Our summer staycation in

SOMERSET

Bristol is a city straddling the River Avon in the southwest of England with a prosperous maritime history. Its former city-centre port is now a cultural hub, the Harbourside, where the M Shed museum explores local social and industrial heritage. The harbour’s 19th-century warehouses now contain restaurants, shops and cultural institutions such as Bristol contemporary art gallery The Arnolfini.

or our family Summer staycation we based our stay in central Bristol and our first port of call was Bristol Zoo. Lions, gorillas, red panda, meerkats, lemurs, monkeys, seals and penguins were among the animals to be seen, however, the the blue poison dart frog (a poison dart frog found in the forests surrounded by the Sipaliwini Savanna, which is located in southern Suriname and adjacent far northern Brazil) was quite awesome according to our younger family members.

Isambard Kingdom Brunel ( I have always loved that name!) designed the Clifton Suspension bridge in 1835 which is one of Bristol’s most recognisable structures. It marks a turning point in the history of engineering and has come to symbolise a city 12

of original thinkers and independent spirit. The Bridge is open 24 hours a day, seven days a week, and the City can be viewed whilst walking along it.

Clifton Downs, best seen on foot from the bridge, bordering the Clifton Village, Clifton and Redland areas of Bristol. Together they represent a huge area of protected parkland right on the edge of the city within walking distance of other major attractions such as the Clifton Suspension Bridge, giving the impression of being surrounded by countryside.

The hot air balloon festival did not take place in its usual format this year, however, there was a sight of a few over the skies early morning.

And so, having also taken day trips to WestonSupermare, and Bath, we leave Bristol and North Somerset behind, having had a fun time, to plan our next trip. Will it be a Staycation or will we be able to travel afar?

Loy Krathong Festival of Lights Loy Krathong is a Thai festival celebrated annually throughout the Kingdom of Thailand and in nearby countries with significant southwestern Thai cultures such as Laos. The name could be translated as “to float ritual, vessel or lamp,” and comes from the tradition of making krathong or buoyant, decorated baskets, which are then floated on a river.

Many Thais use the krathong to thank the Goddess of Water, by releasing beautiful lotus-shaped rafts, decorated with candles, incense and flowers onto the water. It is seen as a time to wave goodbye to misfortune, wash away sins of the past year, and make wishes for the coming year.

Loy Krathong takes place on the evening of the full moon of the 12th month in the traditional Thai lunar calendar, thus the exact date of the festival changes every year. In the Western calendar this usually falls in the month of November. In Chiang Mai, the festival lasts three days, and in 2019 I had the adventure of a lifetime and was fortunate to celebrate Loy Krathong whilst travelling around Thailand and South East Asia from my then family home based in Phuket.

The Golden Triangle The Golden Triangle is the area where the borders of Thailand, Laos, and Myanmar meet at the Ruak and Mekong rivers. The name “Golden Triangle is commonly used more broadly to refer to an area of approximately 950,000 square kilometres that overlaps the mountains of the three adjacent countries.

Chiang Rai’s Golden Clock Tower Designed by Thai artist Chalermchai Khositpipat and unveiled in 2008 in honour of His Majesty the King, Chiang Rai’s elaborate golden clocktower (Hoh Nalika Chalerm Prakiat) is a work of art and tourist attraction in its own right. Chalermchai was the man who built the White Temple in Chiang Rai and that same distinctive architectural style from Wat Rong Khun can be seen again with the clocktower. The structure serves as a traffic roundabout and whilst it is distinctive enough during the day, the clocktower and setting takes on a whole new quality when it is lit up in the evening.

As popular as festivals and tourist attractions in Thailand are....

Hot and Spicy - As a westerner, when you think of Thailand, you think of spicy thai food. Although there are plenty of non-spicy options available in this world-famous cuisine, we can’t deny that many thai dishes are packed with flaming hot chillies.

Personally, my family love a bit of spice and over the years, we have become addicted to these hot little chilies. Spicy thai food can be easily found throughout Thailand as street food, in restaurants or just auntie’s cooking!

However, this feast was enjoyed much closer to home at Giggling Squid in Wokingham town centre recently and I can absolutely say that the thai welcome we received, ‘’Sawadika’’ from the very friendly thai and english staff matched their amazing food.

Vegan Spicy Thai minced soy & cauliflower ‘Laab’ salad Fresh and Exotic

This quick and easy Vegan supper uses minced soy and cauliflower florets, whizzed up with fresh aromatics, wokfried, and served on gem lettuce with citrus fruit, roasted peanuts, spring onion and fresh chilli for that ‘bite’.

