Prevailing Whims of Summer Summer has much of what makes us happy. Mahatma Gandhi said: “Happiness is when what you think, what you say, and what you do are in harmony.” His wisdom is incredibly appropriate as we enjoy our hiatus from the normal hustle and bustle. As parents, we never experience more freedom than the summer months. School is out, and the boss may be too, therefore we can launch from thought into action as quickly as sun-soaked kids after an ice cream cone. From a dip in the pool, to that dip in a cone — giving in to the prevailing whims of the season, and doing so at a moment’s notice, can definitely bring a well-deserved slice of happiness. Swimming, boating, and family time at a slower pace — life at a lake house has much of what North Texans desire for their summer break. Thanks to record-setting rainfall, the frown of the drought has been turned upside down, leaving many to ponder the purchase of some of the area’s more relaxing real estate. Writer Jim Dale helps us take a second look at what it means to live the lake house dream. After reading his piece, you may ask yourself if you are ready to take the plunge. Traveling is another way we love to enjoy our free time. But what if you worked for a global travel company? Well, if you happened to spend your 9-5 at Sabre, you would be working at one of the happiest companies in America, according to a recent survey. Our Editor, Audrey Sellers, spent some time with the CEO of Southlake’s largest employer to better understand how the culture of happiness prevails so close to home. What she found was a company that prides itself in engaging its employees on all facets of work and life. Employees at Sabre are responsible for processing more than $110 billion of travel spend each year. Thanks to leaders like Tom Klein, they do so with a smile on their faces. Anything You Can Do, I Can Do Better In her fifth studio album, Male, Aussie-born Natalie Imbruglia covers the work of male artists across the pop, rock and classic rock spectrum. The Sony Masterworks album, the first she has recorded in six years, features 12 tracks originally written and/or performed by familiar male crooners. From Daft Punk and Zac Brown Band to Neil Young and Tom Petty, she obviously wasn’t aiming to please any particular age demographic. The album also features a bonus track: the radio edit track one, “Instant Crush” by Daft Punk.

Something Old, Something New It’s always exciting when a previously unknown manuscript from a notable author is discovered. But when this author is Harper Lee, and the new manuscript is a sequel to her Pulitzer Prize-winning classic, To Kill a Mockingbird, consider it an historic literary event. Ironically enough, Go Set a Watchman was the novel Lee first submitted to her publishers – before To Kill a Mockingbird. Written in the mid1950s, Go Set a Watchman catches up with Scout about 20 years later as she adjusts to events taking place in America during this same time period.

SOUTHLAKE CARROLL LACROSSE DECLARED THE BEST IN TEXAS The men’s high-school Dragon lacrosse team has been deemed the best in Texas. The team was awarded the Bob Patterson Trophy and recognition as the state’s top program. The annual award, presented by the Southwest Lacrosse Officials Association (SWLOA) membership, recognizes the top Texas men’s high-school program for their sportsmanship, quality of play, respect for the game’s character, and the honor that they bring to the sport. Tim Cagney, President of the Dallas/Ft. Worth chapter of SWLOA, presented the trophy along with the award’s namesake, Bob Patterson, a former President and Chief Referee of the SWLOA, at the Dragons’ year-end banquet in May. Each player received a medal, and the Southlake Carroll Lacrosse Association (SCLA) has a trophy on display at Carroll Senior High School. CARROLL ISD USHERED IN A NEW CLASS OF GRADUATES The Carroll ISD Class of 2015 graduated at Dragon Stadium on Friday, June 5. The Class of 2015 included 668 Dragons. This year’s valedictorian was Chandler Groves and the salutatorian was Anthony Munson. Groves plans to attend UT Austin on an exclusive scholarship. Munson will attend Harvard. Before graduating seniors walked across the stage, personalized messages from family and friends appeared on the Dragon Stadium video scoreboard. After the Commencement ceremony, families were welcomed on to the field to congratulate and take pictures with their graduate. GRACE ANNOUNCED 2015 GALA CHAIRS In May, GRACE announced Stacey and Kevin Chase as the 2015 Chairs for the GRACE Gala, championing 12 outstanding years of vital program funding. Since 2013, Kevin has served on GRACE’s Board of Directors and has provided development expertise in various capacities, including Drive into the Night and the Gala Sponsorship Committee. Stacey has been instrumental to GRACE through her leadership in the Gala Auction Committee. Stacey also volunteered twice a week for the past several years at the Food Pantry, where she collected grocery

KENNY HILL MADE THE MOVE TO TCU It’s official: Former Carroll quarterback Kenny Hill has joined Texas Christian University in 2015-16, and will be joining the football team. Classes started June 1. As a transfer, Hill will have to sit out a year before playing. This gives him some time to hit the film and weight rooms while Heisman Trophy candidate, Trevone Boykin, plays out his senior year. WESTLAKE ACADEMY HONORED TEACHER OF THE YEAR In May, Westlake Academy honored six teachers for being finalists as Teacher of the Year at a special staff appreciation luncheon. Finalists included Nicole Bauer, Shannon Ward, Suzi New, Rhoda Hahn, Stephanie Alexander and Amanda Bunch. Rhoda Hahn was the recipient of the 2015 Teacher of the Year award, the second teacher in the Academy’s history to be awarded this honor. Last year the tradition began with fourth grade teacher Kat Calzini taking the honor. A selection committee coordinated by the Campus Leadership Team (CLT) selected the winner. The CLT is made up of students, teachers, administration, and community members from Westlake and Keller. After submissions to the team from parents, students, teachers and staff, the list was narrowed to six nominees. The selection committee makes their decision based on several criteria including teaching 21st century skills, using new competencies graduates need and classroom atmosphere.

