Azerbaijan Traditions and celebrations By: Farah grade 5

Azerbaijan Celebrates New Year, International Women's Day, Armed Forces Day, Independence Day of Azerbaijan, Nowruz and more. Nowruz is the most famous holiday in Azerbaijan. A month before Nowruz: Each Tuesday people celebrate the day of one of the four elements – water, fire, earth and wind. People do house cleaning, plant trees, make new dresses, paint eggs, and make national pastries such as shekerbura, pakhlava, shorgoghal, in additional to a great variety of national cuisine. How does Azerbaijan celebrate Nowruz? It is usually celebrated in the evening by performing rituals such as jumping over bonfires and lighting off firecrackers and fireworks.

Maiden tower\ (Qiz Qalasi) • Maiden tower has a very strong history behind it but I cant say the whole story right now so ill just shorten it. • If we are running out of time I don’t have to say it. Its gonna be the slide after this so im just gonna say facts about the MAIDEN TOWER • The Maiden tower is actually 2,600 years old yes I know its really old, • The view from the roof takes in the alleys of the Old City, the Baku Boulevard, the house of Isa bek Hajinski and the Baku Bay.

Maiden tower legend

(skip if we need to) (and yes legend we don’t

have the real story)

• Once upon a time, there was an ancient town-fortress of Baku. The fortress had a Fire Temple-Tower. In very ancient times, an enemy surrounded the fortress. The enemy ordered Baku's people to surrender but they refused. So the enemy launched a siege to get rid of the fortress and capture all inhabitants as slaves. Many fortress' defenders died trying to stop enemy attacks. Meanwhile, the enemy’s captain ordered the water supply lines to be cut. So everybody was thirsty inside the fortress (maiden tower). No water no food, only blood, and death. And the Supreme Magi, together with other priests, prayed to the Holy Fire in the fortress' Fire Temple-Tower, asking the God of Ahura Mazda to help the people. They prayed day and night asking Ahura Mazda to save their life and to push the enemy back. Finally, he heard their prayers. On the next day, the people saw that a large piece of the Holy Fire fell down from the top of the Fire Temple-Tower. A gorgeous girl came out from the fire. She had long fire-colored hair. The crowd went down on their knees and started to pray to her. She said: "Don't worry. I'll help and protect you. Give me a sword and a helmet. The enemy should not see my girl's hair, open a fortress' gate". Meanwhile, the enemy's commander was waiting outside for the fortress' pahlevan for one-to-one combat. If the fortress' pahlevan had won the fight, then the enemy's army would back away. But if the enemy won, they would capture the fortress and all surviving fighters would be slaves. The fortress' gate was opened and the enemy's commander saw that one pahlevan was coming to fight him. The heavy battle began. In one of God's blessed moments, the fortress' pahlevan dragged the enemy and put a knife direct to his neck. The enemy's commander screamed: "You win! Who are you? Take your helmet off. I want to see your face, pahlevan!" He took off the helmet and saw that the fortress' pahlevan was a beautiful girl with long fire-colored hair. He said suprisly: "Oh, you are a girl! You are a brave and beautiful girl! If girls of Baku are so brave, I'll never capture your fortress! Don't kill me, beauty!" He fell in love with her for her beauty and bravery. He asked her to marry him. Of course, the girl did not kill him. She fell in love with him too for his open heart. Thus, the enemy did not capture Baku and the local people named a tower as the Maiden tower.

Maiden tower I have actually visíted this tower before

Azerbaijani Food: 6 Most Popular and Traditional Dishes / drinks to Try

• By Aisha Aghaisyeva 8A

1 – Plov – Traditional Rice and Meat

One of the most well-known dishes in Azerbaijan is plov. It can have different names, depending on the main ingredients used. Essentially, plov is a rice-based dish. It can be accompanied by a wide range of delicious foods and combinations. Govourma plov (fried plov) and sebzi govourma plov (sebzi is cooked pieces of meat or meatballs with greens and onions) are just two of many other popular plovs in Azerbaijan. When it comes to the rice, Azerbaijani's love to steam long grain rice with saffron, giving it a delightful aromatic quality. The rice is then finished with a layer of golden crust, or gazmag, at the bottom.Gazmag is made by mixing flour, butter, eggs, and yogurt. If those ingredients are not available, placing the rice on the lavash (flat bread) or peeled sliced potatoes also works well.Plov is an important Azerbaijani food. It’s been cooked in the country for generations.

