadth of work that hangs in both private collections and public spaces throughout Australia, Singapore, Hong Kong and beyond. She’s had sell-out shows in Sydney, Melbourne and Chicago. I caught up with her over coffee and conversation about life, art and all the ‘wiggly’ things in between. Firmly planted within the Peninsula’s salted earth, Ms Daddo has no intention of leaving the coastal region she has called home for more than 19 years. She can’t. She’s hooked, line and ‘sinker-ed’ to her purpose-built backyard studio set in the salty scrub of Mount Martha where she creates colour infused, textured and layered work that celebrates her well lived life. Her father once said, “You’ll be common if you get your ears pierced Janine”. Enjoy catching a glimpse of this ‘common’ Peninsula person’s world where art and life are intrinsically linked. What do you think your Dad meant by being ‘common’? (Much laughter) My dad was such a gentle soul. Very kind and funny. You see he was Scottish and had a real sense of humour. The idea that one thing would ultimately lead to another! You know, if you got your ears pierced, well then, you’d get a tattoo! And then the next step would be prostitution! (More laughter). It was all said tongue in cheek. He just meant stay as you are. Be yourself. I began a Fine Art degree when I finished school. Dad was the one who suggested I transfer to graphic art. “What are you gonnna do with a Fine Art degree?” he said. I

didn’t like it at the time, but looking back he was right. He understood what I needed to do. You paint, sculpt and make jewellery amongst other expressive forms. How much work have you created? I’ve never let it pass my lips, but it’s a lot! To give you an idea – I’ve got a solo show based on botanicals and losing self in surroundings coming up in August in Perth which will have 38 pieces in it. There’ll be a grove of 2m to 2.4m-high powder coated steel trees. I hand-draw onto the steel which is then hand plasma cut, joined and welded. There’ll also be paintings. My work has just been showed in Singapore (with Manyung Gallery) and I’m always creating outdoor installations and commissions. I’m about to launch a new project in September, which is a secret for now. I’m never not producing! How does living on the Pen influence your work? We lived on Frontage Way when we first moved to the Peninsula and had a boat shed on Mills Beach. Days were spent eating chicken rolls, swimming with the kids and getting together with friends. That’s also where we scattered my second son’s (Hudson) ashes. We moved to Gypsy Meadows in Stumpy Gully Road and lived on 20 acres of virgin bushland where the kids constructed tents while dressed in costumes and my daughter began

horse riding. She’s now a professional dressage rider. I’m currently looking after my elderly mum as well. These experiences have made my work what it is. The pleasures of every day. Nature, love, loss. What’s a typical day look like for Janine Daddo? I’m up around 6.45am and like to be in the studio by 7.30/8am after being a bit domestic! I get into the studio and see if I still like what I was painting the day before. I usually work on two to three canvases at a time which I have prepared myself and are stretched by local Peninsula business Southern Buoy. I even get my paints delivered now! I paint until lunch time with my two dogs nearby. Check in with the (adult) kids, son Jak and daughter Arkie and work again until dinner time. More drawing and jotting down ideas after dinner. So, you do have some time off! What do you do when you are at home on the Pen? I visit some of the local wineries. Montalto is a favourite. I love the Mornington Main Street Wednesday market too. Sometimes I go to Sunny Ridge Strawberry Farm or drop by Tully’s Corner Produce Store. There’s so much great local produce and it’s all so close. I love living local. Book your Big Island adventure If your thoughts race immediately to hula girls, pineapple drinks and surf beaches when someone mentions Hawaii, you’re not alone. But there’s a lot more to this scattering of islands than first meets the eye. Many tourists never leave the stunning main island of Oahu, but we ventured off the beaten track to see what Maui and the Big Island had to offer. Maui, with its sun, surf and sea, is like something straight out of the movie South Pacific. How could the Big Island ever beat that? But as we flew in to Kona our breath was taken away by the sight of the earth below, where hundreds of years ago lava had flowed from Mt Kilauea into the turquoise sea. The meeting of the brilliant blue waters with white foam-capped waves hitting the blackened, dusty cliffs was the ‘one picture’ moment to whet our appetite for adventures to come. A volcano is best seen from above, and so we decided

