Gingerbread Cookies Prep Time: 4 hours | Bake Time: 10-12 minutes | Portions 24 Small Cookies INGREDIENTS ROYAL ICING

3 cups

All Purpose Flour

1/3 cup Light Molasses

1 tbsp.

Ground Ginger

1 Large Egg

2 tsp.

Cinnamon

2 tsp. Vanilla Extract

4 tbsp. Meringue Powder

1/4 tsp.

Nutmeg

1 tsp. Vanilla Extract

1/2 tsp.

Fine Salt

3/4 cup + Light Brown Sugar 2 tbsp.

1 1/4 tsp.

Baking Soda

3/4 cup

Unsalted Butter

3 cups Icing Sugar

5 tbsp. Water

DIRECTIONS 1.

In a large bowl whisk together the flour, ginger, cinnamon, salt, nutmeg and baking soda.

2.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar on medium speed until light and fluffy.

3.

Add the egg and mix for another minute. Pour in the molasses and vanilla, mix on medium speed to fully incorporate. Next, add in the dry ingredients in two batches. Continue to mix until the dough comes together.

4. Divide the dough into two equal pieces, shaping each portion into a disk. Wrap them in plastic wrap and refrigerate for at least four hours or preferably overnight.

5.

When ready to bake. Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper.

6. Working on a lightly floured surface, roll out the dough till it is 1/4 inch thickness. Cut into desired shapes using your cookie cutters. Arrange the cookies (1 inch apart) on the prepared baking sheets.

Bake for 10 to 12 minutes or until edges of cookies are set and are just starting to brown. Let the cookies cool on the baking sheet for two minutes before transferring to a wire rack to cool completely.

8. Add the icing sugar and meringue powder to the bowl of a stand mixer fitted with a paddle attachment and mix together on medium speed. Add 2 tablespoons of water and mix for one minute. Pour in the remaining water and the vanilla. Beat on medium-high speed for 4 to 5 minutes, until the mixture is thick, shiny and smooth.

9. Transfer the icing into a pastry bag fitted with the desired pastry tip. Decorate the cookies with the icing and decorations of your choice. Add cookies to your tee or decor!

Caramel Popcorn Serves 2-4 | Prep Time: 10 minutes | Bake Time: 45 minutes Indulge in the buttery sweetness of our homemade Caramel Popcorn! This classic recipe is elevated with its freshly popped popcorn with added golden delight, generously coated in a rich caramel glaze. The perfect blend of salty and sweetness, it’s an irresistible treat for festive gatherings or cozy nights by the fireplace. Gather your ingredients, follow our simple steps, and elevate the flavour and crunch, turning plain popcorn into a sweet and irresistible treat.

Get ready to pop, drizzle, and savor the magic of homemade caramel popcorn this season.

INGREDIENTS 10 Cups Freshly Popped Popcorn

1/2 tsp. Salt

1 Cup Butter

1/4 tsp. Baking Soda

1 Cup Brown Sugar (packed) 2 tsp. Vanilla Extract DIRECTIONS 1. Preheat your oven to 200°F (93°C). Pre-pop the popcorn.

2. Once popcorn is popped, remove all unpopped kernels.

3. In a saucepan, melt the butter on low heat, add the brown sugar, and mix until combined.

4. Continue stirring until caramel starts to boil. Let mixture boil for 2 minutes while stirring to prevent burning.

5. Remove the caramel mixture from heat and add in the baking soda and vanilla extract.

6. Drizzle the caramel mixture over the popcorn, completley coating it by using a spoon.

7. Transfer your coated popcorn onto a baking sheet lined with parchment paper. Bake for 45 minutes, tossing the popcorn every 15 minutes to caramelize and cook evenly.

8. Remove baking sheet from the oven and let the caramel popcorn cool.

9. Serve and enjoy!
