Roasted Yellow Pepper Soup

1. Rinse and dry peppers and place on a lightly oiled baking sheet. Roast in a 400 degree oven until blackened, turning from time to time.

2. Remove from oven and place in a bowl covered with plastic wrap while proceeding with recipe.

3. Melt butter in a large pot and add onions, salt, pepper and cumin and cook until translucent.

4. Add garlic and continue to cook until fragrant. Sprinkle on flour, stirring and cooking for two minutes. Stir in chicken Mitchell Lipton as Dean of Admissions and Records broth and bring to aserves simmer.

5. Pull the skins off the peppers (not under the faucet) and discard seeds, membrane and stem.

6. Roughly chop peppers and add to pot.

Simmer 10 minutes.

7. Stir in milk.

8. Puree in food processor. Pour back in pot and heat gently.

he perfect first course for a cool brisk autumn day is this golden savory roasted yellow pepper soup. A light soup yet bursting with the heady flavor of sunripened peppers, it’s quite easy to make. The secret is the roasting of the peppers. Bring them to a blackened char and soft interior in the oven and by no means dilute their flavor by taking the peel off under water. A crusty ciabatta, delicate salad and grilled meat will add up to a wonderful meal.

Ingredients 6 medium sweet yellow peppers 2 T unsalted butter 2 medium yellow onions, cut into a small dice 1 t salt (1/2 if using salted chicken broth) ¼ t white pepper 1 t freshly roasted and ground cumin 2 cloves garlic, mashed and chopped 2 T flour 4 cups chicken broth (or vegetable) 2 cups whole milk Crème fraiche and roasted red pepper powder for garnish Procedure

Exposing Children to Music I

have taught music from Pre-School through 12th grade in a school setting, as well as instructed and promoted pre-professional talent for over 30 years. From the classroom to the Broadway stage, one thing is the same: music must be fun, engaging, and inspiring. It begins in the womb, where many scientists tell us that the unborn child hears and feels music before it is even born! We watch our youngsters do the “bouncy dance” as they enjoy and move to music and rhythms as toddlers. Listening to and playing music serves as a motivator for the young mind and body. But what happens after the initial introduction phase? Why get them involved in other musical activities or even lessons?

I have interviewed a few local music teachers about the topic of music exposure at a young age. Alison Tupay, a local private voice teacher responds, “For me, I like exposing children to music at a young age, like introducing them to a variety of different foods in their diet: the more their palate is expanded, the more likely they are to embrace things they wouldn't normally gravitate towards, otherwise; providing balance to mind and body.” A Croton violin instructor, Carrie Brandt, notes, “Children enhance needed skills of focus and discipline as they learn to listen attentively and interactively during their weekly lessons, and as they routinely practice at home the new skills that they have learned. Also, children gain additional exposure to the creative world as they begin to learn about music, composers, and their instrument.” Amy Richter, a wellrespected local middle school band teacher has been a longtime supporter of early exposure to music activities.

“Early musical training helps develop children’s language and spatial reasoning skills. It teaches them to think creatively, to respect other cultures and to maintain their focus in other areas of their lives.” Group music and movement classes for pre-school aged children, elementary group piano and family drumming classes are musical opportuni-

PART 2 ties for younger children. Private lessons are soon after an option for the developing musician. This array of offerings allows children to explore and someday find what interests them the most, as they get older and develop musical skills and individual taste.

A dear friend of mine, Carole Demas, (referred to as “Broadway Royalty”- the original Sandy in “Grease”) has revolved her career around her love of music. Carole, along with Paula Janis and WPIX developed the iconic children’s series “The Magic Garden”. Their goal was to expose young children to as many songs from different times and cultures as possible with one guitar and 2 voices.

“Our show was a visit in real time with music, puppets and stories. We wanted children to know they could create their own rhythm and songs - it wasn’t out of their reach.

The rhythm of life is in us and there is such joy in music”.

arenting may be one of the most difficult “jobs” in the world. As a parent, whatever you do will most likely have an impact on your kid, especially during those impressionable, formative years.

How your child deals with and views life is largely dependent on YOUR mindset as the parent and the adult. That’s why it’s crucial to cultivate an optimistic point of view — with so many bad news infiltrating the media and catastrophes happening left and right, your child needs to grow up in an atmosphere filled with hope and optimism.

Some say that they are born pessimists or born optimists.

Yet, studies show that positivity or optimism and negativity or pessimism is a learned behavior. If you consistently scold your child or allow your child to see or hear your distress about work, life, and people, chances are that he or she will follow suit.

