Foreword

East Lothian sits in the shadow of Scotland’s Capital and many drive through unaware of the area which combines the best of Scotland in miniature, writes Nigel Duncan.

However, East Lothian has stunning credentials. It stretches from Musselburgh to Dunbar and is home to some of the world’s leading golf courses, including Muirfield, one of the oldest clubs in golf and host to 11 Amateur Championships and 16 Open Championships, and Gullane which hosted the Aberdeen Asset Management Scottish Open last year.

There are over 40 miles of sparkling coastline with golden beaches, including Yellowcraigs near Dirlton, with superb views over the Firth of Forth to the island of Fidra, rumoured to be the inspiration for Robert Louis Stevenson’s novel “Treasure Island”. Belhaven Bay, Dunbar, is a sheltered beach with fine views of the coastline and impressive waves which attract surfers.

Award-winning museums are housed here including the National Museum of Flight which is home to one of the celebrated Concorde planes and the Scottish Seabird Centre.

There are spectacular cliffs and abundant wildlife, including the dramatic volcanic islet of Bass Rock, home to a huge colony of seabirds, and sheltered harbours. If wildlife is not your bag what about the attractive market town of Haddington or picturesque seaside towns and villages with quaint shops which are worth visiting.

It is not just the Highlands and Islands where you can enjoy a wee dram of whisky. East Lothian boasts Glenkinchie Distillery. It sits at the foot of the Lammermuir Hills, a mecca for walking enthusiasts. Golf may attract international notice and be centre stage in East Lothian but there are other attractions.

The Sport of Kings is celebrated here with regular horse racing staged at Musselburgh and there are a wealth of opportunities for sea fishing in the Forth Estuary and game angling in lochs and rivers. The coastline is also popular with sailing enthusiasts.

Underlining that commitment, the council secured the HR Networks Best Workplace National Award in 2010. Furthermore, East Lothian Council are determined to make the area a great place to live, work and visit.

Looking to the future, the council have ambitious plans to protect and nurture the county so that it continues to grow and improve making an already strong attraction that much more compelling for large and small businesses.

After all that you’ll probably seek a refreshment or something to eat. East Lothian has a fine selection on first class cafés, bars and restaurant outlets. Many use quality local produce. Why? Because East Lothian is known as the Garden of Scotland with a superb range available. You are spoilt for choice.

I almost forgot. East Lothian is officially the sunniest area of Scotland and it is less than an hour by car or train from Edinburgh making the area an ideal place to stay. If you are seeking quality in life than look no further. East Lothian is not only a great place to visit, it is also a wonderful place to live and work.

Things have changed dramatically in East Lothian.

The local economy, which previously relied on farming, fishing, mining and manufacturing, is now based on modern industries. They include chemical research, printing and electronics, as well as tourism, a major attraction and money-spinner.

Housing has also developed. Now, there is a vast range of property available, from rustic to modern and East Lothian is home to around 100,000 people.

What about property prices?

They are high in neighbouring Edinburgh but East Lothian prices compare favourably with those of in the Capital making East Lothian popular with commuters and families.

Good transport links by road and rail make reaching Edinburgh and the rest of Scotland easy. Edinburgh is on your doorstep. Schooling is also a key factor in deciding where families stay and East Lothian’s schools are claimed to be first class.

The council’s vision is clear: “We want to make East Lothian a place where people want to be; a place that people are proud to be part of.”

The area is proud of its heritage and sportsmen. John Muir, the father of the US National Parks, comes from there as does clergyman John Knox, a leading Protestant Reformer in Scotland and a man considered to be the founder of Presbyterianism.

In sport, Willie Anderson, a fourtime US Open golf champion, hails from East Lothian as does the late Scottish international footballer John White who was a key man as English side Tottenham Hotspur won the league and cup double in 1960-61. He was sadly killed by lightning on a golf course in England aged 27. Names which can be added to that list include Ben Sayers, whose firm claims to be the oldest golf club company in the world, Haddington-born Finlay Calder, a former captain of the British and Irish Lions on their tour to Australia in 1989, and Jock Taylor, a world champion motorcycle sidecar racer.

So, East Lothian has many attractions so why not have a closer look at what the area has to offer? It could be eye-opening.

Towns Cockenzie & Port Seton Cockenzie & Port Seton is a unified town on the Firth of Forth, 4 miles from Musselburgh, east of Edinburgh.