Super tasty and satisfying!

Ingredients

Please send your vegan recipes to us at info@wokinghamlocal.co.uk Method To rehydrate the mince soy, add hot water or stock and leave to stand for 5 mins.

Place the garlic, ginger, chilli, lemongrass, soy mince, cauliflower, sugar and lime zest and juice into a food processor. Blitz to combine well and to a granulelike texture.

Heat a wok on high until smoking, and add rapeseed oil, once hot, add the fragrant minced soy mixture and stirfry for 2 minutes until slightly golden. Stir in the soy sauce, mirin, salt and pepper.

Arrange the lettuce leaves and top with the minced soy mixture. Squeeze over lime juice, and garnish with lime wedges, chilli, spring onion, grapefruit or pomelo and roasted peanuts.

100g dehydrated minced soy 200ml hot vegetable stock or boiling water 2 garlic cloves, chopped 2.5cm piece of ginger, chopped 1 red chilli, chopped (or more to taste!)

1 lemongrass stalk, grated 100g cauliflower florets 1 tsp sugar 1 lime 2 tbsp rapeseed oil 1 tbsp mirin 2 tbsp soy sauce salt and pepper To serve 2 little gem lettuce, separated 1 lime, cut into wedges 1 red chilli, sliced 2 spring onions, sliced 1 grapefruit or pomelo, peeled and segments separated handful of roasted peanuts WOKINGHAM LOCAL • OCT / NOV 2021

Steamed Fish

For a fresh and fragrant light lunch for 2, ready in 20 minutes.

Ingredients

Method

2 fish fillets, each weighing about 140g/5oz a small knob of fresh root ginger peeled and chopped 1 small garlic clove , chopped 1 small red chilli, seeded and finely chopped grated zest and juice of 1 lime 3 baby pak choi, each quartered lengthways 2 tbsp soy sauce

STEP 1 Nestle the fish fillets side by side on a large square of foil and scatter the ginger, garlic, chilli and lime zest over them. Drizzle the lime juice on top and then scatter the pieces of pak choi around and on top of the fish. Pour the soy sauce over the pak choi and loosely seal the foil to make a package, making sure you leave space at the top for the steam to circulate as the fish cooks.

STEP 2 Steam for 15 minutes. (If you haven’t got a steamer, put the parcel on a heatproof plate over a pan of gently simmering water, cover with a lid and steam.)

Serve with Thai jasmine rice, and garnish with extra finely chopped chillies for those who like it Hot & Spicy.

For the fish fillets – salmon, trout or white fish such as halibut, cod, or haddock all work well with this recipe, ask your local ‘Dan the Fish Man’ on Wokingham market for suggestions.

Indian Burritos

A quick and easy vegetarian dinner, any night of the week.

Ingredients Roti wraps Cauliflower head cut into florets Chickpeas White potatoes Turmeric powder Curry powder Olive oil Chaat Masala Salt Chilli - optional

Method Peel, chop and boil the potatoes for 15 mins, enough time for the potato to easily be mashed with a fork. Drain but reserve about ½ a cup of water.

Add in the curry powder, turmeric, the reserved water and a pinch of salt, and chilli if you like a bit of heat. Cover and set aside. l Turn

your oven to 350F. On a baking tray mix the cauliflower, chickpeas, chaat masala and olive oil. Ensure everything is coated and bake in the oven for about 25mins, stir after about 15mins. l Heat

your roti and then assemble. Spread a thin layer of the potato mash on the base of the roti, then add your roasted veggies and any other fillings you like. l

Toppings Corriander Mint chutney - Indian kachumber salad - Spinach, grated carrot, and red onions.

For the Corriander Mint Chutney Blend the following ingredients together, for a cooling sauce - 1 bunch fresh corriander, 1 cup fresh mint leaves, 1 green chilli, 1/4 teaspoon salt, 1 medium chopped onion, 1 tablespoon lemon juice and 1/4 cup of water.

For the Indian kachumber Salad Chop juicy tomatoes, sweet onions, and add cooling tangy lemon juice.

from ‘Spice Rack’ Ingredients

5 Green Apples l Kashmiri Chilli powder – 3 tbsp Salt – 2 tbsp l Vinegar – ½ cup l Curry leaves – 2 sprigs l Turmeric powder – 1 tsp l Mustard seeds – 1 tsp l Green chillies chopped finely – 1 tbsp l Fenugreek powder – 1 tsp, Garlic chopped – 1 tbsp l Ginger chopped – 1 tbsp l Oil – 2 tbsp

Method Chop green apples to small pieces, add 3-4 tsp of salt and chilli powder and set aside for 10 minutes In the meantime, heat oil in a pan and add mustard seeds, when they splutter, add the garlic and ginger. l When

they change colour, add green chillies, curry leaves, remaining chilli powder, turmeric powder, fenugreek powder and salt. Add vinegar and ½ cup water. l Keep

stirring until the oil starts to leave the sides of the pan. l Switch

off the hob and add the chopped green apples along with the salt and chilli water mixture.