DAWSON PERFORMING ARTS COMPANY WOWED THE CROWDS WITH ALADDIN Disney’s charming tale of adventure, friendship and transformation took on a glorious new twist at Dawson Middle School in May. Dawson Performing Arts Company (DPAC) created a must-see experience with a culturally rich version of Aladdin. The goal of DPAC’s production was to introduce audiences to an alluring geographic experience, a vibrant musical score and diverse talent. Billed as the biggest production ever performed on the DMS

stage, Aladdin lived up to the hype. Student involvement was at an all-time high as Aladdin featured 30 performers, 15 technical crew members, as well as poster art and stage sets designed and crafted by Dawson Art students. Director and theater arts instructor, Michael McNay, said: “Not every student has an interest in being a performer, but the beauty of theatre is that there is a wide range of needs and interest areas that need students of all skill sets.”

Working with Shawn Duhon, Principal of Carroll Senior High School, Grubbs Infiniti created Drive2Excellence in 2014 to encourage students to work harder in school and achieve better grades. Grubbs said, “Of course, we gave them a great incentive: a brand new Infiniti to drive for a year.” CRUISE HOLIDAYS OF SOUTHLAKE IS NOW SHANGRI-LA WORLD TRAVEL Last month, the former Cruise Holidays of Southlake boutique travel store rebranded as Shangri-La World Travel, a fullservice agency providing customized travel management for land and sea. The store was formerly a cruise-centric vacation management company, working closely with 22 worldwide cruise partnering vendors. President of the company, Mike Currie, explained that: “After nine years of marketing our local business as a Cruise Specialty Store, Gloria and I feel it is time to promote our global abilities for customization of land-based travel as well. On June 1, we joined the Signature Travel Network, and via their inventory and technology, we will be able to serve [clients] even better.” Shangri-La World Travel has joined forces with prestigious travel consortia, Signature Travel Network. Owning an ideal lakefront home in North Texas can bring great rewards. But only if you’re willing to weather the ups and downs. By Jim Dale

Texas lakes get dry, Texas lakes flood. Occasionally, Texas lakes find some sometthing hing like equilibrium in between. To T o anyone contemplating buying the perfect weekend getaway, the prevailing sentiment this year is to come on in – the water is fine. But only after taking the time to do some background work, study the lay of the land, seek the advice of a lakefront property expert, and prepare to ride the tide of highs and lows that can come with investing in a utopian slice of Texas heaven.

Lakes throughout central and North Texas are ranked among the prettiest in the country, with picturesque waterscapes that range from Lake Fork’s endless forest of tree stumps to Lake Grapevine’s long, deep abyss (ideal for sailing), to Possum Kingdom’s inspiring limestone cliffs and Lake Texoma’s endless interstate expanse. But the experience of owning the perfect weekend getaway in Texas can be as varied as Texas itself. Each lake can have its unique charms and challenges. Texas lakes are either constant-level, meaning the water level remains more or less the same regardless of rainfall or seasonal conditions. Or they fluctuate – meaning they can swing wildly from sandbag-the-shoreline overflow to stickyour-boat-oar-in-the-mud drainage. The U.S. Army Corps of Engineers, which manages water levels for most lakes in the region, recently closed Lake Lewisville to boating, fearing that the wakes from power boats could flood houses along the shoreline. And Lake Travis swung from three-fourths empty to nearly full within just a few weeks. So far, 2015 has seen the most drastic changes in water levels – and the buy-or-sell movements in the lakefront real estate market that go along with it – in recent memory. Thirty-five trillion (that’s 12 zeroes) gallons of water flowed into the region’s lakes during the last two weeks of May, much of it pouring over the spillways of North Texas lakes to top off successive bodies of water situated along the river basins downstream. “It can be a rocky ride,” says Craig Scantlin, a business owner from Houston who grew up on Texas Hill Country lakes and has bought and sold property on Lake Buchanan, Lake Austin and others. “It can be a very rewarding investment, both financially and in terms of having a great place to get away with the family on weekends and holidays. But you just sort of have to accept that it isn’t like living on a beach where you pretty much just have the tides to deal with.” Scantlin adds that it’s up to any potential buyer to do the homework. “I’ve seen people build out on a beautiful peninsula one year and then realize that they’re 400 yards from the water just a couple of years later.” A Fluid Real Estate Market Real estate broker and lakefront property specialist Todd Grossman of RealtyAustin says the key to happiness can be working with someone who can help advise on the many issues that go along with ownership. Everything from Corps of Engineers regulations on dock length and boat sheds, which can differ from lake to lake, to the availability of prime properties that may never see real estate listing systems can impact a buyer’s experience, he says. “Many people who get involved in Texas lakes are those who may have grown up around them or maybe gone to school in Austin and then JULY 15 • 27

moved off to Dallas or Houston to work. They’re successful, and then they want to get back to what they remember – a Lake Travis or Canyon Lake.” Many of those buyers, Grossman says, are familiar with the moods of Texas Lakes, but not all. “They’re pretty astute homeowners for the most part. They understand the water-level issues, but also the nature of each lake – where the stumps are, what the restrictions are – and that’s critical.” For instance, 22-mile-long Lake Austin, among the most preferred constant-level lakes in Texas, only has fuel availability for boats within a mile or so of its dam. “So people may want to buy a beautiful property and keep a large boat way up at the other end not realizing that it’s a long, long trip down the lake for gas,” Grossman adds. “Twenty-two miles down a lake in a boat isn’t exactly the same as the same distance over roads in a car.” To Detect and Conserve The U. S. Army Corps of Engineers is tasked with, among other things, monitoring and controlling water levels on approximately two-thirds of Texas’ 170 lakes. The Corps’ primary mission is to ensure water conservation and work to manage the floods that have long been a part of Texas history. To do this, the Corps operates an intricate system of drains at lakes under its jurisdiction, releasing water in a controlled upstream-to-downstream process that, under ideal conditions, minimizes high water at vulnerable areas and maximizes water supplies for both Texas’ fast-growing urban areas – Dallas, Austin, Houston – and the state’s vital agricultural and industrial areas along the coast. 28 • JULY 15

