FREE SHUTTLE BUS SERVICE Meath County Council is launching a free shuttle bus service in Navan this December. The shuttle service will run on Friday, December 1st, Saturday, December 2nd and Sunday, December 3rd. The service returns on Friday, December 8th, and will run straight through until Saturday, December 23rd. The bus will run from the new Moathill Park and Ride located at the back entrance to St. Patrick's Classical School on the N51 to the new bus stop on Kennedy Road, at Kennedy Place opposite Navan Shopping Centre. There will be no other stops along the route. The service begins at 10.00am with the last pick up on Kennedy Road at 6.30pm. Visitors can park their car for free at Moathill Park and Ride for the month of December, hop on to the shuttle bus, and hop off on Kennedy Road. Making your visit to Navan hassle-free!

ective Abbey was established on the banks of the river Boyne in 1147. Nothing remains of the original monastic foundation at Bective, the earliest part of the present range of buildings dates from the thirteenth century with much of the remaining ruins dating from the fifteenth and sixteenth centuries. The fine monastic cloister, a covered passageway which surrounded an enclosed courtyard, separated the world of the monks from the ordinary people. One of the pillars of the cloister bears a figure, possibly an abbot, carrying a crozier. Massive fortified towers were erected on the church’s west façade and on the south-west corner of the monastery, giving Bective the appearance more of a castle than a religious establishment. Bective was the site chosen for the first daughter house of Mellifont. The first Cistercian monastery in Ireland was founded at Mellifont in 1142 and within a decade there were four daughter houses. Bective was founded in 1147 by the king of Meath. Dedicated to the Virgin Mary, the monastery was assigned the name, Bective, from De Beatitudine or Beatitudo Dei meaning the blessedness of God. BECTIVE ABBEY Cistercian monasteries were usually located in isolated rural settings and sited along rivers. The Cistercians were industrious farmers with cereals, cattle and sheep being produced. Fisheries were developed and mills, bakeries and other local industries initiated. Bective was located in the centre of the territory of Mide which was granted to Hugh de Lacy following the arrival of the Anglo-Normans, although there is no record of him making a donation towards Bective. De Lacy was felled by an Irishman at Durrow in 1186. His head and body were recovered nine years later. In 1195 de Lacy’s body was interred at Bective while his head was buried at St. Thomas’s Abbey, Dublin.

Communities were anxious to acquire the bodies of their founders or distinguished benefactors and Bective’s claim to de Lacy were challenged by St. Thomas’s Abbey in Dublin where the remains of de Lacy’s wife lay. The fact that de Lacy’s body came to Bective is an indication of its high status at the time. Further controversy over his remains ended in 1205 when judges appointed by Pope Innocent III decreed in favour of removal of the body to St. Thomas’s, where it was buried alongside that of his first wife. In 1217 the Abbot of Bective was accused of participating in a ‘riot’ at Jerpoint Abbey, County Kilkenny and was further charged with imprisoning a man in a tree stump until the man died. In 1386 men of Irish birth were effectively barred from entering the monastery. A large fortified tower was constructed for protection from Irish attacks into the Pale. The Black Death resulted in the numbers of monks being halved and lay numbers were also greatly reduced. The rebuilding at Bective in the late fifteenth century was prompted by the need to adapt the buildings for the smaller numbers of monks.

Bective Abbey closed after its suppression by Henry VIII in 1536 and the estate was gifted to a loyal civil servant. Lord Dunsany wrote that when the monks left Bective to go to Trim they took up half a mile of road. The new owner, Thomas Agard, began the process of converting the former monastery into a domestic residence, with the cloister transformed into an internal courtyard and the refectory turned into a Great Hall. The complex was converted into a great sprawling Tudor manor house with the insertion of new fireplaces, chimneys and large stone windows. The estate passed though the hands of various civil servants, none of whom had the time to pay any great attention to its development and it eventually fell into ruin. Bective Abbey was location for two scenes in Braveheart, a movie starring Mel Gibson, filmed in Ireland during the summer of 1994. The abbey served as the courtyard of Longshanks’ castle and also represented the dungeons in which Wallace is imprisoned. Nearby is Bective House the home of John Watson. Watson, one of the most famous equestrian sportsmen in Ireland is recognised as the ‘Father of

Polo’, as he formulated a set of fundamental rules for the game. The name, Bective, is recalled in the first book of short stories by local writer, Mary Lavin, Tales from Bective Bridge. On the south of the river is Balsoon House which is associated with the Ussher family. James Ussher was rector of nearby Assey from 1611 until 1626. He became Archbishop of Armagh and Primate of All Ireland in 1625 but is most famous for establishing the time of Creation as around 6 pm on 22 October 4004 B.C. Many older Bibles use this chronology as a side listing on their pages and its accuracy is accepted by some modern day creationists. Bective Abbey is open all year round with no admission charge. A car park ensures safe parking. It is signposted from the R161 between Trim and Navan and is also a convenient stopping point if you are visiting Tara and Trim. The ruins provide a maze of passageways with dead ends and interrupted staircases, all providing a favourite hideand-seek venue for my children when they were small. The walled ruins of the Abbey are perfect for a family picnic.