The burgh or barony of Cockenzie was created in 1591 by James VI. Cockenzie's name derives from the Celtic (perhaps Culchoinnich - the nook of Kenneth). Between 1655-65 George Seton, Eleventh Lord Seton, built the first harbour at Port Seton. It was called Port Seton to distinguish it from Cockenzie Harbour and so the village of Port Seton got its name.

The town has a lot of historical interest. On one side of the town is situated Seton Palace (replaced in the late 18th century by Seton Castle), frequented by Mary Queen

of Scots and on the other, Prestonpans, the site of the famous Prestonpans Battle.

Seton Collegiate Church is an important monument of the late 15th century with a fine vaulted apse. Cockenzie Power Station was officially opened in May 1968.

Cockenzie was chosen as there were ample supplies of coal nearby, ready access by rail and an abundance of cold seawater.

Once two small but thriving fishing villages, the harbour still has a small industry, mainly fishing for prawns. Cockenzie was also a centre for mining and saltmaking with the harbour used to export coal mined from the pits around Tranent.

Recent environmental improvements made to the coastal walkway and harbours help make Cockenzie and Port Seton a popular place for day trippers and holiday makers. There is also a modern caravan site at Seton Sands.

David II made Dunbar a Royal Burgh in 1370 by Royal Charter.

It is steeped in history and was one of the most important Scottish Fortresses in the middle ages. Its ruined castle, which stands guard over the town's twinned harbours, once sheltered Mary Queen of Scots.

Dunbar was invaded by the English, razed to the ground twice in the 16th century and played a key role in Scotland's defences. The town was also occupied by Oliver Cromwell in 1650, the year of the Battle of Dunbar. It is also an area rich in history with archaeological and geological sites. Various bronze age burials have been uncovered and excavations disclosed a large Celtic fort.

Dunbar lies on the coast at the mouth of the firth of Forth. 30 miles east of Edinburgh on the A1, Dunbar is renowned for its high sunshine record, rugged coastline and attractive countryside. The InterCityrail line between Edinburgh and London passes through the town and International airport at Edinburgh is just an hour's drive away.

John Muir Country Park and the Lammermuir Hills offer scenic tranquil landscapes rich in natural history. The Park opened in 1976 and was the first of its kind in Scotland.

It was named after John Muir who was born at 126-128 High Street Dunbar in 1838 and who emigrated to America with his family when he was eleven.

Throughout his life, John Muir was immersed in the world of nature. He was at the forefront of the establishment of the Yosemite, Sequoia and General Grant National Parks. An interpretation centre which details the life and achievements of this remarkable man, the John Muir Birthplace, is now a major tourist attraction in Dunbar.

Haddington Haddington has been a Royal Burgh since the time of David I and was built in the 12th century to provide trade and industry.

There are many different explanations as to where the name came from. In the 5th century, Haden was a Saxon Chief. In Anglo-Saxon, Hadin-tin means 'town of ordination or holy order' and in Gaelic heuedinge-town means 'princes-town'.

Haddington has been invaded by the English and burnt to the ground on several occasions. It has also witnessed disastrous floods when the normally placid River Tyne overflowed its banks.

churches in the Lothians. Called 'the Lamp of Lothian', it is also the largest parish church in Scotland. The church is home to the grave of Jane Carlyle. Lennoxlove House, which is home to the Duke of Hamilton, also has associations with Mary, Queen of Scots and contains an extensive art collection. Trapain Law is the site of an Iron Age fort which was inhabited until the 11th century. Giffordgate is reputedly the birth place of the famous religious reformer John Knox.

Haddington is also the closest town to Athelstaneford, the birthplace of the Saltire or St Andrew's Cross, Scotland's national flag.

23 Musselburgh Musselburgh is situated at the mouth of the River Esk, running along side the eastern bank.

Fisherrow occupies the west bank of the Esk and started life as a row of fishermen's houses along the shore near the harbour. The communities are connected by three bridges.

The name, Musselburgh, derives from the mussel beds which lie along its shore on the Firth of 5 09 Forth. The town dates back to A6 Roman times when a fortress was built on Inveresk Hill. The Coat of Arms for Musselburgh is made up of three mussels and three anchors; the mussels refer to the origins of the burgh,the anchors refer to the fishing tradition of the community.

The town motto 'Honesty' dates back to 1332, when the Regent of Scotland, Randolph, Earl of Moray died in the Burgh after a long illness during which he was devotedly cared for by the citizens of the burgh. His successor offered to reward the people for their loyalty but they declined saying they were only doing their duty.

