Simply stir the vinegar, sugar, and salt until dissolved, then gently fold through the hot rice until evenly incorporated. The result? Perfectly seasoned sushi rice, ready for sushi rolls, poke bowls, or your own fresh creations.
Developed with sushi chefs over 74 years ago, this premium vinegar is brewed with rice and seasonal sake cake. It has a deep umami flavour that is perfectly balanced by mellow acidic notes and a well-rounded sweetness.


Sushi Seasoning - Shiragiku’s lower acidity and rich flavour make it ideal for sushi rice.
This vinegar makes a well-balanced pickling liquid or curing solution.
Mix Shiragiku with soy sauce for an easy dressing or dip for dumplings.

Sake cake, the artisanal residue from sake brewing, is made by fermenting rice with koji and yeast before pressing the mash. Valued for its unique aroma and depth of flavour, it is considered a premium ingredient.
This light vinegar is brewed with the finest grains and sake cake, which imbue every drop with the perfect balance of rice tones. Its mild tang and flavour make it a versatile ingredient that can work in a wide range of dishes.


Just mix Suehiro with salt and sugar for a light sushi seasoning.
Suehiro can be poured over chopped vegetables for an easy pickle.
Use Suehiro to replace wine or malt vinegar for a true taste of Japan.

1 part olive oil
Combine the Suehiro, Honteri, and olive oil. Use on any of your favourite salads.




Honteri gives you the sweet, rich umami flavour of mirin, with less than 0.5% of the alcohol.
Usable in sweet and savoury dishes, this versatile sweet seasoning can even replace sugar - being a liquid, it caramelises faster than sugar and is less prone to burning or crystalising too.

Honteri gives teriyaki sauce that iconic sweet flavour and glossy finish.
200ml Mizkan Honteri
60ml double cream
15ml whole milk
10g ginger, sliced
1 tsp lime juice
1 tsp ginger puree
1 pinch salt
Add the Mizkan Honteri and sliced ginger to a pan and reduce to a golden caramel. Remove from the heat and take out the sliced ginger. Add the cream and milk to the caramel. Stir to incorporate. Stir in the remaining ingredients. Serve over ice cream.

5ml sesame oil
10g fresh ginger, finely grated
1 clove of garlic, finely grated
1 small red chilli, finely chopped
Mix the ingredients and serve with tempura fish or vegetables, spring rolls, and gyozas.

Tsukemono, a Japanese Tradition: For over a thousand years, tsukemono (Japanese pickles) have been a staple of traditional cuisine, valued for preserving food and adding balance, flavour, and texture to rice, soup, and main dishes.

The high quality of this carefully crafted, ready-to-use pickling liquid means all you have to do is pour to get incredible pickles

1.5kg vegetables, cleaned and sliced
Pour the Mizkan Pickling Liquid over the sliced vegetables in a sterilized jar. Leave to pickle for at least 1 hour ideally 2 to 4 hours.



The newest addition to the Mizkan range, Rice Mighty has been crafted to delay cooked rice deterioration for longer than ever before. This intelligently crafted rice improver works by helping rice hold its moisture for longer, and increasing production yield.

Wash rice and place in rice cooker, adding the appropriate amount of water as per your normal cooking process.

Stir gently and close lid.
Cook according to the rice cooker manufacturer’s instructions.
