Summer fun & frolics comes to Upper Beeding up of the marquees, laying out of pitches and the manning of the stalls all undertaken by willing parents and other inhabitants of the village who can be pressed to lend a hand!

So mark the calendar now and set aside the 22nd June – we can’t promise perfect summer weather, but we are certain that the Upper Beeding fete is a summer tradition you won’t want to miss!

Community Café – Looking for somewhere to go in the morning?

F

or any small community a fete is a perfect summer fundraising event; and the Upper Beeding School summer fete has become a must attend event on the calendars of many local, and not so local, families and people who enjoy supporting an event in familiar surroundings.

The fete has its roots based firmly in the history of this friendly, picturesque and quintessentially English village and has more recently been held in the grounds of the village primary school.

The event is organised by the Friends of Upper Beeding School (FUBS) and is the highlight of the fund-raising year; this year the team has set an ambitious target of raising £5000 which will be used to renovate the schools outdoor areas.

Now what makes this fete the one you really can’t miss? Leaving aside that it is the perfect venue for keeping you and the children amused all day, from the moment the fete opens at 11:00am, the day is packed full of traditional family fun. From coconut shies, homemade cake stalls, gymnastics displays, vintage cars, fire engines to cream teas and a village princess competition the FUBS have got it all covered!

As the fete draws to a close at around 4:00pm the evening fun begins; picnic blankets come out and homemade curry and other delicious nibbles are available to partying families and friends who can stay on and enjoy listening and dancing to the music provided by a brilliant band! There is even some more entertainment especially for the children on the menu for between 6:00 & 7:00pm Paula Wells, the FUBS chair person, is the driving force behind the organisation of this fabulous and wonderfully traditional summer fete. Paula spends months pressing her willing team of volunteers into action to ensure that every angle is covered, ‘its hard work but so rewarding when you see the smiling faces of so many people and hear the shrieks of laughter from the children’ said Paula. So from portoloos to amazing raffle prizes she has her work cut out! Once again Paula and her team have worked their magic and they have tickets to the opening match of the season at the breath-taking Amex stadium, tickets to the ever popular Shoreham Air show and a cash prize of £100.

The Hub Cafe opened its doors in January offering a variety of delicious freshly made Fair Trade coffee; Lattes, Cappuccinos, Americanos and to compliment a wide selection of homemade cakes, and cookies. If you’re not a coffee drinker there is a selection of speciality teas and the best “hot chocolate mountain” is also available.

It provides a place to meet and catch up with friends, a small toddler toy corner to entertain your little ones, and always a warm welcome!There’s a garden area where you can enjoy smoothies, exotic fruit juices and, of course, Iced Coffee while enjoying the sunshine!

The Hub Cafe is run by a team of volunteers and is located at The Hub: the home of Upper Beeding Baptist Church, Church Lane, Upper Beeding. It is a Community Café with all its profits supporting Upper Beeding Primary School’s refurbishment of their Outside Environment for the children.

The cafe is open Monday to Friday 9-12pm and Saturdays 10-12pm.

Pop Up Pops Back

T

he Pop Up Shop initiative has become increasingly popular across the UK during this lengthy recession. It enables a group like ‘Partners in Art’ to temporarily take-over an empty commercial unit and in doing so, inject colour, life and interest to town centre shopping. Gill Buchanan, Swan Walk Centre Manager has provided the Partners with her full support saying “I am thrilled to see the return of Swan Walk’s pop up art gallery following their success earlier this year. We are committed to working with the wider community and know that our customers really enjoy and value new and exciting things to experience while they are shopping in the centre”. The Pop Up Gallery is sure to boost interest in the Horsham Artists Open Studio events taking place in June . The Partners in Art are all members of the ‘Open Studios’ group who will hold one large exhibition at Sedgwick Park House on 15/16 June followed by individual’s opening their own studios to the public on 22/23 June.

Trail maps and brochures will be available from the Pop Up Gallery. and will feature a NEW

selection of sculptures, paintings, photography and ceramics. The items exhibited are for sale and all hand-made, individually designed and professionally crafted. You will not be able to buy their equivalent in any retail chain. Over 1500 people visited when the first Pop Up Gallery opened for 5 days in March. Sales were made to members of the public who might not normally visit an art exhibition or artist’s ‘Open Studios. Feedback from the general public and from the Press was glowing with many heard to say “Horsham really needs this”, “Horsham should have a Gallery like this open all year round”, and “how nice it was to see an empty store being open and used in such an exciting way” The artists represented by ‘Partners in Art’ are Steve Gubbins (photographer & ceramicist), Kezia Noel-Paton (painter), Lesley Taylor (sculptor), Janine Creaye (sculptor) and Lucy Ames (painter) all of whom are local and professional in their fields. A key factor in the popularity and success of the Pop Up Gallery is that the artists themselves are present and working in the shop.