The new regent was very impressed and said they were a set of honest men, hence 'Honest Toun'.

The Riding of the Marches was first mentioned in 1682 and takes place every 21 years. In those days there was great rivalry between landlords who were always trying to encroach on each other's property.

So the Lairds conscripted men to protect their boundaries. Later

the custom became a symbolic ceremony, where a town champion dressed in full armour and a turf cutter checked the 12 points along the boundary of the burgh. The next Riding of the Marshes will take place from 23-31st July 2016, with a whole week of events culminating in the ceremony.

Musselburgh is also home to many examples of great architecture.

Newhailes House, owned by the National Trust for Scotland, was built in the late 18th century by Sir David Dalrymple. The Tolbooth in the High Street is one of the finest and oldest buildings in Scotland and dates from around 1590. The Mercat Cross, which dates from the 1700s stands on the site of the original medieval cross.

Musselburgh Racecourse (the oldest in Scotland) has been a venue for racing since 1816. It was originally known as Edinburgh Races with meeting held on Leith sands, before moving to the attractive meadows setting at Musselburgh.

The Racecourse is also home to the historic 9-hole Musselburgh Links which was host to the first Open Golf Championship and the record books date the course to 1672, making it the oldest surviving golf club in the world. Musselburgh Silver Arrow is the oldest sporting trophy in the world and has been competed for annually since 1677 by the Royal Company of Archers.

Musselburgh is also home to the newly renovated Brunton Theatre which hosts major dramatic productions throughout the year.

Money for the buildings was bequeathed by John D Brunton, son of the founder of Brunton Wireworks to provide the people of Musselburgh with halls and other municipal buildings to be called The Brunton Hall.

Robert Louis Stevenson lived for a short time in the second half of the 19th century in The Quadrant, North Berwick. Fidra, an island situated off the coast from North Berwick, is thought to have inspired his book 'Treasure Island'.

A volcanic plug of solidified lava in the vent of a volcano to the south of the town is known as North Berwick Law. During the ice age, the Law was shaped by the movement of ice. This left the western end, steep and craggy, while the eastern side forms a longer, gently sloping tail. Its summit, 613 feet above sea level, provides a spectacular vantage point over the Firth of Forth. This was exploited during the Iron Age, as North Berwick Law was the site of a palisaded fort. Later, the Law was used as a lookout point to survey the surroundings and a watch beacon was kept on the top.

In 1544 a warning bonfire had to be lit as the invading English army, under the Earl of Hertford, moved towards North Berwick. During the Great War, the watches were revived when a concrete lookout house was erected on the summit which is still there today.

The Bass Rock island is a volcanic plug which lies one mile to the east of North Berwick where it marks the point where the Firth of Forth joins the North Sea. This rocky crag has had a long history, as it is here that St. Baldred died in 757 AD. In 1316 it was given to the Bishop of St. Andrew's. By 1651 it was in the possession of the government who turned the castle, which had been there since 1405, into a state prison.

This prison was know as 'Scotland's Bastille'. Today it is world famous for its colony of gannets; the bird takes its Latin name, Sula Bassana, from the island.

North Berwick The name 'Berwick' is derived from the Old English for 'Barley Town' with 'North' being added to distinguish it from Berwick Upon Tweed.

In medieval times North Berwick was a ferry port for pilgrims journeying towards St. Andrew's to worship the relics of Scotland's patron Saint. The harbour remained a focal point in the town and as the pilgrims declined, it developed its fishing and trading, taking advantage of North Berwick's status as a Royal Burgh (1373).

Prestonpans derives its name from the Monks of Holyrude and Newbattle who erected pans on the sea shore to manufacture salt.

For a long time its ecclesiastical name was Salt Preston. The most ancient name, however, seems to have been Aldhammer, but this was lost to that of Prestow, Prieston and Preston.

Prestongrange Industrial Heritage Museum is worth a visit. The museum contains exhibitions on mining as well as equipment from its working days including steam trains. It also houses a magnificent Cornish Beam Engine of 1874.

Prestonpans is also home to some impressive examples of historic architecture. Preston Tower is the original seat of the Hamiltons of Preston. The gardens of this 15th century tower house and doocot have been restored with elements of 17th & 18th century Scottish Gardens. There is an impressive stone memorial near Meadowhill close to the battle site.

Prestonpans has excellent communications with Edinburgh - 14 miles by rail, a little longer by road.

