ž l of apple juice 1 small cinnamon stick 3 cloves lemon peel (Ÿ of lemon, untreated) 2 dag of ginger 15 dag of peeled apple cubes 15 dag of honey ground cinnamon 8 cl of Amaretto 1/8 l of whipped cream

Add apple juice, lemon peel, flavouring and ginger and let it boil up. Then remove the pot from the hot plate, cover it and let the mixture steep for ten minutes. Strain off the apple juice, add the apple cubes and honey and let it cook for one minute. Refine with Amaretto, garnish with whipped cream and sprinkle some cinnamon over it.

Ingredients: 8 tangerines 400 g apples 1.5 cups of sugar 5 glasses of water apricot or mint leaves for decoration

First cut the apples and then peel tangerines. Pour water on the fruits and rinds and boil for about 15 minutes. Strain drink and add sugar. Boil the mixture until sugar dissolves.

Cool the drink and pour it into suitable cups. Decorate the cups with finely chopped apricots and mint leaves.

½ cup of sugar 15 thyme sprigs 2 tablespoons of bourbon 2 tablespoons of apple brandy (such as Calvados or Laird's) 2 tablespoons of fresh apple cider 1 tablespoon of fresh lemon juice 1 dash of Angostura bitters dried or fresh apple slices

Bring sugar and half a cup of water to boil in a small saucepan over medium heat. Stir gently to dissolve the sugar. Then remove the pan from the heat. Add thyme sprigs and let syrup cool completely (a clear thyme flavour should come through). Discard the thyme sprigs. (Leftover thyme syrup will keep indefinitely in the refrigerator). Fill a cocktail shaker with ice. Add one tablespoon thyme syrup, apple brandy and the other ingredients. Shake the cocktail vigorously 10-15 times and strain it into a chilled Martini glass. Finally garnish the cocktail with apple slices.

Put the vanilla ice-cream and the apple juice into a jar and blend the ingredients. Pour the mixture into glasses. Decorate your glasses and enjoy your drink!

Peel the apple and cut it into small cubes. Put the apple cubes into the blender. Add the cinnamon and the yoghurt. Mix long enough to get a light and fluffy texture. Pour the Smoothie into a glass and enjoy immediately.

Apple & Tea Punch Drink

1 l apple juice (equals 4 cups) ½ l black tea (equals 2 cups) 2 tablespoons of sugar 1 lemon peel (juiced, reserve peel) 1 orange peel (juiced, reserve peel) 2 cloves 1 cinnamon stick

Heat the apple juice and tea slowly in a saucepan. Peel the lemon and orange, reserve the peels and juice the lemon and orange. Place the juice, the reserved peels, the sugar and the spices into the pan and continue to heat, but be careful not to boil the liquid. Taste and adjust the spices. Strain the heated mixture through a sieve and serve it in pretty mugs.

Pour the sugar in a jar and add the cider. Stir well until the sugar melts. Then add the Apple Trina and the splash of liqueur, rum and gin. Put some ice cubes and pieces of apple into glasses, then pour the drink over them. Serve cool and enjoy!

Apple Rice (Austria)

ž l of milk 180 g of rice 90 g of sugar 60 g of butter 3 egg yolks lemon juice 1 packet of caster sugar 3 egg whites 2 apples sugar, cinnamon butter and breadcrumbs for the form

Stir the rice into the boiling and salted milk. Let it cool as soon as it gets thick. Mix butter, egg yolks and sugar, then add the cooled rice and the caster sugar. Put the mixture into the form and add the apples in the middle. Bake the apple rice for about 40 min at 200°C in the oven.

Stuffed Apples with Smoked Fish (Bulgaria)

3 apples 250 g fish – smoked a small can of tuna 2 eggs 4 tablespoons of mayonnaise 3 sprigs of mint 3 sprigs of dill

Bone the fish, remove the skin and chop it finely. Wash the apples, cut a cap, hollow out and remove the seeds. Grate and add the apple to the chopped fish. Chop the boiled eggs finely and add to the other products. Add chopped dill and mint to the mayonnaise. Mix everything to a thick mixture. Fill the apples with the mixture. Arrange them in a baking dish and put lids on the apples again. Roast in a moderate heat for about 30 minutes.

