WELCOME... Welcome to our first Windsor & Maidenhead Local magazine of the year. We are proud to welcome many new businesses to our publication and to showcase them to our local community and readership. To start with, and for all your tech and IT support we are delighted to showcase Windsor Mobile Tech, who will ‘come to you’ visiting you in your own home or business, carrying out repairs onsite whenever possible, to keep you connected. For dining out we have several new restaurants including Bombay Story which will be opening in Maidenhead soon, also, Delhi Junction and Maison Meejana - it is all happening in Maidenhead for our ‘Sweet & Savoury’ theme. Health, beauty and wellness features strongly in this issue: with the benefits of walking with Body Manoeuvers and the Windsor and District Ramblers; how exercise helps relieve stress; a man in the modern world, for male grooming and Scalp Perfect, and David Watts details the Raynor massage technique. Sarah Swain and Jessica Cox inspire us with home decor ideas for our ‘Inspiration’ theme, and as the ground begins to thaw our ‘February Gardens’ start to come to life, with LayAway for driveways and BSW Landscapes for garden inspiration. We have been on our travels this month, starting with a tour of our very own Windsor Castle, where there always seems to be something new to discover. Baklava, a sweet pastry made of layers of filo pastry, chopped nuts, and honey, is a popular treat in many Mediterranean countries. Tiramisu, a classic Italian dessert, features layers of coffeesoaked ladyfingers and mascarpone cheese, creating a decadent and satisfying end to a meal. The Mediterranean diet has garnered attention from health experts worldwide for its potential cardiovascular benefits. Studies have suggested that the emphasis on olive oil, fruits, vegetables, and fish, along with moderate consumption of wine, may contribute to lower rates of heart disease in Mediterranean populations. Moutabal Aubergine Awesomeness! By far the simplest way to deal with aubergine is to bake or grill it whole then scoop out the insides and turn it into something yummy like this latest aubergine revelation: Moutabal, which is very similar to baba ganoush. This is pure, creamy aubergine awesomeness, perfect for pitta or flatbread and the kind of thing you will want to eat all the time. Which is just as well because it’s extraordinarily easy to make. Method:

Ingredients:

To begin, use a fork to prick the skins of the aubergines several times - this will stop them exploding as they cook.

2 aubergines, 4 tbsp of tahini, 4 tbsp of Greek yoghurt, 1 lemon, juiced, 2 garlic cloves, crushed, 1/2 tsp table salt

Place over a direct flame for 20 minutes (or until soft) until charred all over to help achieve a wonderfully smoky flavour. Allow to cool for 20 minutes.

Optional Garnishes Pomegranate seeds Flat-leaf parsley, chopped Olive oil

Carefully peel the aubergines, placing the flesh into a bowl. Gently stir in the garlic, tahini, yoghurt, lemon juice and salt until combined. Season to taste. Add to serving bowls and scatter over garnishes of your choice. Serve warm or cold with pitta breads.

‘Malai’ means cream and ‘Kofta’ are fried balls of various ingredients, popular not only in Indian cuisine, but also in Middle Eastern, Balkan and Asian meals as well. The most common types of kofta are made with potatoes and mixed vegetables, however, koftas often includes various meats and can be thought of as similar to Italian meatballs or Middle Eastern kebabs. Malai kofta is one of the most soughtafter Indian dishes in restaurants around the world, and for good reason. The dish requires a lot of effort to make, but in the end, it is all worth it. In this delicious restaurant style malai kofta recipe, the kofta are made with paneer and potatoes.

Malai Kofta

Malai Kofta is a delicious dish of fried balls of potato and paneer in a rich and creamy mild gravy made with sweet onions and tomatoes. Crisp on the outside and heavenly smooth on the inside, these tasty fried dumplings are dunked in a smooth, mildly sweet and lighted spiced curry. Method:

Ingredients:

Peel and boil the potato and drain and let it cool. Crumble the paneer and incorporate the mashed potato, spices, and seasonings, mixing well. Onion, ginger, garlic and fragrant Indian spices are sauteed then simmered in a rich sauce made from tomato puree, heavy cream and nut butter. In a pan, heat oil or ghee over medium-low heat. Add onions and a teaspoon of salt. Aim for a deep golden brown, taking about 25 minutes. Next, add ginger and garlic to the onions, cooking until aromatic. Introduce the spices – cumin, coriander, cayenne, cinnamon, and cardamom pods and cook a bit more. Pour in the tomato puree, almond butter, cream, sugar, remaining salt, and water. Let the mixture simmer until the oil surfaces with a shimmer.

