One thing we’ve learnt over the past couple of years is that trying to predict the near future can be, well, unpredictable. We’re no longer so blithely confident when we think of next year, next month or even next week. Instead we look ahead with either naive optimism or exhausted pessimism – and either way, it’s through our fingers, never quite sure what the next corner will bring. In comparison, the far future – a comfortingly familiar, The Jetsons-version of what’s to come – suddenly feels safer, more knowable. Billionaires are forging ahead with commercial space flights. Everyone and their mum has invested in crypto. We’ve all embraced astrology and clear quartz crystal manifestations in ways we never have before. It’s hard to tell if that cool new influencer you stumbled across is a real person or an avatar, but it doesn’t matter anyway – we still want to buy her hoodie. Right now might still be uncertain, but in many ways the future of our sci-fantasies is here already, and it’s as bright as ever. This season, JONES is all about looking to the future with hope, excitement and a whole lot of optimism. We feel good about what’s to come.

We understand our reality is one we make, and that the future can simply be made differently. I’M EXCITED TO SEE what my generation and younger do when we actually have power to fix inequalities, seeing as what we’ve done so far with none has been transformative. JONES SPRING 2021

THREE WORDS THAT DESCRIBE THE FUTURE: ALL OF US. I’m truly hopeful for the

future. For an anti-hierarchical, anti-patriarchal, anti-racist, antihomophobic, anti-transphobic, abolitionist, body-positive, lovepositive world with Indigenous rights and knowings at the centre of society. I WANT TO SEE A FUTURE where we talk about how we made the world a better place in the space of a generation. The federal government will sign a treaty with all Indigenous nations on this continent. Then the real work can begin. I see us being led by our Elders with their wisdom. I see us learning from the younger generations and their drive for change. I think the cries for climate action will surely become too loud to ignore.

WHEN I HEAR THE PHRASE ‘INTO THE FUTURE’ it feels

long-lasting. I think the future is about refining and improving the moments of stillness while honouring chaos. WE NEED TO BETTER EMBRACE THE FULLNESS OF OUR REALITY and not stifle the parts

of ourselves that don’t fit the mould. It’s most important to feel seen, heard, held and celebrated. I WISH TO CREATE MORE JOY – designing with this in

I think that’s what makes us so relevant to our consumers because they know that they’ll be comfortable in our bras and also be stylish. That’s important because the way we live and work is changing – we want to have products that support this new lifestyle.

WHAT’S UNIQUE ABOUT THE NEW SIMONE COLLECTION? Everyone knows Simone Pérèle as a corsetry brand and that’s great, but we wanted to show that we are able to be creative and bold, too. HOW I WORK: Every workday is so different. One day can be very creative with design or shooting on location, another day barcoding orders, ordering production, dealing with suppliers and wholesalers. We still have a small team so we’re all very hands-on in every aspect of the business. Challenges arise daily, especially with the business sampling and production timeline not staying on schedule. But if I keep calm, read over the issues and take my time, I can usually come up with the best solution. THE WIND DOWN: My husband and I have our own businesses and work on some of the same projects, however we really value our family nights – spending time with our son Franco and watching a good movie with a wine. I also love our record player, it has such a special sound. Chocolate, too. I don’t think I can go a day without some chocolate. ¾

No-one likes the phrase ‘the new normal’, but the reality of today, tomorrow and what lies further ahead has thrust the future into the current zeitgeist. Economic, social and cultural pressures have framed the past 18 months, muddying the waters for what comes next. One thing is for certain, the future is knocking on our door. At a time when our entire world is at the precipice of change, these are the ideas sparking conversation (and perhaps a little disbelief).