Chopped Apple Salad with Toasted Walnuts, Blue Cheese and Pomegranate Vinaigrette (Cyprus)

Pomegranate Vinaigrette: 2 tablespoons of red wine vinegar 1/4 cup of pomegranate molasses 1 tablespoon of honey, or more to taste 1 heaping tablespoon of Dijon mustard salt, freshly ground black pepper 3/4 cup of extra-virgin olive oil

Directions for the vinaigrette: Whisk together the pomegranate molasses, vinegar, mustard, honey and salt and pepper in a medium bowl. Slowly whisk in the olive oil until it is emulsified. Directions for the salad: Carefully mix the apples, spinach, endive, walnuts and blue cheese in a large bowl. Add the vinaigrette and toss the salad to coat it with the vinaigrette and season with salt and pepper to your taste.

Apples „Tatin“ with Camembert (France)

4 red apples 1 puff pastry 1 camembert 20 g of butter pepper

Preheat the oven at 180 °C. Cut each apple into 8 wedges and remove the cores. Melt the butter in a large skillet and brown the two sides of each apple over medium heat for about 10 minutes. Roll out your puff pastry and cut it into four 14 cm discs. Garnish four 10 cm moulds with the apples, squeeze them well and cover with a puff pastry disc. Place them in the oven for 30 minutes. Then take the “Tatins” out and turn them over. Cover each of them with a quarter of a Camembert cut in half. Put some pepper on top and place them under the grill in the oven for 2 minutes. Serve immediately with spinach salad.

Apple Pancakes (Germany)

2 apples 1 tablespoons of sugar 1 tablespoons of butter 2 cl apple liqueur or Calvados 2 eggs 2 tablespoons of sugar 120 g of flour 200 ml of milk 1 pinch of baking powder 1 pinch of salt

Separate the eggs. Whip the egg whites with sugar. Beat the egg yolks with sugar and add the creamy milk. Add the flour and baking powder and a pinch of salt then. After that mix everything carefully and finally fold in the beaten egg whites. Peel the apples, cut them into quarters, remove the cores and cut them into slices or pieces. Caramelise the apples with the butter and sugar in a pan. Pour in the Calvados and fill the pan with the dough. Turn over the dough and bake in a preheated oven at 160째C for about 10 minutes until it is golden yellow. Enjoy your meal!

Apple and Leek Soup (Great Britain)

INGREDIENTS:

230 g leeks 1 garlic glove crushed 15 ml of olive oil 30 g of butter 1 pinch of curry powder 200 g of green apples, peeled and diced 230 g of turnips, peeled and diced 500 ml of vegetable stock salt and pepper to taste

Put the butter and oil into a pan and sautĂŠ the leeks and the garlic until they are tender. Add the curry powder and stir-fry lightly. After one minute add the turnips and apples and stir-fry everything together until everything is tender. Reduce the heat and add vegetable stock. Let it simmer until the vegetables are done. Strain the soup through a sieve reserving the liquid. Puree the vegetables in a blender until they are smooth. Add that to the reserved liquid and return the mixture to the pan. Season with salt and pepper and let the soup simmer for 5 minutes.

Apple Cake with Mascarpone Cheese (Italy)

INGREDIENTS:

400 gr apples 250 gr of flour 1 packet dry yeast 1 packet vanillin 1 pinch of salt 250 g mascarpone cheese 150 g of sugar 4 medium eggs

Beat the eggs with the sugar and a pinch of salt until they become a light and fluffy mixture. Put the mascarpone in a bowl and stir it with a spoon. Add a few tablespoons of sugar and add the egg mixture. Stir well to make the mascarpone less dense. Then mix the remaining egg mixture gently together. Add the flour with the vanilla and baking powder, then stir for a while. Cut the apples into small cubes (after first removing the cores), and then add them to the mixture in the bowl and mix everything. Grease and flour a cake tin and pour the mixture inside; then bake the cake in the oven preheated to 180째C for about an hour. If you find that the surface of the cake becomes too dark, cover it with aluminium foil and continue baking. Let the cake cool and then remove it from the cake tin.

