With a strong faith in God, a loving marriage spanning 22 years to her husband, Iggy, and a cherished role as a stepmother to two daughters and a grandmother to four, Coach Mel's life is a testament to hard work, resilience, and unwavering dedication.

Hailing from Idaho, Coach Mel is a true advocate for movement and an active lifestyle. She's an Idaho native who has spent over 30 years on the snowboarding slopes, alongside enjoying activities like running, hiking, rollerblading, and biking. The very thought of a desk job is enough to make her cringe; she thrives on staying active.

Her entrepreneurial journey is nothing short of remarkable. For decades, Coach Mel has been a serial entrepreneur, embarking on a new business venture every four years since she was 27. Coach Mel is a true multi-talent. Josh’s expertise includes videography, photo/video editing, website design, and search engine optimization. WHAT IF YOU GAVE YOURSELF A YEAR?

INTRODUCING

MelFit Cauliflower Nachos

Serves: 6

Prep time: 15 minutes

Cook time: 27 minutes

Total time: 42 minutes

Ingredients:

1 32 ounce bag of cauliflower florets or approximately 7 cups, cut into 1/2 inch slices (I bought a bag at Costco)

1/2 tsp garlic powder

3/4 cup dairy free cheese

1/2 tsp paprika

1/4 tsp himalayan sea salt

1/2 tsp onion powder

1/2 cup grape or cherry tomatoes, halved

1 jalapeno, sliced and seeded if you don’t like it hot

1/2 tsp ground cumin

1/4 tsp chili powder

1/4 cup diced red onion

1/4 cup cilantro, chopped

1 TBS avocado oil or olive oil

1 medium avocado, sliced or chopped

1/2 pound lean grass fed ground beef or bison

1/2 pound lean ground turkey

Nutritional information:

Calories: 238 calories

Carbs: 10.8 g

Fat: 11.6 g

Protein: 18.5 g

Instructions:

1. Preheat oven to 425 degrees F.

2. Spray a large baking sheet with olive oil or avocado oil cooking spray or line with parchment paper or a silicone liner.

3. In a large bowl, combine oil with onion powder, garlic powder, cumin, chili powder, cumin, paprika and sea salt. Add sliced cauliflower and lightly toss to coat.

4. Put seasoned cauliflower on baking sheet, spacing out the pieces so they roast. Bake for 20 minutes until cauliflower is tender and beginning to brown and then pull out of the oven and set aside.

5. In the meantime, spray a medium pan with avocado or olive oil cooking spray and brown the meats until they are cooked all the way through.

6. After the cauliflower has finished cooking, sprinkle the cauliflower with ground meat and cheese.

7. Return to the oven and bake for 5-7 minutes or until the cheese is melted.

8. Top with red onion, jalapeño, cilantro, tomato, and avocado.

MelFit 5 Ingredient Blueberry Oat Bars

Servings: 16 bars

Prep time: 10 minutes

Cook time: 25 minutes

Total time: 35 minutes

Oat layers:

2 1/2 cups (225 grams) gluten free oats, divided in half

3/4 cup (175 mL) mashed very ripe banana

1/4 cup (26 g) flaxseed meal

3 Tbs water

1/4 tsp fine sea salt

For the filling:

2 cups blueberries (500 mL) fresh, or frozen but thawed

1 Tbs tapioca starch or arrowroot starch

Pinch of sea salt

Optional: cinnamon and a few drops of stevia if fruit is not super ripe

Calories: 77

Carbs: 11.8 g

Fats: 1.4 g

Protein: 2.5 g

Instructions:

1. Preheat the oven to 350 degrees F.

2. Line an 8 x 8 square baking dish with parchment paper or spray with non stick cooking spray and set aside.

3. Prepare the oat layer by adding 1 1/2 cups gluten free oats into a food processor. Mix until it becomes fine flour.

4. In a large bowl, use a fork to combine the oat flour, remaining cup of oats, banana, flaxseed meal, water, and salt until mixture is combined and crumbly.

5. In a large bowl, coarsely crush the blueberries with a fork or wire whisk. Sprinkle the arrowroot over blueberries and stir to combine. Add a pinch of salt. If berries aren’t super ripe add a few drops of stevia and cinnamon is desired.

6. Firmly press half of the oat mixture into the prepared pan, evenly tamping down. Evenly spread with the blueberry filling. Coarsely crumble the remaining oat mixture over filling.

7. Bake for 25 to 30 minutes or until filling is bubbly and topping is golden. Cool completely, in the pan, on a wire rack. Refrigerate until cold.

8. Remove from pan and cut into 16 bars. Or 8 if you prefer a larger bar, that changes the calories to 154 per bar.

Ingredients:

3/4-1 cup unsweetened almond milk

16 ounces of ice

1 date, pitted

1/2 a large banana

Cinnamon to taste (inside and on top)

1 serving Orgain vanilla protein powder

1 Tbs almond butter or your favorite nut butter

1 Tbs unsweetened coconut flakes

Instructions:

1. Blend all ingredients in high speed blender until smooth. For a smoothie bowl, add less milk and add additional toppings if desired.

2. Pour into a glass or bowl and top with cinnamon.

Coach Mel: What is important for people when they are going through their weight loss process?

Lisa: There is no finish line, so why not enjoy the journey?

