with cake artist Grace Angulas
Baker and sugar sculptor Grace Angulas of Graceful Baking in Mont Vernon is all about discovering new tastes and textures and reimagining creative desserts. Growing up in kitchens around New Hampshire, Angulas’ culinary passions started early and have been nurtured by industry mentors as well as New England’s natural beauty and timeless appeal that you’ll see baked into each work of art that she creates today. Featuring intricate royal icing designs, sugar flowers and more, each of her one-of-a-kind confections are influenced by the classic and luxurious feel of New England charm and make for the perfect centerpiece to any special day.
Q : What cake trends are you currently drawn to, and how do you ensure that each couple’s cake reflects their unique style?
A : Most of my couples come into the consultation with one vision and leave with a design they hadn’t even considered. This opportunity for discussion allows me to integrate new and modern cake trends into their dream designs. Some trends that I’m excited to incorporate into future 2025 wedding designs include the Pantone color of the year, “Mocha Mousse,” taller and larger cakes, edible wafer paper art deco and wildflower-style gum paste sugar flowers.

Q : What are some common mistakes couples make when selecting their wedding cake, and how can they avoid them for a stressfree experience?
A : Choosing the flavor. It’s easy to become distracted and overwhelmed by the process of selecting a flavor for the cake. I always advise couples to remember that it’s their day—they should choose a flavor that makes them happy, not just the “safe” choice.
Q : How do you customize cookies to fit the theme or color scheme of a wedding, and what are some creative ways to display them?
A : Custom royal icing cookies are a fantastic way to add a personal touch to your wedding. Couples can incorporate wedding colors, florals, monograms, dates, or even their pets’ faces into the cookie design. These cookies can then be displayed on the dessert table for guests to grab and go, packaged as favors, or included in wedding welcome bags!

: What are some “nontraditional” dessert options that you recommend in making a couple’s day more unique and special?
A : I always encourage my clients to select flavors, desserts, or small details that are meaningful to their relationship. I had a 2024 couple who told me their favorite dessert was crème brûlée but weren’t sure how to incorporate it into their wedding. We worked together to create fresh custards that were torched on-site for each guest individually!
Q : For couples considering noncake options for their wedding, how do you suggest they balance their dessert table?
A : My golden rule when it comes to dessert tables is two to three mini dessert pieces per guest. This ensures a balance between those who want four to six desserts and those who prefer just one or two. I also recommend having five to six varieties of desserts on your spread. Great grab-and-go options include French