Mix well and store it in a jar. The green apple pickle has a shelf life of upto a month in the refrigerator. l

EVERYDAY HEALTH ESSENTIALS We get it, it’s hard to break bad habits. But when it comes to building healthy habits, small decisions add up over time. Try the following diet, nutrition and fitness ideas that you can incorporate into your busy life to be healthier every day.

1. Use stairs and furniture as makeshift gym equipment

2. Drink 1 extra glass of water a day

7. Replace diet soda with carbonated water

3. Take a 10-minute walk

8. Start off your day with a healthy breakfast

If you have stairs at your home or office, take them every chance you get. Don’t stop there, though. For a strong cardio workout, walk up and down the stairs repeatedly. Start with a limited number of repetitions and then increase them as you feel stronger.

It’s nothing new that there are health benefits to drinking more water. It helps keep your temperature normal, lubricates and cushions joints, protects your spinal cord and other sensitive tissues.

Even a 10-minute walk can help boost your cardiovascular health. Take a walk during your lunch hour or to a store that is a block away.

If you’re at work, walk to the furthest bathroom and take the stairs.

When you were a kid, have your parents ever yelled at you for having bad posture? Well, the bad news is that they were right. Having good posture can prevent aches and can also reduce stress on your ligaments.

5. Go to bed ½ hour earlier

Do you sleep a solid seven or eight hours most nights? Many of us don’t but experts say this is a marker of good heart health.

Balance on one leg for 10 seconds at a time, then switch to the other leg. Experts suggest incorporating this balance exercise into your routine, but it can also be done while brushing your teeth or standing in a line.

Research suggests the brain reacts to artificial sweeteners much like it does to sugary sweets. If you’re not a fan of carbonated water, try drinking unflavored tea, coffee or fruit-infused plain water.

Eat something high in fiber that includes protein to keep you full and energized. If you start the day out right, you tend to eat better overall and it helps lower your risk of diabetes and improves heart health.

Incorporate lettuce into your meals to add nutrients and water to your diet. The fiber in lettuce helps to fill you up and it does so at just 20 calories per serving.

Remember that building new healthy habits can take some time and it’s OK to treat yourself to avoid feeling deprived. Stay focused on your goal, and if you slip along the way, just start again.

Healthy Ears Firstly, don’t Poke Around Because ears are delicate and sensitive, they can be easily damaged or injured if you use anything to dig around inside.

Clean Your Ears

Ear canals are self-cleaning and earwax does not form or build up deep inside the ear canal.

Turn It Down Many people use headphones to drown out surrounding sounds. When using headphones it is important to keep the volume at a comfortable level, especially with ear-bud type headphones, to prevent noise-induced hearing loss.

Importantly – Get Them Checked If you have difficulty hearing conversations, misunderstand what others say, or frequently ask others to repeat what they said, you may be experiencing gradual hearing loss. It is important to have ears checked regularly with an audiologist /hearing specialist.

Give your eyes a rest Looking at a computer for a long time can tire out your eyes. Rest your eyes by taking a break every 20 minutes to look at something about 20 feet away for 20 seconds.

KEEPING YOUR TEETH HEALTHY Achieving healthy teeth takes a lifetime of care. Even if you’ve been told that you have nice teeth, it’s crucial to take the right steps every day to take care of them and prevent problems.

1. Don’t go to bed without brushing your teeth It’s no secret that the general recommendation is to brush at least twice a day. Still, many of us continue to neglect brushing our teeth at night.

2. Brush properly The way you brush is equally important – in fact, doing a poor job of brushing your teeth is almost as bad as not brushing at all.

3. Don’t neglect your tongue Plaque can also build up on your tongue. Not only can this lead to bad mouth odor, but it can lead to other oral health problems.

4. Use a fluoride toothpaste When it comes to toothpaste, there are more important elements to look for than whitening power and flavors. No matter which version you choose, make sure it contains fluoride which works by fighting germs that can lead to decay, as well as providing a protective barrier for your teeth.

5. Treat flossing as important as brushing Many who brush regularly neglect to floss.

Flossing is not just for getting little pieces of food that may be getting stuck in between your teeth, as it’s really a way to stimulate the gums, reduce plaque, and help lower inflammation.