Coach Mel: How do you shift your mind away from the fact that there is no finish line?

Lisa: You have to expect that there is no end and that things can change. Your body changes as you age, and in the World, things are changing, so believe that this will work. Pivot when you need to, and grab another tool in your tool belt.

Coach Mel: Why did you seek out MelFit?

Lisa: I did Weight Watchers for ten years and lost 75 pounds. When COVID came, I gained 25 pounds back. What I was doing before was not working. I had never tried an anti-inflammatory meal plan and was interested in doing something different. I followed you but feared you were too intense for me. You did expect more from me, but that’s exactly what I needed: accountability and honesty.

Coach Mel: How was MelFit different from the other plans you tried?

Lisa: It was better than I thought it would be. I don’t miss any of the foods I used to eat. I learned a lot during my first 12 weeks about the process. I don’t miss sugar, and it tastes weird to me now. I like using organic ingredients, not “diet” and low-calorie ingredients. MelFit has helped the way I feel, my inflammation, and my energy. Eating real food that tastes good is why it’s easy to continue for the rest of your life.

Coach Mel: You “look” like you have lost twice as much weight as you have. How does this make you feel?

Lisa: I feel like I care “more” about how I feel and my energy levels than how I look. Also, I have had amazing blood test results! I have a better-resting heart rate. I feel better, more optimistic, and happier. My life is more accessible now! MelFit has helped me with “what to eat!” You tell me exactly what to eat and calculate the calories and macros.

Coach Mel: What is your favorite quote?

Lisa: “Anytime in my life when I have managed to go from vision to reality, the vision has not been a plan but a practice. In other words, what matters is not having a vision but rather making a habit of returning to and revising the vision. For the big things in my life, I always return to them week after week and sometimes day after day. As new information arrives, the vision gets updated. The dream becomes more crystalized over time. It’s a habit of thinking about where you want to go with any ever-increasing degree of clarity. You do not need a vision; you need the practice of “envisioning.”

Coach Mel: Who is your biggest cheerleader?

Lisa: I would have to say it’s me! I have great friends and you as a coach, but you are the only one who has to live in your own body. You have to be happy with what you are doing. You are responsible for your happiness and must work and acknowledge that.

Coach Mel: Where do you see yourself five years from now?

Lisa: I will still be doing Pilates, running, and working, and I will continue to work on myself. I will continue to work on my strength, mobility, and everything else that I need to do to keep my health on track. I will continue helping people professionally and personally and living my life by design.

Coach Mel: What advice would you give someone reading who hasn’t started their health and fitness journey yet?

Lisa: My advice is to be realistic, patient, flexible, and listen to your coach. Use the tools that you pay for. Make sure you have multiple ways to measure your success besides by a number on a scale. Go into the journey knowing this is a lifestyle.

What would your health look like if every cell in your body were doing its job well? Chiropractic is exponentially more than just fixing back troubles. Chiropractic is one of the safest and holistic ways to improve the whole health of a person, especially from a proactive approach. Due to the massive misunderstanding of what Chiropractic is, we should start here first.

Did you know that the first organ to develop in the utero is the brain and spinal cord? The reason why these structures form first is because they control every cell, muscle, tissue, gland, etc., in the body. This Nerve System is the thing that conducts your heart to beat, your lungs to breathe, and your stomach to secrete a specific amount of acid to digest food. Every organ and tissue cell alike are under complete control of the Central Nerve System found within the spine,

pretty neat! Think of the body like an apple tree. The spine is the truck, the nerves are the branches, and the organs are the apples. As a basic premise, one could not have healthy fruit with an unhealthy tree.

Now, with a system that is vast and intelligent… what could possibly go wrong? In life we have this little thing called stress. Stress is broken down into 3 major categories: Physical, chemical, and emotional. These three categories of stressors place a heavy burden on the body and nerve system. When the body fails to adapt to the stressors and demands of life, the body will break down (I’m sure some of you feel that way currently). The result is known as Vertebral Subluxation. Put simply, a Subluxation is a misalignment of the spinal column, that results in altered communication between the brain and the body. Obviously, a Subluxation is a clear detriment to the organization and harmony once found within. Why is this important?

When a nerve has less than optimal communication with the brain and body, whatever tissue is at the end of that nerve, will suffer. The heart, thyroid gland, low back muscles, or sinuses, are all connected and controlled by a specific nerve. Multiply this process by 6 months or 5 years or 20 years or more, and we get labeled with a diagnosis. Chiropractors are trained to find the nerve insult and remove the subluxation with a specific adjustment. That is the purest, most unadulterated way to explain what a Chiropractor actually does. and When a high level of care is provided, the body will trend back toward health and the body recovers.

Chiropractic care and the miracles that come with it, are due to the ability to influence Nerve System control by adjusting the spine. Chiropractic is obviously more than back pain! When a symptom or ailment arises, instead of blaming the lung tissue, why are we not checking the very thing that coordinates lungs in the first place? When we talk about getting to the root cause, we mean it. Everyone will benefit from having a more optimal nerve supply. When the brain and body are more coordinated, healing happens. What drug or surgery will ever get that nerve turned back on? There are practical solutions to gaining victory over health complications. We believe checking the source of life, the Central Nerve System, is the correct and most ethical starting point.