Cups with Crabs and Apples (Spain)

2 Granny Smith apples

Cut the apples into quarters. Remove the core and grate the apples. Then cut the cucumber, remove the seeds and grate it. Next, cut the grapefruit into quarters, taking care to remove the skin membrane and cut the peeled quarters into two. Squeeze a third of the grapefruit quarters. Pour the juice into a bowl and mix it with the mayonnaise. Put the grated apples, the cucumber, the grapefruit chunks, the minced crab and the shrimps into a bowl. Pour the sauce over all the ingredients, add enough pepper and mix it thoroughly. Present in glasses and serve chilled!

Apple Strudel with Custard Sauce (Austria)

Ingredients Strudel dough: 250 g flour, salt 1 tablespoon of oil 1/8 l of warm water 1 kg of apples (peeled and cut into small pieces) lemon juice sugar, cinnamon 80 g of butter 100 g of breadcrumbs

Work flour, salt, oil and water together to a soft dough. Let it rest for 30 min. and roll it out very thinly afterwards. Spread liquid butter on the surface. Mix apples, lemon juice, sugar, cinnamon and breadcrumbs and put this mixture on to one half of the dough. Roll it tightly, apply some more butter and bake the Strudel in the oven at 220째C.

Ingredients Curd Cheese Puff Pastry: 250 g flour, salt 250 g curd cheese 250 g butter 1 kg of apples lemon juice sugar, cinnamon 80 g of butter 100 g of breadcrumbs

Work flour, salt, butter and curd cheese together and let the dough rest in a cool place for half an hour. Roll it out thinly and put the same mixture as above onto the middle of the dough. Overlap the four sides and bake the Strudel in the oven at 220째C. Prepare custard sauce and serve the Strudel with it.

Roasted Pork with Apple Sauce (Bulgaria)

Wash the meat and add salt. Wrap it with the sauerkraut leaves, pour the oil and roast the meat in the oven. When it is almost done, remove the cabbage leaves and roast the meat some more time. When it catches the crust, remove it and spread the meat with the previously prepared sauce of grated horseradish, vinegar, grated apples and yogurt. Horseradish is better to be grated the

Roast Pork Loin with Apples (Cyprus)

2 tablespoons of vegetable oil 1 (2-pound) boneless centre cut pork loin, trimmed and tied salt and freshly ground black pepper 1 medium onion, thickly sliced 2 stalks celery, thickly sliced 2 carrots, thickly sliced 3 cloves garlic, crushed 3 sprigs fresh rosemary 3 sprigs fresh thyme 4 tablespoons of cold unsalted butter 2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices 2 tablespoons of apple cider vinegar 1 cup of apple cider 2 tablespoons of whole grain mustard

Preheat the oven to 200째C. In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until it is golden brown on all sides. This takes about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside. Add the onion, carrots, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Put the skillet to the oven and roast the loin until an instant-read thermometer inserted into the centre of the meat registers 60째C to 65째C. This takes about 30 to 35 minutes. After that transfer the pork onto a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set them aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste. Finally remove the strings from the roast and slice it into 1/2-inch thick pieces and arrange the slices over the apple mixture. Drizzle some sauce over the meat and serve the rest on the side.

Roast Pork with Apples (Estonia)

Rinse the pork, dry it and season it with salt and pepper. Heat the browned flour in the ovenproof. Roast the pork in it from every side. Then add some water and cover the ovenproof with a lid. Roast the meat for about one hour at 180°C, depending on the thickness of the meat.