on a helicopter tour to do it justice. Anticipation grew as we flew for about 30 minutes over picturesque Hawaiian scenes. Then the great moment was upon us - we were flying over the lava, directly above Mt Kilauea. Below us, swirling shades of black and grey spread out in all directions, peppered by patches of the bright orange lava bubbling just beneath the surface. We were staring at something primitive and ancient, running deep into the core of the earth. Two hours flew by – literally - and we landed, still feeling the effects of our adrenaline-fueled voyage. Is a helicopter the perfect way to see the big island of Hawaii? If you’ve seen this gorgeous vintage caravan out and about on the Peninsula and wondered what she’s all about, read on. For a start, she’s called the Caravan of Love. Mornington Peninsula Magazine stumbled upon her while interviewing the Jetty Road Brewery boys last month and we couldn’t resist finding out more. The Caravan of Love, it turns out, is unique to the Mornington Peninsula. She’s a 1972 Franklin caravan (an Aussie caravanning icon) that has been professionally gutted and lovingly restored by Peninsula-based SC Weir Cabinets into a fully functioning mobile bar with five working taps. She is an extension of the soon-to-be-built Jetty Road Brewery, in Dromana, and you can hire her and her catering staff for your functions and have Jetty Road Pale Ale on tap at the location of your choice! They come to you, set up, serve and pack up – now that’s sweet! As events coordinator Katrina O’Brien explains, the name simply encompasses the vibe of what the Caravan of Love is all about. “Any event involves love, we feel, whether it’s a wedding, an engagement party, a 50th, 60th, or wetting the baby’s head, there’s always love involved,” she says. “There’s really nothing like it on the Peninsula in the way you can pull the caravan up and supply catering and local beer on tap.” While the Caravan of Love will travel up to Melbourne for functions (they catered for the Melbourne Storm’s Family Christmas Party outside AAMI Park in December), home is where the heart is and that’s the Mornington Peninsula. “Our vision was for a romantic, personalised mobile bar,” Katrina continues. “We wanted to inject a bit of fun as well with the novelty of serving drinks from a caravan.” One of the partners spent about six months searching for the right caravan and found her tucked away in storage in South Doveton. “It was a bit of a treasure find on Gumtree,” he said. “I wanted a particular brief for the caravan, a 1950s look, and as soon as I saw her I fell in love with her.” Her long-time owners, now aged in their 70s, had loved their van, meticulously maintained her and wanted her to go to a good home. “There was a

grunt to grow and harvest. This rescue dog has been trained by one of the best. Ex-army officer Simon French, who operates out of Tasmania, finds dogs in pounds, assesses as to whether they will be suitable for truffle training and Bob’s your uncle. But not all dogs make the eight-month training program. Jenny’s previous dog - a Lagotto Romagnolo failed, but Thomas didn’t, and now he’s bent on showing me why. “You want to run Thomas?” asks Jenny as he clings to her right leg pushing into the accelerator. He jumps out and bounds beside the Deer while we growl up the incline to where the jewels lie beneath the Red Hill mud. The land here is ridiculously undulating, lush and ancient. Good things grow here. Jenny asks again. “You want to find some truffles Thomas? Where are the truffles?” And that’s all this spritely and adoring dog needs. He makes for the base of one of Jenny’s 2600 Oak and Hazelnut trees which are perfect truffle companions and lies down where the edible gold grows. “Where’s the truffle Thomas? This one isn’t quite ready.” Thomas never touches the precious find, instead, he takes a seat and waits. I kneel and bow to take a deep whiff of the intoxicating aroma. “I initially planted 300 trees after a couple of years’ research,” explains Jenny. “We now supply all restaurants in Red Hill and many beyond, and have a range of truffle infused foods.” All Thomas

There’s a lot of work involved in growing truffles,” she continues (irrigation, recycled weed mats around the base of every tree, checking the PH levels of the soil and making sure it stays well drained). “Truffles don’t like wet feet and the season only lasts up to 12 weeks although you work at it all year round.” This dog’s day ends in front of an open fire after a satisfying meal. He’s done his couple of hour’s work, chased away the cockatoos and ducks and stuck close to the person he loves most. A Blue/Green Bass Strait Ferry SeaRoad Mersey II, which has a blue hull, is a greener ship than the green-painted Searoad Mersey, which it has replaced. Later this year when the ship begins to operate on LNG (liquefied natural gas), its levels of emissions will be much less than those of SeaRoad Mersey, though it is a much larger ship. LNG, the low-pollution maritime fuel of the future, has been used to power ships for more than 30 years and its use and handling is well understood. Emissions requirements for ships, which limit the amounts of sulphur and nitrogen oxides as well as CO2, can be achieved by using LNG. The new ship, which was built at the Flensburg shipyard in Germany for SeaRoad, was completed last year. It has a length of 182m and a service speed of 20.5 knots. A