Various Texas lakes are also managed by water authorities – Possum Kingdom by the Brazos River Authority and the Highland Lakes of Central Texas by the Lower Colorado River Authority. Some lakes are even managed by municipalities – Lake Ray Hubbard is operated by the City of Dallas and is managed by the city’s utilities department. A near-perfect tug-of-war exists between people who live along the rivers and around the lakes and these authorities, seeking to find a delicate balance among various lake water stakeholders. “It goes on year after year,” says Scantlin. “It isn’t an easy process – prioritizing the needs of the many versus the needs of the few. But hey, that’s Texas and you gotta love it.” Waterfront Living Goes On – Regardless Matt Meadows, who owns and operates the only ASA-certified sailing school on Lake Lewisville and maintains a fleet of sleek J24 racing boats for hire, says that recreational life on Texas lakes goes on regardless of lake levels. “People are going to come to the lakes, no matter what. We’re all drawn to water whether it’s for sailing or fishing or recreation, or to hang out at a marina or relax at a weekend home. Of course, plenty of water is generally a good thing for business.” The more a buyer or existing property owner knows the better, says Grossman. And a wealth of resources exists to keep information flowing. “Some are good and others are not,” he adds. Virtually every lake has one or more websites, and the Corps of Engineers and other agencies maintain updated sites showing current lake levels. place to start for information regarding an individual lake. “It helps if you’re in it for the long haul,” says Scantlin. “For a chance to get away from the city and watch the grandkids grow up over the decades, there’s nothing like it – Texas lakes are awesome. Whether the water is on your back porch or a football field away, people are still going to get wet and the barbecue will still happen.” Overall, levels in Texas lakes can be as varied as the lakes themselves. From record drought conditions in 2011 to historic rainfall and flooding in 2015, lakefront living can present both exceptional challenges and rewards. But the lakes themselves mirror the general optimism and beauty that comes from living in North Texas. And that’s something that remains perpetually high.

Texas Lakefront Property Sales: A Snapshot Although not all lakefront property reaches real estate listing systems – many high-end homes are sold before they ever hit the market – pricing and availability of prime properties can swing as wildly as most lake levels. As of mid-2015, nearly 400 properties are listed for the Highland Lakes (Buchanan, Inks, LBJ, Marble Falls, Travis, Austin and Lady Bird), with more than 300 sales recorded during 2014. While listing prices over the last year range from $50,000 to more than 10 times that amount, the average lakefront property sold for nearly $800,000.

With 2015’s record rainfall, many owners see topped-off lakes as a signal to sell for higher value. “That isn’t always the way it works,” says RealtyAustin’s Todd Grossman. “High water may sustain the lakes and keep values up for two to three years, but after that, who knows. Prices tend to find a state of balance just the way the lakes in Texas do over time.”

om Klein met us (Southlake Style’s publisher, editor, art director and photographer) in the lobby of Sabre Corporation with a handshake and a smile. You wouldn’t expect the president and CEO of one of the world’s largest travel technology companies to greet you in person, but Klein was happy to welcome us himself. He strolled with us through Sabre’s sprawling campus that sits right off Highway 114 in Southlake, giving us a personal tour of the building that’s home to 2,800 employees. Sabre is the leading provider of technology to the global travel and tourism industry. At peak times, Sabre processes more than 100,000 messages per second. Headquartered in Southlake, the company operates offices in approximately 60 countries around the world. Inside Sabre’s bustling global headquarters, people navigated from one place to the next, pausing momentarily to chat with a colleague. The place was abuzz with activity – but a good kind of activity. People weren’t frantic or harried. They were purposeful. In the cafeteria, a band entertained the lunch crowd with live music that wasn’t too loud. Employees sat grouped together at circular tables, eating, laughing, and seemingly enjoying their workday. Everybody looked so happy. It’s probably because they are. Last year, Sabre landed a spot on CareerBliss’ fifth annual “Happiest Companies in America” list. CareerBliss, a fulfillment-focused job search site, determines the 50 happiest companies each year. It looks at the major factors that impact professional happiness: work-life balance, an employee’s relationship with his or her boss and co-workers, office environment, job resources, compensation, opportunities for professional development, and company culture. When all of these factors were evaluated, Sabre surfaced as No. 31. We wanted to find out why – and perhaps pick up a few pointers from Klein. Looking to make us happy, he obliged. He led us into his office (which is actually a larger-than-average cubicle with a wall of windows overlooking lush, green trees below). We all gathered around a long, rectangular, cocktail-height table. Klein preferred to stand while we took our seats. Everyone cracked open a cold bottle of water, and then we got down to the purpose of our visit: How did Sabre become one of the country’s happiest companies, and what can others learn from its success? CREATING A CULTURE OF HAPPY The answer could have taken any number of paths, but Klein summed it up simply: Create an environment that fosters friendship and collaboration. “Having friends at work matters. Having camaraderie with people and collaborating with people you like matters,” Klein says. “We try to create an environment that gives people the chance to explore friendships.” Considering that adults who are employed full-time work an average of 47 hours per week – almost a full workday longer than the standard 9-to-5 schedule – according to Gallup, creating a friendship-focused culture is a smart strategy. People are logging more hours at work than ever before. If you’re going to be at the office, why not be working with people you like? It’s what works for Klein and the people at Sabre – whether they’re in Southlake or at one of the company’s offices around the globe. Sabre offers several avenues for employees to build friendships at work. There are the lunchtime concerts (which happen weekly). There’s a cricket league that plays on campus. There’s even a 5K that employees can run or walk right on Sabre’s grounds. If it’s not the friendship-friendly atmosphere that has employees riding high on 36 • JULY 15