macarons, mini cupcakes, dessert shooters, brownie bites, mini fruit tarts and mini éclairs!
Q : What are your most requested flavor combinations? Or your own personal favorites that you recommend?
A : My most requested flavor combination last year was lemon strawberry. It includes layers of lemon cake soaked with lemon simple syrup and filled with fresh strawberry buttercream. Some of my personal favorite cake flavors from the menu include vanilla cake with strawberry champagne buttercream, chocolate cake with salted caramel buttercream, almond cake with blood orange buttercream, and coconut cake with key lime curd and coconut buttercream.
Q : When should couples start thinking about their cake or dessert?
A : I prefer when couples reach out to me as soon as they begin their planning process! Wedding cakes
and desserts can be an overwhelming world of options and pricing tiers. Starting early allows us to begin the artistic process and reduce stress for couples who may feel uncertain. Questions are always welcome via email, or you can schedule a private cake tasting and consultation to kick off the process.
Q : What’s your advice for couples with dietary restrictions?
A : Couples with dietary restrictions deserve delicious desserts at their wedding too! I offer gluten-free, dairy-free, vegan, eggfree and allergen-friendly options for my couples, including mini desserts, royal icing cookies and wedding cakes. In the modern world of baking, it’s absolutely possible to have a beautiful and delicious wedding dessert that is allergen-free. From Portsmouth, New Hampshire to Portsmouth Rhode Island and everywhere in between, Illume Floral owner Audrey Peters’ bespoke floral designs have decorated weddings and events throughout New England. Peters works out of her studio in Newmarket, creating asymmetrical, abstract bouquets and romantic, airy floral works of art with a creative twist from fresh seasonal flowers. Her artistic style is a reflection of the vision of her clients, with whom she illuminates their experience with the beauty that flowers bring.
Q : What do you love most about what you do?
A : Flowers have a way of making people pause, pay attention and take notice of their surroundings. They create a brief moment, an opportunity to reflect and be present and mindful. They bring us back to our senses, and I love being able to contribute more of these opportunities through my work with flowers.
Q : What do you wish couples knew about the floral process?
A : The amount of time and planning that takes place long before the week of the wedding. Consultations, creating the proposal, vision boards, coordinating with the planners and other vendors, scheduling and hiring staff for the event, ordering vessels and hard goods, etc. There is so much more going on behind the scenes than just playing with flowers, and I think sometimes people don’t realize the amount of time and work that florists are contributing.
Q : What’s the most popular floral trend this year and how can
couples incorporate it into their design without feeling too trendy?
A : My advice is to honestly ignore the trends because while trends can be fun, they often lead to cookie-cutter weddings that don’t feel authentic to the couple. Block out all the chatter and other peoples' advice, and just follow your instincts. Start by looking through inspiration photos together and compile a collection of the images and colors that speak to both of you. This is honestly the best way to communicate your vision, and there’s nothing I love more than studying a couple’s vision board because it provides so much insight that words often fail to convey.
Q : Why are wedding flowers so expensive?
A : People don’t understand the amount of time, work ethic, care and quality of flowers that florists offer is vastly different than what you can easily find at a supermarket. Largechain grocery stores have the financial means to purchase standard grade flowers in bulk at very low prices and then sell them at cost value because
they do not need to make any profit. Because of this, you can certainly find cheap flowers at a supermarket, but they are almost always unethically grown, loaded with pesticides and are often many days old, wilted and moldy. It’s like comparing fast-food with an expensive gourmet restaurant. Why are we willing to pay more for a gourmet meal at a restaurant? Because of the overall experience, quality of food, the expertise and care that went into preparing your meal, your experience surpasses anything that you will find at a fast food restaurant. You are paying for the overall experience as well as quality of the flowers and the service. If you want peace of mind, and experts that you can trust will deliver the highest quality of flowers and service, then hire wedding florist. It is well worth the extra money, and the difference in what you will receive will be vastly evident!
Q : When should couples start thinking about florals?
A : Definitely a year out, if not more!

Q : What advice would you give to couples who are starting the planning process?

A : For couples who want to enjoy their cocktail hour and not worry about formalities after the "I do's," a first look can be a great way to get wedding party and family portraits out of the way beforehand. For those who prefer the tradition of not seeing each other before the ceremony, but still want to be present after, there are ways to plan certain formalities beforehand to limit the time spent away from guests later. Ultimately, it comes down to what feels right for you. Think about how you want to feel when you look back on your wedding day and your photos—and let your heart guide the decision.

A chic café-inspired wedding for the modern romantic
Nothing says springtime like a stroll through a Parisian café. With its enchanting window displays of freshly cut lilac, lavender and tulip blooms, all resting beneath striped awnings, there is no shortage of visual delight.
Inspired by her recent travels, wedding planner Catherine Preusse of Mirth Events Co and her team of vendors sought to create a French-inspired wedding design within the modern blank canvas of The Greenery at McKenzie’s Farm.