freight-only ship, it does not have accommodation for passengers but provides a regular cargo carrying service across Bass Strait from Melbourne to Devonport on Mondays, Wednesdays and Fridays, returning on the alternate days. It remains in Melbourne on Sundays. A roll-on-roll-off ship, Searoad Mersey II is loaded and unloaded via two stern ramps. It has three cargo decks: Main Vehicle Deck for up to 295 TEUs as containers on cassettes, trailers and wheeled cargo. Upper Vehicle Deck for 160 TEUs as trailers or containers on trailers and featuring a combination of undercover areas, designated areas for dangerous goods and

livestock with effluent containment. Car Deck for up to 110 cars and light vehicles. The ship is fitted with 150 power outlets for refrigerated cargo units. Searoad Mersey II will contribute to Tasmania’s clean, green image which is recognised worldwide. The run, on Sunday, August 6, is the major annual fundraiser of the not-for-profit Mornington Peninsula Athletic Club, and the major sponsors are Hocking Stuart and the Bendigo Bank. All proceeds go towards the development of Peninsula athletes - predominately juniors - so not only will you be improving your fitness and having fun in the gorgeous setting of one of the Peninsula’s hidden natural gems, you’ll be supporting a vital sporting club. Tom Millington is a bare footed, troubadour songsmith jamming a foot-stomping blend of Soul Roots Smokey Folk Pop. His music is driven by a stomp box whilst his unique finger picking and strumming styles soulfully tame the ear as his resonating voice hits you right in the heart. Each song is broken up by spoken scatterings of life, of love, of slam street poetry musings. His debut single Being, released towards the end of 2016, has received wide praise within the industry as did his debut EP, also called Being. Stage set for battle Young musos are preparing to fight for the right to represent the Peninsula in the Push Start Battle of the Bands. Bands, soloists and DJs will take the stage at the Peninsula Community Theatre on Friday, August 11, with the winner heading to the southeast regional finals. The competition is open to musos under 21 who live, work or attend school on the Peninsula, and heaps of prizes are up for grabs. The event will be broadcast live on RPP FM. Beaches rocks with Rob Papp and Blueshead Beaches of Mornington rocked on Sunday afternoon, June 11, during the 2017 Winter Jazz & Blues Festival, when Rob Papp and his band Blueshead steamed in to entertain the crowd. Rob paid tribute to writer and music lover Haydn Godony as part of the day. The festival will feature an interactive show where state-of-the-art technology crosses paths with the world’s oldest civilisation. Saltbush is an exquisite journey through the culture and landscape of Aboriginal Australia, celebrated through live dance, music, song and stories. Saltbush centres on the journey of two friends from different Aboriginal backgrounds as they cross Australia on foot. Glam up for a good cause BY ANDREA KELLETT If you like to glam up and enjoy a night out, why not team it up with an event that raises funds for a not-for-profit organisation supporting local families? The 2017 Achieving with Autism Gala Dinner is the major annual fundraiser for the award winning Abacus Learning Centre in Hastings - Australia’s first centrebased ABA therapy, enabling children with Autism Spectrum Disorder (ASD) to reach their fullest potential.

On Saturday, August 5, the Gala Dinner will be staged in The Peninsula Room at Mornington Racecourse and it’s a classy line-up of entertainment, food, drink, dancing and more. It’s a great reason to shop for a new cocktail dress or lounge suit in support of, essentially, an organisation that’s improving lives. Abacus Learning Centre executive director Lauren Moore says funds raised are vital for the ongoing success of the centre. This year’s target is $50,000. “The funds go towards subsidising early intervention costs for parents as well as purchasing new therapy equipment, and upgrades around the centre such as a reverse-cycle airconditioner for our gross motor and lunch room. It also allows us to put time into developing new services to assist with the diverse enquiries for services we receive from families in the autism community,” she says. A highlight of the night, Lauren explains, is a personal account from an Abacus

parent. “We have a parent whose child is currently attending Abacus or have completed an ABA program with us. It is a wonderful journey that parents generously share, and guests are always overwhelmed and overjoyed with each story that has been told.” Organisers have secured Josh Earl as host (Josh is an award winning comedian and host of TV show Spicks and Specks) and live music by Fudge (one of Melbourne’s best-loved cover bands, playing big hits

