13th Salem Trophy Cup where players had a chance to meet each other and enjoy the fantastic canapés and sushi. The Grand Finale of the tournament was a magnificent gala dinner and prize ceremony hosted in the 19th Hole club house.

Maritim Jolie Ville Golf resort hosted the 13th Salem Trophy Cup on 28th Feb & 1st March. 45 players (10 of which are local Sharm el Sheikh players) from over 11 countries competed in the tournament which was played over 36 holes Stableford with golfers receiving full handicap allowance.

Bountiful BBQ If you looking for somewhere to go on a Friday night up in the Hadaba area and want a cheap bite to eat then pop into the Half Crown around 7pm. Every Friday they fire up the BBQ and offer a great buffet for just 20.00le. There is a very nice Chilli, rice, potato wedges, burgers, kofta, hot dogs and lots of different salads plus bread – so it’s cheap as chips. The bar is quite cosy, so it can be hard to find a table inside on this busy night, but there is a lovely large terrace with picnic benches. Inside Alex the DJ cranks up the tunes so there’s even the opportunity to bop off your BBQ.

Hard Rock Nabq celebrate in style This February saw the 1st Anniversary of the opening of Hard Rock Café Nabq who took this opportunity to celebrate in style. SOHO CARNIVAL Soho Square hosted their annual Carnival this year on Friday 14th February.

It was a beautiful day, with so many activities to choose from all around Soho at great value which made parents and children both very happy with the event.

The Carnival started with a parade of three large trucks and all the hotel’s club cars decorated by Soho. A real Carnival atmosphere was felt with a live South Afrcian Band “The Rockets” playing and singing for opening which

February might have come and gone but that doesn’t mean we need to throw romance out the window with it. Spring is in the air and the nights are getting longer and lighter; so what better way is there to celebrate the season than with some ‘al fresco’ dining in one of Sharm’s most relaxing, romantic restaurants.

On the deck restaurant at Iberotel Lido is one of Sharm’s hidden gems. Many of you have probably tripped pass it, early morning with sleepy eyes while you are on the way to Naama Bay jetty but have you ever thought of stopping off for a refreshing sun-downer or booking a romantic meal for two?

our table by the water’s edge. The view is spectacular as the deck extends out from the shoreline, over the water. This gives the impression you are floating out at sea and looking back onto Naama Bay. The lights of the shops, restaurants and bars twinkle back at you, whilst you watch the lionfish hunting and the boats gently rocking in the bay. Just the natural ambiance is mesmerizing; add the soft guitar music and some candles and you’ve got the perfect place.

The waiter served our drinks and a fresh bread basket with pretty rose sculptured butter pats while we looked at the menu. The restaurant describes the menu as fine dining offering seafood and international gourmet dishes. It was a nice surprise to find that the description matched the menu and there was a nice variety between seafood, meat and vegetarian options, however it was more Italian than international.

Like many people I was also guilty about forgetting this hidden, peaceful corner of Naama Bay, but luckily for me I now have it on my list of perfect places to dine. The restaurant as the name suggests is located on the large open-air wooden deck over the water. As a fish and seafood lover it was quite difficult to choose from the selection of It is a rustic setting but this doesn’t reflect the appetizers; I was tempted by the Carpaccio style of the cuisine or service. di Salmone e Branzino (salmon and grouper Carpaccio), Zuppa di mare – saffron and Our waiter greeted us and showed us to 12

tomato broth with calamari, shrimp and fish but in the end chose the Prawn and Calamari salad. My partner went for the meat option of the classic Italian Carpaccio di Manzo. Both dishes were very nice and served with some spectacular sculptured garnish.

For the main there is a selection of classic pasta dishes including homemade tortellini and ravioli, plus fish, meat and chicken dishes.

There is also the option of ‘fresh from the market’ fish and seafood per kilo. I had the Salmon filet served with a light mustard sauce and grilled vegetables and my partner chose the Pollo al limone. The mains were suitably sized for fine dining which meant there was room for desert – which was equally impressive. How could anyone resist the Chocolate fondant cake served with vanilla ice cream?

On the deck offers an idyllic setting to have a romantic evening. The restaurant is never over-crowded; the ambiance is subtle and relaxed and set against the amazing back drop of Naama Bay. This would be the top place to pick on a summer night as the gentle sea breeze is refreshing, it is quiet and private yet you are literally steps away from some of the most famous Naama nightclubs for after dinner entertainment.

