Editor's letter
Who else is ready to pack their winter coats and boots away? As the days get longer and slightly warmer, I’m certainly ready to trade in my faux fur for something a little more cheerful.
This issue is full of new spring fashions. Unless you’ve been living under a rock, you would have noticed the influx of loungewear, ranging from comfy knitwear and sweats to full-on head-to-toe tracksuits. We’ve selected our favourite pieces to make the decision easier for you (page 16). Continuing with the relaxed lifestyle trend, we have featured our favourite neutral and pastel pieces to keep you looking and feeling fantastic all spring long. I love hearing about new businesses that share an eco-friendly ethos. Turn to page 34 to read about four local business owners who are getting creative with the Earth in mind.
The pandemic has made us think about how we exercise. With gyms being closed, we have had to turn to other forms of fitness, including running and cycling. Many women cite anxiety and nervousness for not wanting to try a new sport, so we spoke to three females from sporting backgrounds. Laura Riley, Amy Lambert and Chloe Bougourd explain why they love sports, how they got involved, and why you should try something new.
For our cover, I Spoke to Nikki Zachariou, founder of UberEdge Dance Company, about empowering women through dance and hoping to break down the equality barriers when it comes to confidence (page 24).

Empowering women throughdance
Nikki Zachariou is the type of woman that inspires many. She oozes confidence, successfully runs her own business and is a single mother to her son, Kobi.

I've been following Nikki for a while; I love everything she stands for and thought she would be the perfect woman for our spring cover.
We originally arranged to meet for a walk, but then the Government announced the hospitality industry's opening, so we postponed our meeting until we could chat over coffee. We met at Locke's on the first day it opened, drank coffee out of cups and enjoyed brunch that we didn't have to make. Blissful! Both somewhat overdressed for the occasion, Nikki laughs, "today is the first time I haven't worn sweatpants in god knows how long!".
Nikki Zachariou was born and raised in Jersey. Even though her parents were separated, she recalls a fairly typical, happy childhood, spending holidays with her grandparents in Essex whilst her parents worked.
Nikki, the founder of UberEdge Dance Company, has always loved dancing - she danced on an off when she was younger, picking it up again at the age of 16 when she studied Performing Arts at Hautlieu. Nikki continued her studies in dance as well as psychology at King Alfred College (now Winchester University).
Initially wanting to be a singer, Nikki's love of dance
stems from music. "I've always loved music, and dancing to music gives you an indescribable feeling; it's like losing yourself and finding yourself at the same time. You get out of your head, and it is almost like you're someone else, like an alter ego. You get to be the person you would want to show up in the real world as but would probably be told to calm down because you're being too sexy, too confident or too much!"
Whilst there are many different avenues to explore when it comes to a career in dancing, at the time, Nikki remembers her teachers and parents telling her that it was a competitive industry and that she should have something to fall back on. Being encouraged to take a more academic route, Nikki decided to major in psychology and do a teacher training course at Cardiff University. She came home to do the practical part of her teachers' degree at Highlands College and continued to teach there part time after her course was finished. "I didn't believe at the time that I could make a career out of dancing, even though that's probably where my heart was. When I was younger, there wasn't the awareness of the different routes you could take with dance and how dance and creativity can affect your well-being."