and classic anthems). There will also be an online auction by BalaBid, with auction items and raffle tickets online from July 22 – August 5. Tickets cost $120 per person, which includes a welcome drink, canapés and two-course meal. They are double trouble, with a passion to never stop improving and proudly landing roles in their school production of Grease within a week of starting Year 7 (and the only Year 7s with major roles, we might add). These mature young boys practise every day and busk twice a week. Bo’Ness

are inspired by the Beatles and draw inspiration from Coldplay, Green Day and the television show Nashville. Callum and Jackson also play at Frankston Library and at Frankston Hospital in the dementia ward. Taught by Bonnie Anderson (of Blackout fame), approached by The Voice Australia and singer songwriter Sam Hawksley from the Bo’Deans, they are on track at a young age. With industry support, family connections and their friends’ endless encouragement, nothing is stopping these humble young stars from continuing their climb to success. Improving Gut Health for Weight Management

Recent research is showing a very strong link between gut health (aka our microbiome) and many other aspects of our health, including both physical and mental health. Inside our gut live 50 trillion creatures from more than 1000 different species, some good bacteria and others bad bacteria. This collection of bacteria makes up more than 50 per cent of our total body’s cells and around 90 per cent of our total DNA gene pool and it is known as our microbiome. A healthy and diverse microbiome is essential to our overall health and well-being, with many studies showing that a poorly balanced microbiome can contribute to insulin resistance, lowgrade inflammation, fat deposition and therefore indirectly participate in the onset of obesity and metabolic diseases. There is also a very strong gut-brain link and studies have shown that the microbiome can also affect mental health and has even been linked to depression. So how do we build a healthy microbiome? Firstly, if you have used antibiotics you might need to take some probiotics (powder/capsules/chewable/ liquid varieties) to replace those healthy bacteria that may have been destroyed. Probiotics are also readily available in fermented foods such as yoghurt, kefir, kombucha, sauerkraut and miso. These foods will help to boost the levels of good bacteria in the gut. Secondly, in order for these good bacteria to breed in your body and expand their populations, they need to receive adequate ‘food’, which is called ‘prebiotics’. Prebiotics support the growth of good bacteria and are found in many foods including onion, garlic, leeks, artichokes, stone fruit, watermelon, dried fruit, barley, rye, wheat based products JULY 2017 (68)

Managing a BIG idea Last November, I had a realisation; it was time to play a bigger game. I needed to get the word out about Soar Collective’s vision for connecting more incredible regional businesswomen throughout Australia and to give them the visibility and support they deserved. I knew it had to be a big idea without the big budget to back it. The Rise for Regional Road Trip and documentary was born. From May 29 – June 2, I drove from Geelong to the Sunshine Coast with another businesswoman, Bridget from Suburban Sandcastles, and our baby daughters. We held five free events in Geelong, Wollongong, Newcastle, Byron Bay and the Sunshine Coast and interviewed incredible regional businesswomen along the way. We had film crew Pickford Media driving another car and filming the journey. And that was only half of the project done! We had two attempts at a crowdfunding

campaign and were successful with the second. We had partnerships with Audi Australia (who gave us a car for the trip!), Airbnb (who covered our accommodation), Endota Spa, thankyou group and others. It was a six-month project, done and dusted in five days. Here’s what I learnt from the experience of managing a big idea, a big project and a crowdfunding campaign to back it up:

I once received some great advice – the number one currency you have as a start-up business, is vision. There’s no chance we could’ve raised our target of $4k and be supported by the companies we did if we didn’t share our big vision with everyone we connected with.

