Burritts!

Dylan has played baseball, basketball, football, and volleyball.

After playing volleyball for the Newbury Park High School team, he’ll be attending Wentworth University in Boston this fall, where he’ll continue to play the sport. Now that he’ll be moving crosscountry for school, the Burritts will have even more time to focus on Brooke’s sports.

Brooke also plays volleyball for both the Newbury Park High School team and a club team. She will be trying out for the track and field team as well.

When they aren’t busy with philanthropy efforts and supporting the kids’ athletic endeavors, Kelli practices employment law and is a litigator on the plaintiff side. Craig is a realtor. After growing up in Newbury Park, he says he has a “good grasp of the Conejo Valley and Ventura County.”

“I’ve lived in Newbury Park my entire life,” he says, “I used to play in Dos Vientos when it was horse property on the other side of Lynn Road. It was my playground as a kid. I watched the development in the seventies and eighties.”

Kelli, who grew up in Woodland Hills, and Craig met during college in Santa Barbara. The couple moved to Dos Vientos in 2001 and are original owners. “Once we got to move in and experience everything it has to offer, we’ve come to love the area very much.”

Craig says. “This is the second largest cancer research foundation in the world. Each year, they have a Man or Woman of the Year fundraising competition. My team raised $64,000 and ended up winning. Although we kicked off the week before the pandemic lockdown, we were still able to raise substantial money!”

Corks and Kegs also raised funds for Camp Kesem at Pepperdine University. “Kesem is a national organization that works through colleges to support children whose parents have gone through or are going through cancer. The organization offers year-round support. They also run regional getaway camps for 6 to 17 year olds. We hope to get one running at Cal State University Channel Islands in the next couple of years.”

Craig says there’s talk of getting Corks and Kegs up and running again in the fall, Dos Vientos Living will keep you posted!

For the entire Burritt family, sports are another avenue to community involvement. Both Dylan, 17, and Brooke, 15, are active in local sports. Craig has coached and sat on boards for sports since the kids were young, and Kelli has supported the teams.

When asked what he enjoys about living in Dos Vientos, Craig answered, without skipping a beat, “Community. Back in 2015, when I had emergency open-heart surgery, the community supported my family the 10 days I was in the hospital. Our kids were young. The neighbors would help watch the kids and take them to school. It was so wonderful to see the community come together to support.”

Community works both ways for the Burritts and Craig has done more than his share over the years to bring the community together with his participation in the Corks and Kegs event to raise funds for various non-profits.

Corks and Kegs started as an annual event to support the local team for the Avon Foundation 3-Day Walk. “When I took over, we focused on the Leukemia and Lymphoma Foundation,”

As a realtor, Craig shares his appreciation with clients. “I try to instill in people what an incredible area it is that we live in. I’m amazed to see how many people I grew up with or went to high school with are still here or have come back. What a unique and fantastic situation we have!”

BURRITTS' BEST CRISPY POTATOES INGREDIENTS: Kosher salt 1/2 teaspoon baking soda 4 pounds russet or Yukon Gold potatoes, peeled and cut into quarters, sixths, or eighths, depending on size 5 tablespoons extra-virgin olive oil, duck fat, goose fat, or beef fat Small handful picked rosemary leaves, finely chopped (I love that I can walk outside my door to the open space here next to my house and pick some fresh rosemary! Love Dos Vientos!)

3 - 6 medium cloves garlic, minced (I LOVE garlic) Freshly ground black pepper Small handful fresh parsley leaves, minced

DIRECTIONS: 1. Adjust oven rack to center position and preheat oven to 450 (or 400 if using convection). Heat 2 quarts water in a large pot over high heat until boiling. Add 2 tablespoons kosher salt (about 1 ounce), baking soda, and potatoes and stir. Return to a boil, reduce to a simmer, and cook until a knife meets little resistance when inserted into a potato chunk, about 10 minutes after returning to a boil.

2. Meanwhile, combine olive oil, duck fat, or beef fat with rosemary, garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Cook, stirring and shaking pan constantly, until garlic just begins to turn golden, about 3 minutes. Immediately strain

oil through a fine-mesh strainer set in a large bowl. Set garlic/rosemary mixture aside and reserve separately.

3. When potatoes are cooked, drain carefully and let them rest in the pot for about 30 seconds to allow excess moisture to evaporate.

Transfer to bowl with infused oil, season to taste with a little more salt and pepper, and toss to coat, shaking bowl roughly, until a thick layer of mashed potato–like paste has built up on the potato chunks.

4. Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly. Transfer to oven and roast, without moving, for 20 minutes. Using a thin, flexible metal spatula to release any stuck potatoes, shake pan and turn potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.

5. Transfer potatoes to a large bowl and add garlic/rosemary mixture and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

NOTES: Russet potatoes will produce crisper crusts and fluffier centers. Yukon Golds will be slightly less crisp and have creamier centers, with a darker color and deeper flavor. You can also use a mix of the two.

The potatoes should be cut into very large chunks, at least 2 to 3 inches or so. For medium-sized Yukon Golds, this means cutting them in half crosswise, then splitting each half again to make quarters. For larger Yukon Golds or russets, you can cut the potatoes into chunky sixths or eighths.