Roll the potato and cheese mixture into small dumplings to be fried. Reheat the gravy on low, bringing it to a gentle simmer. If necessary, adjust salt to taste. Gently place the fried koftas into the gravy, stirring lightly to coat them and garnish with finely minced cilantro (aka coriander leaves) and some finely-chopped almonds or cashews.

Cardamom THE SWEET & SAVOURY QUEEN OF SPICES Cardamom is a familiar name in the spice world, but if asked to describe its flavour, you may be at a loss for words. This is because this spice has an extremely complex flavour profile, lending itself to both sweet and savoury dishes. As the third most expensive spice in the world (only behind saffron and vanilla), cardamom has made quite a name for itself, even earning the nickname “The Queen of Spices.” From Indian curries to Mediterranean breads, learn how to cook with this prized spice.

What is Cardamom?

Cardamom always starts out in the form of a pod. Sometimes, a recipe may call for a whole crushed cardamom pod to be added during cooking, and discarded afterwards, much as you would do with bay leaves. The pods contain hard, black seeds that are usually dried and ground to make a powder. These seeds contain the essential oils that give the spice its distinct flavour. Once the seeds are ground, they begin to lose their flavour quickly. For best results, use ground cardamom close to its purchase date, or better yet, start with whole pods. You can easily grind the seeds down using a mortar and pestle. Many Indian and Indian-inspired dishes call for cardamom, including curry dishes, Kheer (Indian rice pudding), and chai. Indian spice blends such as garam masala also feature cardamom. You’ll also find cardamom adds warmth and depth to baked goods such as cookies, bread pudding, and even cheesecake.

Cardamom is a pod spice in the ginger family that is commonly used in Indian cuisine. Although this spice originated in southern India, today Guatemala is the largest producer of cardamom. The spice can be found as a whole pod, shelled whole seeds, or ground powder and it boasts numerous health benefits as well.

Green Cardamom

This is the more common variety of cardamom. It is often used in sweeter dishes, although it will work in savoury as well. Green cardamom’s flavour is more of what you would imagine when you think of

With its larger, dark brown pods, black cardamom is more commonly used in savoury dishes due to its smokier flavour. When you see black cardamom called for in a recipe, it’s usually the whole pod that is meant to be used.

Fans of cheesecake will love these crunchy and smooth bite-sized desserts. Here is what you will need... Ingredients: 3/4 cup biscuit crumbs 2 tablespoons butter, melted 2 packages (8 ounces each) cream cheese, softened 1/2 cup castor sugar 2 teaspoons ground cardamom 1 teaspoon vanilla extract 2 large eggs, room temperature, lightly beaten 1/3 cup plain flour 1/3 cup oats 1/3 cup brown sugar 1/4 cup cold butter 1/3 cup sliced almonds

Method: In a small bowl, combine the biscuit crumbs and melted butter. Press onto the bottom of a greased 9-in. square baking pan. In a large bowl, beat the cream cheese, sugar, 1 teaspoon cardamom and vanilla until smooth. Add eggs; beat on low speed just until combined. Pour over the biscuit crust. In a small bowl, combine the flour, oats, brown sugar and remaining cardamom. Cut in cold butter until crumbly. Stir in almonds. Sprinkle over top. Bake at 160° (fan oven) for 35-40 minutes or until the centre is almost set and the topping is golden brown. Cool on a wire rack for 1 hour. Cover and refrigerate for at least 2 hours before serving. RAYNOR MASSAGE Not many people have heard of Raynor Massage. Yet it is one of the most advanced massage therapy styles in the world. The goal of Raynor Massage is to relieve a person of residual tension, or muscle tightness in an area of the body when the body is at rest. So, if you are lying on a massage table and you can feel that your muscles are tight or aching, or muscles are sore when firmly touched, you likely have tension in your body. As we get older, particularly after our 30s, tension tends to build up in our bodies. This increases the probability of sustaining sprain and strain injuries. Raynor Massage is a holistic system of bodywork developed by Naturopath Brandon Raynor. Brandon spent many years studying Eastern modalities such as Ayurvedic Massage, Chinese Medicine, Thai Massage, Reflexology, Shiatsu and Yoga breath work. From an understanding of these, the techniques that form Raynor Massage evolved. 22