Jesslyn Penglase is glad to be one of the students taking part in foundation skills training with BRACE. Her confidence, selfesteem and independence have improved since starting the course in February. The course not only enables Jesslyn and the other students to learn in class, they also get hands-on experience through work placement. In preparation for her job interview, Jesslyn went to Dress For Success to find suitable clothing. She looked great and felt confident and happy. Jesslyn is completing her work placement at Crafty Cakes in Somerville, and after only a few weeks she built up the confidence to catch public transport independently. You can see by her smile that she is thoroughly enjoying her work there. “At the start of the course I was very nervous, but as time went on my confidence grew and now I am really enjoying the course,” said Jesslyn. “I love the work placement as I am doing something I really love. I have learnt a lot. Debbie and Trish are good trainers.” Her trainer, Debbie Rogan, can see the difference in Jesslyn since she started the course. “Jesslyn recently led her group (in class) to successfully complete a team building activity that was based on time constraints, limited resources and thinking

First Class Fermentation Andre Kogut of Blue Bay Cheese has been fermenting foods since he was boy. Growing up in the foothills of the Carpathian Mountains in the Ukraine he fermented fresh milk into kefir at his Grandmother’s side. Now he finds the kefir he has made in his Mornington cheesery. “Kefir is simply fermented milk,” says Kogut. “It is also an amazing source of pro-biotics – beneficial bugs that are great for your gut health,” he says. “It has been a way of preserving milk for millennia but in the past few years the world has caught up with the benefits of kefir. My

grandmother drank kefir everyday,” he says. “She worked hard everyday until she died at 89. She was a fit woman right until the very end.” With this he pours a small glass. It is white like milk but thick like a soup. It has the lovely dairy aroma of milk with the pleasant scent of fresh yoghurt. Although slightly viscous it has a clean mouth feel and finished with a clean tang. It has a length of flavour of the lightest curd cheese and a pleasing savoury sensation. When it hits the stomach it doesn’t have the heaviness of having consumed milk. It just seems to feel good. These days Kogut sources his milk from small family owned cow and goat dairy farms. The cows’ milk for the kefir, for example, comes from an independent organic dairy in Gippsland where the cows graze only on grass and is considered one of the most humane farms in the nation. From this milk he also makes a range of excellent cheeses such as quark, feta, gruyere and haloumi. Cooking and preparing food with kefir is easy. Firstly it needs to be stored upright in the fridge so the fat cap stays in place. Because it is acidic it can be used in recipes where cultured buttermilk is called for. The lactic acid activates baking soda making fluffy pancakes.

Nazaaray Estate Winery in Flinders is the Mornington Peninsula’s southernmost vineyard and is one of the few wineries in the region to hand craft the ‘nectar of the gods’ on site. This small batch single vineyard has just been awarded the People’s Choice Award at the International Cool Climate Wine Show 2017 held on May 26. Nazaaray’s Pinot Noir Reserve 2015 was voted the best out of 544 wines on show according to the votes of people attending the public tasting, and comes hot on the heels of the Estate’s ‘Silver’ award at the London International Wine Challenge where the judges described it as “a very elegant and classic style with well-integrated tannins, pencil shavings and subtle oak with cherry and spice”. Pinot Noir was first introduced at Nazaaray in 2001 and as the vines have matured, so has the wine’s character. Wine maker Paramdeep Ghumman has spent much of his time learning the art of traditional Burgundian wine making and continues

to refine and define Nazaaray’s Pinot Noir which is one of the most temperamental of grape varieties. His winning Pinot Noir is full of spice, complex flavours and fine tannins due to the vineyard’s cooler location at the southern-most tip of the Peninsula and the resulting long, slow ripening season of the grapes (multiple clones have been planted in the vineyard). If you haven’t heard of Michael Cole, chances are you soon will. This Cape Schanck resident is heading down the path of becoming Australia’s next celebrity chef. The 33-year-old head chef at Georgie Bass Café & Cookery at The Flinders Hotel has just been crowned the 2017 Chef of the Year. He has also been selected to represent Australia in the semi-finals of the most prestigious gastronomy event in the world - the Bocuse d’Or world cuisine contest. This year, selection for the Australian team to attend the Bocuse d’Or in France took place alongside the prestigious Chef of the Year competition. That meant Cole and commis Laura Skvor (a local Chisholm student) cooked for five and a half hours in the morning to win Bocuse d’Or selection, then Cole turned around and cooked in the Chef of the Year grand final, and won that too. It’s little wonder Cole is going places. He and Skvor blew the eight Bocuse d’Or judges away with a stunning meat platter complete with floating spinning garnishes! “It was inspired by the forest floor,” Cole explains. “What I wanted to create was something visually impacting... I wanted it to look like a reptile.” His creation

encased in 400 mushroom scales did just that. Cole has worked and taught at Georgie Bass Café & Cookery since it opened about 16 months ago. He has also held senior chef positions in kitchens around the world. This “country boy” from north east Victoria fell in love with the Peninsula two years ago and, after having travelled the world snowboarding and cooking, settled here. Cole and Skvor trained for months to ensure they were synchronised in every element of their cooking. Cole explains: “I took two weeks off to prepare, to focus on eating well and sleeping. I’ve been