After studying, Nikki spent a year in Australia, where she continued her love affair with dancing. She took adult classes at the Sydney Dance Company and continued training with them for a few months before travelling up the East Coast. "I was only supposed to visit a friend for a couple of months, but when the time came, I didn't want to leave. Back then, you could only get a visa for one year, and you could only get it once, so I needed to make the most of the experience."
Once Nikki had returned home, she began teaching dance at Highlands College and working for a marketing company. After a few years, she decided she wanted to start her own dance company to inspire and empower other women. In 2008, on her 27th birthday, she registered her own business, UberEdge Dance Company. Nikki began teaching her own classes, starting with street dance and soon expanding to fitness classes, followed by pole classes. "I was training for a fitness qualification, and I saw a Pole Dance Teacher Qualification flyer. I had never pole danced before, so I booked the course, bought a pole, and then was really upset to discover I couldn't do it! I practised every day for 20 minutes at a time, and within two weeks, I had all the basics covered. I continued training, and once I had qualified, I introduced the pole classes."
It isn't just a great workout you get from the dance and pole classes; you also get a tremendous sense of empowerment. You get in touch with your sensual side, a feeling of living your most unapologetic life. "As women, we are told not to be too shy, but don't be too confident, don't be too sexy, but don't be too frigid either. With all these mixed messages, is there any wonder why women are so overwhelmed, confused, and have many self-doubts? The classes offer women the space to express themselves fully, without being told to dim it down."
Having a thirst for mindset and human behaviour, Nikki says that her studies in Psychology have been fundamental in her dance career. "The two subjects work well together. Part of what we do in dancing is to inspire women's confidence to grow and believe in themselves – having the knowledge of how people think and behave means I can weave that in quite easily into our classes."

"I recently did a webinar on why there is such a massive confidence gap between men and women. Part of the theory is that because girls and boys are treated differently, labelled differently, the two's expectations are different as we're growing up, which leads to a confidence gap in adulthood. Girls are much more unhappy with how they look and less optimistic about life. The shaming of female celebrities affects us, and the numerous derogatory names there are for women is incomparable to that of men. For example, women are less likely to negotiate a pay rise, whereas men have the confidence to ask for what they deserve. Consciously women know they are good enough, they deserve happiness and love, but subconsciously there is a completely different belief system. I believe that if you can clear that, you can unlock more confidence and more potential.
"Women initially come to the classes for fitness and they can show off what they've learned, and it's a fun way to work out - but they stay for the sense of empowerment that they get from the class that spills out into other areas of their life."
Having been broody for a couple of years, Nikki decided to have a baby and fell pregnant in 2019. "There were so many practical considerations that you have to look at when you are going to be a working mum. It was hard to imagine what life would be like; nothing can prepare you. For someone who likes a strategy, it seemed quite overwhelming and caused me quite a lot of stress!"

But sure enough, Nikki has found her flow and balances motherhood with work, spending her days with Kobi and teaching dance in the evenings.
Like many businesses, Nikki had to close the dance studio due to restrictions last year, but she adapted and offered her clients online sessions. "Part of what makes the classes so popular is the sense of community, friendship, women coming together and that collective energy. Women are powerful together. Even though we were together online, it's not the same, but I'm grateful that we could offer an online service and thankful to the clients that continued to show up."
Nikki hopes to re-open the studio soon and welcome old and new clients to try out the classes and become part of a strong female group.

How do you like your paper? Handmade, recycled, plantable? Turning recycled paper into pulp, Kat Read of Rocque Paper Scissors, presses and dries every sheet of paper she makes in her Grouville Studio.
Kat started making paper this past summer. Unable to leave the house in the first lockdown, various cardboard boxes started to pile up from deliveries. Realising the island’s recycling is shipped back to the UK to be recycled, she set out to make something beautiful while adding to the circular economy in Jersey. This spring she has created a series of plantable stationary - letter sets embedded with seeds, that can be planted in the garden.
When she is not pressing paper, Kat loves to create custom paper cut prints such as houses based on a photo of your own home. These paper cut prints are made with high quality sustainably sourced paper.