As the ground thaws and dormant gardens burst with new life, it signals the start of spring. “We love spring for the same reason we love weddings,” says photographer Megan Holloway of The New Romantic. “Both are brimming with anticipation of what’s to come.”
And no one embraces springtime quite like the French. Wholeheartedly believing ‘Paris is always a good idea,’ Catherine Preusse of Mirth Events Co set out to create a modern, meets fine art wedding design inspired by the iconic cafés she visited during a recent trip to Paris.
Stunning florals in hues of violet, lavender and buttery yellow are placed throughout the room. Curated by florist Jessica Edwards of Miel Floral, meaning ‘honey’ in French, the selected florals add a welcomed pop of color. Reminiscent of the flower bunches found in Parisian café windows, Edwards hoped to showcase springtime staples—like lilacs and tulips—alongside lush greenery.
Cafés are uniquely known for their signature scent—usually a mix of freshly baked pastries and flowers. Similarly, Edwards recommends considering scent when choosing your wedding florals. “If you are open to featuring the scents of the season, spread the fragrant florals throughout the space,” Edwards suggests. “You don’t want it to be overwhelming, but it can be a nice touch.”
A collection of bistro pendants casts a soft glow above the table. Making a strong visual statement, the four round pendant lights evoke the feeling of being in an upscale coffee shop.
“I noticed many Parisian cafés had greenery hanging from their awnings, and I wanted to do something similar,” Preusse says. Thanks to Edwards and the visionaries at Griffin & Griffin Lighting, a trellis is placed atop the lighting fixtures, allowing strands of jasmine vine and plumosa fern to be carefully woven in. There is an understated beauty to the tablescape design, blending modern aesthetics with old-world charm. Preusse keeps the linens minimal, allowing other features of the tablescape to shine.
“From a distance, the tablescape felt clean and uncluttered,” says Holloway. “But upon a closer look, there were so many details and thoughtful touches.” Preusse adds texture with the clear ribbed glassware also seen within the high-end flatware. The gold accents from the flatware blend well with the gold candlesticks.
Edwards arranges florals in custom ceramic vases that resemble the creased texture of croissants. With curled stems and cascading buds, Edwards finds comfort in “allowing the flowers to do what they wanted to do.” The final result strikes a balance between the tailored, modern tablescape and the organic, locally sourced blooms.
Sitting atop the modern table setting is a handcrafted menu, designed by wedding stationer Emily DeMeo from Of Light and Letters. Featuring a fine art painting titled ‘Bowl with Flowers’ by Marie Egner, each hand-calligraphed place card is tied onto the menu with a white silk ribbon.
The menus feature the couple’s monogram and typography, both of which were inspired by Preusse’s travels and consistently woven throughout the entire invitation suite. The weekend cards incorporate distinctly Parisian elements—like hand-drawn illustrations of clinking flute glasses to represent the rehearsal dinner and croissants for a wedding brunch.
No detail is overlooked in the experience of opening the invitation, featuring an evergreen envelope with a scallopedged, stripe-patterned liner, emulating the iconic Parisian café awnings. DeMeo even sourced a New Hampshire lilac stamp for the envelope—ushering in the spring season.
Opting for a full-volume bouquet of seasonal blooms, Edwards arranges a bridal bouquet of hellebore, Pieris japonica and sweet pea flowers. The lush plum-colored calla lilies add depth and rich color to the backdrop of greenery. “The bouquet should always complement the dress rather than overwhelm it,” says Edwards. Every detail makes a difference when creating a high-fashion bridal look. For the ceremony, the voluminous gown, designed by Sareh Nouri, features an elegant train for a traditional formal wedding ceremony. For a flair of femininity, the gown, provided by Madeleine’s Daughter, is further adorned with an intricately embroidered floral top from Anne Barge. The veil adds a touch of drama with its long train and short blusher. In keeping with the Parisian theme, Maricruz Hairstyles put a modern twist on the timeless French twist updo. Teardrop earrings with large honey-colored jewels by Ti Adoro Jewelry are the finishing touch.
In France, two bridal looks are a given. It’s not uncommon for brides to trade their classic gown for a playful, romantic dress for the reception.
“I loved seeing streetwear fashion in Paris,” says Preusse. “Women often wear big coats with fun and flirty dresses underneath.” Embracing this style, the dress’s fitted satin bodice and flared hem pair well with a sophisticated set of pearl earrings and a pearl choker necklace.
The cocktail-length dress allows for a big reveal: a pair of Jimmy Choo pumps in a rich shade of violet. To bring in more of this hue, makeup artist Amy Strozzi changes the neutral eyeshadow from the ceremony look to a dreamy metallic purple. For a final embellishment, sheer white flowerembroidered gloves elevate the look while adding a touch of whimsy.
The French know how to celebrate in style. “What we all love about Paris, from the food to the style, is how effortless it is,” Holloway says. “It’s chic yet unfussy, sophisticated yet playful.” But the key to an effortlessly chic wedding design is all in the details. To plan a wedding like the French, the vendor team recommends staying true to yourself, opting for classic shades and embracing understated beauty. After all, it’s the Parisian way.