FASHION’S NEW FRONTIER It’s hard to talk about the future of fashion without mentioning sustainability. But what if another option is no clothes at all? ‘Iridescence’, dubbed the world’s first digital-only dress, sold for US$9500 when Richard Ma, CEO of Quantstamp, bought it for his wife. While this dress doesn’t exist outside the realm of blockchain, it can be ‘worn’ by the owner on social media as a personalised fashion filter. Korean eyewear label Gentle Monster also made headlines with a virtual collection. Designed by a collective of artists, the range redefined eyewear with its series of augmented-reality filters, which were made available to consumers to use on Instagram. Digital fashion offers a consumption-conscious alternative for our wardrobes, bypassing concerns within the industry about waste by not really being real. Yves Saint Laurent’s Rouge Sur Mesure is an AI-powered device that allows users to develop their own unique lipstick and ‘print’ it at home using refillable cartridges. The innovation, which is backed by the L’Oréal Technolog y Incubator, opens up a world of possibilities for tailor-made make-up. Analysing skin tone using AI then mix-andmatching shades to create the perfect foundation or concealer provides the opportunity to rewrite the rules of diversity and beauty standards.

A FLAT WHITE, BUT NOT AS YOU KNOW IT

MEAT-FREE MEAT IS SO LAST YEAR.

But bean-free coffee might just be the next big thing. Atomo is a Seattle-based company creating ‘molecular coffee’ as a more sustainable alternative to growing crops. It takes approximately 19,000 litres of water to produce 1kg of coffee beans, which makes around 130 cups of coffee. And since it’s estimated that around 2.25 billion cups of coffee are consumed in the world each day, well, you do the math. Indeed, water is a hot topic when it comes to the sustainable food and drink space. And while milk alternatives aren’t new news, non-liquid formulas for plant-based products are making waves in the market. Powdered mixes and pastes not only reduce the weight and freight costs for these products, they also expand shelf life. In Germany, Blue Farm offers finely ground oat flour that can be shaken with water and served, while Nooj in the UK and JOI in the US offer nut pastes that can be blended with H₂O at home.

San Francisco’s Relax VR currently sells its programs to day spas to match with their in-house treatments. But armed with an oil burner and a VR headset, there’s no reason that phygital wellness can’t be translated into our homes. Not dissimilar to the choose-yourown-adventure books of our childhoods, Relax VR users are able to decide the destination of their guided meditation. From floating along the ocean floor, exploring shipwrecks and making friends with blue whales (or, if you’re us, looking for the heart of the ocean), to dancing among the Northern Lights or cosying up by a crackling fireplace, immersive scenes spark imagination and offer a new approach to mindfulness.

You’re one of fashion’s most distinguished leaders – a journalist from The New York Times referred to you as “almost presidential: wise, serene and comfortable in his role now as the reigning eminence of Milan fashion”. At what point did you recognise your own success? Those words are kind and flattering. The reality, of course, is that like many creative people, I’m constantly driven to challenge myself and push myself to achieve new things. So although I’ve undoubtedly been more successful than I could ever have imagined back in 1975 when I started my own [namesake] label, I do not feel like I can rest on my laurels. Success for me is really about seeing people still enjoy my creations today in the way they enjoyed them when I began my company.

The Emporio Armani logo – the stylised eagle – was created in 1981. Where did the iconic logo come from and what does it really mean to you? It’s a funny story – I actually designed the logo by chance while I was speaking to someone on the phone and doodling. It comes from the idea of soaring high and proudly, up above the world, strong and purposeful. I suppose I felt it was appropriate for a new collection that required me to bravely challenge those who thought that a project like Emporio Armani was not something that a fashion designer like myself should embark on. From industry to individuals, COVID-19 has made everyone recalibrate and reassess. You have been at the forefront of the coronavirus response in Italy. How has the pandemic impacted the Emporio Armani brand, and what opportunities has it provided for the industry at large? The pandemic has certainly made me think about what I would like to change. With regard to Emporio Armani, it has made me think about the importance of sustainability in a collection that is meant for those with a youthful outlook; that customer really understands the need for us to reduce environmental impact. I have also realised the importance of beauty in our lives, and how we have been starved of this over the past year and a half. So perhaps slightly counterintuitively, while lockdown has seen a take-up of casual clothing as people spend more time at home, I anticipate that once we can socialise

again, people will want to dress up once more. Far from steering me towards an ever-increasing casual aesthetic, I’m looking at Emporio Armani being able to balance the sporty with the more sartorial.