Stay Safe At Home This Winter With temperatures noticeably falling across the country this week, winter has well and truly arrived. And while many of us are beginning to focus on the festive period ahead, we should remember that harsh weather conditions bring a risk of injury and illness, particularly to ageing adults living alone at home. To help us all stay safe at home this winter, Home Instead’s National Clinical Lead, Danette Connolly, has provided advice for ageing adults, carers, friends, and relatives.

Here are her six tips for staying safe this winter: 1. Wear layers of clothing Significant drops in internal temperature can lead to serious health complications for ageing adults. To stay warm throughout the day, it’s best to wear several thin layers of clothing and to ensure all internal windows and doors are kept closed.

Happening on the 3th of December in the Old School Grounds in the village. Kilmessan Christmas Market Showcases Local Christmas Craft with fun for all the family, including entertainment from the local choir and children's choir.

Slane Castle’s Festive Christmas Markets happen on the 16th and 17th of December from 11am to 4pm. hristmas is the one time of year you can be almost certain the whole family will gather together for the annual feast. The aroma of food being cooked wafting in from the kitchen always manages to comfort and soothe, and if you have travelled a long way to be there you realise “I am home” Of course getting the Christmas dinner ready can be a very stressful occasion for the chef of the house, especially with everyone’s expectations running high that this year’s dinner will be even better than last years. The chef is busy in the kitchen ensuring that nothing is burnt and everything tastes perfect so, the kitchen can indeed be a place to tread carefully, and in Page 24

particular we must ensure there’s no distractions that can lead to disaster. Christmas dinner is an occasion that affords everyone an opportunity to stop, sit back, relax and talk with those around us, some of whom we may not have seen for a long time. Here we bring you some Festive ideas we hope you will find useful and delicious. We offer a traditional dinner and also a more modern touch to the Christmas dinner. We hope you enjoy our ideas for Christmas dinner whether it be traditional or modern.

Traditional Christmas Dinner Ingredients: 1 onion quartered 4 bay leaves 4.5-5.6kg/10-12lb turkey, giblets removed 1 quantity of stuffing 85g butter, softened 1 whole nutmeg 10 rashers streaky bacon Glass red wine, Preparation • Heat oven to 190C/fan 170C/gas 5. Put the onion and a large sprig of bay in the cavity between the legs. • Now pack half the stuffing into the neck end, pushing it towards the breast. • Secure the neck skin in position with skewers and tie the turkey legs together at the top of the drumsticks to give a neat shape. • 20 mins per kilo, plus 90 mins is the average cooking time • Put a large sheet of extrawide foil in a large roasting tin, then put the turkey on top.

• Smear the breast with the butter, grate over half the nutmeg and season well. • Cover the breast with bacon, pour over the wine, then loosely bring up the foil and seal well to make a parcel. • Roast in the oven, then 90 mins before the end of cooking, open the foil, discard the bacon, and drain off excess fat from the tin. • Leaving the foil open, return the turkey to the oven to brown, basting with the juices several times. • Then 30 mins before the end of cooking, place the stuffing of your choice around the turkey, or cook in a separate lightly oiled tin. • To test whether the turkey is cooked, push a skewer into the thickest part of the thigh – the juices should run clear. If they are pinkish, cook for 15 mins more, then test again.

Delicious Walnut and Apricot Stuffing Ingredients: 200g butter, 3 onions diced, 2tbsp tarragon, 4tbsp parsley, 800g sausage meat, 150g walnuts toasted and roughly chopped, 2tsp sea salt, 3tsp cracked black pepper, 100g dried apricot chopped, 1tbsp chopped juniper berries, Zest of 1 orange, 150g breadcrumbs. Preparation • Melt the butter on a medium heat and add onion

to cook but not colour. Stir in the herbs then transfer to a large bowl to cool. • When cool add the rest of the ingredients and stir until well mixed. • Line a loaf tin with parchment paper and push in the stuffing mix right to the edges. • Put into pre- heated oven at 210°c/410°f/gas mark 6 for 45 minutes.