Chicken and Apple Couscous (France)

8 chicken wings, 2 chicken

Peel and slice the onion. Peel the carrots and cut them into 2 cm pieces. Wash the zucchini and slice them. Cut apples into eight pieces. Remove the core part. Soak the raisins in orange blossom water. Cut and remove the chicken wings tips and cut the white meat into large cubes. In a pan heat the olive oil and fry the meat and onions. Sprinkle with spices, add tomato paste, salt and pepper and mix everything well. Cover the food with water and let it boil. Put a lid on the pan and cook for 45 minutes over medium heat. Add carrots, zucchini, apples, raisins and chick peas. Cover again and cook it another for 30 minutes. Cook the couscous according to the instruction given on the packet. Pour it onto a plate and form a crown. Fill the meat and vegetables in the centre. Serve the sauce separately.

Apple Pizza (Germany)

INGREDIENTS:

DIRECTIONS:

400 g of flour 20 g of yeast 1 pinch of sugar 1/2 tablespoon of salt water 500 g minced meat 2 tablespoons of oil thyme, oregano salt and pepper 3 small onions, sliced 1 small garlic clove, crushed 3 apples, peeled and sliced 3 small tomatoes, sliced 4 small eggs 250 g cheese, grated

Dissolve the yeast with a little sugar and warm water. Cover and let rise until the volume has increased noticeably. Place the flour in a bowl and make a hollow in the middle. Sprinkle the salt to the outside. Pour the water and knead into the hollow from the centre with the remaining flour. Add as much hot water as you need to get a stiff dough. Let it rise again. In the meantime fry the minced meat in oil and season with salt and pepper. Add oregano, thyme, garlic and onions and let fry. Roll out the dough on a greased baking sheet. First put the meat on it, then spread the apple slices and put tomatoes on top of it. Beat the eggs and season with salt and pepper. Spread the beaten eggs on the pizza and sprinkle with the grated cheese. Bake the pizza at 200째C and for about 40 minutes.

Apple and Sausage Pie (Great Britain)

frozen short crust pastry 2 large Granny Smith apples, peeled and thinly sliced 2 medium onions, chopped 3 tablespoon of butter 4 pounds of sausages 1 clove garlic, chopped finely 2 cups of parmesan cheese 3 cups of feta cheese 2 eggs, slightly beaten

Preheat the oven at 220째C. Line the inside of a pie dish with heavy aluminium foil, pressing the dough against the sides. Bake for 8 minutes then remove the foil. Poke the bottom of the pie with a fork to create air vents. Return crust to oven and bake for 4 more minutes. Remove the dish from oven and let it cool. Meanwhile reduce the temperature to 180째C. Melt the butter in a large pan on medium heat. Add the apples, onions and cook for about five minutes until they are tender. In the last 30 seconds add the garlic and cook until it is fragrant. Transfer the mixture into a bowl. Increase the heat of the pan to medium heat and add the sausage. Roast until the sausage is browned. Remove from heat and put the sausage on paper to absorb excess fat. In a medium sized bowl mix together the cheese and the beaten eggs. Place the sausage on the bottom of pre-baked pie crust. Add the cooked apple-onion-mixture over the sausage. Pour the cheese mix over the apple and spread it evenly to cover the pie. Bake at 180째C for 35 to 40 minutes. Let the pie stand for 10 minutes before serving.

Risotto with Apples and Bacon (Italy)

INGREDIENTS:

DIRECTIONS:

1 litre of vegetable broth

Start by cutting the bacon into cubes. Slice the apples, peel and cut them into cubes. Then cut the scallion. In a large pot, melt the butter, add the chopped scallion and let it dry up on low heat. Then add the rice and roast it. When the rice is transparent, pour 100 ml of dry white wine to the rice. Add a ladle of broth and the bacon. Continue to add broth whenever the rice is dry, stirring frequently. Then, put the diced apples in a small pan, add 50 ml of white wine and a ladle of broth and cook them for a few minutes. When the rice is partially cooked, add the apples and allow to dry. Continue cooking the rice, adding a ladle of broth each time it is needed. When the risotto is cooked, remove from heat, add the salt and black pepper. Finally, stir in the grated Parmesan cheese and serve the apples and bacon risotto hot!