going to the gym since January to strengthen my core. I focused on this like an athlete.” Cole credits his job at Georgie Bass Café & Cookery with honing his communication skills for highlevel, live competition. It’s his second tilt at Bocuse d’Or Australian selection. “I was a finalist in the 2010 Bocuse d’Or Australian Selection and ever since then I have dreamed of being chosen for the team,” he says. “Being named both Chef of the Year and the Bocuse d’Or Australian candidate is an incredible feeling.” Head Judge Philippe Mouchel said the competition for Australian selection was “very tough” because “the candidates are also being marked not only on the taste and presentation of the dishes, but also on their kitchen skills, efficiency and communication with their commis chef.” Cole and Skvor will now prepare for Bocuse d’Or Asia Pacific and, in the meantime, you can catch Cole at Georgie Bass Café & Cookery in Flinders. He often finishes his cooking classes with a liquid nitrogen dessert, a la Heston Blumenthal. A CHAT WITH MORNINGTON PENINSULA FOOD, WINE & DINING EXPERTS Antonio Faró, Unica Cucina e Caffe, 1571 Point Nepean Rd, Capel Sound BY ANDREA KELLETT What brought you to the Mornington Peninsula? I moved to Australia three years ago because my fiancé/ business partner in crime :-) is from the Mornington Peninsula. I fell in love with the Peninsula immediately. It reminded me so much of where I was born, where the mountains meet the sea. Rosebud is so much like Southern Italy, beautiful hills and hidden gems, plus the added beauty of beautiful beaches. Where did you grow up and why did you became a chef? I was born in Southern Italy, a town called Roccella Ionica in Calabria. I always loved food and cooking. My first job at aged 12 was washing dishes in a well known restaurant in a town half an hour from our house. The restaurant was called Charlie Brown. I would get the train on my own to work and back on the last train at 2am. I looked enviously at the chefs in that restaurant and wanted to be just like them. So much so that aged 14 I jumped on a train to Milano without a cent in my pocket and began my journey to becoming a chef and restaurant owner. I always dreamed I would become a world-famous chef, a dream I still hold to this day.

What’s your philosophy? Fresh is Best. This is the Italian way. I use what is in season and what can be sourced locally. If you taste our parsley garnish, you will notice the amazing flavour of our parsley. What do you enjoy doing on the Peninsula when not at work? The Peninsula has so much to offer and so much to discover. I love going for long walks or bike rides. I also enjoy visiting other local restaurants to understand the different flavours of Australia. We hear your Spaghetti Marinara is popular. Can you tell us about this dish? The Spaghetti Marinara is our most popular dish. It is filled with fresh local seafood. I believe its freshness is the key and that it is stacked with fabulous seafood in copious amounts. I have people who come in twice a week for it. I love making it, people love to eat it.

What can patrons expect when they dine at Unica Cucina e Caffe? When patrons dine at Unica Cucina e Caffe they can expect exceptional service and the freshest of food. I prepare each dish ‘al momento’; at that moment. I am the only chef, the only one who cooks in our restaurant. I prepare every single dish and can cater to all tastes. I am a true Italian, my palette only understands Italian food, so my flavours are very, very Italian with influences from the south as well as the north as I lived in Milano for 26 years. Every single dish is made with heart and soul with Italy on my mind. It is the only way I know how to cook. My fiancé Michelle runs the front of house and she ensures every person that comes to our restaurant is as comfortable here as they are in their own home. A real Italian experience. Where do you source your ingredients? I mostly grow my own fresh ingredients, or my father-inlaw does. We also have a local elderly gentleman who pops in with fresh parsley, basil, chili and rosemary when we do not have enough ourselves. Over summer we grew our own tomatoes. We have also just planted a crop of broad beans at the front of the restaurant to use in our dishes. I source Australian seafood where possible, our coffee is sourced locally, our cheeses are sourced locally. When I cannot find ingredients that I am used to, I have them imported from Italy.