Women in sport
For many people, sport is a huge part of their life, but for many others it’s something that is enjoyed as a youngster but then slowly gets pushed from life in favour of socialising, career progression or family commitments. Laura Riley, Amy Lambert and Chloe Bougourd tell us how and why they got involved in sports.
LAURA RILEY
Laura Riley, Jersey Sport’s Cycle Training and School Events Officer, has been passionate about football since she was 13 years old.
“I started playing football in the Ladies’ Football League when I was 13 years old. I played for St John’s Club for over 14 years, before moving to St Lawrence Football Club in 2015. It’s a great way to have fun, keep healthy and meet new people. Some of my team-mates are my best friends.”
During this period, Laura also played for the Jersey Ladies’ Football Team on numerous occasions, in Murattis, Island Games and other UK matches. “This was a great honour, but it’s safe to say I leave that to the youngsters now!”
Laura got into football coaching when she was 16, working as a volunteer coach for school football teams, and from there she worked towards football coaching qualifications, before joining the Girls’ Centre of Excellence Coaching Team, where she spent over 8 years.
“I absolutely loved my time at the Centre of Excellence, watching the girls develop and progress so quickly into fantastic players. Many of the girls are now playing in the Ladies’ Leagues which is great for Jersey Ladies’ Football.”
Laura also moved to the USA on two separate occasions for a year to coach football.
“It was an amazing experience and something I feel I learnt so much from. It gave me the opportunity to grow and develop in a completely different environment and I feel the experience really made me into the coach I am today.”

AMY LAMBERT
AmyLambert, born and raised in France, has always had an interest in sports. Growing up in the country allowed Amy to enjoy more relaxed sports, including golf and horse riding.
At the age of 15, Amy attended boarding school in a local town, so she needed to find a new sport that fit in with the lifestyle. Having always enjoyed watching rugby with her family, Amy decided to join the school team. Upon graduating high school, Amy moved to the Netherlands to attend Maastricht University. She continued her love of rugby, playing for the town’s team for three years before moving to Jersey in 2019 and joining the Jersey Reds Women.
“We haven’t been able to play a game since March last year. We’re the only female team on the island, so all of our away games are in the UK. We did start training again in September, even though we haven’t been able to do any
of the contact aspects of the sport as we were following guidelines, but we were still able to throw the ball around and practice skills.”
Thanks to the continued platinum sponsorship of Rossborough Insurance, Jersey Reds Women can continue developing and ensuring equality in women’s rugby.
Rugby, in particular, has a stigma for being a more ‘manly’ sport due to the contact involved, but Amy says everybody is welcome to join the team. “It doesn’t matter how old or how fit you are, whether you are a beginner or a more advanced player, everybody is welcome to join.
“I love being part of a team. We have teachers, nurses, mothers - it’s really important to have that mixed group, you learn about yourself being around people from different backgrounds. It’s so mentally important to have a strong group of women around you. It isn’t even just in rugby; outside of the sport, these women are there for you. It’s an excellent team. I want to encourage other women to get out there and try something new.”

CHLOE BOUGOURD
Chloe was born in Jersey and enjoyed participating in school sports and gymnastics. When Chloe left school, she went to America for a year, where she taught gymnastics at a summer school. Upon returning to Jersey, she continued to teach gymnastics to all age groups, from pre-school right up to Jersey’s elite squads.
During lockdown, Chloe says she really fell in love with cycling. “My parents have always cycled, holidays are bikerelated, and we would go out when we were younger on our bikes as a family. As I got older, I lost interest, but my parents continued to try and get me involved! Over lockdown, I started cycling and came to really love it.”
In September 2020, Chloe joined Jersey Sport’s Cycle Without Limits centre as a Cycling Officer where part of her job involves working at the CWL centre as well as school sessions.
CWL enables people of all abilities to enjoy riding a cycle. “We have adapted cycles that are suitable for all abilities, including those with injuries and people who
can’t access a regular bike. We haven’t had a person that we couldn’t cater for yet. Side-by-side passenger cycles allow the user to peddle (the bikes have a motor, so it isn’t as strenuous) but not worry about the steering as another user operates that. There are also hand cycles for those with leg difficulties and cycles with plates that allow wheelchair users to be cycled around."
At the school sessions, Chloe teaches children to ride a bike. “There are a surprising number of children who have never ridden before, or don’t know how to ride a bike, so we go into schools and teach them during after-school clubs or P.E lessons. Away from work, Chloe says that keeping active plays a huge role in her mental health. “It’s so important for people to keep active. I always feel better when I’m cycling and benefit from improved fitness. You also have the social aspect when you participate in group activities or can enjoy keeping fit with friends.”

