SPOTLIGHT Little Buddha Sharm hosts the wonderful children of Sharm’s Summer School

During the last month Little Buddha Sharm had the pleasure to host the wonderful children of Sharm’s Summer School for 2 days. On the first session the children received a lesson in how to make Sushi Rolls from Little Buddha’s very own Sushi Chef, Felix – each participant created their very own Vegetarian Sushi Roll and got the opportunity to taste their creations – a new experience for many of the children. On the section session our Flair Bartender, Hany taught the children how to make 3 different Mocktails – the Strawberry Mohito, Pineapple Sunset and his very own creation – the Al Capone as well as teaching them some tricks and some flaring. A great time was had on both sessions by all the children and the team at Little Buddha enjoyed having the opportunity to teach their skills to the next generation of Sharmers! Promotional Article

Coral Sea Holiday Village in Sharm El Sheikh was the setting on the 3rd of July for the seminar “Understanding How To Prevent Claims And Financial Compensation Arising From Illness outbreaks In a Hotel” organised by Preverisk with the support of Thomas Cook, TUI, FTO and ABTA. There was an excellent turn out. 130 attendees, including Dawn Bacon the Honorary Consul for the British Consulate in Sharm el Sheikh, representatives from 75 hotels and some of the UK’s largest tour operators including Tui UK, Thomas Cook, Cosmos/ Monarch and Hoseasons.

Dr Esteban Delgado (President & Technical Director for Preverisk) was the first speaker of the day, and set the scene by showing the legal & social framework in Europe. How to focus on preventing illness by the implementation of an efficient health and hygiene programme. Effective surveillance and monitoring. The second speaker Ms Angela Hills Destination (Services Manager FTO/ABTA) talk was titled “Keeping Your Customers Safe – A Travel industry Perspective”. She gave a brief overview of ABTA and FTO to explain both organisations and their mission. The third and last speaker was Mr Ashraf Khalil (Regional Director Coral Sea Resorts) who, on behalf of Mr Ahmed El-Wassief the owner of Coral Sea Resorts, gave the talk “The importance, benefits and challenges of health & Safety Management – A hotelier Perspective”. He highlighted how important Health and Safety is for their hotels, and explained some of the programs implemented over recent years. Afterwards the speakers answered the attendees many interesting questions. Then both speakers and attendees were able to mingle for further introductions and discussions over canapés and drinks.

Okay, let’s face it. Every once in awhile, after consecutive days at the beach, we all get the unwavering itch for some competitive, indoor fun. Bowling is a perfect fun-remedy. Great for couples and excellent for large groups, bowling can be just what the doctor ordered. Why not bowl in Sharm El Sheikh? Did you know that some historians believe bowling originated in ancient Egypt? Sharm has two fantastic locations to alleviate bowling fever: Mas Bowling Center and Soho Bowling. Discover Teppanyaki Treasures at Gokan By Romona Wilkes

Since I’m new to Sharm, it’s very intriguing to explore and see what the city has to offer. A day filled with trips to the beach, shopping, and soaking in the sun rays will naturally lead to a curious hunger for something exotic. Hunger problem: With so many great restaurants happy and ready to serve, I can develop a hunger-headache trying to make a decision. Hunger solution: Gokan, a beachfront Japanese teppanyaki and Asian restaurant with famous Japanese cooking and an Asian sushi bar opened in 2011 and located inside the prestigious Coral Sea Sensatori Resort. Gokan is unique, because it’s really two restaurants in one with two wide-range menus. The restaurant, also, features two impressive, modern, fullyequipped teppans which are legendary Japanese iron grills. In the culinary world, Japan is wellrespected and renowned for cooking as a means of art and expression. Although relatively new, the buzz is that Gokan is always in-demand by guests and reservations are a must. When I arrived, I understood perfectly why. Walking upstairs to the restaurant, I was struck by a bold aroma of tantalizing steak which sent my nostrils into frenzy. I was captivated by thoughts of what was to come. Our server, Islam, introduced himself in the most welcoming and professional manner and was a most agreeable host for the evening. He added an extra flair to the atmosphere with his attentiveness, capability, and politeness. I scanned the room and was well-pleased with contemporary-Japanese style accents with remnants of ancient teppanyaki ornamentation. The restaurant layout was clever with a teppanyaki area, an indoor Asian dining section, outdoor terrace dining, and balcony dining, and a stylish sushi bar. The tables were well-dressed with quality table cloths, sparkling glasses, and candlelight. The lighting throughout the restaurant created an intimate mood and accented the moonlight that glistened across the Red Sea currents which enhanced the immaculate views of the 5 Star resort, palm trees, and beach. My ears were enchanted with soft, sultry melodies that were