happiness, it’s some of Sabre’s unique perks. The company has an onsite medical clinic that’s staffed with a nurse practitioner. If a headache or runny nose has employees feeling down, they can swing by for treatment. If they’re traveling and want to get up to date on their vaccines, they can do it right on campus. No need to book an appointment, either. They can just walk right in. “We’re interested in the health and welfare of our employees,” says Klein. “Healthy employees are good for everybody. It’s good for the company, and it’s good for the people who work here.” Sabre also invites employees to keep track of things they do to stay healthy. As a result, they receive wellness credits, which allow them to get a discount on their health insurance contribution. Sabre’s community involvement is another reason employees are smiling. The company has two campaigns that run concurrently each year: Give Together and Give Time Together. Give Together raises funds for local charities, and it’s done at each of Sabre’s offices around the world. Give Time Together is about going out as a group and doing work in the community. The Sabre team has gotten together to do activities such as building a Habitat for Humanity house and volunteering with GRACE. “We try to keep people involved and give them a chance to interact with each other in a way that’s different than just the day-to-day workplace,” says Klein. “Employees are happy that we give them the time to do these things. It’s not really the company doing good; it’s the company allowing our teams to do good and people to do good in the community.” Community involvement isn’t just something that’s talked about – it’s encouraged and celebrated at Sabre. “When we find people who are doing extraordinary things, we highlight it,” says Klein. “Culturally, it’s become important.” DECIPHERING HAPPINESS Of course, when it comes to happiness, everybody is different. “As a leader, you have to be able to tap into the individuals and try to understand what motivates them,” Klein says. “Then you need to get them to do the right stuff. It’s not simple.” Some companies have Chief Happiness Officers and Employee Happiness Directors – people dedicated to creating a culture of happiness. Sabre doesn’t have any of these positions. Instead, it keeps its finger on the pulse through employee surveys and committees. Every couple of years, Sabre conducts a deep employee survey. One will be going out to staffers this year. “We want to get a feel for what folks are thinking about and what’s important to them,” says Klein. “We want to address all the things that matter to people when they come to work every day.” Once the survey results are in, employee committees are established to address different aspects of the survey. Employees are asked to champion ideas and make recommendations. Klein doesn’t just want the executive team to see the results and make some adjustments; he wants to create a dialogue. “It’s important to get out and talk to folks,” he says, “and have employees tell us things they’d like to see or changes we should make. I think that matters.” Getting out and talking to people is a big part of the happiness culture at Sabre. Klein isn’t holed up in an office all day with the door shut. In fact, Klein doesn’t have a door. He doesn’t even have an office. Anybody can walk into his cubicle and share what’s on their mind. “Being inclusive and having a leadership team that’s open and available is crucial,” he says. That’s how everyone stays on the same page. It’s how employees understand their purpose for being at work every day. It’s how trust is built. “It starts with making sure everyone understands what we’re trying to do as a company,” he says. “Then we can celebrate successes as they happen. People like to feel that progress.” Open communication and regularly celebrating employees’ successes are two defining characteristics of Klein’s leadership style. And, like most leaders, his style has evolved over the years. Before joining Sabre, Klein held a variety of sales, marketing and operations roles at American Airlines and Consolidated Freightways, Inc. His first role with Sabre was leading a Sabre joint venture in Mexico. Klein then went on to serve in a number of leadership roles at Sabre, including company president and group president of Sabre Travel Network and Sabre Airline Solutions. In these roles, he learned how to motivate people in effective ways. He never wanted his employees to act out of fear or because they were told to do something. Instead, he inspired employees to work at something because they would be successful at it. “Great leaders get stuff done with influence – not a big stick,” Klein says. “It’s important for employees to know that you’re behind them and that you have their back.” When employees do well – even if it’s not at Sabre – Klein feels fulfilled. During his career, he’s had employees 38 • JULY 15

go off and start their own companies or take big jobs at other companies. He’s happy for them all the same. “The most rewarding part of the job is seeing people succeed; seeing them get wins,” he says. “Whether it’s a career win by getting promoted or seeing someone have personal success. That’s increasingly the enjoyable part. I take a lot of pride in their success.” DON’T FORGET TO HAVE FUN Laughter is another key component in a culture of workplace happiness. Something that makes Klein laugh is what he calls “Dilbert” moments – those times when the company is at risk of becoming a parody. On NBC’s “The Office,” which had its final episode in 2013, Dunder Mifflin, the much-adored fictional paper company upon which the show was based, was acquired by a company called Sabre. Michael Scott, the paper company’s endearingly foolish manager, mispronounced Sabre as sah-bray, and the next run of episodes played out in uniquely funny ways. “We got a big kick out of that story line in the show,” says Klein. “I always think: We’re just one step away from being Michael Scott or a ‘Dilbert’ cartoon. Any time I see a ‘Dilbert’ moment coming, I just have to laugh.” Outside of the office, Klein cooks, skis, attends art shows in Dallas, and, although he’s not a “sports guy” (as he puts it), he sometimes catches a Rangers or Mavs game. His family keeps him busy. He’s been married for 20 years, and he and his wife have two daughters: a 14-year-old and 16-year-old. His oldest daughter just started driving. “It’s an eventful time,” Klein laughs. With his daughter now behind the wheel, Klein has just one more reason to smile.

THROWING THE ULTIMATE BACKYARD


I

t’s your turn to throw the annual neighborhood block barbecue. Although you may not be a stranger to barbecues in the backyard, maybe you aren’t so adept at hosting events for larger groups. You can make it as simple as you want, but who doesn’t want to impress friends with the ultimate backyard barbecue bash? We’ve hashed out the details and made it as easy as any pie you might serve up with your barbecue fare. From outdoor seating and music to what you’ll grill and serve to drink, your backyard barbecue bash will be the talk of many HOA meetings to come. There is one more item to note before we get to the meat of the article. For the love of all things Texas, host your party in the evening. Inviting friends over to bake in your backyard is just un-neighborly.

Setting the Scene

Here are the key points to cover when creating the atmosphere for your get-together. -Seating You know your neighbors. (It’s not like you’d be hosting this backyard party for strangers.) So you know how many of them are coming. You have a few options here to accommodate the number of guests you are expecting. One option is buying additional patio furniture. But then after the party, you’re stuck with 25 outdoor lounge chairs to store. Our suggestion is to rent additional seating or tables. Each rental facility is different, but generally, if you give them an estimate on how many people you are expecting, they can narrow down the choices for you.