2

‘Khan Ashi‘, or shah plov, consists of a hearty rice base,

– Shah Plov – Traditional Rice with Fried Dough

topped with meat and finished with a crust of fried dough. The crust is a distinguishing detail of shah plov. It is made of flaky lavash, in which the plov is cooked. Once you’ve steamed your saffron-infused rice, you can top khan ashi with a wide range of ingredients. These include chicken or meat, roasted chestnuts, nuts, dried apricots, prunes, raisins, and other dried fruits and different seasonings. Since the dish can remain warm for up to several hours after cooking, it is perfect for weddings, parties, and other special occasions.

3 – Dolma – Stuffed Grape Leaves

The name of this dish originates from the shortened Azerbaijani word ‘dolma’, which means ‘stuffed’. Dolma is a traditional Azerbaijani dish, which is also popular in Eastern Europe and in Mediterranean cuisine. Essentially, it’s a mixture of meat, onion, rice, peas, and spices, wrapped in grape leaves or stuffed in vegetables such as tomatoes, sweet peppers, or eggplant. Dolma is usually bite sized. It should be filling, but never too big. Served with a large scoop of creamy garlic yogurt sauce, or gatyg, these pockets of goodness are truly divine. Dolma is eaten with a wide range of fresh ingredients, like bread, tomato, cucumber, and other greens. Dolma is an important part of Azerbaijani cuisine. As a food, its simple, filling, and utilizes many of the country’s available ingredients.

4 – Saj Ichi – Azerbaijanian Barbecue

Many Azerbaijani foods, even today, are still prepared with ancient cooking methods. Traditionally, cooking in copper or clay pots has given Azerbaijani cooking a unique and distinctive flavor. Saj ichi is Azerbaijan’s take on barbecue. Traditionally, lamb is the meat of choice, as it’s been eaten in the country for centuries. Once you’ve diced your lamb, you cook it over hot coals, in a copper pan, with cubed potatoes, eggplant, bell peppers, onions, and tomatoes. This delicious dish pairs perfectly with Ayran, which is a super refreshing and healthy Azerbaijanian-Turkish drink, made of water, yogurt, and salt.

5 Black tea

This is the most common type of tea in Azerbaijan, where tea is highly appreciated in general. Some even consider the black tea to be the national drink of Azerbaijan. It's served with lemon, honey, sugar and different small snacks, mainly after a meal, to improve digestion.

6 Sherbet • Sherbet is the second most common thing t drink in Azerbaijan after a fine cup of tea. It's made of herb water with saffron, mint, and basil, to which some fruits, berries, lemons, and sugar are added. This drink is served cold, and it's very refreshing in the hot summer months.

Letut - Finnish Pancakes These pancakes belong to Summer! They are thin, golden brown and crispy on the edges. They can be served with sweet or savory fillings but the most traditional way is to enjoy pancakes with jam (raspberry, strawberry, apple…), topped with whipped cream. Pancakes can easily be fried on a stove but they taste better when they are fried on an open fire.

Ingredients 3dl fresh milk 1 egg 1 tsp salt 1-2 tbsp sugar (optional) 2 dl (all purpose) flour Butter for frying

Directions Step 1 - Mix all ingredients together in a bowl. Let sit for 15 min. Step 2 - Place a nonstick frying pan (for example an omelet pan) on a stove. Set the stove on medium hot heat. Step 3 - Put about one tablespoon of butter on the pan and let it melt. Then, pour about one deciliter of pancake mix. You can shake the pan carefully to make the mix spread evenly on the pan. You should have a nice ring of butter around the mix. That gives the pancake delicious, crispy edges. Step 4 - When the dough has set, flip the pancake with a thin spatula. Fry the pancakes 1-2 minutes on each side, until they are golden brown. Step 5 - Add your favorite toppings and enjoy! Recipe by Ms. Maisa; Photos by Ms. Taija

Jordan Wadi Rum lies in the far south of Jordan. It is about 300km (185mi) south of the Capital Amman. It was officially protected as early as 1997 as ‘Wadi Rum Protected Area’, and now comprises an area nearly as large as New York City!

An Open Air Library Besides stunning desert landscape, Wadi Rum also boasts astounding cultural landscape. 25,000 petroglyphs (rock carvings), 20,000 inscriptions, and 154 archaeological sites have been discovered within this place. These discoverings illustrate the 12.000 years of human occupation in the Wadi Rum desert. They tell us stories about the history and evolution of human activity in the Arabian Peninsula. This was one of the reasons for UNESCO to put our desert on the World Heritage List.

Nasi Lemak History: Origins of Malaysia’s National Dish

• Variations typically replace the main protein with curries like rendang, fried chicken, seafood, more vegetables, or a non-halal meat like pork. Because of the versatility, the dish has been embraced by all ethnic groups in Malaysia.

Origins of Nasi Lemak

Like many famous dishes, nasi lemak does not have one definitive origin story, rather it has multiple possible creations all of which originate from Malaysia itself.