You make the desserts too? I am passionate about authentic Italian flavours. The most popular dessert at Unica is the Cannoli Siciliani. I have the casings imported from Italy and then I hand fill these two, or sometimes four times a day. People come in and buy trays of them. A beautiful pastry casing filled with whipped Bufala Ricotta and Marscapone. A real traditional Italian dessert. You have four children, are they keen on cooking too? Yes, I have four beautiful daughters. A blended family. I am a lucky man. They all love to help in the kitchen and at home when we cook they enjoy making desserts and being the taste testers. I think that being an Italian family, we like to involve the whole family in the process of cooking. It is the heart of the home, the heart of our family. I think maybe this is why I became a chef. Cooking is the heart and soul of Italian families, and I love my family.

What better way to kick off a wine column about Peninsula wines than to feature wines from three of our most visited, boutique wineries? These are three of our favourite producers who also have some of the best cellar door experiences on the Peninsula.

Tucks Ridge Chardonnay

This is the Chardonnay for people who are a bit iffy on Chardonnay (or are ABC: Anything But Chardonnay). When taking out a busload of people, generally at least 20 per cent of the guests won’t like this variety of wine, it’s divisive to say the least. Chardonnay has the reputation of being overly oaked or overly buttery. This is the wine that has changed a lot of minds while still displaying some of the classic Chardonnay characters. On tasting, this wine expresses a lot of the fruit characters missing in stereotypical Chardy, with apple being dominant on

the palate. We love the little hint of butterscotch on the finish that really rounds it out. Enjoy this drop with a roast chicken dinner or scallops. Tucks Ridge Chardonnay costs $32 per bottle.

A true family-run business, Peter Parker is obsessed with Pinot Noir. Normally leaving his Pinots in oak for 18 months to round out, this time he decided to bottle some of the vintage after 12 months. The result is a more fruit forward style of wine, which a lot of drinkers prefer to the earthier styles.

(Sangiovese, Shiraz, Pinot Noir blend) They called her crazy, but Kathleen Quealy has never been one to play by the rules. This was one of the first red wines produced by the pioneer and Queen of Australian Pinot Gris. Today this unique blend is still a cult classic that sells out every year. Rageous is a medium-bodied blend with Sangiovese as the dominant variety. When we tasted the new vintage recently, alongside the berry characters we loved the slightly sweet caramel notes, my wife’s exact words were “a delicious caramel bomb”. These became more prominent as the wine aired over the course of the

Depending on how you like your Pinot, this wine is bright, lively and approachable now, but could also be put down for a while to soften and get a little bit more earth to it (if that is what you are into). Adam Magennis has come full circle. He began his working life as a bricklayer through a State Government Initiative that saw 12 Indigenous young men receive apprenticeships. Travelled the world with that bit of paper. Laid bricks in Canada and America. Built tornado homes in Northern Michigan and laid stone in Ontario for a couple of years. He’s worked at the Olympic Dam copper/uranium mine in South Australia, been a ranger for Parks Victoria out of Rosebud and spent just under nine years at Mornington Peninsula Shire as Aboriginal Community Development and Heritage Officer. Now he’s working with bricks again. Bricks that tell the story of the Peninsula’s past which leads us into the future. Adam’s always felt like he’s been a bit behind the eight ball. His Year 11 photography teacher told him he’d “never amount to anything”. He remembers his young Bunurong self standing, gawking at a diorama a co-student had made. There was a ball with a big number eight on it, in the middle. That image and those words have stuck

And it’s back to bricks BIGTIME! He explains. “I’m doing my PHD on The Briars in Mount Martha focusing on historical brick making from the mid1840s. There were many different brick laying techniques. The Irish, Dutch. They all had different techniques. We are going to excavate the sub surface of the old kitchen site to look at the consumer goods and everyday objects

of the time. This was a post contact Bunurong site. It was first settled by Captain James Reid, then by Alexander and Emma Balcombe. There are stories of Balcombe’s daughters running off into the bush with Bunurong girls in Balcombe’s journals.” This Bayswater-born boy makes no bones about the importance of having a legislative voice for his Salt Water people. “You’ve got to hold a position so you are listened to,” he says. Adam has been on the Peninsula for 13 years, has been creating art for more than 20 and is now a sub-contractor