Tranent One of the most ancient towns in East Lothian, Tranent lies 10 miles east of Edinburgh and 7 miles from Haddington, The town is built on a gentle slope, about a mile and a quarter from the estuary of the Forth.

No one knows when the small village settlement was first founded. Tranent derives its name from its natural situation. 'Trev-er-nent' signified 'the village on the ravine'. In ancient writings the name has been given variously as 'Traunent', Travernet' and 'Treuernent'.

Once an important mining town, coal was first worked in Tranent in the 12th century.

The history of coal mining in Scotland is mirrored in the history of the coal heughs, mines and pits of Tranent.

Over 200 years ago, Tranent was the site for what historians call "Scotland's Forgotten Massacre".

Twelve unnamed people were killed by a cavalry unit following the Tranent Militia Riot of 1797. The massacre was the subject of a cover-up at the highest levels, with none of the perpetrators brought to justice. A memorial statue to those killed now stands in the town's Civic Square.

Musselburgh Old Course is one of the oldest golf courses in the world, with evidence suggesting that Mary Queen of Scots played at the course as far back as 1567! The area has a vast history, with four of the courses featuring in the 18 oldest courses in the world: Musselburgh Old Course, Gullane No. 1, North Berwick West Links and Dunbar.

The Ryder Cup was first played in Scotland in 1973, at Muirfield, where the victorious American Team featured the likes of Jack Nicklaus and Arnold Palmer. The Old Club Cup, the oldest continuously played golf trophy, dating from 1774, is still competed for at Royal Musselburgh Golf Club. The Honourable Company of Edinburgh Golfers, now based at Muirfield, dates from 1744, making it the second oldest golf club in the world. All golf holes across the world measure 4 1/2 inches and have done since 1893.

This is because Royal Musselburgh Golf Club invented, in 1829, the first known holecutter. The obligatory hole size (41/4 inches) of today was made mandatory in 1893 by the R & A; it was purely based on the size of the cutter. Scotland’s Golf Coast is also hugely important for ladies golf. The first known ladies competition was played at Royal Musselburgh on New Year’s Day 1811.

Business owners in East Lothian are being invited to create a unique food and drink based Business Improvement District (BID), which would be the first of its kind in the UK. The exciting news was announced during the successful Year of Food and Drink 2015.

For the East Lothian Food and Drink BID, a steering group of local sector-based business people is being established and charged with the task of devising a five-

The process of consultation to develop the business plan has begun and all businesses will be contacted to gather their views on how the BID could help them face local issues and create improvements to the local economy as well as individual businesses. Further discussions with all the sectorbased businesses will progress over the coming months and if all goes well the BID is expected to be fully established in around 12 months’ time.

Every July the museum is home to Scotland's National Airshow .Visitors to the airshow are able to enjoy a wide variety of attractions both in the air and on the ground. These include the full range of facilities of the museum itself, including access to all its display hangars and other exhibitions, plus the chance to view the interiors of some of the larger aircraft it keeps outdoors on the museum site. There is also, of course, the museum's Concorde Experience.

Fringe by the Sea – North Berwick This is a hugely successful multi-arts festival held in August to coincide with Edinburgh Festival.

North Berwick Highland Games The North Berwick Highland Games attracts over 10,000 spectators and competitors from all over UK and is now recognised as a National event.

In 2015, The Royal Jordanian Falcons paid their first visit and they were joined by the RAF Red Arrows, an RAF Typhoon and the RAF Hawk Display Teams. Other first-timers at the annual extravaganza – which attracted large crowds of families and aircraft enthusiasts – included the Royal Navy Black Cats Royal Navy helicopter display team, as well as a P3C longrange maritime patrol aircraft from the Royal Norwegian Air Force.

There is also a rolling series of events taking place in a number of venues across the site.

One of the things that make the airshow at East Fortune rather different from other airshows is that it is hosted by an aviation museum rather than by an active airfield or airport. The museum site, offers plenty of space and allows visitors wishing to view the air display to do so from just about any exterior part of the site.

Dunbar Science Festival Dunbar SciFest, is a community science festival which takes place every March. Its aims are to make exciting and engaging science accessible to everyone and inspire children to consider science careers at an early stage in their education. It is phenomenally successful; in 2015, 83 event providers delivered 100 different events - 227 activities over 11 days to 8,500 visitors.

The three Harbours of Prestonpans, Cockenzie and Port Seton provides the perfect setting for this unique festival showing arts in unusual spaces, which takes place annually in the first week of June. Now in its 10th year, the festival continues to be the largest, most diverse arts festival in East Lothian.