With endless Zoom meetings and hours in front of our screens, we look at products to help protect skin from the damaging effects of blue light.
As we continue to spend a large portion of our day glued to phones, tablets and computers, have you ever stopped to think of the consequences all that screen time is having on your skin?
Dermatologists warn that blue light from smartphones and laptops could potentially age our skin. Blue light is a high-energy visible light that penetrates the skin deeper than other lights in the same spectrum. Experts suggest that blue light can cause as much damage to your skin as the sun and without proper protection, it can cause fine lines and wrinkles, and the more time you spend in front of it, the worse the damage will be.
Kenneth Howe, a board-certified dermatologist, says that unlike UV light, blue light is not known to cause skin cancer, but there is science to indicate that it potentially contributes to skin aging. "It does this by generating reactive oxygen species (ROS) in the skin," says Howe. "These ROS, or free radicals, in turn, cause oxidative damage within the skin."
The antidote? Antioxidants, which protect the skin by neutralising these ROS before they can do their damage.
Ingredients like zinc oxide and titanium dioxide help block some of the light, while antioxidants like vitamin C and green tea help reduce the damaging effects on the skin.

Creative modelling
COVID-19 has created countless hurdles for many industries, including the fashion industry. Fashion weeks are no longer filled with shoulder-huddled events and many creatives have been left without jobs. We spoke to model, Wendy Louise, about what this past year has been like for her.

MODELLING
Wendy Louise, who goes by the name Renaissance, has modelled for 14 years, mainly working in studios across the UK. She also co-owns a photographic holiday company, arranging trips for models and photographers across Europe.
This past year has been difficult for Wendy to adjust to life without modelling. "For the first six months, there didn't appear to be an alternative solution for my career, so I spent a lot of time decorating, organising the home and praying for normality to return."
Having already acquired photography equipment, Wendy used her years of experience and knowledge and started learning about remote shooting. "I had heard of remote shooting and wanted to get back to work, so I started looking into it. At first, I had issues with tethering one camera to the various sites, and another camera wouldn't connect to the laptop - it just seemed to be one thing after another! Finally, after acquiring another camera, I was able to continue modelling remotely; however, the whole shoot felt really unprofessional as we kept losing connection."
Wendy's partner, Damian, agreed to become her in-house photographer to help her gain her confidence and be creative. "It felt like I had started in a completely different industry. Normally

I only have to think about my next pose, makeup and styling for each set, I was now thinking about how to position a rigid camera on a tripod to get the best angles, the best lighting to get the most flattering shot - worries that aren't usually there for a model whilst shooting in a studio or out on location."
After several shoots at home, the quality of the work improved, and Wendy came to find that she loved more than just the modelling side of shoots. "Before lockdown, I wasn't really able to be as creative as I would have liked. Due to the time restrictions on studio shoots, it always felt very rushed as I was very conscious of the time taking to get ready for each set.
"Some of the images I have been able to produce at home have taken all day. From planning, preparation, creative makeup, shooting, picture selection and finally editing, all of which have been done at a leisurely pace.
"Once things settle down and I'm able to return to work as normal, I'll be sure to save some time for me and my creativity as it has been fun, and I've really enjoyed being as creative as possible with limited resources around the house. In the meantime, I will continue to shoot at home for my portfolio and gain the confidence to remote shoot with both new and regular photographers."