-Décor What goes along with planning areas for guests to perch is how you will set the mood with decorations. First on your list of things to “decorate” with are citronella candles. Be mindful of the rain we have had over the past few months and the fact that mosquitoes might turn the tables on your get- together and feast on you. Aside from this mood lighting, hanging lanterns and strings of lights will do wonders to brighten up any evening-shaded areas. The classic red-and-white checkered tablecloths will do fine, but you can easily add a punch of panache with centerpieces that are both functional and rustic chic. Mason jars with burlap ribbon affixed to them make great holders for whatever serving and eating utensils you plan to use. Grab a small crate or two to place next to the jars for holding necessities such as napkins and condiments. Simple touches like this will take your barbecue bash from “Why are we here?” to “Wow.”

-Entertainment Here’s an idea that may be a little over the top, but well worth the awe factor: Hire a local band or musician. You will want to check with your HOA to see if this is allowed, and if it is, ask around for up-and-coming talent. If this option is not feasible, just make sure your playlist has a good mix of rock and pop —appropriate for young ears as well. You don’t want to be that neighbor. But you do want to be that neighbor who treats your guests to fun and games. Backyard games such as horseshoes and washers can be rented if you don’t already own them, and they give partygoers something else to do besides eating and drinking. If conversations wane, there is nothing like a little friendly competition to liven things up again.

Get Cooking Part of the fun of throwing a backyard barbecue is showing off your skills as a grill master. But first you need the right tools. Josh Worley, store director of Barbeques Galore in Grapevine, says he encourages people to stay away from big box retailers when purchasing a quality grill. “Not because they don’t sell good products,” he says, “but when going to specialty retailers, you have the opportunity to interact more with employees who can help teach and guide you in everything outdoor.” Besides that, doesn’t everyone want to shop local these days? The biggest determining factor when purchasing a grill is the number of people you plan to feed. “If you’re planning on feeding 20 guests, the best grill to accommodate that size of a group would be a 32-inch grill. Most four- or five-burner grills are 32 inches,” Worley says. “The key is surface area – making sure you have plenty of space and that it gives you room to cook all the food you have planned. If you are hosting a larger group, then you should really consider one with a larger surface area.” We know the food pyramid isn’t made up of meat, meat and more meat. Therefore if guests were not asked to bring a side dish, you’ll need to ensure they all eat their veggies. “If you are planning on grilling vegetables along with your protein,” Worley says, “then you would consider a larger grill or at least a grill with a side burner.” Now that you’ve decided on what type of grill you’ll need based on the number of guests you’ve invited, it’s time to make the biggest decision yet for your backyard bash. What will you serve? Let’s Eat “If it’s a large gathering, nothing beats a good burger,” Worley says. “The reason I choose red meat is that I am very picky when it comes to chicken and how it is prepared. Chicken is a hard one to do when cooking in groups because of its need to be fully cooked.” Your guests need something to wash down those burgers with, and choosing what beverages to serve is an easy one You’ll want to serve a nice mix of sodas, water and iced tea, and then if it is appropriate, beer – both light and regular. Perhaps you should even include a bottle or two of white wine to chill. You’ll be able to satiate everyone’s palate. We are confident that following these steps to hosting the ultimatebackyard barbecue bash will put you on the A-list of all your neighbors. But before getting knee-deep in details, take this sage advice from Worley: “When hosting a backyard party, always remember that it isn’t always about the food, but about the fun with friends.” 44 • JULY 15

Last year, Elvis Andrus was named the Texas Rangers’ 2014 Jim Sundberg Community Achievement Award winner, which honors a member of the organization for significant community contributions. Throughout the past three years, Elvis has donated to the Down Syndrome Guild of Dallas, the Special Olympics Summer Games in Arlington and the Miracle League of Southlake—among other organizations in the local community. We had the opportunity to catch up with him about his volunteer and personal contributions at the Southlake Miracle League Uniform Unveiling this spring.

We know you are involved in supporting several organizations for the special needs community, including Special Olympics of Arlington and Miracle League of Southlake. Why are these causes important to you? What you see is what you get when interacting with these kids. There is such pure enjoyment on their faces no matter what activity they are involved in. I just love them.

We heard you mention “Elvis Entourage” when you were on stage. What is that exactly? “Elvis Entourage” is something we created last year (2014) to bring kids to the stadium. It is a section in Globe Life Park set aside for special needs children and other kids who might need special attention. Last year, we hosted Down Syndrome families in the “Elvis Entourage” section during Tuesday-night home games.

How do the kids respond to the special treatment? It is one of those big things we can do to make them enjoy their day at the ballpark. It’s a way to make it special for them.

Why do you think it is important for someone in your position to serve as a role model for kids? Especially right now, with what’s going on in the world, someone needs to set a positive image for kids. They look to [us] for an example to follow.

Sounds like you speak from experience. I had a lot of role models when I was a kid. I know first hand they are watching you every day. You want them to grow up with a good image of how they should handle themselves in any situation.

When people around North Texas think about losing weight and gaining health, their minds inevitably think of diets, deprivation and excessive exercise. For too many, healthy living and eating is perceived as difficult, disengaging, bland and boring. “When we engage in something, we attract it,” says Cindy Carbone of Southlake-based Commit to H.E.A.L. (Healthy Eating And Living). However, the health and nutrition coach explains the virtual impossibility of truly engaging in a diet because of the negative associations that are at the heart of programs designed to deprive and restrict the habits of those looking to lose weight. “Healthy living is quite the opposite,” says Carbone. “It is about enjoyable activities, cooking and trying new things, and that brings engagement, which is a whole different ball game.” Carbone knows changing your beliefs isn’t easy, but she also knows success comes from breaking down bigger goals into simpler daily activities. Case in point She runs marathons. Regardless of how complex your own personal health goals are, she’s got a few pointers:

B U I L D S W E AT E Q U I T Y The best way to engage with the positivity of maximizing your body’s potential is to find an exercise program that you really enjoy. “Exercise in a way that makes you happy,” says Carbone. “I don’t care if you run, walk, skip or pole dance. Move your body in a way that makes you feel alive. And don’t do it to lose weight. Do it because it feels good.” Exercising to avoid weight gain or because you feel an obligation will work in the short term, but it ultimately will not lead to a healthy relationship between you and your body. Rather, exercise because it makes you feel strong, proud, and generally reduces stress and puts

you in a good mood. These elements are essential to bringing enjoyable activities into a lifelong plan. Carbone wants to change lives by getting people to engage in healthy living habits when she says, “Whether we are proactive, reactive or inactive, each year our bodies and our health changes. It is up to each of us to determine if we will change for the better or not.”