T

he holiday season is approaching and it often surprises me just how many people are affected by the thought of going on a plane; often tarnishing what should be an enjoyable experience. I have even had clients that are not prepared/able to fly at all; thereby removing the possibility of visiting so many interesting places around the world.

Fear of Flying, or Aerophobia, can have one or more of a variety of causes. Individuals who have certain other phobias or conditions, such as a fear of heights, may also develop the condition, as can those who are afflicted with claustrophobia. Similarly, anyone suffering from Irritable Bowel Syndrome, in which toilet needs can be immediate, may justifiably have a fear that they would not have access to a loo whenever required and so fear the prospect of having an accident.

A major fear for many is the lack of control over events and actions especially at take-off and landing, or during turbulence. A fear of dying can add to the trauma.

Others may have had bad experiences on planes, such as violent

turbulence. Such situations can leave a lasting effect. After 9/11, fear of flying resulted in a substantial reduction in the numbers of people flying and incidentally was probably the major cause of the demise of Concorde.

One interesting case that I had many years ago, was an 11 year old boy, who was due to go on a transatlantic holiday with his family.

At the last minute, he refused to go on the plane. His father brought him for treatment. It transpired that he had had a frightening event on some type of shute at a fair, shortly before the terrorist attack. When talking to his mother, sometime later, he was expressing his concern about flying.

She told him not to worry as shutes would be deployed and everyone saved once the plane landed. The thought of a shute had terrified him; based on his brain making a connection with a fairground ride.

Upon investigation, this connection came to light and it was a fairly straightforward process to resolve the issue. The last that I heard, his father had successfully taken him up on a trial

flight, prior to another forthcoming holiday abroad.

One of the many benefits that hypnotic techniques provide is the ability to uncover the origin of a cause, which can often be a strange connection that the subconscious mind has made and which the conscious mind is unable to identify. The clever part of hypnotherapy is the ability to provide effective treatment to deal with such situations.

I

have a dog, a beautiful and happy, but neurotic dog, that cant be left on her own for very long as she gets anxious, this can present a problem with all the logistics of the school run or a quick outing, so, aside from all the tactics advised by the Dogs Trust and various other doggy experts, I sought trusted and reassuring assistance from the very knowledgeable Sarah at Mid Sussex Therapies.

After Sarah’s visit the horse, Poppy, seemed to be more relaxed and the leg knee hernia ligament swelling that she has had for 14 months was reduced. Poppy seemed to gain more energy and even stopped being nervous around new people, she has come off pain killers and now is happy without them for the first time in 18 months. She has also come off the high energy feed and is now happily living out in a field eating just grass and is able to maintain her weight without lots added to her feed. When she arrived with me 2 years ago, she was skin and bones, even the vet thought she would not survive, but she did, and now with animal healing she has thrived even more.

Sarah returned for a second session on Poppy and spent some time working on a few of the other horses on the yard and all have made noticeable changes that have made them seem happier animals. Lady had a problem with mud, she was quite happy to put her front legs in it but not her back ones, Sarah had linked this to a mental, emotional fear.

After healing the emotional trauma with crystal healing and clairvoyance she now happily goes out into the field every day where before it was a stressful event getting her through the muddy bit into the field”.

Knowing Sarah as I do, I have every faith in her work and methods and although scepticism is very much associated with what she does I thought why not, what have we got to lose? Lexi (our lovely lurcher) was very at home in the shop and with Sarah, she lay down more than happily and Sarah set about with some crystal healing – Crystal healing is where the practitioner places crystals on different parts of the body, often corresponding to chakras, or places crystals around the body in an attempt to construct an “energy grid”, which is purported to surround the client with healing energy. Looking at energy releasing from previous emotional ties, this kind of work can free us from emotional blockages potentially being the cause of physical pain and emotional issues, as well as the situations that surround us and we find ourselves in.

Lexi apparently was holding onto negative energies from a previous time, she came to us via the dogs trust and fortunately although she hadn’t been mistreated she had been left alone for long periods of time and so has developed a problem, an anxiety issue. Sarah worked with the crystals and petted Lexi, reassuring her all the time. Lexi was very relaxed, and when she wasn’t trying to eat the crystals, had a snooze with them around her, quite happily!

Whether or not you believe in crystal work and or alternative therapies as a whole, it has to be said that prior to the visit with Sarah, Lexi was a very anxious dog, and is now more relaxed and happy to be left for short periods of time without a fuss. She is certainly less nervy and surer of herself which is incredible. I am really happy with the result of the work Sarah has done with Lexi, happy dog, happy me! This is however a treatment that I recommend you try with your animal so you can see the results for yourself as, same with us animals are so very different and you know your pets, so I can only give you my opinion based upon results personally!

