At the time of the Spanish conquest, the Chibcha, numbering 500 000 and divided between two groups –Taironas and Muiscas– dominated the central highlands of what is now Colombia, where they lived for at least 2 000 years. They were the most advanced of the indigenous people.

When Gonzalo Jiménez de Quesada founded the city of Bogota (1538-1539), Muiscas still lived in the hills overlooking the settlement, but their notable system of political centralization collapsed, and they became assimilated with the rest of the population.

On July 20th, 1810, revolutionary leaders took part in an uprising in Santa Fe, deposing the Spanish viceroy. On August 7th, 1819, General Simon Bolivar defeated the Spanish at the Battle of Boyaca, and formed the Republic of Great Colombia, the capital was Santa Fe de Bogota.

Colombia has a wide variety of traditions and the influence of its six regions in its cuisine produced an incredible mixture of flavors and a large offer of dishes for locals and foreigners. Colombian coffee is the most common beverage in the whole country. 90% of the population consider coffee as the national beverage. Colombians call “tinto” to a small cup of black coffee. Between 12 and 2 pm., Colombians eat their main meal of the day, called “almuerzo”, which starts with a soup and is followed by the main course that consists of meat, chicken, or fish, and is served with rice, potatoes, plantains, a cold juice and a tinto at the end. Some traditional dishes are: The ajiaco, the mondongo, the sancocho, and the bandeja paisa.