Non Traditional Goose Dinner Serves 8 Ingredients: 6kg Goose(giblets removed), 1 tsp Szechuan pepper, 200g honey, 75ml soy sauce, 2tsp sea salt, 2 cloves, 1 tsp juniper berries. Preparation • Pre heat oven to 200°c / 400°f/gas mark 6. • Score goose all over with small cuts don't pierce too far. • Toast the juniper berries,sea salt,cloves and szechuan in a dry pan

leave to cool then crush with pestle and mortar. • Rub on to goose then place in baking tray and cook 25-30 mins. • Pour off fat and retain. • Reduce temperature to 140/230/gas mark a half. • Put goose back in for 2 hours basting every 20 mins with retained fat. • After this time pour off 90%of the fat then add the honey and roast for a further 30 mins at 180/270/gas mark 4 making sure it doesn't burn. • Add the soy sauce for the last 5 minutes then rest for 45 minutes with foil on top

Rockin’ Roasties

The secret to roast potatoes is to thoroughly boil them until they’re fluffy. Parboiling leaves unwanted moisture in the spuds. Serves 8 8 rooster potatoes peeled and cut into chunks Vegetable oil Step 1: Preheat the oven to 220C/425F/gas mark 7. While the oven is heating up, bring a pan of salted water to the boil. Add the potatoes, return the water to the boil and blanch them

for 8-10 minutes, until they are cooked through and tender. Drain them with a colander and leave to steam-dry for a couple of minutes. Be very careful not to break them up too much. Step 2: Heat a thin layer of vegetable oil in a roasting tray on the hob. Add the potatoes and stir them around so they are thinly coated with oil on every surface. Put the tray in the oven and roast the potatoes for 45 minutes, or until crispy and golden brown. Page 25


SCOTCH EGGS Makes 4 Ingredients: 4 eggs 500g sausagemeat 35g stuffing mix 1 tsp chopped parsley 1 tsp chopped thyme ½ tsp mixed herbs

¼ tsp chilli flakes Salt and pepper 75g plain flour 1 egg, beaten 75g breadcrumbs 1l sunflower oil, for frying

• 200g butter, melted • 250g soft light brown sugar • 3 eggs • 1 tsp vanilla extract • 275g plain flour • 3 tsp cinnamon • 1 tbsp cornflour • 300g white choc chips • 75g white choc, melted

• 140g oil • 1 tsp mixed spice • 170g soft light • ½ zest of orange brown sugar • 200g grated • 200g self raising parsnips flour • Buttercream • 1tsp bicarb/bread • 100g butter soda • 300g icing sugar • ½tsp salt • 120g cream • 2 eggs cheese • 1 tsp cinnamon • ½ zest of orange • 1 tsp ground • Pinch of ginger cinnamon

Method: • Preheat oven 180°c/160°c fan and line 8inch square tin • Beat melted butter and sugar together until smooth in large bowl • Add eggs and vanilla and beat again. Add flour, 2 tsps pf the cinnamon and cornflour and beat until thick and smooth. • Add choc chips and fold in. Spread evenly in tin and bake for 25-30 mins or until there is still slight wobble 2cms in from edge. Cool completely in tin, and chill in fridge for at least 2 hours for that fudgey texture. • Melt the white choc and mix with remaining tsp of cinnamon and drizzle on top. Set in fridge again for 30 mins, cut with a hot knife and enjoy! Page 26

• Preheat oven to 180°c/160°c fan. Grease and line 8inch square tin • In large bowl, mix eggs, oil, sugar, and orange zest. • Sieve in flour, salt, spices. Add in grated parsnips and mix. • Spoon into tin and smooth down. Bake for around 35 mins or until toothpick comes out clean. • Leave to cool completely. • For buttercream, beat butter until pale and fluffy. Beat in icing sugar. Beat in cream cheese and zest and cinnamon. Smooth on top of cooled cake. Slice and enjoy!

• Bring a pan to the boil, place your eggs in and lower the water to a simmer. 6 mins for for soft boiled, 7.5 mins for hard boiled. • When they are done, place them in cold water to stop the cooking process. • Slightly cracking the eggs now will make peeling easier later too! • In separate bowl, add sausagemeat, stuffing mix, parsley, thyme, mixed herbs, chilli flakes and seasoning and mix together until well combined. • Peel the eggs. • Portion out sausagemeat mix into 4 equal portions. • Using clingfilm, flatten each portion down, place en egg in each portion and use the clingfilm to wrap up each egg. • With 3 separate bowls, place flour in one, beaten egg in one and bread crumbs in the last one. Roll each egg in flour, then egg, then breadcrumbs so they are fully coated. Repeat for each egg. • Heat the oil to 160°c in large heavy bottomed pan, it needs to be 5-6cms deep. • Fry scotch eggs for 9-10 mins until golden brown and crispy, turning halfway. • Leave to cool for 30 mins and enjoy warm or cool fully and chill in fridge