High Weald Dairy Cheese Makers

I

f you ask my friends what my favourite food is, I would bet good money that the majority would answer ‘cheese’. I love it! Imagine my excitement when Sarah and Mark Hardy invited me to spend a morning at their farm near Haywards Heath so I could learn how cheese is made, how they started their cheese making business, and of course, try a sample or two of the wonderful produce.

High Weald Dairy is situated just outside the idyllic West Sussex village of Horsted Keynes. Arriving at the farm, Sarah warmly welcomed me and we moved through to the office for a cuppa and chat before the all-important tour.

Sarah was happy tell their story which started in the late 1980s when Mark was studying at Cirencester Agricultural College. His dissertation was based on milking sheep and, as he studied the subject more, he realised that there was a gap in the local market for products made from sheep’s milk and so began to investigate business opportunities.

He was eager to make cheese and one type he was particularly keen on was Halloumi which originates from the Mediterranean. Not able to perfect the art in the UK, Mark went to Cyprus to learn from an expert. With the confidence that he could produce cheese worthy of selling to the public and trade (and made from sheep’s milk), Mark went on to create a hard cheddar style cheese called Duddleswell, as well as the halloumi. This cheese got its name from the Village in Ashdown Forest where Mark and Sarah were first based.

Mark was also now producing sheep milk yogurt which was distributed to independent health food shops and farm shops, ideal for those people who are intolerant to cow milk.

With a soft cheese soon added to the collection called Sussex Slipcote, Sarah and Mark were unable to produce enough cheese from sheep’s milk alone. Although it can be frozen and thus brought in from further afield, there was not enough supply to keep up with demand. Time to draft in the cows! Organic cow’s milk was used to make the highly successful Ashdown Forester’s – a semi-hard cheese with an attractive basket weave pattern on its surface, which is also available smoked over oak shavings.Both varieties have recently won Gold Awards.Soon they had outgrown the premises in Ashdown Forest. But as luck would have it, in 2003 they were offered a redundant grain store on Tremains farm in Horsted Keynes to convert into a cheese making dairy.

The existing cheese making equipment was moved to West Sussex and, together with more modern and larger machinery,

High Weald Dairy grew. Sarah and Mark quickly employed several lucky locals. One of these was Michael Wisdom who used to make cheese in South Africa. He had a passion for blue cheese and together with Mark and the team, Brighton Blue was created.

All this talk of cheese made me realise it was time to see where the real work was done. It was time to visit the cheesemaking rooms. Mark explained that as soon as the milk is delivered, it is pasteurised. Only one cheese is made at any one time, so the different types of milk never meet. With this done, the starter culture can be added. This contains specific lactic acid producing bacteria and differs for each type of cheese. It is needed to turn the milk sugars (lactose) to lactic acid, which is what preserves cheese.

The milk is then rested for a period of time before the vegetable rennet is added. This sets the milk within 60 minutes to a junket like texture. The curds are then gently cut into 10 – 20 mm cubes – the bigger the pieces of curds, the softer the cheese. The whey is drained and if it is not to be used for the Hardy’s famous ricotta, it is collected by a local farmer and fed to his pigs. Nothing at all is wasted. There are then several different processes for making the different cheeses, but I don’t want to spill all the beans in case you decide to take a tour of the farm, or attend a cheese making course.

It really was an interesting tour – I especially loved the cheese store where all the cheeses are kept to mature for up to 6 months, before being packaged to go to local shops or wholesalers for distribution. I was akin to a child in a sweet shop! www.villageliving.biz | tel: 0785 2231512

To end the tour, Mark and Sarah showed me the lovely vaulted ceiled room where the cheese making courses take place. It was beautiful and light, and I could imagine some very happy customers spending a day there, making and testing their cheeses. Yummy!

With my morning nearly at an end, Sarah just had time to fill me in on the time Gordon Ramsey had visited them for his programme The F Word. A very charming chap by all accounts, but he has been the only person to visit the farm and refuse to wear a disposable hat into the cheese-making area because it may have messed up his hair…

I was delighted to take home many samples of cheese to try – all for you dear readers. I have had to limit myself to one a day else I would have been though them all in 2 hours. I am racking my brains to tell you my favourite, but in truth, I can’t

because they were all mouth wateringly good. The blue was delicious with a glass of red wine. The halloumi, perfect when cooked and put with a salad. The cheddar, great with crackers and grapes. The Saint Giles – yummy on its own.

As well as producing a very wide range of cheese from cow, sheep and goat milk, Sarah and Mark run a one day basic cheese making course which includes how to make a soft and hard cheese, and a demonstration on making halloumi. Lunch is freshly cooked for you, and you take all your creations home.

One thing that really caught my eye was Cheese not Cake.