Ribs with Apples (Spain)

1 kg of pork ribs 1 onion 1 carrot 1 clove garlic 1 slice of bread 2 dl white wine 1 dl oil parsley, pepper, salt garnish: 3 blocks, 50 ml oil, parsley, thyme, ginger

Crush garlic in a mortar. Fry the bread with garlic and parsley. Sauté the ribs in a pan. Add the chopped onion and carrot, salt and pepper and sauté. Add wine and let it roast until ribs are tender. Preheat the oven to 200°C. Peel and chop the apples, sprinkle them with ground spices and drizzle with oil. Bake the apples for 20 minutes and serve them with the ribs.

Amazing Apple Cake (Cyprus)

1 package (8 ounces) of cream cheese, softened 2 cups of sugar 4 eggs 1 cup of canola oil 2 cups of flour 2 teaspoons of ground cinnamon 2 teaspoons of baking powder 1/4 teaspoon of baking soda 1 teaspoon of salt 2 cups of chopped peeled tart apples 1/2 cup of chopped pecans 1 cup of shredded carrots

Preheat oven to 180째C. In a small bowl, beat cream cheese and 1/4 cup sugar until smooth. Beat in 1 egg and set the mixture aside. In a large bowl, beat oil with the remaining sugar and eggs until they are well blended. Combine flour, baking powder, cinnamon, salt and baking soda; gradually whisk that into the oil mixture until blended. Stir in apples, carrots and pecans. Transfer half of the apple batter to a greased and floured 10-in. fluted tube pan; layer with cream cheese mixture and remaining apple batter. Bake at 200째C for 50-60 minutes or until a toothpick inserted near the centre comes out clean. Cool for 10 minutes before removing the cake from the pan to a wire rack to cool completely. In a large saucepan, bring the brown sugar, butter and milk to a boil. Cook and stir for 1 minute. Then remove from heat; whisk in confectioners' sugar and vanilla until the icing is smooth. Drizzle over the cake and sprinkle the surface with pecans.

Baked Apples with Cinnamon and Honey (Estonia)

Wash the apples and remove the cores without making a whole in the bottom. Mix the sugar, honey and cinnamon together. Put a spoonful of the sweet mixture into every apple.

Preheat the oven to 100째C. Remove the apple cores and cut them into thin slices. Pour the lemon juice in a bowl and add cold water. Immerse your apples for 10 minutes. Then drain and arrange the apple slices on a baking tray. Bake for 2 hours. Remove the tray from oven, turn the apple rings and sprinkle with powdered sugar. Continue baking for another 2 hours. Cool before serving.

Apple with baked Goat Cheese (Germany)

Preparation: 15 minutes

DIRECTIONS:

2 apples

Peel the apples and remove the cores. Then cut them into 8 equal slices, about 1 cm thick. Place the goat cheese slices on top. On each of the slices put a few knobs of butter, some thyme and brown sugar. Bake them at 180째C for about 10 minutes. Then check how much the cheese has melted. The cheese should be soft, but not run down the apple slices. Expect 2 slices per person.

Apple and Spice Muffin (Great Britain)

175 g of oatmeal 2 teaspoons of baking powder 1 teaspoon of bicarbonate of soda 1 teaspoon of ground cinnamon 175 g of whole wheat flour 470 g of apple puree, previously cooked 1 apple, diced 4 egg whites, lightly beaten 150 ml of honey 125 g of butter for greasing

Sieve dry ingredients into a large mixing bowl. Add apple puree, diced apple, egg whites and honey. Stir gently until all the flour is incorporated. Pour the batter into 12 greased muffin tins. Bake the muffins in a preheated oven at 180째C for about 25 minutes or until they are lightly browned. Serve warm or cold.

Apple Foam (Spain)

1 red apple

Peel the red apple and cut it into cubes. Cook the apple cubes without liquid in their own juice in a covered pan over low heat. Remove the pan when the apples are tender and sweeten them to taste. Separately, beat the egg whites until they are stiff and mix them gently with the apples in a big bowl. Put the mixture into cups and cool them in the refrigerator. Before serving, decorate the cups with green apple slices, very thin, leaving the peel.
