Traditional tabby, also known as “coastal concrete,” is a mix of lime, sand and water and is primarily found in communities along the Southern Atlantic coast. Commonly used during colonial days because of its sturdiness and resilience to humidity, the lime portion of the recipe was often acquired by burning and crushing oyster shells. This is why tabby contains the shell pieces that give it a unique appearance.