6. Consider mouthwash Advertisements make mouthwash seem necessary for good oral health, but many people skip them because they don’t know how they work. So, mouthwash helps in three ways: It reduces the amount of acid in the mouth, cleans hard-to-brush areas in and around the gums, and re-mineralises the teeth.

7. Drink more water Water continues to be the best beverage for your overall health – including oral health. Also, as a rule of thumb, it is recommended to drink water after every meal.

8. Eat crunchy fruits and vegetables Ready-to-eat foods are convenient, but perhaps not so much when it comes to your teeth.

Eating fresh, crunchy produce not only contains more healthy fiber, but it’s also the best choice for your teeth.

9. Limit sugary and acidic foods Ultimately, sugar converts into acid in the mouth, which can then erode the enamel of your teeth.

10. See your dentist at least twice a year

Yoga and your immune system There is no doubt that yoga is good for your health: it aids the function of all major systems in your body - your circulation, your respiratory system, your endocrine system, elimination system and finally your immune system.

As the new season (autumn) approaches with the onset of colds and flu it is time to strengthen your immune system. Some of the best asanas (postures) to practice are: Downward dog, bridge and standing forward bend.

Yoga rids the body of toxins, negative energy, and keeps your vital organs functioning at their optimum level. As you move in the asanas the muscles are contracted thus acting as a pump for the lymphatic system.

Yogic breathing (pranayama) in conjunction with the asanas helps to boost immunity.

Stress is the main reason that people have a lowered immune system. Being stressed allows bacteria and viruses to start attacking the body. Pranayama helps us to control our breathing by lengthening our inhales and exhales thus our nervous system is improved and more oxygen is pumped into our blood lowering anxiety. Our body then automatically resets itself and a healthy and strong immune system is restored.

Structured Physical Play Sessions for children from 6 months to school age Week by week our sessions help to develop not only agility, balance, climbing and co-ordination skills but also essential listening and language skills, confidence and self esteem.

Each 45-minute weekly session combines fun, excitement and challenge in a safe and caring environment. All sessions use unique equipment and are run by staff specially trained to get the best out of your child.

Sessions for 4 different age groups: 6 months to walking, walking to 2 years, 2 to 3 years and 3 years to school age. Each session is tailor made to the needs of that age group, from babies from six months who are just discovering their own bodies and all they can do with them to 4 year olds who can climb the highest ladder and much more!

Organised by Wokingham Lions Club This will be the first year that two walks have been scheduled in the same year, making it the 7th walk organised by the Wokingham Lions Club.

Walkers have a choice of three routes, and start and finish at Elms Field (adjacent to Aldi in Wokingham). Registration on the day will be from 9am to 10:30am, and walkers should begin the walk immediately after registering. Check-in at the end of the walk will close at 5:00pm.

Chloe Leibowitz told WL ‘’We Are Tabono was founded by myself and Anna Verghese in 2018, we met through networking. After collaborating on numerous occasions, it became clear to us that our incredibly different skill sets, talents and background were a winning combination, and that we naturally and quickly put other women at ease and helped them to boost their confidence and become more visible in their businesses.

WOKINGHAM BOROUGH CONNECT Low Carbon Workspaces - Grants Scheme World leaders will gather in Glasgow for COP26 from the 9 to 19 November this year. They will refer to the big ticket items when making their pledges to reduce global CO2 emissions. With more and more businesses pledging to be net zero, access to grant funding is welcome.

The Low Carbon Workspaces (LCW) grant scheme helps businesses make energy-usage savings and reduce carbon emissions.

Grants of up to £5,000 are available to help fund a third of the cost of projects such as LED lighting, efficient boilers, air-source heat pumps, insulation/glazing and solar panels. Projects

funded by the scheme are a great way for your business to decarbonise and save money on utility bills.

LCW also work closely with local suppliers of energy-saving technologies, who may be listed on their supplier directory, which businesses may be able to access free of charge.

Debbie Forrest, of Wokingham is invited by WL to share her local artwork. She has this to say ‘’I am a self-taught artist who has always drawn and been creative from childhood.

I grew up in Norfolk and moved to Berkshire for work. I haven’t always been a Professional Artist but slowly as people see my artwork, I have transitioned my passion to an amazing job.

I absolutely love buildings and architecture and when TG Art Gallery of Wokingham saw my artwork, they commissioned me to produce some local Wokingham scenes as limited prints.

I have produced limited prints for WBC and often have local people ask for commissions of buildings in this area’’.