Outdoor exercise, such as walking, jogging, running, cycling, and sea swimming, all have various health benefits. Regardless of age, background, ability, shape or size, everyone can experience the benefits of physical activity. Exercise helps to manage weight, reduce the risk of disease, strengthen
bones and muscles and improve brain health. Whether you're 16 or 60, it's always a good time to start a new health and fitness programme.
We believe everyone should have easy access to affordable physical activities and the proper support at the right time. That's why, throughout the pandemic, we've been committed to adapting our classes to online Zoom sessions, continuing our outdoor programmes around Government guidelines, and planning new programmes and activities.
Have you ever heard of Sporteering? Islanders can use their smartphone's GPS navigation system to access various walk, run and cycle routes around Jersey via an app on their mobile. In addition to Sporteering, we've launched a selection of selfguided walks and cycle routes that can be followed from a downloadable PDF or via the Komoot app. It's a great way to explore new areas of the island rather than sticking to what you know. Stepping outside of your comfort zone is always a good thing.

We'll soon be launching a new RunTogether programme, which will support non-runners in learning to run, boosting their confidence and fitness, and enabling them to achieve more of their running-based goals.
Once June arrives and the sea temperature warms up, we'll be encouraging islanders to take a dip in our beautiful bays across the island – experiencing the soft sand of Beauport to the pink sunrise glow at Anne Port. The 30 Bays in 30 Days initiative has seen a massive increase in the number of people sea swimming. With lockdown, remote working and pools being closed over the last 12 months, we've also seen more people taking up sea swimming and continuing throughout the autumn and winter.
With more and more islanders using their bikes for family rides, commuting and fitness, Move More Jersey have been instrumental in supporting people who lack the confidence to ride a bike to get started. We offer Learn to Ride cycling courses for people who, for whatever reason, never learnt to ride a bike or who have felt too nervous to ever try. One of our participants, Jan, said: "It was so lovely to meet other people just like me. The course took us through everything in baby steps, starting with how to correctly fit your helmet and checking tyres, brakes and chain before starting to ride. Laura and her team were so lovely; I never felt stupid or left behind."
All our physical activity programmes, including the weekly Move More Health Walks and cycle rides through HSBC Breeze Jersey and HSBC Guided Rides, could not happen without our dedicated team of staff and volunteers. Volunteering with Move More Jersey is a great way to add more physical activity into your weekly routine whilst helping make a huge difference to other people's lives. Now we're enjoying lighter mornings and longer days; it's the perfect time to add more outdoor activity
into your day to reap the physical and mental health benefits. Why not challenge yourself to walk, run, cycle or swim somewhere new each week? Or team up with a friend or work colleague, set some goals and use each other for accountability and inspiration. As the island's larger sporting events, charity walks and races are once again allowed, we predict, and hope for, a considerable increase in participation and support from islanders, and that's something we're looking forward to.

Declutter your mind
Clutter in the home often creates clutter in the mind – especially if that clutter has taken over. Organising your space can help reduce stress and anxiety.
It is impossible to eliminate stress and anxiety completely, but you can reduce negative emotions from controlling your life. Following these few tips will help you declutter and organise your home.
EVERYTHING NEEDS A PLACE
To become more organised, only keep what you really need. Having fewer possessions means you will enjoy those things more and feel better about the things you do own.
It’s easy for the house to become messy when items don’t have a designated home. Be creative and make easy to access storage spaces for the things you use all the time. Never have a space for miscellaneous items as clutter can quickly build up.
DECLUTTER REGULARLY
Find time each week to refresh the house and make sure everything is in its correct place. If you come across things you haven’t used in a while, chances are you won’t use them again.
DON’T PROCRASTINATE
It’s all too easy to leave a basket of clean laundry on the stairs to be put away ‘later’. By the time later comes around you’ve done another 2 loads and now the thought of putting it all away is overwhelming. Put in the effort to get things done as soon as possible, the longer you wait to do something, the more difficult it will be to get it done.
WRITE IT DOWN
Studies have shown that people perform better when they have written down what they need to do. Keeping lists can help reduce stress and anxiety, making it easier for you to relax.
To-do lists
Make a list of the things that need doing and stick to it. To keep motivated, you could reward yourself with a glass of wine at the end of the week if you have stuck to your daily chores.
Meal plans
Meal plans help reduce stress and anxiety whilst saving you time and money. Once a week take half an hour out to plan your meals a week in advance – including breakfast, lunch, dinner and snacks. When you do go food shopping, only buy
what you need. Multi-buy offers can be tempting, but unless you have included them in your meal plan, or have space for them in the freezer, chances are they will end up going to waste.
Budget
Without budgeting, it’s too easy to splurge on impulse purchases soon after pay day. This may make you feel good for a short amount of time, but as the month goes on you can find yourself struggling to pay bills and make ends meet. At the beginning of every month, list your income and outgoings. Allow a set amount for food shopping and any extras you may need that month (birthdays, healthcare appointments etc.). Any money left over is yours to do as you please - without the feeling of guilt.