E AT M O R E P L A N T S Yes, it can be that simple, yet plant nutrients are severely lacking in the Standard American Diet (SAD). “The SAD consists of 63 percent processed foods, 25 percent animal products, and 12 percent plant foods,” says Carbone. “What’s even worse, the plant portion is mostly comprised of iceberg lettuce and French-fried potatoes.” Carbone explains that reducing the intake of foods you normally eat is helpful, however she adds, “it’s what we eat that really matters. Many fail to realize the quality of the food we eat is more important than the quantity. What we eat drives our gene function, metabolism and health." Afraid of feeling hungry? Eat more plants. It’s a win-win. You can increase the quality and the quantity of food you can eat, and at the same time upgrade your body, and your health.

3. WAT E R Y O U R S E L F What’s good for plants is good for you, too. Carbone advises to drink half your weight in ounces of water per day. “Water supports the optimal functioning of every cell in the body,” she says. “It detoxifies, helps us think clearly and aids your metabolism.”

Situated in the third largest skyscraper in downtown Ft. Worth, on the corner of Seventh and Main streets, is Grace, a 400-seat restaurant that serves beautifully plated, modernAmerican fare. The fine-dining establishment was a labor of love for Ft. Worth restaurateur, Adam Jones, who named it after his wife, Caroline Grace Jones. The two worked together for two years to make Grace a reality. Never before had a restaurant been constructed in the middle of Ft. Worth office space. It was a daunting task, considering that there had been no prior food-

service tenant, but Jones was up to the challenge. When he opened Grace about seven years ago, Jones had amassed nearly 20 years of experience in downtown Ft. Worth. He spent a decade at Del Frisco’s, and then he opened Prego Pasta House in Sundance Square only one block away. “Grace is 40 years of my restaurant career developed into one restaurant,” Jones says. With Grace, he wanted to create something different. He wanted to build an establishment – a place where people can meet for great food and drinks, whether they’re closing a deal or celebrating an anniversary.

Grace is undoubtedly a special-occasion place. Crisp, white tablecloths and sparkling crystal wine glasses adorn the tables. A transparent, floor-to-ceiling vertical cellar that holds 6,000 bottles makes the statement that wine is an important part of the celebration. The entire establishment has a modern, upscale feel – from the buzzy bar inside to the cosmopolitan lounge seating outdoors. When designing the restaurant, Jones didn’t want a lot of dark wood that is so common in steakhouse settings. Instead, Grace was designed with a softer palette. There are polished granite counters and plenty of walnut, stainless steel and large windows to let in the Ft. Worth sun. Chef Blaine Staniford is the culinary talent behind the restaurant’s modern-American dishes. He graduated from the Culinary Institute of America at age 19 and has worked at a number of high-profile restaurants around the country. The cuisine at Grace is sophisticated, featuring dishes that emphasize purity, simplicity and flavors in tune with the season. “The base menu always remains, and we have some favorites like our lamb dish and prime beef which are the same all year long,” Jones says. “But the menu does change fully with the seasons.” No matter what time of year you visit Grace, you’re in for something special. The starters are particularly appealing here. There’s chilled soup made from locally sourced corn. It’s dressed up with diced cucumber, shaved radish, and tender bits of Maine lobster. Then there’s the crab cakes, which are not to be missed. The meat is always fresh and sweet. The scallops and lamb chops are some of the restaurant’s must-try staples. The scallops are served over delicately prepared potato pancakes, which are thick and easy to bite into. A berry sauce is an aromatic finishing touch to the lamb chops. Prime steaks are also one of the must-try offerings at Grace – particularly the Meyer grass-fed filet. There are four steaks offered on the menu, and each is served without much fuss – just with a roasted head of garlic. But if you happen to want fish, veal or lamb, or if you have any particular special requests like gluten-free, you can get it. “Unlike local steak restaurants, we have a culinary chef,” says Jones, “so we can take on any special requests. We really offer the whole spectrum.” You’d be remiss if you visited Grace and didn’t enjoy a glass of wine with your meal. Sommeliers Jenny Kornblum and Lioneel Penacerrada’s 38-page list is an exciting adventure for wine aficionados. Wines, ranging from Rheingau rieslings, lovely Barolos and everything in between, are served in crystal stemware at just the right temperature. The list is updated weekly, so consider reviewing it online before embarking on your dining experience at Grace. When it’s time to talk dessert, Grace has a dazzling sweet side. Some of the most enticing options include butterscotch pudding with dulce de leche, marcona almond crumble and salted caramel gelato, and the coconut cream pie with candied cashews, coconut mousse and Chantilly cream. Even if you don’t have a special occasion coming up, go ahead and create one and enjoy an evening out at Grace.

Sweet Scoops The Ice Cream Shop is serving up some of summer’s best cold treats.