If romantic dining is not on you ‘to do’ list then don’t strike Iberotel Lido off as there is so much more to this lovely boutique hotel. The swimming pool is located on the roof of the hotel and offers amazing sea views. Why not get a day pass which includes a towel and chill out up on the roof for the day. Sip cocktails whilst you dip and watch the dive boats. The bar La Folie is also open for drinks and snacks – which would make a lovely place for a sun downer, and if you want to really splash out why not book a suite and enjoy a weekend away.

Chef Mohamed has had a varied and interesting career in the food industry which has seen him living and travelling around the world. His passion was first ignited by his teacher Chef Ahmed at the Tourism and Hotels Faculty in Egypt.

After he graduated he started as a trainee chef at the Hilton Ramsis in Cairo. He soon went on to become a member of the opening team for many famous brand restaurants like Arby’s and Applebee’s.

He then joined the renowned Hard Rock Café brand first working in Cairo and then in Beirut followed by the Bombay. He is now the Chef at Hard Rock Café Nabq. When asked about his Hard Rock experience, Chef Mohamed smiles and states he has been with Hard Rock for 13 years and wishes to end his career working for them as he just loves the American themed menu.

Today Chef Mohamed invited us to try one of his favorite appetizers on the Hard Rock Menu the Jumbo Combo. He was also kind enough to give us the Hard Rock Café recipe so that all MIX magazine readers can enjoy the taste of Hard Rock Café.

Recipe: 3 spring rolls 1 package of spring roll wrappers In each spring roll wrapper add some shredded lettuce, some guacamole, sliced black olives, diced tomatoes, jalapeno chillis (to taste) and some sour cream.

Fold the spring roll wrapper as per the instructions on the package and then deep or shallow fry in vegetable oil.

3 potato skins Bake in the oven 2 large potatoes until the skins are crispy and the potato is cooked.

Cut in half and scoop out the potato flesh Fry the potato skill until golden brown and then fill with mixed cheese, crispy beef bacon,

spring onions and grill until the cheese has melted.

Serve with a side of sour cream for dipping.

Onion rings: Hand cut large onions into rings.

Dip in flour, then whisked egg and finally into fine white bread crumbs.

Fry until golden brown, serve with Bar-B-Que sauce Tupelo chicken Cut boneless chicken breasts into thin strips.

Dip in flour, whisked egg and seasoned breadcrumbs Fry until cooked through and golden brown.

Serve with blue cheese dressing, Bar-B-Que sauce and carrot sticks.

Forever blowing bubbles

I have been living in Sharm el Sheikh for almost fifteen years now; first as a diving instructor and now as a marketer/writer/whatever.

Throughout these years I have dived many of the Red Sea sites from Dahab down to The Brothers and still find the sport and the scenery awesome.

I would say that after all of these years and dives immersed in the Red Sea, I am still strictly a single 12lt Alli tank kinda of gal. I have never understood the enthusiasm for Tech – why carry 6 tanks when you can dive with one (shoot me now Tech guys – I am sure it is fantastic), if I had my way I would dive with an eight litre. So Tech and those weird Rebreathers, plus all of that complicated mathematic theory were never an option for me (being blondily challenged). Well that’s what I thought until I was gently persuaded to try a dive on a Rebreather.

ACTIVITIES Christian Heylen, the manager of PURE (The Professional Underwater Rebreather Explorers) at the Red Sea Diving College is quite obviously a Rebreather enthusiast. He comes back from dives with different sightings from the bubble making SCUBA divers, which normally include the ‘big stuff’. He coins his crew as the ‘PURE Red Sea Explorer Team’and they go on exciting exploration dives. All of these benefits have been drip fed to me to the point that I signed up for an IANTD Rebreather experience.

Did you know that anyone who is medically fit to dive can sign up for a Rebreather experience? I was always under the impression that you had to be a qualified diver with a whole heap of qualifications before you could get started. This is not the case as long as you are over 12 years of age and passed fit to dive you can try.

IANTD, the training agency who run the ‘Rebreather Experience’ program describe it as ‘a program designed to introduce the diver to the basic concepts of Rebreathers,and to provide a practical confined water and optional OW exposure for swimming with a

Rebreather. It is not a Qualification Program.’

PADI, which is for some a more familiar diving agency, also have a ‘Discover Rebreather’ program. For this experience you need to be 18 years old and a qualified PADI Open water diver or equivalent. Both programs include a confined session and then an optional open water dive.PURE have the six most recent Rebreather models available to choose from; Pathfinder, Megalodon, Evolution Plus, Inspiration Vision, Poseidon Mk6 and Se7en and the Hollis Prism 2.