Fall back in love with our island
Ah, 2021. It's felt like the longest year ever, and it is only March.
Whether you're pining for the pistes, longing for a cocktail somewhere hot, or just missing your day trips to France or the UK, this year has been tough. And Island life – whilst at its best idyllic – can be challenging. Longing for big skies, views that stretch inland for more than 9 miles, and a change of scene is completely natural, not to mention visiting friends and family. Whilst zoom has certainly helped, it is just not quite the same. Hopefully, these things are just around the corner. But in the meantime, we thought we would come up with some ways to fall in love with our island all over again and to make it feel like we could be somewhere else altogether.
Take to the lanes
With over forty-five miles of Green Lanes (where horses, cyclists and pedestrians take priority over cars), chances are, there are some you haven't walked down before - or driven for that matter (after all these years, we're still finding ourselves on roads we haven't been down). Pick a Parish, park up, and follow your nose. You are never that far from somewhere, so why not delight in getting lost in your own island and finding new vantage points to take in the views?
Get away from it all
We know. When people first come here visiting they think they won't need a car. 'It's only small', they say. But when a child asks to be dropped in St Ouen on a Saturday morning, and you live in Grouville, it feels like a very long way indeed. Now is the time to take advantage of this. Book a stay on the opposite side of the island. Perhaps one of the Heritage Lets. Book in at Greve de Lecq Barracks for a long weekend, and leave the East behind. Discover new places to grab your breakfast; wake up near a new beach. Just make sure you
don't leave something behind at home or not treat it as a regular holiday. You can't feel like you're on holiday if you have to pop back to feed the cats.
Get on (or in) the water
It may not be the more temperate Med or the blissful Caribbean, but the sea surrounds us. You've probably noticed that more now than ever this last year. Sea swimming during the colder months should be done with caution (and a thermos of tea, a hot water bottle, and all the layers), but as we all know, it has taken off in Jersey big style. Seek out some lesser-known coves, make a day of it by taking a picnic or BBQ with you. Take a trip with Seafaris, or get the SUP out of the shed and on the water earlier than normal. Always exercise caution in cold water, never swim alone, but enjoy the fact that we have 47 miles of coastline (the parking at Bouley makes it feel like the height of summer, and the prevalence of Dry Robes is almost becoming a Jersey cliché!).

Go somewhere new
Whilst we all have our favourite places to go in Jersey, be they a beach, a restaurant, or an activity like Jersey Zoo or one of our Heritage Sites, there are still plenty of places that we have to explore - when was the last time you went somewhere that wasn't on your immediate list? Now is the time to seek it out. Jersey hasn't been able to welcome tourists recently, and sites and places have suffered, so we challenge you to go somewhere new. Whether you've never been to Samares Manor before, or the War Tunnels is always just a sign you drive past, whether you've walked Queen's Valley Reservoir a hundred times but have never stopped at Val de la Mare; this is the time to go! Even though our island is small, it has got a lot going on, and we know that there are very few (any?) islanders who can claim to have been everywhere. There are dolmens; there are secret beaches; there are Heritage sites and bunkers. So don't despair that you've 'been there, done that'.
Seek out something local that you haven't done before, and perhaps you'll find a new favourite spot to visit more regularly.
Eat out more
As if we need an excuse, right? The last few months have been tougher on our kitchens (not to mention takeaways and deliveries). As islanders, we need to support our local businesses who have been hit hardest by Covid, and of these, restaurants and hotels feature highly on the list. Whether it's picking up a bacon roll as you stroll along St Ouen's, or whether you book in for a fine dining experience at the plethora of Jersey restaurants we have on our doorstep, try somewhere new. Visit newly opened cafés and restaurants that have taken a huge risk opening during a pandemic. And for the cooking-weary amongst us (our own kitchen feeling like a canteen at times), now has never felt a better time to get out there and eat out.