Social Enterprise East Lothian

Social Enterprise in East Lothian (SEEL) is a network organisation, dedicated to supporting the growth of social enterprises and supporting social entrepreneurs in East Lothian. Social enterprises are businesses that run along commercial lines that trade to address specific social needs, generating and reinvesting profits to help tackle issues facing people and communities.

The purpose of the network is to promote and provide support to social entrepreneurs and enterprises – to build confidence in ideas, increase their understanding of social business and help develop new skills – to increase the number of organisations delivering social or community benefits in East Lothian.

Through its website, Twitter and Facebook, SEEL also provides general information on social enterprise in East Lothian, and encourages local people to engage with the

concept and bring new ideas forward.

SEEL has links and relationships throughout East Lothian’s communities and its third sector organisations.

One such working relationship is with Queen Margaret University (QMU), which is very supportive of social enterprise development. Last year, QMU provided five MSc International Management and Leadership students for local social enterprises to work on key projects.

Since 2012 the network membership has rapidly expanded from 25 to 98.

Network meetings are usually attended by around 40 people, though large events can attract around 100. Overall SEEL has 320 supporters and interested people in East Lothian’s communities.

We are very keen to speak to anyone with an idea for a social enterprise and can offer 1 to 1 idea consultation sessions, personal support, business advice and access to funding support.

SEEL hold regular awareness raising events and Network meetings aimed at attracting and developing talent and potential, creating effective opportunities for those people who can make a difference to their own lives and others in our community.

SEEL is working in partnership with East Lothian Council who are currently providing start-up grants to develop social enterprise ideas in East Lothian.

Grants, administered by the Council, of up to £5,000 are awarded on criteria dependent on business viability, job creation potential and social and environmental impact. Many social entrepreneurs have already been successful in accessing this funding.

Case Study REdesign Network C.I.C As founder and Director of a social enterprise based in East Lothian, I am grateful to SEEL for the encouragement and support they have given over the past two years.

I started the business a sole trader, but after attending a SEEL networking event, was inspired to develop the concept as a social enterprise. From my first meetings with Elaine Gale, she has encouraged, informed, and supported me through the whole process.

My background is in the private sector, and I had to learn how a third sector organisation is structured and operates.

Elaine guided me through the process of applying for start-up funding from East Lothian Council, and encouraged me to apply for the Social Innovation Incubator Award programme run by The Melting Pot in Edinburgh. I was delighted to be awarded a place, and learned many new skills and made useful contacts over the year long programme.

The organisation was incorporated as a Community Interest Company in January 2014, and SEEL continues support us at every stage of development. In October 2014 we obtained an Awards for All grant to run a Community Up-cycling project in four locations throughout East Lothian over a year. We are now in the process of launching a new product which will generate additional income for the organisation, and Elaine has been advising on possible sources of funding for this project.

I am certain that without the support of Elaine Gale and the SEEL network, I would not have had the confidence, motivation and skills to found a social enterprise.

Queen Margaret University First Scottish Centre for Food Development & Innovation launches in East Lothian The first Scottish Centre for Food Development & Innovation was launched at Queen Margaret University (QMU in December 2014.

The launch of the new Centre is enhancing Scotland’s position as a leader in food and drink innovation in Europe and supporting access to the global market for healthy and functional food.

Over 100 invited guests from Scotland’s £14 billion food and drink industry got a rare behind-

the-scenes tour of the new facilities and heard from a range of food experts about the exciting work that is taking place both in the University and across the industry.

More than half the companies interviewed in Bank of Scotland’s third annual survey of Scotland’s food and drink sector expect their business to grow by 5 and 25 per cent over the next five years.

Many firms cite new product development and investment in existing products being the top two ways to achieve this growth. It is estimated that a growth in sales of premium health products could be worth an additional £1 billion to the Scottish economy by 2017.

University research confirms East Lothian rapeseed oil is rich in antioxidants Tests carried out by a team of researchers have shown that high quality rapeseed oil produced in East Lothian contains naturally occurring antioxidants which are not diminished by domestic cooking.

The team from Queen Margaret University (QMU) in Musselburgh carried out the research into Black & Gold cold pressed rapeseed oil which is produced on a farm at Stevenson Mains, East Lothian.

Rapeseed oil is generally believed to be a good source of Omega 3.

The original brief was to establish the hard facts about the Omega 3 nutritional content of the oil and its health benefits.

