butter chicken was found recently around the 1950s when it was created accidentally by the chef of the prominent restaurant Moti mahal in Delhi, the capital of India. by chef Kundan lal Gujral, it was a normal practice to throw everything in one pot whichever left so one they did the same thing by using leftover tandoori chicken, butter and tomato gravy in one pot and they hadn't any idea what they created but the moment when they taste, they know that this dish would become their repertoire as well as a bestseller and put them on the map. though it's a ''special occasion'' dish, you can make any time at home.

I have used the same way that famous restaurant moti mahal is used in its kitchen but with a little twist.

Mise-en(pre-preparation) 5/7

take a bowl for marination, add all ingredients and whisk it till smooth texture, then coat your chicken with marination and keep it aside. soak your cashew nut in hot water approximately 30 minutes and make a fine paste. heat pan with oil, once haze starts visibly add chopped onion, cook until soft and translucent, now put freshly chopped tomatoes let them cook for a while approximate 5-7 minutes or until slightly mushy at medium heat, pour half a cup of water, let simmer it for about 5-7 minutes or till mushy, blend it and pass it through a fine sieve to remove all the seeds and skin, now, the base is ready for the sauce.

Direction Step 1 Heat the oil in a large saucepan over medium-high heat, add marinated chicken pieces and Saute 3-4 minutes each side. don't flood your pan with chicken, cook in 2-3 batches.

STEP 2 heat the same pan with 2 tbsp butter at low flame, add Kashmiri chilly powder or paprika powder, fry 5 to 10 seconds.

step 3 add puree, cashew paste, all ground spices and chicken, gradually mix them into the sauce and let it simmer for about 10-15 minutes, keep stirring every 15-20 seconds interval.

Step 4 then, add cream and slightly roasted dry fenugreek leaves, cook further 30 seconds and serve hot with naan bread or easy chicken biryani.

NOTES to soak cashew in hot water is mandatory or else you'll get a grainy paste which can ruin your whole dish. pre-preparation can be done a day before which would cut down your cooking time by half. follow my guidance for ingredients which will give you a better yield.