Ice cream: It’s one of the simple pleasures of summer. In a cone, in a dish, sprinkled with toppings or unadorned, ice cream is happiness in scoop form. And, it’s just plain good, so we didn’t need any excuse to pop into The Ice Cream Shop for a taste. Jerry Connell opened The Ice Cream Shop in 2007 and has been happily dishing out ice cream to the Southlake community ever since. After retiring from a 40-year career selling application software, Connell wanted a place to take his grandkids for some great ice cream after school. Not happy with local offerings, Connell did something about it: He opened his own shop. Nearly 10 years later, he’s proud to be the longest-tenured ice cream shop owner in Southlake. You won’t find Connell in the back churning out the cold stuff, though. He gets his ice cream through Florida-based Ice Cream Club, a company that regularly wins awards for its ice cream. It’s no wonder the ice cream keeps scooping up accolades – it has a 14- to 15-percent butterfat content. Put simply: This ice cream is decadently rich and flavorful. Ten percent butterfat is the minimum for ice cream, and 16-percent is crossing into the ultra-premium zone. The Ice Cream Shop’s treats are also made with real fruits and nuts. You get actual strawberries and peaches, for example – not artificial flavors and syrups. No matter what flavors you’re into, The Ice Cream Shop has something for you. It regularly keeps 32 flavors on hand, and these change seasonally. Connell isn’t afraid to try out different flavors. Sometimes they’re a hit. Sometimes they’re not. A longtime favorite is Dulce de Leche. This flavor is simple enough: It’s a sweet cream ice cream swirled with a caramel ribbon. Butterscotch Bomb, an explosively tantalizing concoction of butterscotch ice cream with brownies, Heath bars, cookies and peanut butter cups, is the new favorite this summer. Though butterscotch is hitting the sweet spot for Southlake now, that hasn’t always been the case. A few years ago, Connell bought a tub of chocolate ice cream laced with butterscotch and roasted pecans. Customers just weren’t interested in the butterscotch swirl, and Connell had a hard time dishing out this flavor. “Combining flavors gets tricky sometimes,” he says. That’s okay. When it comes to ice cream, simple works. Maybe that’s why chocolate is America’s favorite ice cream flavor, according to a Harris Poll, with vanilla, cookie dough, and cookies and cream coming in right behind it. Whatever flavors happen to tickle your taste buds this summer, one thing is for sure: The Ice Cream Shop is one we can all collectively scream about.

Juiced Drink your organic fruits and veggies at Juice Junkies. Juice does a body good. Like, really good. When asked what to expect after sipping some, Juice Junkies owner, Hillary Biediger, says: “It’ll rock your world!” Juice Junkies opened in Keller Town Center less than a year ago, and the Ft. Worth location opened its doors in November 2013. It was the city’s first (and only) raw, organic juice bar. The shop offers more than 25 organic, cold-pressed juices that are bottled in-house every day. Each juice is packed with three to four pounds of organic fruits and vegetables, so they’re truly nutrient-rich powerhouses. Juices are named after popular songs from the 1960s and ’70s – Start Me Up and Light My Fire, for example – and they’re priced from $6 to $10. If forking over 10 bucks for a juice makes you flinch, consider all the goodness that goes into each 17-ounce, BPA-free bottle. “We get hundreds of pounds of produce every day. It gets juiced, and then we start over the next day,” Biediger says. “Anybody who has done juicing at home realizes how much it takes and what goes into it. Organic is more expensive, but to me, it’s not worth drinking something if it’s not organic.” Juice Junkies uses a cold-press method in which a machine grinds all the ingredients and presses it out. Because it’s not extracted through a centrifugal juicer, the end result is a higher quality juice that lasts three to four days without oxidizing or losing essential vitamins and enzymes. The newest juice on the menu – Feelin’ Stronger Every Day – is the only drink with parsley, and it’s been an instant hit with juice seekers. It’s made with apple, spinach, lemon, ginger and parsley. Dr. Feelgood is also a customer favorite. This juice is a power-packed mix of pineapple, apple, kale, lemon and ginger. “The sweeter juices are usually most popular,” says Biediger. “Green juices with a tiny bit of apple tend to go the fastest.” If you want more than just a grab-and-go juice, you can also give your body a full detox with a juice cleanse. Juice Junkies offers two types of cleanses: Easy Livin’ and Green is the Colour. You can choose from a three-day, five-day or seven-day cleanse. And, in case you were wondering, the folks at Juice Junkies make more than just juice. You can also stop in for

Texas Country Legend Pat Green at Lone Star Park

Three Lakes to See This Summer ummer travels in Texas usually involve making a stop at a lake or two. But ask a resident Texan what color a lake usually is, and he or she will likely say brown or grey. We have no shame in our color pallet, but wouldn’t it be nice to take the word “bland” out of your viewing vocabulary and tour some of the world’s bluest lakes? From the shores of California to our neighbors far, far south of the border, there are must-see lakes to experience this summer – if only for their breathtaking hues.

First things first, set up camp in Truckee, California, the gateway to the North Shore. And by camp, we mean reserve a room at The RitzCarlton Lake Tahoe resort. You did come for the view, right? Guest rooms and suites feature floor-to-ceiling windows and an in-room gas fireplace. Although the summer days may be warm and inviting, at night, temperatures can plummet to the low 40s. Staying on U.S. soil, the first stop on the lake tour is Lake Tahoe. What’s often thought of as a winter retreat, Lake Tahoe during the summer can be just as exciting. Boasting a 72-mile shoreline circumference, the lake shares it shores with California and Nevada. Because of its size, visitors usually pick one area of the lake to explore – one of four quadrants – and each is unique in its own right. The North Shore, specifically the western side in California, is a mountain lover’s paradise. What better way to admire the blue waters of what is referred to as the “jewel of the Sierras” than mountainside? From hiking and biking to climbing and kayaking, there is plenty to do for lake lovers.

Heading north on the lake tour, the next stop is Lake Louise at Banff National Park in Alberta, Canada. With waters that vary from crystal blue to emerald in color, you can see why this lake made the list. From high in the mountains to down in the valley of the hamlet, Lake Louise is quite a sight to see. This alpine lake is known for its sparkling blue waters and the often surreal paddling experience that ensues upon crossing in a kayak or canoe. At the base of glacier-clad peaked mountains, the hamlet of Lake Louise has been developed with shops, restaurant, lodges and resort hotels. If mountaineering is not your thing, you can experience the view from the The Fairmont Chateau at Lake Louise.