Louise and Hugh Elder started Black & Gold at their family farm in 2010. Having read lots of information about the nutritional value of rapeseed oil, Louise believed her newly developed product was a rich source of Omega 3 and therefore assumed it offered significant health benefits in terms of reducing chronic disorders such as cardiovascular disease, stroke and potentially cancer.

Louise explained: “We were at a development stage of the business and wanted to expand the brand beyond farm shops, delis and butchers, by developing channels into clinical practitioners, health stores, health centres and online sales.

“I therefore needed to be absolutely clear about the properties of Black & Gold so that I could be accurate and honest about any nutritional claims I made on the labelling and in the marketing material.

Engaging with the University completely changed my original beliefs and understanding of the nutritional content of rapeseed oil.”

Dr Jane McKenzie, Lead Academic for Food and Drink at QMU, explained: “Due to the way some of our foods are processed, most people in the UK already have a high intake of Omega 3 fatty acids,

yet the risks of heart attack and stroke are still amongst the highest in Europe. It’s not the total amount of Omega 3 that matters. What’s important is the balance between the amount of Omega 3 and Omega 6 fatty acids and also the content of some specific Omega 3 fatty acids. The long chain fatty acids EPA and DHA have particular benefits in preventing chronic disorders and can only be obtained from oily fish and a few other marine sources.

Unfortunately, they are not found in any oils used for cooking or food processing.”

That finding was a surprise to Louise Elder. She said: “Dr McKenzie explained that consumer confusion arises because the widespread marketing term ‘omega-3 fatty acids’ doesn’t differentiate between long chain Omega 3 found in fish and Omega 3 found in plants such as rapeseed.

It was very exciting to learn from Jane and her team the full spectrum of the nutritional properties of the oil.”

Dr McKenzie continued: “We knew that the company only subjected the crop to a minimal amount of processing, so there was an assumption that Black & Gold might contain high levels of naturally occurring antioxidants which may normally be removed by excessive processing, but this had to be proved. Many antioxidants have the ability to protect the body against damage and may act alongside some of the Omega 3 fatty acids in reducing the overall risk of cardiovascular disease and stroke.”

Essentially, the research work aimed to establish the fatty acid profile as well the antioxidant content of the oil. The team also wanted to ensure that the nutritional benefits of the oil were not destroyed by normal cooking and heating.

Dr McKenzie said: “Our analysis showed that Black & Gold rapeseed oil does contain naturally occurring antioxidants in the form of polyphenols and that these are still active after domestic cooking such as shallow frying. Polyphenols actively work in the body to prevent certain disease mechanisms occurring. Polyphenols are antioxidants from plant foods that have been proven to enhance health and it’s generally recognised that they can reduce the risk factors of cardiovascular disease and can help protect the body from chronic disease.”

The research was also able to confirm that the overall balance between Omega 3 and Omega 6 fatty acids conforms to the World Health Organisation’s international guidelines. This means that Black & Gold may be superior to oils commonly used for cooking, such as sunflower and extra virgin olive oil, due to its favourable Omega 3 to Omega 6 ratio and antioxidant content.

The research carried out by QMU has allowed Louise Elder to provide

evidence based marketing information which accurately reflects the benefits of her product.

Dr McKenzie confirmed: “The company can now say with total confidence that Black & Gold rapeseed oil is an ideal healthy choice of oil which is versatile – meaning it can be used successfully as a drizzle oil or for shallow or occasional deep fat frying.”

Black & Gold is considered to be a premium oil used by many top chefs around the country.

Due to its superb flavour and rich golden colour, it is championed in Edinburgh by Stuart Muir, Executive Head Chef of Harvey Nichols 4th Floor Restaurant.

Louise said: “To run a sustainable small business we must have integrity. This research is now allowing us to accurately communicate the benefits of our product, provide advice about how the oil should be used to maintain its nutritional properties and to state what differentiates Black & Gold from other oils. This is all essential information for our suppliers, customers and the culinary experts who actively promote its use.

“The research has also helped with our business expansion.

Armed with the facts, we can confidently provide accurate product information when approaching new investors.”

Louise concluded: “Acquiring the true nutritional knowledge about Black & Gold would have been impossible without the expertise of the Queen Margaret University team. I would urge any food producer who needs assistance in developing their business to make use of academic expertise and business support offered

by QMU. As a country, Scottish businesses need to be more proactive in harnessing the wealth of expertise that is available within Scottish universities.”
