Ingredients:
Total time: 55 min Serves: 4
• 8 Maple Leaf Prime chicken thighs
• 1 sweet potato, peeled and diced
• 1 cup (250 ml) of butternut squash, peeled and diced
• 2 small beets, peeled and diced
• 2 carrots, peeled and sliced in half lengthwise
Directions:
• 1 head green cabbage, sliced into wedges
• 2 tbsp (30 ml) olive oil
• 1 tbsp (15 ml) maple syrup
• 1 tbsp (15 ml) butter
• ½ tsp (2.5 ml) rosemary
• ½ tsp (2.5 ml) garlic salt
• Salt and pepper, to taste
1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper and set aside.
2. Place sweet potato, squash and beets in a large bowl. Drizzle 1 tbsp of olive into bowl followed by maple syrup, rosemary and garlic salt. Toss well to coat and arrange onto a baking sheet.
3. Place chicken into the same bowl and drizzle with remaining 1 tbsp of olive oil. Season well with salt and pepper and toss to coat.
4. Nestle chicken around the vegetables on baking tray. Cut butter into small cubes and place on top of each piece of chicken.
5. Place cabbage wedges and carrots on another baking tray and drizzle with salt and pepper.
6. Place chicken on middle rack of oven and cabbage and carrot tray on the rack below. Bake for 35 to 40 minutes, then flip carrots and cabbage, cooking until tender. Change oven to low broil and roast chicken for 3 to 4 minutes until golden and crispy.
7. Arrange onto a family style serving platter and drizzle with pan drippings.

Making a list of all your debts and the amounts you owe is the first step to lowering your debt. Then, set a reasonable, affordable payment timeframe for each debt. Paying off the highest-interest debts first helps reduce your monthly expenses, which
you can put towards the others to help you be debt-free sooner.
During difficult times, having debt can add even more stress. Before borrowing more money, consider all your options. If borrowing is necessary, make sure you understand the costs before making your decision. Some credit products are more expensive than others because of their high interest rates and fees. The best way to avoid taking on more debt is by talking to your bank about other options.
If you’re struggling to keep up with your payments, talk to your creditors or bank to find solutions. They could decide to lower the interest rate on your debt, extend your payments over a longer period or reduce your minimum monthly payment. They could also offer to consolidate your debts into one loan.

Leave an impression at dinnertime with a fresh take on a classic chicken roulade. This recipe comes together in about an hour, and features flavourful seared chicken breasts, a simple sauce and a sweetand-savoury filling – with a secret ingredient: your secret ingredient: prunes
The inclusion of prunes elevates the stuffing with a sweetness from their natural sugars. Prunes also contain a number of important nutrients: antioxidants, Vitamin K, potassium and fibre, just to name a few. Ingredients:
Filling:
• 1 cup (250 ml) California Prunes, chopped
• 1/2 cup (125 g) brick-style cream cheese, softened
• 1/3 cup (75 ml) squeeze-dried thawed, frozen chopped spinach
• 1/3 cup (75 ml) diced roasted red pepper
• 2 tbsp (30 ml) each chopped sliced Kalamata olives and pickled hot pepper mix

• 4 medium-sized boneless skinless chicken breasts
• 2 tsp (10 ml) Cajun spice or seasoning salt
• 1 tbsp (15 ml) olive oil
• 1 cup (250 ml) white wine
• 2 tbsp (30 ml) butter
• 1 tbsp (15 ml) fresh sage leaves, chopped
• Sage leaves to garnish
1. First, make the filling: in a medium bowl, add prunes, cream cheese, spinach, red pepper, olives and roasted pepper mix. Stir until well combined and set aside.
2. Butterfly chicken breasts and pound with a mallet to create an even thickness.
3. Divide filling among breasts. Create a log of filling along the centre of each breast and roll one side of the breast upward to wrap around filling. Secure the roll by tying it with kitchen twine or sticking a skewer through. Repeat with remaining breasts.
4. Season each roll with Cajun spice. For reduced spice, use seasoning salt instead.
Cooking – chicken and sauce:
1. Heat oil in a large nonstick skillet over medium heat. Add each chicken roll seam-side-down and cook with a lid on, turning periodically for 15 to 17 minutes, until golden-brown all over. Reduce heat to medium-low if chicken darkens too quickly.
2. Remove chicken to a cutting board.
3. In the same pan, raise heat to high and deglaze with white wine.
4. Reduce liquid by half. Stir in butter and remove from heat.
Serving:
1. Remove twine or skewers from the chicken and slice into 3/4-inch rounds. Plate with a side of mashed potatoes and green beans. Drizzle the sauce on everything, garnish with sage leaves and serve.