Without scaring any potential Rebreather trydivers off, I will limit the technical bits and keep it simple; basically diving on a closed circuit unit rather than an open circuit (SCUBA unit) means you do not expel air and therefore do not make any bubbles. If you are already a SCUBA diver this means the new experience will initially play havoc with your buoyancy, but on the upside it means the fish literally swim open finned (armed) to greet you.

completed in the shallow water of the bay.

This is an excellent underwater playground where you can really start to get comfortable with the different breathing techniques and generally the whole feel of the unit. If you are an experienced diver then PURE also offer a try Rebreather dive as a third dive from the boat.

Diving in the sea rather than a swimming pool also means you can test out the reaction of the fish to your new look. It’s amazing as they do really swim up to study you. I never knew how much my previous bubbles affected or even disturbed the fish. This is great when you have a puffer fish or a small wrasse checking you out, but I’m not sure YET of being out in the blue with a large pelagic getting up close and personal.

Ask Christian about this and he says with a smile “The Rebreather allows you as a diver to have closer encounters with fishlife. The lack of bubbles has an extraordinary effect, combine this with the warmer water temps and you have awesome diving.”

If you get on with the Rebreather and want to test out your new skills then both programs include an optional open water dive. However MIX March 2014

PURE want to give you the best experience possible and therefore offer a full boat day with two dives. If you are an experienced diver these dives can be done in Ras Mohamed or Tiran without the session in the bay. Christian explains “generally people enjoy the second dive even more and finish their two dive day with usually an addictive experience.”

If you get bitten by the rebreather bug then it’s onwards and downwards with various options for Rebreather open water certificates.

The lack of bubbles is just one of the benefits of Rebreather diving, another is that air consumption concerns are a thing of the past and there are also more safety benefits.

This was an interesting experience and I have to conclude that really I left it for too long. If you are in Sharm on holiday and have a spare day then I highly recommend giving it a go. If you are a resident Instructor and like me have only dived open circuit then I would also highly recommend trying it. It is refreshingly good.

By Abbey Rhode For many guests travelling to Sharm El sheikh, the All-inclusive option is one that offers great appeal, however this doesn’t mean that tourists should spend their entire holiday inside the complex and miss out on some of the great food and night life that Nabq has to offer.

The Peace Road is as its name suggests a place where guests can wander safely and soak up some of the atmosphere of Egypt. The smell of spices and the abundance of wares on offer from the small shops along the main strip make a welcome distraction from the daily routine inside the large hotels and when the shopping becomes too much? Well there are plenty of places to grab a cold beer and relax with good food, good entertainment and of course all the live sport anyone could want.

At the furthest end of Nabq right on the beach you’ll find the Sunburnt Arms.

Despite the rather comic name, this is a sophisticated bar offering great food from 10am until 9pm and a host of entertainment until 2am. Located at the Sea Beach Aquapark, it is a bit of a trek MIX March 2014

from the main road, but get your driver to take you right to the promenade and it’s only a few steps away. With themed nights for music and karaoke there is something to suit all ages.

A little further down the road near the Laguna Vista is Viva Bar. Part of the larger Viva Group this modern bar/nightclub is known for cocktails and karaoke. The atmosphere is usually lively late into the night and it is popular with those seeking to sing or dance the night away.

Cutting back across the road to the Amwaj and nestled between the shops is the Britannia Bar. Monday night quiz is a favourite here, but families can find entertainment at any time with Wii bowling or the large Battleships table outside. Pleasantly relaxed, this bar is a haven from the bustle of the main shopping strip with bench tables outside where you can watch the world go by with a cold brew.

For guests seeking a more traditional pub atmosphere, complete with pool table, air hockey and fußball, the St George’s at The Grand Azure is the place to be. The bar serves home-cooked pub grub all day and Saturday is Karaoke night. The full English breakfast is a real winner with folk whose craving for ‘proper’ food drives them running from their hotel buffet.

The prices here are reasonable and the atmosphere is friendly and relaxed.

Across the road at The Tropicana Club is the Three Crowns. Its traditional pub décor, excellent menu and plethora of big screens make it a favourite for sports fans and gourmets alike. The Bistro area provides a sanctuary from the sport for anyone looking for a cosier dining 30

A little ways further past the roundabout and you’ll find The Union Jack; if the 10 minute walk seems too much you can always hop on a little blue bus for just 1LE (that’s 10p for Brits) per person. Opposite the prettily illuminated Rixos hotel, the Union Jack has a comfy outdoor seating area as well as a bright, yet cosy, bar. The menu offers many traditional favourites like Cumberland Sausage and Mash and there is a sport, singing and cold beer to go along with your meal.

