Snowshoeing made easy Armin Stern introduces the art of snowshoeing before each excursion: Practise the wider stride required for snowshoeing, how to use your poles and how to get up after a fall.

Equipment: Warm, waterproof boots (mountaineering boots are best), wear lots of layers, but no need for a ski jacket.

Please bring: A dry T-shirt – Armin Stern will provide drinks.

PLEASE NOTE: Only go when snow conditions are safe! Don’t set off later than 10.30am – it gets dark very early! Take your time: you’ll reach your destination faster than you think.

Saddle of chamois with nettles and porcini mushrooms Serves two Saddle of chamois ●

300g saddle of chamois

●

1 sprig of thyme

●

Crushed juniper berries

●

Salt & pepper

●

1 tbsp butter

Boris Meyer Chef de Cuisine – award-winning, rooted in the region, and a healthy eating creator.

Season the saddle of chamois with salt and pepper. Sear all sides in a pan, then place in the oven and roast for around six minutes. Remove the meat from the oven and allow it to rest. Before serving, fry it briefly in hot, foaming butter with the thyme and juniper berries. Slice and serve.

Nettle puree ●

250g nettles

●

100ml vegetable stock

●

2 tbsp cold butter

Salt & pepper

Separate leaves from the stem and blanch in salted boiling water before plunging into cold water. Now combine the blanched nettle leaves with the vegetable

Clean the porcini, finely dice the stalks and briefly sauté in melted butter. Season with salt and pepper, then add chopped chives. Use two spoons to arrange the porcini stalk mix on the plate. Thinly slice the raw porcini caps and marinate with olive oil, salt and pepper.