Under the Down Under to the east lies New Zealand, home to one of the country’s most treasured bodies of water, Lake Wakatipu. The Dart River flows into its northern end of the crystal clear lake, and the Kawarau River, beginning near Queenstown, handles its outflow. Interestingly enough, the lake has a tide that causes the water to rise and fall about 10 centimeters every 25 minutes. Local Maori legend blames the tide on the heartbeat of a huge monster living beneath the lake. But don’t let folklore keep you from enjoying your surroundings. Settlements around the lakeshore include Queenstown, one of New Zealand’s top visitor attractions. The town has become a renowned cycling destination, providing everything from easy scenic tracks and backcountry trails to road rides and heli-biking. And if that’s not adventurous enough for you, try bungee jumping, zip lining or skydiving. Like Father Like Son[s] A strong sense of family has helped guide Munir, Mark and Roger E. Bishara to success in their careers and lives. The patriarch is a noted pediatrician who has treated roughly 15,000 children over a stellar career in North Texas. Among the offspring, one is a chip off the physician block, a celebrated and popular plastic surgeon. The other is a local attorney who consistently makes life better for a clientele roster that includes athletes and entertainers. All that noted, what they’ve accomplished is simply a reflection of who they are. They are the Bisharas. Specifically, they are father Munir and sons Mark and Roger. And while June 21 will get the official spotlight this year across the nation and region, the Bisharas get to celebrate Father’s Day practically every time the three men unite. That happened again recently, and the celebration manifested in the telling of tales and in the trading of jokes and in more than a few warm smiles. Apparently, smiling is a trait that was passed from generation to generation. The sons say the dad gets credit for that – as well as for setting all manner of examples of how a man should be. He began to pursue medicine in Beirut in the early 1960s, and though he is officially retired now after some 35 years practicing at various Dallas medical centers, he hasn’t stopped taking care of young patients. “I still fill in for some of my old colleagues when they go on vacation,” Munir said with a gleeful smile. “I practice medicine about a month each year, if you add up all the times I fill in. It’s something I truly love doing, so I hope to continue to doing it as long as I can.” Munir is now three generations into treating some families, as patients he met when they were children have brought him not only their children but their grandchildren to “make well.” Munir’s passion to enhance people’s lives was passed to Mark – even if the son has charted his own medical course. His practice, The Paragon Plastic Surgery & Med Spa, has grown to feature three offices – in Mansfield, Southlake and a new location in North Park. From each he helps both men and women realize

potential they might not have recognized they have, through cosmetic and corrective surgery, hair restoration and invigorating spa treatments. “When you can make positive differences in someone’s life, it’s very gratifying,” Mark said. “I also like the balance of being able to do so many things. I’m doing something different every day.” Roger is doing something different, as well – at least different from that for which the other two Bisharas are known. His law office at 2000 E. Lamar Blvd. specializes in corporate matters and contracts, especially with regards to entertainment law. As noted, he has clients from both the entertainment and athletic realms, helping make sure they have a legal compass to steer their careers in a successful direction. “I started by handling the business end of Mark’s practice,” Roger said. “I liked the notion of helping others establish successful careers, and the practice more or less took off from there.” For all the three Bisharas have accomplished, it wouldn’t be accurate to call theirs a “men’s only” club. In fact, they said, Munir’s wife Linda – Mom to Mark and Roger – deserves much of the credit for their collective success. “She’s the boss,” Mark said. “She grew up on a dairy farm and had next to nothing. She wore burlap sack dresses, literally. So she has a real appreciation of the wonderful life our family has today, and she’s helped teach us to appreciate what we have, as well.” What the Bisharas have, among the many accomplishments and professional successes, is a family dynamic that serves as a model for others. And that’s worth celebrating, regardless of the date on the calendar.

Five Facts to Know About Essential Oils It’s the natural remedy du jour, but how much do you really know about essential oils?

E

ssential oils are everywhere these days. People smear a dab on their temples to cure a pounding head. They massage some oil on their babies’ feet to help a stuffy nose. Some people have even done away with a traditional medicine cabinet in favor of essential oils. It seems that when there’s an ailment, there’s an essential oil to make it better. Even if there’s not something bothering you, essential oils can do wonders for boosting your mood or helping you relax. We feel better simply by breathing in the scent of an essential oil. It’s called aromatherapy, and we benefit on a physical and emotional level. Essential oils aren’t some kind of magical cure-all (though they kind of sound that way), but they’ve been used throughout the ages in a variety of wellness applications. The Egyptians were some of the first people to use aromatic essential oils for medical practice, and the Greeks and Romans used essential oils for therapeutic massage, health and personal hygiene. Whether yours is an “oily” family – the word used to describe those who regularly use essential oils – or you’ve never used a drop, here are some facts you should know about essential oils.

4. Essential oils will last you a long time. Because they’re so concentrated, a single drop goes a long way. One bottle could easily last for five years – or longer. 5. They need to be treated with care. Essential oils are potent powerhouses. As such, they should never be used undiluted on the skin. Pair them with carrier oils – vegetable, coconut or grapeseed oil, for example – before applying to skin.

1. Essential oils aren’t really oils. Surprised? Essential oils don’t contain the fatty acids that constitute an actual oil. Instead, they are potent aromatic oils produced by plants. 2. They’re miniscule in molecular size. This means that they’re easily absorbed by the skin, helping them heal, soften and nourish. They don’t accumulate in the body over time, either. They offer up their healing properties and pass on through. 3. Not all essential oils are created equally. There are lots of brands on the market: doTERRA, Young Living, 365 (which you can pick up at Whole Foods Market), Now Foods (available at Central Market), and others. Do some testing before you decide on one. It’s easy to gauge the purity of an essential oil. Just put a single drop on a piece of paper. If it evaporates quickly and leaves no noticeable ring, it’s pure. If there’s a ring, the oil is likely diluted by the manufacturer. A good rule of thumb: If it’s cheaper compared to what other brands are offering, there’s a reason. Choose wisely.