Raynor Massage has the concept of bands interconnecting the whole body, known as Raynor Bands. The bands are composed of muscles, tendons, ligaments and other body tissues. Underlying these physical bands are subtle energy systems (chi or prana) similar to Meridians in Chinese Medicine, Sen lines in Thai Massage, or Nadis in Ayurvedic Massage. When the flow of chi or prana is disrupted in the bands, muscles can tighten, bones can shift out of place, or tension can be created in the body. Note that the disruption can be caused physically (e.g. an injury) or emotionally (e.g. mental stress). WINDSOR LOCAL • JANUARY/FEBRUARY 2024


It has been found that the main anchor points for tension are the fingers, toes and head. These are key areas where chi or prana can become stagnated. Raynor Bands run right to the tips of the fingers and toes, and to the top of the head. When diagnosing a person’s tension the areas looked at include the toes (e.g. are they straight or pulled over, are they loose or do they spring back when pushed?), fingers (e.g. do the joints have any lateral movement or are they stiff?), head (e.g. is the scalp tight?), and the muscles of the limbs and back (e.g. when pressed, are they sore?). So, unlike most other types of massages, Raynor Massage places emphasis on fingers, toes, and head. For example, if a person has a tight hamstring the toes are massaged first (where tension is anchored), then the foot and ankle. Once tension has been reduced in these, Raynor Bands running up the back of the leg are massaged, the calf first and then the hamstring area. Once tension is reduced at the anchor points, tension further along the bands can typically be reduced relatively easily. Deep tissue massage, acupressure techniques and massage tools are used. For deep-rooted tension there is a ‘partnership model’ between therapist and client meaning that they work together to achieve successful results. In brief, the therapist gently presses a tool into the toe or finger to bring awareness of the tension to the client (the pressure is never more than the client can handle). At the same time, the client uses deep breathing to “breathe out” the tension. The result is that the toe WINDSOR LOCAL • JANUARY 2024

or finger is loosened up and feels much looser. It doesn’t sound credible, but it works! Raynor Massage has proved to be a very effective way of reducing tension in the body and alleviating ailments such as back pain, headaches, stress, tight muscles and so on. There are so many sources of inspiration around us and knowing how to use them within your interior planning is a great way to begin any new design scheme. It is something that I ask all my new clients at the start of a project to collect as many inspirational images as possible, so that I can get to know them and their style – and what they like and dislike. Inspiration can come from the nature around us, the colours in the changing seasons (most people have a favourite) from magazines, social media, even TV and film. I am constantly taking pictures of my surroundings, from the colours in the sky when I’m out walking the dog or a pattern on a menu board from a service station – it is constant! We all know that when you are thinking about getting a new car or upgrading the kitchen you start to pay more attention to other cars on the road or take more note of your friends and family’s kitchens that you are in – this is using inspiration to help build your own ideas, likes and dislikes. It is very rare that when I see a space for the first time that it is a completely blank canvas. Usually there is a piece of furniture, a rug or a piece of artwork that the client would like to keep – and this is something I can then usually base 26

the scheme on. An example of how this works: A piece of artwork (that I bought for £3 from a local charity shop) became the starting point for an entire bedroom scheme.

The soft, aged colour of the print became the perfect warm neutral colour for the walls and woodwork in the room. The rich, burgundy mount was the perfect tone for the bed fabric (which is the main focal point of the space). The delicate pink tones from the petals are pulled out of the artwork and found in the feature wallpaper that wraps behind the bed and around three of the walls in the room (inspiration not only for the colour, but for the botanical theme that runs throughout the house) – and finally the green colour of the leaves within the picture are used in the accessories in the bedroom. This all comes together to create a cohesive, thought-out scheme that all came out of one small piece of inexpensive artwork. This idea works with different styles of artwork or fabrics – if you have a

piece that has one dominant colour and two or three other colours – try pulling out one of the background colours to use within the scheme, maybe as a wall colour or sofa fabric, or even with within cushions or accessories around the room. Social media (Instagram, Pinterest, Blogs) can be a great source of inspiration with so much material available, although this can also be quite overwhelming with knowing where to start. By saving images that you like, hopefully you start to see a pattern of similarities or colours that you are drawn to, which helps build an idea of the types of schemes you like. It is always good to keep in mind the end use of the room too, an all-white scheme you love in an image might not work as well in a busy family living space that young children often do arts and crafts in, but you can always look at taking elements of the inspiration and making them work for you – some oversized white frames for the walls or a white cotton throw for the sofa that can be taken off and washed. It’s about finding the inspiration, but making it your own. I hope this helps with how to get started, but most importantly – have fun with finding your inspiration and remember to keep a look out wherever you are!