to the Bunurong Land Council. He also works in an advisory capacity regarding site inspections. I mention that it seems like he can do a bit of everything. “I have many hats. I enjoy doing Welcome to Country Ceremonies and the primary school workshops. I’m still doing a bit of work with Parks Victoria in the Coolart Wetlands too. The Mornington Peninsula has many varied landscapes, forest to coast, clays to sands. While certain areas have rich fertile soils (think the amazing Cherry and Apple orchards of Red Hill and Main Ridge), others have very shallow soils devoid of many of the nutrients required for growing substantial food crops. A lot of people believe that growing edibles in these coastal localities is not possible and at best a struggle. We will all have seen the small backyard garden beds with the vegetables that just seem to sit there for months on end just staring back at you saying “help me!”. Or the yellowing citrus in the corner that barely produces and you are never sure when its going to wear its leaves again next. This is generally due to lack of nutrients and/or water. Additions of chemical or organic fertilisers can help in the short term, but the same problem will stick around until it is addressed properly. To have a productive space what every gardener needs is to skill up on “soil improvement”, and thankfully it’s not rocket surgery!! We can improve our coastal sandy soils significantly, no matter how poor the starting base. The biggest improvement we can make to sandy soils is to increase the ability of the soil to hold water, and thus being able to deliver nutrients to your food producing plants. We can begin this process in two general ways; by

turning in composts rich in organic matter or by layering over existing soils. Depending on how depleted your soils and how much time you are prepared to devote to the exercise will determine which method to put your resources into. A combination of the two will work in most situations. It will also depend on what you are trying to achieve. To begin improving your soil in order to plant a fruit tree, or indeed a small orchard, you would begin by improving the soil in the immediate vicinity of the root zone and then thickly layer mulches around the tree over time. When planting your tree, a hole 500mm wide and 4-500mm deep would be a good start. Half of the soil (or sand as it may be) can be blended with a good composted manure or garden compost and can go back into the hole. The remaining soil from the hole can be used to create a wide bowl around the tree or simply dispersed. Once the tree is planted and irrigation installed, thick layers of composted mulches can be put down beyond the expected drip zone and topped up annually for a few years. This will gradually improve the soil around the tree adding structure and protection for the roots. To begin a productive vegetable garden you can either build or buy a raised bed and fill it with a quality compost blend which will give you great growth for the first

couple of seasons. If you choose to grow at ground level though you will need to improve the soil initially and continue to add organic matter a couple of times a year, otherwise your garden soils will be rendered hollow and sandy before you know it. Vigilant mulching is one way to delay the degradation of your soil, particularly if you use a mulch that is going to help build your soil over time such as green straws (pea-straw, lucerne) or composted mulches. If you have a large area where you want to remove grasses and improve the soil, then you may want to employ a popular method known as sheet mulching. Many would have heard this method explained before and perhaps even experimented to a point. For sheet mulching to be effective though, thick layers need to be created and continued over 2-3 years. One season of sheet mulching is just not enough, and you’ll end up with cardboard or sand blowing all over the place. Our coastal sandy soils require a certain level of attention in order for our edible plants to flourish. But once the soil is improved you’ll be able to grow just about anything.

They are often unsure as to what duct cleaning entails and how often it’s needed. “If you are considering cleaning your ducted heating system it is important to realise that the entire system needs to be cleaned, not just the ducts.” In most cases up to 90 per cent of the dust (and therefore dust mites, pollens, germs and fungi) that clog up your system are located in the air return ducting and heater interior, only 10 per cent is in the outlet ducts. The dust and germs stored here breed and multiply continuously, even when the system is not in use. These contaminants lay ready and waiting for you to turn the system on, allowing them to blow around your home for you and your family to breathe in. Full System Cleaning removes this build up and ensures your system delivers clean healthy air into your home. A full system clean system also allows air to flow unrestricted, ensuring your system runs more efficiently.

The Full System Duct Clean Process Step 1: Return Air Duct Cleaned: Removes built up dust and contaminants from the return air duct line. Takes around 45 minutes to complete. Step 2: Cleaning of Heater Interior: Removes ducts and contaminants from lining inside the heater, the fan blades and motor and the heat exchanger. Also takes around 45 minutes. Step 3: All Duct Lines Are Cleaned and Checked: Removes contaminants, dust and debris from the duct lines that run from the heat to each individual outlet. About 5 minutes per outlet. Step 4: Sanitising with Bactigas, Natural Teatree Disinfectant: This sanitises your entire ducted heating system. Bactigas is distilled from the Australian teatree plant, and is a natural antiseptic. Provided your system is cleaned correctly, three years is a suitable time frame for cleaning, more often if your household contains people with severe dust allergies.
