The Kitzbühel/Kirchberg ski area includes the municipalities of Kirchberg/Aschau and Kitzbühel as well as Resterhöhe by the Thurn Pass. Challenging slopes like the legendary ‘Streif’ captivate avid skiers and snowboarders, while the flatter terrain provides the perfect environment for aspiring winter athletes and returners. In the dark, the floodlit piste at Gaisberg beckons skiers and tobogganists for an extraordinary experience under a star-lit sky.

Bordering onto the Kitzbühel/Kirchberg ski resort, SkiWelt Wilder Kaiser-Brixental is a truly impressive ski area. ‘The interplay of food and wine should be in perfect harmony’ says Patrick Somweber, the new sommelier at the Relais & Châteaux Rosengarten. He and Simon Taxacher are continually on the lookout for exceptional wines, but they don’t limit themselves to illustrious, bigname wineries: many of their best discoveries come from small, often unknown winemakers who produce top class tipples with dedication, and plenty of blood, sweat and tears.

Simon Taxacher is known for providing his guests with culinary surprises, and this includes the drinks. He is just as meticulous and creative in choosing wines as he is in his award-winning kitchen. No wonder then that Somweber and Taxacher have to taste so many wines. The majority of the fine wines they carefully and expertly select come from Austria, France and Germany. ‘Our portfolio contains a large number of unfamiliar producers. What they all have in common is that they make unique wines that are full of character. Our selection criteria are not restricted by names or regions. The product has to fit and it needs to generate enthusiasm’, says Somweber.

Given this broad-based approach, how do they go about finding the proverbial ‘needle in a haystack’? Visits to wineries, tastings, wine fairs, recommendations and the many long-standing contacts in his little black book form one part of the process, persistence and perseverance the other. ‘You’re not going to get what you want just because you really want it’, says the Salzburg native with a grin. Prior to arriving at the Rosengarten in June 2016, he worked in the Cayman Islands and at the Almhof Schneider in Lech am Arlberg as well as the Palais Coburg in Vienna. ‘I guess everyone would like a 2013 Grands Échézeaux from the famous Domaine de la Romanée-Conti, or a Pétrus 1996 vintage in their wine cellar. In fact, they do feature on our wine list, and we’re proud and happy that they do.’

As well as these exceptional examples, the Rosengarten’s wine cellar contains another 700 wines. What are the criteria by which Somweber chooses the right wines for his guests? ‘This may sound a bit unusual, but when I select wines to go with food I am guided primarily by the intensity of the sauces and side dishes. They set the tone’, says the 29 year-old and then adds, ‘The star of the show is on the plate, not in the glass. That’s perhaps the most important rule in my job.’

In the coming years Somweber hopes to go on to become a Master Sommelier. Not an easy task – after all, the examination is considered the most difficult and most exclusive in the industry. Worldwide, fewer than 250 people currently hold this title, and in the German speaking area there are only five. So it seems a little surprising that the top sommelier sometimes recommends a Japanese sake or natural, unsweetened fruit juice, but these also have a place in the Rosengarten’s cellar – with some justification: because Simon Taxacher is known for providing his guests with culinary surprises, and this includes the drinks ... © Igor Normann/Fotolia

Austria’s award-winning chef Simon Taxacher and his team were guests at the Kitzsteinhorn Glacier’s Gipfel Restaurant as part of their ‘Kitzsteinhorn-Hochgenuss’ events. The organisers invited him to create an 8-course menu for a special culinary evening. German wineries Kühling-Gillot and Battenfeld-Spanier and Austrian winemaker Horst Gager supplied the exquisite wines that accompanied each course.

GOURMET TOUR The BMW and Falstaff Gourmet Tour made a stop at the Restaurant Simon Taxacher in Kirchberg.