Here are some tips to help your child grow up to be a positive, optimistic person — and see life as filled with opportunities and possibilities, rather than difficulties and problems.

Encourage rather than scold.

Kids misbehave and make mistakes all the time — trial and error is part and parcel of growing up. When your child commits a boo-boo or misbehaves, curb the impulse to shout or yell at him. For example, you’ve gone over how to solve math problems many times, but he manages to get only half of his math homework right. Certainly, it can be frustrating, but shouting at your child will only make him dread the subject even more, and lessen the chances of him figuring out the intricacies of math.

Instead, talk to your child calmly. Ask him which areas are troubling him, and why he has problems understanding the concept. By doing this, you are encouraging him to look for a solution rather than dwelling on what seems like an insurmountable obstacle. Tell your child that you want to help and that BOTH of you are in this together. Knowing that he or she has your support will definitely boost his confidence in overcoming his difficulty in math, sports, etc.

Be patient.

Being a parent requires a huge dose of patience, no doubt about it. And part of being patient is to continuously persevere in instilling optimism in your child. This is espe-

cially important for parents whose child is into sports. t is our favorite time of year in this household! The air is crisp, leaves are colorful, apples, pumpkins and critters seem to be everywhere! Yes, the critters are all a flurry! Why, because they know that winter is coming and judging from the fervor, it will be a doozy!

Many animals, from bears, deer, coyote, squirrels, skunks and raccoons are digging, foraging and gorging on anything they can find. They are closer to the edges of highways and roads looking for that last tender morsel.

Take caution and drive slowly, with fog lights so that they can see and be seen. They are in your back yards searching. Before you run outside or let Fido out, make some noise and clap your hands so you don’t spook a Skunk, (we all know how that will end).

Let us not forget our migrating friends! They will be making very long journeys, some as far as 3,000 miles, just to winter. Put out some treats for them. Stock up at Feed the Birds, in Croton. They can best advise you as to when birds pass through and what they like most! Here’s a fun project for young kids: Take some wood any shape or size, (any craft store should have tons of choices).

Couples Counseling

Is it Time to Try and Will it Help?

s with most problematic situations, improvement begins with recognition and admission that there is a problem. When couples are having difficulty one partner may recognize that there is a problem while the other might be oblivious, in denial, or resigned. Many couples go through years or even a lifetime together accepting or tolerating an unsatisfying relationship that could be improved or healed with a bit of help.

The first step when an issue is affecting the relationship is bringing those concerns to your partner’s attention.

Sometimes people are clear about what is wrong and/ or how they feel, other times they just sense that they are dismayed or angry or frustrated. At a time when you are both alone, not distracted, and without other critical life demands, broach the topic of wanting to constructively improve the quality of your relationship. If your partner cannot recognize the issue, explain that your feelings are enough of a reason to warrant their understanding and cooperation.

One of the biggest oversights that couples make is agreeing to work on their relationship, and then not doing anything different. Partners end up discouraged and depressed thinking that their relationship has failed when it hasn’t even been given a chance. Couples counseling is usually helpful if both partners are simply open to the idea of communicating better. Not all problems get fixed in treatment, but just clarifying the problem and potential solutions often leads to positive change. Most couples will, at some point, vent or complain in session; however, the goal of couple’s therapy is change - for the betterment of both partners.

The experience of going to see a couple’s therapist can be as varied as the number of therapists you find. Each will bring a different background and approach to treatment. However, all couples therapists should be able to provide an objective and safe environment to allow each partner to express themselves. It is not the therapist's place to take sides and therefore, from a treatment perspective, it is irrelevant whether the therapist is male or female. Instead, their role is to help the couple understand the issue/s at hand, determine how they arrived at that point, define whether they are willing to do something different to improve the relationship, and then guide them toward the appropriate changes. Couples counseling tends to be an interactive discipline with the therapist encouraging, interpreting, and mediating the communication between the couple.

There is no perfect time to approach couples counseling. It is not only for married couples, and it is not only for times of crisis. Many people wait until they have exhausted their own patience to seek help, even though those cumulative feelings add an additional obstacle to healing.

Although reconciliation is often the object of counseling, there are times when therapists can help the couple identify and accept the end of a relationship and guide them through the process of separation. Agreeing to go to speak with someone is a healthy step toward positive change, and a testament to the type of commitment that insures couples will have fulfilling and loving lives.