If you notice any of the following in your child’s teeth, you need to schedule them for an orthodontic consultation right away!

1. Buck Teeth: The most prevalent malocclusion. Buck teeth occur

when the front teeth stick out way too far past the position of the lower front teeth. This can interfere with proper chewing.

2. Reverse Bite, also known as Under Bite: This is when the lower teeth are protruding past the upper front teeth. This can lead to inadequate chewing ability and potential TMJ issues later on in life.

3. Very Crowded Front Teeth: Severe crowding can predispose your child to an increased risk of gum disease and a higher incidence of cavities due to the difficulty in being able to keep crowded teeth clean.

4. An Upper Arch that is Too Narrow: This is usually what creates cross-bites in children and will require some type of expander. This is something that is best treated in the early dentition, while the upper palatial bone is more pliable.

5. Gummy Smile: When your child does a big smile, if they show mostly gums above the upper front teeth, they need orthodontics right away. To have a chance at correcting this, they must be seen early, preferably while they still have lots of baby teeth.

Rob Crocker parlayed his passion for cars into an exciting motorsports career. A local boy, Rob moved to Dos Vientos with his family in 1999. Although he moved to Woodland Hills earlier this year, his family still lives in his childhood home in DV. We sat down with Rob to ask about his racing career, Dos Vientos, and more.

How did you get involved in motorsports?

Rob: I grew up with a love for motorsports. It was loud, fast, and dangerous. I didn’t grow up in a family that knew much about racing, but my dad has always been into cars for as long as I can remember.

We used to spend weekends working on his 1965 Mustang together, which is something that I think helped grow my love for cars at an early age. Although I have always had the dream of becoming a race car driver, it was something that didn’t seem realistic. I just figured it would be something I’d enjoy in my free time and follow as a sport.

It wasn’t until 2016 that I started my journey into the drivers’ seat. While at Laguna Seca (a race track up in Monterey) attending a race with my dad, I stopped by the Bob Bondurant Racing School’s vendor booth and talked to someone there. They handed me an informational brochure to take with me and they offered a 3-day class that would give me my provisional racing license with the Sports Car Club of America if I passed the course.

Initially, my parents weren’t keen on the idea of sending me out to Phoenix, Arizona to do something I had virtually zero experience with. But, with a little persistence, I finally convinced them to let me try my hand at driving on the race track. By January of 2017 I was on my way to Phoenix, and I ended up passing the course with one of the highest scores the school had seen up to that point.

Mr. Bob Bondurant himself, who had established his reputation as a renown racing driver in the 1960s, personally told my dad to “get this boy into a race car”. At that point, it seemed like my fate was sealed. I had arrived in Arizona with no expectations, open to the possibility that racing may still be unrealistic for me. But, as it turns out, I ended up having a natural ability for it.

a combination of skill, luck, and consistency, and as the saying goes, “Luck is when preparation meets opportunity.”

Do you have any exciting experiences to share?

Rob: I don’t have one particular exciting experience, but racing a car at the absolute limit is a feeling that’s very hard to replicate with anything else. I wear a FitBit to track my vitals during a race, and my heart rate will average somewhere between 110-125 BPM. But it can get as high as 170 BPM, particularly right before the start of the race when the anticipation and nerves are at their highest. But once I settle into the groove or the “rhythm” of the race my heart rate steadies out.

What are your memories of growing up in Dos Vientos?

Rob: Most of my earliest memories from growing up are in Dos Vientos. I attended Sycamore Canyon from 2002 to 2011, starting in kindergarten and finishing up in the 8th grade. Or high school, I went to Oaks Christian in Westlake Village and graduated in 2015.

What did you enjoy about living in DV? Rob: I enjoy the nature more than anything. Now that I’m living in the Valley, I realize how much more scenic and peaceful (and quiet) it is out in Dos Vientos. I love hiking the hills over by the horse stables, something I can’t do as much as I’d like to anymore. Plus, the weather is really nice.

Do you have any other hobbies, aside from racing?

I have a few other hobbies that I like to fill my free time with.

As much as I love racing, it’s always nice to get a break from the continued on page 14

What is your racing record?

Rob: I’ve won a total of 10 races so far at both the club and professional levels. I still haven’t won a championship, but it’s something I’ve been working towards from the beginning. At the end of the day, if you’re not showing up to win it all, why even bother showing up in the first place? But winning a championship is a bit like running a marathon – it’s more about the long run. It’s

These are all things I honestly took for granted when I lived in Dos Vientos, but it’s made me enjoy them more when I do come back to visit. I’ve hiked Boney Mountain a few times as well.

Satwiwa is really a unique and beautiful place, and I have many fond memories of mountain biking that area with my dad when I was a kid.

non-stop nature of it. I’ve always been interested in music, and it’s something that I incorporate into nearly every part of my life. I’ve even got a playlist that I listen to before I get in the race car to help get myself in the zone!

I also play a lot of guitar, and I enjoy a good game of chess. On top of that, I’m also a big history buff – I used to go to the Thousand Oaks Library and look at all of the old photographs of the Conejo Valley when it was almost entirely farmland. Needless to say, I find many ways to fill up my time.