alluring and enticing. As for cleanliness, no issues were present and everything looked polished to a high-standard. Now, it was time to consider if the menus would line up with the ambiance. I carefully examined the Daily Menu (Teppanyaki) and the Asian Menu, and I was quite delighted to see a huge variety of meat and vegetable dishes with main courses such as Filet Mignon and Chicken and Fresh Garden Vegetables. Starters included Japanese Onion Soup with carmelized onions, Won Ton Soup, and Con Cuee (spring rolls). Meat options included lamb, beef, chicken, and seafood, and an assortment of beverages were readily available from juices to wines. An exceptional factor is that Gokan is accommodating of food allergies and provides lactose-free and glutenfree dishes, and proudly provides vegetarian options. My husband and I looked at one another, smiled, and almost simultaneously began our dining journey with Spicy Chicken soup. What a superb choice, as it was delightful. Just imagine a delicate, flavorful blend of spice, chicken, cherry tomatoes, and lemongrass. A whiff of the spices compelled my taste buds, and I was overcome with taste sensation as I daringly had spoonful after spoonful. Top Chef Kamal Farag brought the action as he showed off his high-level teppanyaki skills and persuaded us to become teppanyaki chefs for the night. I watched in excitement, as my husband, performed teppanyaki grill tricks flipping an array of utensils around and catching it, within moments of teppanyaki sensei Chef Kamal teaching him. After temporarily being transformed into a teppanyaki samurai, my husband wisely selected Sirloin and Chicken served with fried rice, amplified by a colorful, fragrant combination of red and white onions, accented by red, green, and yellow bell peppers. However, I opted for Curry Chicken, and we eagerly watched our meals being cooked before our eyes on the teppan in garlic butter, spices, and a medley of sauces. The sirloin and chicken were mouthwateringly tender and juicy and were smothered in a thick, sweet, rich teriyaki sauce and

a savory, spicy curry sauce. Finally, the meals were served, and I battled with my chopsticks, in an effort to maximize my Oriental dining experience. Upon defeat, I picked up my fork and rewarded myself with another piece of zesty Curry Chicken and fried rice. Now, it was time for dessert, and I could hardly conceal my anticipation. For banana lovers, you have Tempura Banana (deep fried banana with tempura dough) or Saon Coo (deep fried banana served with vanilla ice cream, and sesame flavored honey. Other fruit options included Fruit Platter with green tea ice cream. Upon reviewing the menus, my senses engaged in an internal battle over fried ice cream, drizzled with rich, creamy chocolate sauce, which is the most popular dessert, but I decided to exercise self-restraint. I chose fruit, and you’ve never had fruit until you’ve tried Fruit Yakitori. Where do I begin? Fresh, crispy red apples; succulent, juicy oranges;