When Emporio Armani was launched in 1981, it was a pioneer line recalling a concept of democratic fashion. What does a democratic approach to fashion look like for the brand today? Back in 1981, street style as we have come to know it was not really an acknowledged genre of dressing. Of course it existed, but it had not been codified as it has been today. Emporio Armani was truly unusual in that it was aimed at the growing generation of young, metropolitan people who defined themselves through their shared interests in music, sport, socialising and style. Today, of course, the fashion landscape is very different, but Emporio Armani’s values have not changed – it still stands for experimentation, the city, music, sports and youth. Your designs are made with care and to last, which suits our growing need for a more sustainable way of shopping. How can we further encourage sustainable change in the fashion arena? Interestingly, I feel like Emporio Armani was sustainable before the term was even coined, because at Emporio we have always created garments that overcome the idea of becoming dated in terms of style. But it goes further today, more literally, in the sustainable Emporio Armani capsule collection that is made from recycled, regenerated and organic materials. It’s worth noting that as well as the choice of more sustainable materials for this, I aim to use

innovative production techniques to help reduce the consumption of energy and water. Each garment in this collection is fully traceable, too, thanks to the QR code on its label through which you can find extra detail about it. Generally, we need to look at how we can improve sustainability in how we create and make products, how well we design those products to last (in terms of aesthetics as well as quality), how we run our offices and how we construct and run our stores. We need to make less and make better, and the consumer, too, must start to consume more responsibly. Community and supporting emerging talent are important to the Emporio Armani brand. What do you look for in up-and-coming artists? Is there anyone on your radar that we should know about? Emporio Armani, with its youthful spirit, is particularly well placed to collaborate and work with young talent. Interestingly, because I was not able to host a show for the Emporio Armani spring/summer 2021 collection, instead I created a video entitled Building Dialogues, in which I blended the musical and visual art of Frédéric Sanchez with the architecture of my headquarters in via Bergognone. In the video, the Emporio Armani collection is worn by artists from worlds that have always been linked to the brand’s broad community. The whole project was conceived not only to show the collection but also to act as a symbolic gesture in support of those arts – music, dance and acting – which have been particularly affected by the prolonged lockdown period and are still struggling today.  D AV I D J O N E S . Enjoying 100 years of celebrity, and now entrusted into the hands of Chanel perfumer Olivier Polge, it remains as remarkable as the day it was dreamt up.

HOW DO YOU EXPLAIN THE LONGEVITY OF CHANEL N°5? Nº5 arose from this opulent composition of flowers that complement one another without any single one really being identifiable. That is why it is considered an abstract fragrance. The way that aldehydes were used in proportions that enhanced the natural ingredients was incredibly modern. Its longevity, and its success, can be explained in large part by its abstract nature and this mystery. But that is not all, because for 100 years Chanel has also had the intelligence to look after Nº5 as if it were a new fragrance, in terms of the formula itself and the work that goes into its image, which keeps Nº5 forever rooted in its era. WHAT ROLE DO RAW MATERIALS PLAY IN N°5? The standards of this fragrance make it inimitable. In one bottle of Nº5 Parfum, there are more than 1000 flowers. Some ingredients come from France, but others from much farther away – a rare thing 100 years ago. In creating Nº5, Chanel developed a true fragrance savoir-faire, and monitors the entire value chain from flower to bottle. Part of my job is to preserve Nº5. All throughout the year, we make sure to acquire all of its qualities: citruses at the beginning of the year, then orange blossoms, roses in May, jasmine in September, ylang-ylang several times a year. It requires vigilance, a job that is rooted in history. I have the 1921 formula, handwritten by Ernest Beaux, in the safe. WHAT IS THE RELATIONSHIP BETWEEN FASHION AND FRAGRANCE? Gabrielle Chanel had the intuition to turn perfume into a fashion accessory.