The first comes from the 15th century in Malacca, just outside of Kuala Lumpur. A daughter accidentally spilled coconut milk into a pot of boiling rice. When her mother, named Mak, came home from work she asked her daughter what was that fragrant smell. The daughter responded, “Nasi le, Mak!” meaning, “Rice, mother!” Hence, the possible origin and name for nasi lemak.

Another possible history of the dish comes from farmers where they made a cheap, filling and complete dish full of carbs and the country’s seafood and coconuts. The dish gave them energy and sufficient fats to be able to work the fields all day.

While origins of the dish could trace back centuries earlier, the first written evidence of nasi lemak was seen in 1909 from a British administrator who noted that the rice made with coconut cream instead of water was served at weddings and local festivals.

After World War II, the dish further popularized as a workers meal who feasted on the hearty plate for breakfast. On their plates was the creamy rice, fried fish or fried prawns, and kangkung, or the water spinach.

In the 1970s, nasi lemak for breakfast became a thing as it was neatly all packed in banana leaves as sold as cheap as 30 cents.

For the next decades, as the dish spread and varied throughout the country, it was eaten beyond breakfast and proudly by every Malaysian.

Russian winter • Winters in Russia are cold and snowy. It normally starts in November and lasts until April when the last snow melts down. It is really cold in Siberia, the temperature may fall down to – 40 degrees and giant snow drifts. However, it is not so cold in Moscow and other European part of Russia, the usual temperature is between 0 and minus 20.

Maria (Masha) Kravchenko, 2C Russia

• Wintertime in Russia is always fun for children and there are lots of games and activities, as well as sports. You can go cross-country skiing, alpine skiing, ice skating, ice hockey, ride a sled. Children can ride down the ice slide on special plastic seats or without anything.

Maria (Masha) Kravchenko, 2C Russia

• When the temperature goes up to around 0 degrees, snow becomes sticky. It is a perfect time to play snowballs or build a snowman. A snowman is usually made of two or three giant snowballs, sticks for hands and a carrot for nose, like on the picture. Besides there are such wonderful holidays in winter like Christmas and New year!

Pelmeni (Russian dumplings) Anna Kravchenko, 0B Russia

Pelmeni is a traditional meal of the Russian cuisine. They are meat balls wrapped into thin dough. It is said that they originally came from Siberia or Ural mountains and are similar to dumplings or dim sum in Chinese cuisine.

Nowadays they are very popular in Russia among grownups and kids as a quick and nourishing food, as you can find them in the supermarket cooked and frozen. Just add them to the boiling water and in a couple of minutes they are ready. However, they are tastier if you cook them at home. In some Russian families there is a tradition of all family members cook them together and even small children can cut dough circles with a glass or help wrapping meatballs.

Kısır -the healthiest meal mankind can crave

• Kısır is a meal -though not as popular as foods like çiğ kӧfte and mantı- that is fit for any time of the day. Whether you are in a morning rush or just hungry, Kısır is fit for it all. Don’t even worry about microwaving it; it’s meant to be eaten cold! Plus, it’s healthy -so no excuses.

Ingredients: 2 cucumbers 1 big tomato 7 large leaves of lettuce 2 handfuls of chopped parsley A tablespoon of chopped onions 1 small clove of garlic Half a lemon 500 ml (5 person) fine bulgur wheat Hot water 1 tablespoon tomato paste 1/2 tablespoon pepper paste 3/4 tablespoon pomegranate syrup 1 tablespoon butter 125 ml (half a cup) olive oil 1 teaspoon dry mint 1 teaspoon dry basil 1 tablespoon of salt

1. In a mug dissolve the salt in the water. In a bowl combine the sifted flour with the yeast. Add salty water to it and stir through (if it’s very sticky, add a little bit more flour). Work the dough with a wooden spoon or with your hands until the dough comes off the bowl and gets smooth. Leave the dough in the bowl, cover with a clean cloth and let it rise for 30-40 minutes or until it has doubled in bulk. 2. Once it is rested, carefully tip out the dough onto a floured surface, stretch out into a square and cut out about 10 cm (3,93 inch) round shapes with a big glass (big cookie cutter also good). Stretch out each piece with your fingers into a rund shape with the centre being thinner than the edges. Let the pieces rest for another 30 minutes on the floured surface. 3. In a saucepan heat sunflower oil. Place lángos into the hot oil, fry it on one side until golden brown then turn. Repeat with the remaining lángos dough. 4. Serve while it’s hot. You can eat it simple or sprinkle with chopped garlic or douse with garlic water and top with grated cheese and sour cream. 5. Enjoy!