sun-ripened, sweet banana slices with decadent, golden honey oozing on every piece. Okay, let’s recap. Décor was tasteful and inviting. Check. Menu selections were expansive and accommodating. Check. Sushi was fresh, picturesque, and expert-level, and the entire meal was deliciously splendid. Check. Service was uncommonly flawless. Check. Sensatori truly lived up to its name, as Gokan indulged all of my senses. If you are fearless or adventurous, opt for Chef Kamal to select your dinner courses which in Japanese is “omakase” or “I’ll leave it to you.” You will not be disappointed. Recipe presented by Executive Chef Cafer Aral Silk Road, Grand Rotana Resort and Spa Mix Magazine caught up with Chef Aral, a native of Turkey, who just joined Silk Road in the Grand Rotana Resort and Spa, two months ago, and he shared his favorite recipe with us. Although new to Sharm el Sheikh, he is no stranger to Egypt, coming from

Sunrise Select Royal Makadi Bay Resort in Hurghada. He is a hospitality and culinary veteran, with the education and experience to certify his expertise. He completed formal education in Tourism and Hotel Management at Akdeniz University in Antalya, Turkey, where he had the opportunity to acquire diverse skills in various departments at hotels. However, his passion for food and a background in hospitality landed him in the hotel culinary direction. An appreciation of manifold tastes and travel led Chef Aral to continue his preparation at businesses, resorts, all-inclusive resort hotels, holiday villages, outsourcing companies, fine dining restaurants, and catering companies, hospitals, and military areas. He received formation training for Executive Chef at Groupe Flo Academy in France for six months and returned to Istanbul to set up a project in Turkey as Area Executive Chef. Chef Aral has countless years as Executive Chef and has worked at many well-known hotel chains around Turkey, as well as many years with international hotel chains in countries such as France, Kazakhstan, Uzbekistan, England, Greece, Syria, Afghanistan, and Emirates. Although his time is monopolized by food, when Chef Aral is not cooking, he enjoys reading and photography.

Preparation:

KADIN BUDU KOFTE Ingredients: (Makes approximately 12 Koftas)

• 450g Ground Beef • 60g Onion, finely chopped • 6g Garlic, finely chopped • 1 Egg, raw • 60g Rice, boiled • 30g Parsley, chopped • 2g Salt • 1g Black Pepper powder For Frying • 100g Flour

• 2 Eggs, raw and beaten well • 500ml Oil for frying, ready for frying Garnitures and Sauce • 600g Potato Puree with Butter, ready to use • 60g Fried Onion, crispy • 120g Tomato, grilled, wedge cut • 90g Pepper, grilled • 120g Garlic-Yoghurt Sauce

Fry 1/3 (150g) of ground beef with garlic and onions. Then, strain the beef, and let it cool. Next, combine cooked meat and the remaining uncooked, raw meat (300g). Mix the meat with egg, boiled rice, chopped parsley, salt, and pepper. Knead the mixture well, and leave it in the refrigerator for one hour. Then, use your hands to shape the mixture into a patty shape. Dust each patty (Kofta) with flour and dip in the well-beaten egg mixture. Then, start to fry the patties until they become brown in color. Serve with potato puree, fried onions, grilled tomatoes, peppers, and garlic yoghurt sauce. Recipe presented by Ms. Jackie Weight There are few lip-smacking pleasures more satisfying than diving into a big, sticky, meaty plate of barbecued ribs or tender, juicy pulled chicken. But to coax the perfect texture and flavor from that meat takes more instinct, experience, food science know-how, and just a little bit of luck, than you think. Did you know, that in Sharm el Sheikh we have a World Champion of BBQ living among us? Ms. Jackie Weight has moved to Sharm 2 years ago, but her barbecue history started very long before. The Mad Cow Team, where Jackie was the Chief Cook, has won the overall “Grand Champion” title at the Jack Daniels Invitational BBQ Competition in Lynchburg, Tennessee. She was the first to win this title being a non-American and until today she is