When she had the idea for Nº5, fashion and fragrance were two separate worlds. She, a dressmaker, was the one who decided to bring them together. Because of this, I am always influenced by fashion. There is no clearly defined bridge, but a state of mind, a style of life in each of our different fields, which are intertwined. The complexity of Nº5 is a powerful creative act. In fragrance, like in fashion, we do not copy nature; we always try to transform it through construction. HOW CAN N°5 BE BOTH PRESERVED AND MADE TO EVOLVE? Nº5 has not lost any of its modernity. It is still distinguishable from all other fragrances. Nevertheless, reinterpretations allow us to situate Nº5 in this day and age, as well as to make way for new uses. Originally, Nº5 was a very concentrated and very precious parfum, of which just a few drops were worn behind each ear. An appetite for more generous fragrance use calls for new formulations, textures and creative acts that introduce variety. Because the identity of Nº5 is so strong, it is easy to play with. When I had the idea for Nº5 L’Eau, I had elements essential to Nº5 at my disposition, which took me towards tones that were more sparkling, lighter. This exercise in reinterpretation allows us to express another side to the signature of Nº5 and to view it through a new prism. We always begin with the same Nº5 structure, but the raw materials allow us to bring something else to light. WHAT DOES N°5 SAY ABOUT THE WOMEN WHO WEAR IT? Nº5 reflects Gabrielle Chanel’s personal life story. And yet, Nº5 resonates with all kinds of personalities and cultures. Describing the fragrance might better help us grasp the woman who wears it. Femininity, elegance, refinement, a certain richness and that element of mystery are words that come to my mind. It is the fragrance of an emancipated woman, with assertive femininity. What we express with fragrance cannot be expressed in words; it says something about our personality, in the same way as the clothing that we wear or the manner in which we speak. We wear Nº5 for others, but also for ourselves – it is an act that helps one feel good about oneself. Nº5 is a wonderful signature of one’s personality. For most of my life I’ve worked in an industry – fashion – that considered the inevitability of Words ageing as unthinkable, JUSTINE CULLEN something that happened to Other People. I’m now in my forties, an age I once considered to be well past anyone’s prime, and what I’ve learnt is that, luckily – as with most things we fear – the reality isn’t nearly as bad as we anticipate it to be. Sure, if I compared like for like against the me of a couple of decades ago, I’d notice the places where gravity has taken its toll. But when I’ve got a blow-dry and I’m really wellmoisturised, the difference to the naked eye isn’t enough to bother me.

Maybe my newfound ease is because our society is finally starting to repent its ageist ways. For every 24-year-old Hailey Bieber making me mourn the loss of my jawline, I also see a Gwyneth Paltrow, looking better than ever at 48. For every runway I see featuring lithe schoolgirls, I see a beautifully photographed ad campaign featuring someone even older than me. The idea that representation counts didn’t come from nowhere. It makes a difference, especially when your ego is as fragile as that of a woman who just noticed her first grey eyebrow hair. These days I’m actually starting to anticipate ageing with something akin to pleasure rather than fear. I’m looking forward to getting into gardening and saying anything that comes into my head at any time and wearing too much blush and dressing more eccentrically (my look is going to be ‘Iris Apfel on Vacation’). It’s not just me, either. Studies show that self-esteem peaks around the age of 60, lasting for a full decade. I don’t know about you, but the idea of living without the paralysing self-doubt of our younger selves sounds genuinely wonderful. I’ve realised that my fear of ageing was never about wrinkles so much as irrelevance. I don’t want to be the person who doesn’t know what Animal Crossing is, or whose musical tastes ended sharply in 2003, forever glitching on The Killers’ “Mr Brightside”. I don’t ever want to be thought of as closedminded or stuck in my ways. You know what will make you appear older than a few little crow’s feet? Getting angry and bewildered when someone tries to explain cryptocurrency to you. My anti-ageing regimen these days includes spending a lot of time on the internet and occasionally in actual life itself, trying to remain culturally au fait and keep my brain wrinkle-free. And for everything else, there’s a serum.

AGEING WELL IS A

LONG GAME Dr Michele Squire, PhDqualified scientist and founder of personal skincare coaching business Qr8, has some sage advice.

I WISH SOMEBODY WOULD COME UP WITH A BETTER TERM THAN ‘ANTI-AGEING’. I use it myself because at least everybody knows what I’m talking about, but I don’t think it adequately describes what we’re all getting at. We all know a lot more about science these days. We want science, and to understand what’s actually happening with our skin – how it behaves and how it responds, and doing what you can early to prevent things that are preventable.