Fritters
Serve these vibrant fritters with rocket, avocado and lime.
INGREDIENTS
(Serves 2 people)
2 large beetroot, grated
2 large carrots, grated
75g plain flour
1 tsp ground cumin
2 tsp Dijon mustard
1 egg, lightly whisked
Vegetable oil
METHOD
1. Squeeze any excess liquid out of the carrots using a cheese cloth or muslin. In a large bowl, combine flour and cumin. Stir in the mustard, onion, egg and carrots. Season to your liking and carefully stir in the beetroot.
2. Heat the oil in a large frying pan. Cook tablespoonfuls of the mixture until crisp and golden (approx. 3 minutes). Place on a paper towel for a few minutes to drain any excess oil before serving.
Hummus
Serve with cut vegetables like carrots, celery and cucumber.
INGREDIENTS
1 can chickpeas (drained and rinsed)
2 medium cooked beetroot
2 cloves garlic
1 lemon (zest and juice)
2 tbsp tahini
3 tbsp olive oil
¼ tsp salt
½ tsp ground cumin
METHOD
1. Process beetroot, chickpeas and garlic in a food processor for 1 minute.
2. Add all the remaining ingredients and process until creamy. Add more tahini or water to achieve the desired consistency.
3. Adjust seasoning, adding more salt, cumin, olive oil, or lemon juice if needed.
4. Serve immediately or store in the fridge for up to 5 days.

Mini cheesecakes
Healthy, colourful and naturally sweet, what's not to love?
INGREDIENTS (Makes 12)
For the crust:
120g pecans
200g dates
2 tbsp dark cocoa powder
1/8 tsp sea salt
For the filling:
150g cashews (soaked to soften)
2 freshly squeezed lemons
1 beet, peeled and quartered
100g strawberries
100g plain Greek yogurt
50g maple syrup
METHOD
1. Add pecans to a food processor and process into a rough crumb consistency. Add dates, cocoa powder and sea salt and process for about 1 minute until smooth.
2. Scoop mixture into a lined muffin tin, carefully packing it down evenly using your fingers.
3. Add remaining ingredients into a blender and blend until smooth. Pour the filling into each muffin tin over the crust.
4. Freeze for 1 to 2 hours to set, and allow muffins to thaw for 5 minutes before serving,