Conservation Status: Least Concern (Population stable) Fun Fact: Unlike many other owl species, the Little Owl is known for its daytime activity (diurnal). It is often seen perched in the open during daylight hours.

TIMMY & PUMBA ~ Tawny Owl (Strix aluco)

Date of Birth: 2nd April 2023 and 3rd April 2023 These two owls share not only a strong sibling bond but also distinct personalities that make them a dynamic duo. Timmy may not be the smartest owl in the box, but his curiosity is boundless. Pumba is a food enthusiast with a keen nose for treats. Food is his greatest motivator, and his responsiveness to anything involving a potential meal is nothing short of remarkable. Conservation Status: Least Concern (Population decreasing) Fun Fact: The distinctive hoot of a male tawny owl is a common sound in TV, radio, and film productions, effectively capturing the essence of nighttime ambiance.

HARROGATE On a recent trip ‘Up North’ we visited Harrogate - Yorkshire’s most elegant destination by Jacqui Priestley

WINDSOR CASTLE Inside Windsor Castle: the history, interiors and secrets of the oldest royal home It is the largest inhabited castle in the world and has more than 1,000 sumptuous rooms, historic treasures and beautiful grounds. Windsor Castle has been a favourite royal residence since its foundations were laid around 900 years ago – and it’s not hard to see why. With crenulated fortifications, turrets, towers and moats, it is the prototype for a quintessential English castle. Read on to take a look at Windsor Castle’s fascinating history and the secrets behind its walls... As you would expect, the castle’s origins go way back in the timeline of important British history - it has housed 39 monarchs over the centuries, making it the oldest continuously occupied castle in the world. Windsor was founded after the Norman Conquest by William the Conqueror in around 1070. The fortress was strategically placed on the banks of the River Thames to protect London from the West and also because of its proximity to the royal hunting ground, Windsor Great Park. The Castle includes the State Apartments that are used today by the Royal Family, the historical rooms that were built for Charles II and private apartments created for George IV. There are many famous, must-see moments within these spectacular rooms, like the colossal Waterloo Chamber, magnificent Crimson Drawing Room and impressive Grand Staircase. With so much royal history and splendour it is possible to walk straight past some amazing treasures, so here are a few to look out for. The ceremonial rooms are the main State Apartments that are used today by the Royal Family. Within these rooms the monarch 42

hosts official visits by Heads of State from other countries, investitures, and awards ceremonies, where British men and women are recognised for their achievements. Perhaps the most striking room is the Grand Reception Room. With its chandeliers and gilding it was once used as the main ballroom in the Castle. One object you can’t miss in this room is the large malachite urn, presented to Queen Victoria by Tsar Nicholas I in 1839, and one of the largest examples outside Russia. Looking around the gold-covered walls and ceilings it’s hard to believe that this room was so severely damaged in the fire of 1992. The room was painstakingly repaired to its former glory, which you can see today. The Green Drawing Room. In 1992 a fire at Windsor Castle severely damaged the Semi-State Rooms, including the Green Drawing Room. By good fortune however, the contents of the rooms had been removed at the time. Each room was subsequently restored to its nineteenth-century appearance using the original designs supplied to George IV. Here it is looking splendid! Among the treasures to be seen are the suits of armour on display at Windsor Castle are the ones made for Henry VIII, which is big, shiny and very impressive, and the this splendid Japanese IWAI YOZAEMON which has been described as ‘Indian Armor’. This understated armour was sent to James I of England by Tokugawa Hidetada, third son of Tokugawa Ieyasu, who ruled as the second shōgun of the Tokugawa dynasty from 1605 to 1623. Some sources have suggested that the armour may once have been owned by Takeda Katsuyori (1546 – 82), a daimyō who had fought, and lost, against Tokugawa Ieyasu at the Battle of Tenmokuzan in 1582. Of course a visit to the Castle wouldn’t be complete without ‘greeting the guards’. Grab your chance to witness the Changing of the Guard ceremony where the new guard replaces the old in a colourful spectacle. The ceremony can be watched by Castle visitors on Thursdays and Saturdays. The guards arrive at the Castle just before 11:00am. So, is Windsor Castle worth a visit? Yes, absolutely. Steeped in history, it is the oldest and largest inhabited castle in the world, offering stunning architecture, beautiful gardens with breathtaking views of the Thames, and the iconic St. George’s Chapel.