PEOPLE DO TOO MUCH TO THEIR SKIN BECAUSE THEY CAN. Rather than chopping and changing between different products, give them time to work. There’s a strange logic in beauty that you have to add something to fix something. “My face is red, I need to start using a serum to combat that.” But it’s flawed logic. Let your skin settle, see what it does, listen to it – and add from there. Instead of overwhelming your skin, really pay attention to it. When you buy lots of products and mix them together, what happens is typically not the result you’re looking for.

WHAT YOU DO IN YOUR THIRTIES WILL PAY OFF IN YOUR FIFTIES (AND BEYOND). People are often looking for short-term solutions and fixes, but ageing well is a long game. Basically, there are two types of ageing. Intrinsic ageing is genetically programmed and mostly to do with hormones, menopause and the passage of time. You can’t control that. Your hormone estrogen decreases as you age, and so the changes in your skin will follow, getting more acute as time marches on. Skin is drier from producing less sebum and less natural moisturising actives. The structure of the skin starts to disintegrate so you’re prone to more sensitive skin, which means greater difficulty healing wounds (so go easy on things like microneedling). It’s a gradual decline until you hit menopause, things speed up for a period of time, then plateau again, and then speed up once more in your seventies. But you do have some control over extrinsic ageing, which is caused by lifestyle factors such as stress, diet and exposure to pollution and UV. In Australia, around 80 to 90 per cent of the changes we see in ageing skin are produced by photodamage (UV exposure). The sun upregulates the hormones within the skin that break down collagen, which contributes to deeply wrinkled, highly pigmented and stiff skin as you age. While there’s nothing you can do to stop the loss of collagen, which begins in your twenties, the simple act of applying sunscreen every single day will get you a hell of a long way. IF THE ONLY GLOW YOU’RE GETTING IS FROM AN EXFOLIANT, YOU’RE IN TROUBLE. When you’re younger, you’re naturally glowing because your skin turnover cycle happens every month; you don’t need to do much at all to promote radiance. By your thirties, things are starting to slow down. If you’re

in a cycle where you’re only glowing after exfoliating and the skin is dull, dry and perhaps a bit sore in between, that’s a sign that you’re really overdoing it. As you get older, you want to treat the skin more gently. You really don’t need to exfoliate more than once a week with a gentle exfoliant or a nice exfoliating mask. I tend to prefer chemical exfoliants because they’re just a bit more predictable – in the wrong hands, a scrub can cause damage, unless you’re super light-touch. And then eventually when you overdo it, there’s no glow at all. It’s about supporting healthy skin – healthy skin that’s functioning at its best glows, all by itself. YOU WANT TO HELP THINGS LOOK NICE TODAY AND TOMORROW. The way that moisturisers and eye creams work, for example, is that they add and hold water in the skin, plumping it up to help temporarily reduce the appearance of lines and wrinkles. Although it’s a temporary thing, they do contribute to helping your skin feel comfortable (especially in cold, dry weather) and give you that lovely glow that we all want. Taking ingestible collagen as part of an overall collagen preservation and plumping strategy can actually increase the collagen density in your skin. It also boosts skin hydration, which helps it to look and perform at its best. AND DON’T WORRY, ‘TECH NECK’ HAS BEEN AROUND FOR MILLENNIA. It used to be called ‘book neck’. We’ve all had our heads down for a long time. The neck and chest are particularly prone to gravity. When you’re young, you put creams on your face, you put sunscreen on your face, you put a hat on, but your neck and your chest cop the full force of the sun. Zero-waste hack: The ginger trimmings can be used to infuse honey to create a sore-throat tonic.

1 Preheat oven to 200°C. Whisk miso, honey, half the sesame oil and 1 tbsp tamari to combine. Add pumpkin wedges, season, and stir to coat. Arrange on a baking tray and roast, turning occasionally, for 4045 minutes until tender and golden. 2 Remove membrane from pumpkin seeds, rinse in a sieve, then pat dry on paper towel. Mix with remaining tamari, spread on a baking tray and roast for 5-6 minutes until crisp. 3 Set aside 2 spring onions. Chop remaining onions into 5cm lengths. Spread on a baking tray, drizzle with remaining sesame oil and season. Roast for 8-10 minutes until golden. Cool, then transfer to a processor with tofu, half the vegetable oil, half the garlic and half the lime juice. Season and process until smooth. 4 Combine vinegar, ginger and remaining lime juice and garlic. Stand for 5 minutes, then whisk in remaining vegetable oil. Thinly slice reserved spring onion. 5 To serve, spread tofu mixture on a platter, top with pumpkin wedges then scatter with pumpkin seeds, sesame seeds and spring onion. Although many recipes call for herb leaves only, when using tender-stemmed herbs, there’s no reason you can’t include the stems, too. Any that are too tough can be composted or used to infuse and flavour oils.