Depression

n lieu of the loss of one of the great comedians of our time this month, I would like to take a moment to discuss depression. A person with depression has at least 5 of the following symptoms: Depressed mood; Loss of interest or pleasure; Feelings of worthlessness or guilt; Agitation or restlessness; Fatigue or loss of energy; Trouble thinking, making decisions, or concentrating; Disturbed sleep, such as insomnia; Changes in appetite or weight; Thoughts of death or suicide or suicide attempts.

Most believe that depression results from a combination of genetic, biochemical, environmental, and psychological factors. Research suggests that environmental and genetic factors, such as family history of depression, may make a person more likely to develop this disorder. Medical experts believe that an imbalance of certain chemicals in the brain can cause symptoms of depression. A person can suffer from episodes of depression that can last as long as months or years.

We all have either suffered with depression or have witnessed a family member or friend who has. It can be heartbreaking for family members and friends to watch a depressed love one suffer. The depressed person is often not motivated to help themselves because they feel so low energy, worthless and anxious and they feel paralyzed. It is devastating when untreated depression leads to a person feeling so bad that they take their own life. Depression can twist your mind where you no longer can think clearly.

This makes it difficult to convince a depressed person that there is hope for them-that life is not as bad as the lens of depression they are looking through. But, please don’t give up on them or yourself if you suffer from depression.

There are things you can do to avoid getting into a severe slump and to keep yourself from dropping into a slump: Treat your body well. Eat well by avoiding processed foods and sugar. Eat plenty of whole grains, fruits, and vegetables. Drink plenty of water. Get plenty of rest and move your body. Getting outside in nature tends to have a natural calming effect.

Take care of your emotional and spiritual health. If you have unfinished business or traumatic events from the past that you have not worked through, take the time to do so.

Enlist a professional to help you move through these issues gracefully. Find a way to connect to yourself-do something you love, be with those you love, find fulfilling work.

Consciously feel gratitude on a daily basis at least once even when it feels like there is nothing in your life you are grateful for. You can have gratitude for the nice weather, your comfortable bed, the heat in your house-anything-just feel it.

And, if you are still not feeling well, medication many be indicated. Some people have chemical imbalances in their

brains that need remediation. Depression can be a medical condition that needs to be treated as such much like any person with a medical condition such as diabetes or high blood pressure. There is no shame for having to take medication for depression.

Self-care is so important for all however, people who have a tendency towards depression must be relentless with their own self-care more so then people who do not have the tendency toward depression.

he fall equinox brings shorter days and less light. As the temperature begins to dip, you start to feel the crispness of fall and it’s time to head back into the kitchen for simple home-cooked meals. Seasons create the ideal setting for what’s cooking in my kitchen. Meals turn from light to hearty and warming.

The cold weather creates the need for grounding foods that help us stay balanced during the winter months. According to Ayurvedic principles, root vegetables ground, support and nurture our energies. Fall produce from your local farmer’s markets are brimming with a colorful variety of root vegetables including beets, carrots, parsnips, potatoes, sweet potatoes, rutabagas and turnips.

CDC Facts:

• Childhood obesity has more than doubled in children and quadrupled in adolescents in the past 30 years.

• The percentage of children aged 6–11 years in the United States who were obese increased from 7% in 1980 to nearly 18% in 2012. Similarly, the percentage of adolescents aged 12–19 years who were obese increased from 5% to nearly 21% over the same period.

• In 2012, more than one third of children and adolescents were overweight or obese.

• Overweight is defined as having excess body weight for a particular height from fat, muscle, bone, water, or a combination of these factors. Obesity is defined as having excess body fat.

Overweight and obesity are the result of “caloric imbalance”—too few calories expended for the amount of calories consumed—and are affected by various genetic, behavioral, and environmental factors.

Child obesity is on the rise. Many kids these days are spending less time exercising and more time in front of the TV, computer, or video-game console. And today's busy families have fewer free moments to prepare nutritious, home-cooked meals. From fast food and packaged food to electronics, quick and easy is the reality for many people. An extremely important but most of the time overlooked point in obesity is the fact that packaged and processed foods are loaded with chemicals; fillers; additives; artificial flavors and colorings………and the list goes on and on. It has been scientifically proven that these chemicals and additives in our foods give rise to reactions within our bodies that make us want more; crave more; under satiate us and in fact cause us to overeat.

The key to keeping kids of all ages at a healthy weight is taking a whole-family approach. It's the "practice what you preach" mentality. Make healthy eating and exercise a family affair. I know it’s not realistic to drag your kids in with

you during your gym time. Let them know though where you are going and why you workout. Once every couple of weeks perform a set of pushups; planks and sit-ups at home in front of your children. Ask them to count for you.

