Matt Matros and Arturo Gomez plan to open Edie's in River North in August.

Matt Matros, founder of Protein Bar & Kitchen and Limitless Coffee, and Arturo Gomez, a former founding partner in Rockit Ranch Productions, are opening an upscale fast-casual cafe and bar in River North.

Edie’s All Day Cafe & Bar is slated to open in August at 675 N. Wells St., at the base of a luxury residential building with 250 units in a former Limitless location. The 2,700-square-foot space will eventually allow for 86 seats inside and another 50 on the patio; currently, it will adhere to the city’s COVID safety limits.

The room, which Gomez says has a “modern boho vibe,” will feature a pastel color scheme and be ooded with plants. It will have tables to seat two or four, high-tops, a few couches and a communal table.

Matros, who sold Limitless to Keurig Dr Pepper in January, contacted Gomez about a partnership on a day that happened to be his daughter Edie’s birthday.

Edie’s, which will be open seven days a week, will be part cafe and workspace during the day, part restaurant and wine bar in the evening, inspired by Italian corner cafes where Matros says it works “for that coffee meeting or rst date.” Chef-partner Chris Dunstatter, who owned 694 Wine & Spirits in River West, has created a menu that will change from morning through night and seasonally.

Morning dishes will include overnight oats with saffron, g and pistachio; banana ricotta pancakes; egg dishes and toasts with toppings like roasted beet relish and feta. For later in the day, nd house-cured olives and pates, salads and sandwiches, green and grain bowls, atbreads and charcuterie boards. A full bar will have eight wines on tap for half- and full carafes; wines by the bottle averaging around $45; and cocktails around $13.