the only one. In her Barbecue life she won a top 10 placing in each categories at The Jack and also won several Ribbons at other contests in the USA. Jackie took a BBQ Class with the famous Ray “Dr.BBQ” Lampe in 2003 and soon she has decided to compete in the Home of BBQ, the US. Jackie formerly had a farm with highly qualified cattle and carried the nickname “Mad Cow” for long. She is Head Judge for the British BBQ Society and in the US for the last 5 years and she’s been interviewed by numerous TV and Radio shows along the years, like Good Morning America, BBC, BBQ on Radio show and many more. “It’s more, than about the food – it takes a long time to cook low and slow. The things, that happen during all those hours make it, what it is.” - said Jackie. Though Jackie no longer competes, she is still a keen BBQ cook and loves cooking good American BBQ for friends and family. She gave us a precious gift today, the winning receipt of the BBQ World Championship: Stuffed Leg of Lamb

Method:

Stuffed Leg of Lamb Ingredients: 1 leg of lamb, bone removed

3 cloves of garlic – finely chopped

Stuffing

100g fresh breadcrumbs

150g dried Apricots – roughly chopped

50g chopped Almonds

1 onion – finely chopped

1 teaspoon fresh Rosemary – chopped

1 yellow pepper – finely chopped

Salt and Pepper to taste Olive Oil

Fry the onion, garlic and pepper until soft. Add the apricots, almonds and rosemary and fry for another minute. Add the breadcrumbs and fry for a further 2 minutes mixing well. Season with salt and pepper and set aside to cool. Remove the bone from the leg of lamb and lay out flat. Press the cooled stuffing into the leg of lamb leaving a border around the edges, roll tightly and tie with butchers twine. Rub the outside of the meat with olive oil and season with more salt and pepper.

To cook …. Either cook on a barbeque with a lid (ensure the lit coals are on one side and the meat is on the other with a drip pan filled with water set underneath the meat) and cook slowly for 4-5 hours; Or Place in a pre-heated oven set to 120C and cook slowly for 4-5 hours until the meat is tender. To serve, cut into slices and serve. If you can’t take the heat, get out of the kitchen! Get out the BBQ and surprise your friends and family with an award winning Lamb barbecue. T H E A N C I E N T P R E D AT O R S F R O M T H E D E E P By Hedvig Jeney Sitting on the cliff of the bay on a sunny morning, watching the blue sky and the endless sea. The world on the land is a peaceful haven. But under the surface of the dark blue water, there’s the wonderful world of the deep. Between many creatures, big or small, there is a predator humans fear since ages. The Sharks. Sharks have prowled Earth’s seas, essentially unchanged, for 400 million years, but modern sharks began to appear about 100 million years ago. Their size, power, and great, toothy jaws fill us with fear and wonder. Sharks have fascinated Man since primitive tribes saw sinister shadows in the waters off the beach. During the past few decades, men left their boats and the land to enter the sea, coming face to face with the symbol of their fear. Increasing knowledge allayed the fears and allowed us to experience one of the sea’s most perfectly-designed creatures. And though sharks kill only a few people each year, media coverage and movie portrayals of attacks have marked sharks as voracious killing machines. Our fears—and appetites—fuel an industry that hunts more than 100 million sharks each year and threatens to purge these vital predators from the oceans. There are 44 species of shark found in the Red Sea. Let’s learn to know these wonderful animals closer, understanding always works best on fear for humans. HOW DO THEY SMELL, SEE OR HEAR? Sharks have very keen olfactory senses, some species are able to detect as little, as one part per million of blood in seawater. To protect their eyes some species have membranes, which covers the eyes while hunting and when the shark is being attacked. However, some species, including the great white shark do not have this membrane, but instead roll their eyes backwards to protect them, when striking prey. Sharks have eyelids, but they do not blink because the surrounding water cleans their eyes. Although it is hard to test sharks’ hearing, they may have a sharp sense of hearing and can possibly hear

