Ham and lamb are classic Easter dishes. Do you have any good tricks for cooking each? It is getting more difficult to find delicious smoked ham with the bone in, but it’s worth trying. Every year, I get my ham from Pat LaFrieda and cook it very slowly in a parchment-lined foil package for the prescribed amount of time. I remove most of the fat layer, score through the remaining fat layer and glaze in a 300-degree oven.