They notice your actions. As often as you can, go for family bike rides; sprints outside or walks down by the river.

As far as cooking and eating. Get your kids involved by letting them help you plan and prepare healthy meals, and take them along when you go grocery shopping so they can learn how to make good food choices. Do your best to stay within the outer perimeter of your food store. You don’t need to jump right into grass-fed beef and organic vegetables.

Rather than soda…serve water. Rice, grains, pasta, beans, fresh vegetables, canned vegetables, frozen vegetables, meat, fish, poultry, dairy products, bread, peanut butter, a multitude of items can be cooked at home — in almost every case a far superior alternative to fast food or boxed food.

And avoid falling into these common food/ eating behavior traps: • Don't reward kids for good behavior or try to stop bad behavior with sweets or treats.

• Don't maintain a clean-plate policy. Be aware of kids' hunger cues. Even babies who turn away from the bottle or breast send signals that they're full. If kids are satisfied, don't force them to continue eating.

• Don't talk about "bad foods" or completely eliminate all sweets and favorite snacks from kids' diets. Kids may rebel and overeat these forbidden foods outside the home or sneak them in on their own.

Easy, Fast, Healthy!

one are the memories of sun-drenched days, and we are upon the season of warm soups and sweaters. During the summer, I remember looking forward to the time that my daughter would be in school and I could again have “mama time” to run errands at my own pace and to have a few moments to think. However, I also knew that with this “free time” I’d have, the Fall would be busier and I would have even less time to create healthy meals for my family!

For those moms in the same boat...may I offer up the humble bean as a solution to your commitment to an easy, fast and healthy meal solution? I don’t have to sing the praises of beans; we all know they’re healthy and full of protein. But in addition to their helpfulness in putting a meal on the table, they’re cheap, too!

Here are 3 things you can do with the canned or bagged beans that are most likely in your pantry.

•Black bean burgers. You can use the beans in place of any ground meat you would have put in a burger. Just mash them up and you can add onion, garlic, salt, pepper, breadcrumbs (or almond meal), 2 eggs, even corn if you like. Then you can fry them up in a skillet with olive oil or grape seed oil. Warm up some buns and there you are! You can do a side veggie or starch if you like, too.

•Lentil burritos. Sauté some onions and garlic and season with salt and pepper with olive oil. Add your cooked lentils and a beaten egg or two, and sauté everything up together. This is really delicious though it doesn’t look the prettiest! :) That’s why you wrap it up in a tortilla with some grated cheese, rice and lettuce and tomatoes and roll it up! :) Add some salsa avocado on the side, and you have yourself a dinner.

•White bean spinach soup. This is a staple in our house.

Sauté garlic in olive oil and season with salt and pepper, then add your baby spinach and stir it up. Then add a can of drained white beans to the pot and toss those around in the oil. Once the beans and spinach are tossed with oil, add about 4 cups (1 package) of broth and boil. After boiling about 5 minutes, cover and let simmer for 10 minutes and serve!

Try these out and let me know if this saves you any time!! If your kids see you enjoying the dinner, they are more inclined to like it. Don’t tell them it’s healthy - tell them it’s delicious!

: Do colleges look at the applicant's Facebook pages or do colleges search an applicant on Google? - Croton Parent

:Great question. I am asked that frequently.

In general, most college admissions officers do not have the time to research the applicant's Facebook pages or search them using Google. That being said, it is important to discuss the idea of being socially responsible on the Internet.

First of all, if we are somehow made aware of a student's Facebook page or something that is considered questionable, the college with then research the applicant.

While this doesn't happen frequently, it certainly can, and I would suggest the applicant be very, very careful what they post on the Internet.

A good friend of mine who works at a college in

Connecticut often says, "Don't post on the internet what you wouldn't want your grandmother to see."

This is also a good time to create a new email account with an address that would be appropriate to use for your college applications. It makes it easier to file the correspondence between you and the colleges, if you're using the same email address for all of your college applications.

And appropriate email address should be generic. I don't suggest using the email address sexy-mama 99@gmail. com.

If you end up changing your email address after applying, make sure to let the college know that your email address is different. Unfortunately, students to not always alert us when their email addresses have changed and could miss very important communication.

Also, be sure to check your junk or spam email folders, as sometimes we send out messages that are heavily graphic-based and that could automatically be sent to your trash.

Although colleges will probably not be researching your social media posts, it's good practice to begin to be socially responsible on the internet.

If during college or after graduating, you're in the process of looking for an internship or job, it's possible that a potential employer will review your social media posts.

The last thing you'd want is for a post from several years ago to come back and haunt you.