prey many miles away. Sharks also find prey hidden in sand by detecting the electric fields they produce. Ocean currents moving in the magnetic field of the Earth also generate electric fields, that sharks can use for orientation and possibly navigation. HOW FAST CAN A SHARK SWIM ? In general, sharks swim -”cruise” - at an average speed of 8 km/h, but when feeding or attacking, the average shark can reach speeds upwards of 19 km/h. The Mako shark is the fastest and can reach speeds of up to 50 km/h. HOW DO THEY SLEEP? All sharks need to keep water flowing over their gills in order for them to breathe, however not all species need to be moving to do this. It has been recorded that their eyes remain open whilst in this state and actively follow the movements of divers swimming around them and as such, they are not truly asleep. Species that do need to swim continuously to breathe go through a process known as sleep swimming, in which the shark is essentially unconscious. HOW INTELLIGENT IS A SHARK? Sharks possess brain-to-body mass ratios, that are similar to mammals and birds and frequently exhibits signs of social, playful and highly inquisitive behavior. Some species even appear to work as a team, when hunting. HOW LONG DO THEY LIVE ? Most live to between twenty and thirty years though the giant whale sharks which can be found off Sharm el Sheikh can live up to 100 years. BEHAVIOR The classic view describes a solitary hunter, ranging the oceans in search of food. However, this applies to only a few species. Even solitary sharks meet for breeding or at rich hunting grounds, which may lead them to cover thousands of miles in a year. Sharks can be also highly social, remaining in large schools. Sometimes more than 100 scalloped hammerheads

congregate around seamounts and islands. WHAT ARE THE MOST COMMON TYPES OF SHARK SPECIES IN THE RED SEA ?

being struck by lightning is ten times greater. BUT HOW SHOULD I MINIMIZE THE RISK OF BEING ATTACKED ?

Well “common” is an exaggeration as many Red Sea shark populations are in decline and endangered but if you are lucky enough to see a shark, the relatively more numerous Red Sea species include oceanic white-tip, scalloped hammerhead, silky shark, silvertip shark, tiger shark, whale shark, white-tip reef shark, zebra shark and grey reef shark. HOW DANGEROUS ARE THEY ?

1. Try to avoid diving at dawn or dusk, when sharks are at their most active. 2. Avoid murky poor visibility sea water, where a shark is most likely to mistake you for its’ normal prey. 3. Try to keep in a group, as sharks are more likely to attack an individual diver. 4. If you see a shark stay calm, don’t make sudden movements and keep an eye on it. 5. If you are too scared, then swim slowly and calmly towards the dive boat or shoreline. Did You Know... • There are over 400 different species of sharks. • Scientists can tell the age of a shark by counting the rings on its vertebrae. (similar to how they can tell how old a tree is by counting its rings!) • Until the 16th century they were known to seafarers are “sea dogs”.

Hundreds of thousands of tourists come to Sharm el Sheikh every year, many of them diving or snorkeling in areas where sharks are common, but as far, as I’m aware, there has only ever been very few fatal attacks. Statistically shark attacks are very rare. You are more likely to be killed by falling out of bed or by a toaster. Annually over one million people are killed in car accidents every year, but worldwide fatalities from shark attacks average just five a year. The risk of

• Baby sharks are called pups. • New research shows that sharks may be colorblind. • You are 1,000 times more likely to drown at sea than to be attacked by a shark. • Shark skeletons are made of cartilage and not bone, allowing for better flexibility. • Shark teeth have been thought to inspire the first tools created by humans, and were often used as tools themselves. • The most dangerous sharks are the Great White Shark, the Hammerhead Shark, the Tiger Shark, the Mako Shark and the Bull Shark. • Sharks’ wounds heal quickly. • Nurse Sharks are thought to be the laziest sharks, they refuse to move in cold months, have a limited diet and don’t need to move to breathe like other sharks. • Unlike most animals sharks can move both their upper and lower jaws, they can dislocate and protrude their upper jaw to grab and hang onto prey. • Funnily enough the largest sharks tend to be the most harmless, they eat plankton by swimming with their jaws wide open. • Some sharks have eyes similar to a cat’s, with a mirror-like layer,