BASIL OIL

1 small bunch basil (leaves picked, reserving a handful to serve) 1 garlic clove, coarsely chopped 125ml (½ cup) David Jones Australian Extra Virgin Olive Oil FROM-SCRATCH VEG STOCK

2 brown onions, chopped 2 carrots, coarsely chopped 2 heads garlic, halved (reserving 3 cloves for the risotto and basil oil)

1 To make the veg stock, combine onion, carrot, garlic and all the reserved trimmings from the other vegetables and herbs in a stockpot. Cover with 2.5 litres water, bring to the boil, then simmer for 1 hour. Strain and transfer 1.25 litres stock into a clean saucepan. Add whey from mozzarella and simmer. 2 To make basil oil, place basil in a bowl. Pour over enough boiling water to wilt. Drain then rinse under cold running water. Squeeze out excess water from leaves, then blend leaves with garlic and oil until very fine. Season.

3 Heat oil and half the butter in a saucepan over medium-high heat until butter melts. Add onion and garlic, season and saute for 4-5 minutes until tender. Add rice and stir continuously for 1-2 minutes to coat the rice and lightly toast. Add wine, stir continuously until evaporated, then add stock, a ladle at a time, stirring until absorbed. Continue adding stock until rice is al dente and risotto is slightly wet but not soupy, adding in the peas in the last 5 minutes of cooking (about 15-18 minutes). Add parmesan and remaining butter, season, then stir through asparagus, zucchini and lemon. Transfer to a serving dish, scatter with torn mozzarella, basil and extra parmesan, and serve drizzled with basil oil.

2 packets David Jones Margarita Style Shortbread 150g David Jones Dry Roasted Australian Almonds 80g butter, melted BERRY MERINGUE

220g (1 cup) caster sugar 250g (1 punnet) strawberries 4 egg whites

1 Place mandarins in a saucepan with enough cold water to cover generously. Bring to the boil and cook for 15-20 minutes until tender. Drain, cool slightly, coarsely chop (discarding seeds) and process until smooth. Set aside.

2 Preheat oven to 180°C and grease and line a 13cm x 29cm rectangular cake tin, allowing baking paper to overhang the sides. Process three-quarters of the biscuits in a food processor with almonds and a pinch of salt until fine crumbs form. Add butter, process to combine, then press into the base of prepared tin. Bake for 8-10 minutes until golden. Set aside. 3 Process cream cheese, caster sugar and vanilla until smooth. Scrape down the sides, add yolks and mandarin puree, process until smooth, then add flour and process to combine. Pour over biscuit base. Bake for 25-30 minutes until centre is just set. Turn off oven, keep the door ajar and cool in oven for 1 hour. Refrigerate overnight. 4 To make meringue, stir sugar and 1 cup water in a saucepan over medium-high heat until sugar dissolves. Add strawberries and boil without stirring for 6-8 minutes until strawberries are tender. Remove strawberries with a slotted spoon. Continue cooking the syrup to 115°C on a sugar thermometer (about another 5 minutes), then whisk egg whites and a pinch of salt in an electric mixer to soft peaks. Continue cooking syrup to 121°C. With mixer on medium speed, gradually add syrup to egg whites, whisking until cooled to room temperature. 5 Blend reserved strawberries with lime juice. Remove cheesecake from tin and place on a platter. Use a large spoon to pile the strawberry meringue on top of the cheesecake – if you like you can brown the meringue with a blowtorch. Crumble remaining biscuits over the top and scatter with freeze-dried strawberries. Serve with strawberry puree and extra strawberries.

Zero-waste hack: We love to use citrus zest and juice, but what to do with the rest of the fruit? Boil the citrus shells until tender and blend into a puree, then add to dressings or marinades.