A strong immune system is very much on everyone's minds at the moment, and there are many ways that we can boost our immune system through our diet, says Chloe Bowler
As spring is now upon us and the days are getting longer, it is essential to get outside in the fresh air as much as possible. Not only are the benefits of fresh air and exercise great for our heart health, mental wellbeing and overall strength and stamina, but we can also take in some much needed Vitamin D.
Vitamin D is an excellent example of a vital ingredient to our wellbeing. It plays a huge role in muscle and bone formation and strength. As well as sunlight, we can eat it in our diet through foods like oily fish, red meat and egg yolks.
Having been through a cold winter with less daylight hours, now is the time to try to get as much nutrition into your diet as possible. There are so many foods that are delicious and contain a huge variety of vitamins and minerals.
A strong immune system is very much on everyone's minds at the moment, and there are many ways that we can boost our immune system through our diet. Living on an island like Jersey, we are lucky enough to have some of the best shellfish in the world. Oysters are full of zinc, which helps with the production of white blood cells, helping fight infection.
Salmon Teriyaki
Ingredients (serves 2):
2 salmon fillets
2 garlic cloves
1 red chilli
1 savoy cabbage
Garlic is another fabulous food with natural powers. Use raw garlic in your cooking, and you will be giving yourself a boost of a natural infection fighter. Garlic is thought to help lower cholesterol and blood pressure.
Turmeric is another great example of a naturally-occurring anti-inflammatory food. The main ingredient in turmeric is curcumin, and this is a hugely powerful anti-inflammatory and antioxidant. There is still much research on turmeric and its properties, but it is thought that it can help fight cancer, Alzheimer's, and many more debilitating illnesses.
Brightly coloured foods are often a sign of antiinflammatory properties, so I always say to try and eat the rainbow. By incorporating these foods into your meals at home, you will feel the benefit of these naturally-occurring health boosters.
2 tbsp honey
2 tbsp soy sauce
Method:
1. Start by heating some oil over a high heat. Add the salmon fillets skin side down, and allow to cook. When the salmon is nearly cooked, chop and add the garlic and as much chilli as you like.
2. Shred the cabbage and add either side of the salmon. This won’t take long to cook. When the cabbage and salmon is cooked, add the soy sauce and honey by drizzling over the salmon. The sauce will thicken and become sticky, so remove the cabbage and place in a bowl, and then add the salmon on top.
3. Drizzle any remaining sauce over the top and serve.

Elderflower & Lime Martini
Perfect for spring, Christian Gott's recipe is full of floral notes from the elderflower, balanced by the tart fresh lime juice
Adry Martini consists of dry, white vermouth and gin. Over time the amount of vermouth has dropped from around a quarter to almost one part in fifty; this is achieved by swirling the vermouth in the serving glass or with ice and then throwing it away (you can always use it in cooking). Today there are numerous variations, from the Espresso Martini to the daringly named Porn Star Martini made with vanilla-infused vodka and passionfruit juice.
ELDERFLOWER & LIME MARTINI
You will need a mixing jug, martini glass and a small strainer or sieve.
Ingredients
50ml Gin
(preferably with lots of botanicals)
30ml Elderflower Cordial
15ml Lime Juice, freshly squeezed
15ml Dry Vermouth
Method
1. Pour the dry vermouth into the martini glass and swirl it around in the glass to get it up the sides. Pour out all but a small splash of the vermouth.
2. Fill a jug halfway with ice cubes and add the remaining ingredients and stir slowly until very cold.
3. Strain the mixture into the vermouth rinsed glass. Sit back, sip and relax.

Spring wines
The great thing about spring is the varying weather it brings, meaning you can enjoy a range of different foods paired with other wines. From hearty stews when it's cool outside to salads and seafood when the sun is shining. You don't need to eat to enjoy a lovely chilled rosé relaxing with friends, though.
GEWÜRZTRAMINER
Gewürztraminer is highly aromatic, classically smelling of lychees and tropical fruits. The wines are often off-dry, this doesn't mean they are sweet, but the residual sugars balance any acidity. If you like rosé, you will love Gewürztraminer. Because of the tropical flavours and sweet acid balance, Gewürztraminer is excellent paired with duck, chicken, crab, and lobster as well as highly flavoured foods like Moroccan and Asian dishes.
COOL CLIMATE PINOT NOIRS
Pinot Noir is one of the few grapes that can make red, white, rosé and sparkling wines. Red Pinot Noirs like long, cooler growing seasons such as northern France and New Zealand - because of these conditions, the wines are fruity, have medium acidity and relatively low tannin. Tannin gives structure to classic reds like Shiraz and the wines of Bordeaux. New Zealand Pinots are ideal with duck and lamb, the acidity cutting through the richness.
CALIFORNIAN ROSÉ WINES
On the beach or by the barbecue, as soon as the weather is nice enough to be outside, rosé wines are fun and deliciously quaffable. Rosé wines include aromas and flavours ranging from strawberries and red fruit to Honeydew melon and citrus. Enjoy with soft French cheeses, poached salmon and Hollandaise, duck, spring lamb, char-grilled vegetables and the classic Niçoise salad.