that allows them to see better in murky water. • Sharks can feel vibrations in the water due to a line of canals that go from its head to its tail, these canals are filled with sensory cells growing hair, the hair moves when the water vibrates allowing them to quickly locate prey. • Shark Fin soup is a popular and traditional delicacy in Asia, Hawaii and Australia, but the practice of finning sharks is adding to the rapid decline of sharks and hurtful to the animals. Up to 73 million sharks are killed a year for their fins. • Shark skin is touch and hard and before the invention of sandpaper it was used to polish wood. • Sharks never run out of teeth, if they lose one another spins forward from rows and rows of backup teeth – A shark may grow and lose 30,000 teeth in its lifetime! Whitetip Reef Shark - Triaenodon obesus Common - Depths 1-60m The whitetip reef sharks are the wild cats of the sea. They are generally found sleeping on a sandy patch, as they are one of the rare sharks able to breathe without having to swim. They

generally hide in caves (juveniles) or on remote reefs. Very easily frightened, so quiet approaches are necessary. Where to encounter: The Shark Cave in Sharm, or any reef if lucky. Scalloped Hammerhead - Sphyrna lewini - Common - Depths 10-90m These are probably the most recogniseable and intriguing sharks which can be encountered during a dive. They appreciate warmer waters, and tend to school during summertime. They are curious, and like to come and check out divers. They like to stay far into the blue, before the currents hit the reefs. Where to encounter: Jackson Reef in Sharm. Grey Reef Shark - Carcharhinus amblyrhynchos Common - Depths 20-80m These sharks look much more massive, and can seem a bit impressive and intimidating at first. However, they are very shy, and will generally flee at the first noticed presence of divers. They particularly appreciate strong currents, and can be found at the precise spot where very massive water movement hits reefs. Where to encounter: Ras Gomaa in Sharm. Oceanic Whitetip - Carcharhinus longimanus Uncommon - Depths 0-50m Being the most opportunistic shark of the world, these oceanic sharks tend to gather in areas where boats stay during the night to feast on food leftovers thrown overboard. They generally ignore divers or even check them out for food. They should be treated as very

dangerous and care should be taken when approaching. Where to encounter: Elphinstone, Brothers, Daedalus, St-John’s Silky Shark - Carcharhinus falciformis - Uncommon Depths 0-40m The silky shark is one of the other oceanic sharks, observed in the Red Sea as lone sharks cruising generally close to the surface. They tend to have the same behaviour as oceanic whitetips, with the exception of the fact that they do not tend to be intrusive towards divers. Where to encounter: Ras Mohamed in Sharm. Tiger Shark - Galeocerdo cuvier - Uncommon - Depth 0-65m Although not very common in the Red Sea, it can happen that they choose out a healthy reef to hang out for some time, up to several months. In that case, males tend to gather around one large female. They will then be very territorial, and will chase all divers out of the area. Where to encounter: Any healthy reef around the Red Sea Oceanic Blacktip Shark - Carcharhinus limbatus - Rare - Depth 30-60m The only specimen of the species regularly observed in the Red Sea inhabits the reefs around Ras Mohamed in Sharm El Sheikh. It is generally observed in company of the huge school of barracudas, which loiters around between Shark and Yolanda Reef during the summertime. Where to encounter: Only reported specimen is in Ras Mohamed Mako Shark - Isurus oxyrinchus - Rare - Depth 0-70m+ The Mako Shark, the fastest fish in the sea, feeds on pelagic fish. It has been observed and filmed several times in the Red Sea, among these was an instance of one feasting on a carcass of a sailfish at the surface in the Straits of Tiran. Easily identified thanks to its big eyes, and the tuna-like extensions on the side of its tailfin. Where to encounter: Tiran and Ras Mohamed in Sharm … and many others …