For anyone spending a week in Nabq, there is plenty of nightlife, great food and sport on offer outside of the hotel to suit all tastes. Mozzarella

in Sharm

I heard about the small, family operated mozzarella factory here in our neighborhood and went to see, how exactly mozzarella is made at the Zio Seba Company, right behind Metro in Hadaba.

Entering the extremely clean and neat laboratory, I met Mr. Masoud Makhlouf, the director of the production.

e all must agree, that the Italian Cuisine has conquered the whole wide world. In every corner of it we find either restaurants or just private kitchens, where pasta and pizza and much more is cooking in the pots and ovens. Sharm el Sheikh is not an exception either, and lately we have a new additional delicacy that satisfies all Italian gourmet lovers. The fresh “mozzarella di buffala” – a semisoft, mild Italian cheese made from the milk of the water buffalo. This creamy cheese originally produced in Southern Italy has won fans the world over, and its versatility

The factory’s name is coming from an Italian man, Sig. Seba, who by living in Sharm was missing this delicacy from his and his friends’ table. He decided to go to the source, in southern Italy in 2008, to learn the technique to make fresh cheese for the joy of everyone. He produced at first at home, sharing the cheese only with his friends, but due to its popularity soon realized, there is a great need on the market and started production in his laboratory by 20 kg of cheese a day.

In a few years he was bound to enlarge the production by the growing requests of his clients. Today, apart the private people, even the 80% of the restaurants and hotels in Sharm are using his fresh and delicious buffalo mozzarella in their kitchens.

Their mozzarella is a stringy textured cheese with porcelain-white color, which has an extremely thin rind and delicate taste. When cut, it produces a white watery fluid with the aroma of MIX March 2014

milk enzymes. Apart from its typical round shape mozzarella cheese, they also produce the famous Italian cottage cheese called “ricotta” (salty or sweet), also from the milk of the water-buffalo.

They are making fresh cheese every day, while their products are entirely organic, meaning, that they don’t use any chemical to conserve it for a longer expiry date. The buffalo milk they use is on arrival every day and the additional materials are originally from Italy. The procedure of making the cheese and ricotta is happening in a very clean and neat environment. “ We are making the cheese like we would do for our own families, by heart and respect, I feel home here, my passion and business found each other in one.” – said Mr. Makhlouf. – “ We

use the highest quality of milk, hygiene is most important, which we constantly control, special boots , overalls and aprons are obliged to wear in the laboratory.”

drained to eliminate the whey. After this the curd is cut into small pieces, then ground up in a sort of primitive mill. At this point, reduced to crumbles, the curd is put into a mold and immersed in hot water, where it is stirred until it takes on a rubbery texture. The cheesemaker kneads it with his hands, like a baker making bread, until he obtains a smooth, shiny paste, a strand of which he pulls out and lops off, forming the individual mozzarella (“mozzare” in Italian in fact means to lop off). These in turn are put into cold water and then to soak in brine. The cheese absorbs as much salt, as is necessary and has to take on consistency.

In the end, it must not be soft and mushy when cut but fibrous and elastic, so that, if poked it springs back to its original shape.

Mozzarella, prepared in the evening is ready the next morning, oozing with freshness and richly flavored.

“Making mozzarella is all about timing and the quality of the buffalo milk.

Timing is experience, but also requires maximum attention each time, while the seasonal feeding of the animals change 41

Buffalo milk is rich in fats, that makes it so adapt to make the best quality.” – he said. – “ As for the freshness, we keep our customers sure, that if they didn’t use up their mozzarella in a week time, they can bring it back and we’ll change it to fresh products for them.”

In the future, they are planning to open a proper cheese shop with wide range of quality and variety of cheeses, specialized only in milk products. There is an ongoing experiment to prepare fresh buffalo butter, which we’ll find hopefully soon at our homes. In the meantime, we all can enjoy this delicate cheese and the salty and the sweet ricotta already. Great for salads and appetizers or serve it with

fresh tomatoes, drizzle with olive oil and sprinkle with fresh basil. The mozzarella melts beautifully and has a unique stretchiness, making it the classic pizza or lasagna topping cheese. The ricotta is beloved by the children, using it for pasta dishes, sweets, cakes and nice to have it on the breakfast table as well.