If you have a special celebration coming up that needs a cake, why not try a cheese tower. Three layers of cheese (all different) layered to look like a cake, but with a twist. I wish I had known about this for my wedding.

There are many local shops in our area stocking their cheese, so do look out for them. Or take a trip over to the farm and buy direct. You’ll be glad you did!

This fab idea is the brainchild of Jeanette, who also runs her shop Oliver and Kate, in Cobblestone Walk. This amazing, enterprising mum of five is committed to giving Sussex small businesses a helping hand and enticing people to visit the historic town of Steyning for unique shopping, individual crafts and some great food. Jeanette says “I am passionate about helping small businesses and felt the town needed to provide an affordable, regular option for local people to exhibit and sell their products. The whole town will benefit, as once a month more people will come to explore Steyning. It’s a great opportunity to showcase all that Steyning businesses have to offer.”

Local charities will also benefit from the new venture as Jeanette is offering a number of free stalls to charities so they can raise funds or sell donated goods, with all monies raised going directly to their good cause.

We had a great visit, and will definitely be going along to the next one, my two thoroughly enjoyed it, especially those.. cakes!!

Burlesque beauties, showbiz and scandal!

A vibrant new musical celebrating sex, scandal and showbiz in 1940s London visits Worthing’s Connaught Theatre. The burlesque musical Miss Nightingale has been written by Matthew Bugg, features 20 original songs and features stage and screen actor Ilan Goodman and award-winning burlesque performer Amber Topaz.

The tumultuous love story follows struggling singer Maggie Brown (Topaz) as she moves to London in search of fame and fortune.

She auditions at every cabaret bar with songwriter George (Goodman) but nobody wants their act. Away from the quest for the limelight Maggie and her boyfriend Tom’s relationship is stretched to its limit, her brother Harry is missing in action and George is struggling as a Jewish refugee. Everything changes when Maggie and George are employed by charming nightclub owner Sir Frank who introduces Maggie as Miss Nightingale to an adoring West End audience who champion her combination of outrageous outfits and saucy songs.

Amber Topaz started her career in West End musicals The Canterville Ghost and Les Miserables before achieving international recognition for her burlesque acts which have been acclaimed by fashion icons, rock royalty and leading politicians. Amber’s co-star Ilan Goodman appeared in Danton’s Death at the National Theatre, Austentatious at the Landor Theatre and alongside Martin Sheen in film The Echelon Conspiracy. He most recently finished filming alongside Toni Collette, Pierce Brosnan and Naomi Watts in Diana.

Wild Garlic & Nettle Quiche with a Lincolnshire Poacher & Ground Elder Pastry Crust this is a version of the quiche I’ll be making – obviously by the end of June the wild garlic will be gone – but a visit to our local bluebell wood today to forage for wild garlic inspired me to use it in the quiche... if you’ve not used wild garlic before I urge you to hunt some down, even if it’s not so wild, as it has the most incredible deep and sweet garlic flavour without being overbearing as garlic can often be... a word of waring though – if you do find a patch of wild garlic make sure you don’t over pick from it... leave plenty in the site you found it, a little wild garlic will go a long way and you want to leave some behind for mother nature... as for the nettle and ground elder... feel free to go as crazy as you like but remember not to forage close to the side of a busy road or where you know dogs have been...

Ingredients For the pastry 8oz flour 3oz butter 1oz lincolnshire poacher – finely grated A handful of ground elder – finely chopped

For the quiche filling A bunch of wild garlic – washed and spun dry Roughly 10 heads of nettle (just the top four leaves picked wearing rubber gloves!)

5 whole lengths of spring onion – finely sliced Half a bulb of fennel – finely sliced 4 eggs 300ml single cream 100ml soured cream Salt and pepper Butter and olive oil

Start with the pastry by crumbling the butter into the flour in a large bowl with your finger tips – be light and quick – then add the cheese and ground elder and stir, then add a little cold water and bring it together into a dough with your hands. Pat it out, wrap it in cling film and then pop it in the fridge for at least 30 minutes.

In a large pan that has a lid add a little olive oil and garlic and saute the onions and fennel gently for about 10 minutes until they’re soft, then turn off the heat add the wild garlic and nettles, add a little salt and pepper then pop the lid on and let them sweat until they’re soft, this should take about 5 minutes.

Once the pastry has been chilled for 30 minutes roll it out on a floured surface and line your quiche dish or fluted tin. Cover with some scrunched up baking parchment and some baking beans and bake the pastry on 160C for about 15 minutes, then remove the beans brush the pastry with a little beaten egg and bake again for a further 5 mins until golden... this method with insure you never have a soggy bottom!

In a large bowl beat the 4 eggs with the creams, season and then add the soft vegetables and stir before pouring into the pastry case.

Bake in the oven for about 20 minutes or until golden and risen.
