ELCOME to issue two of the Lyme Life magazine - unashamedly all about Lyme Regis and the surrounding area - its people, events and businesses a true reflection of life in Lyme.

Lyme has enjoyed one of the busiest summers in recent years, once again underlying that the resort is one of the most popular on the south coast. When the sun shines, there’s no place like Lyme for a traditional seaside, family holiday. And the sun shone hotter and longer than for many a year.

Lyme’s summer festivals attracted record crowds, raising thousands of pounds for good causes, but now the townsfolk will look forward to a mild autumn and the chance to stroll along the promenade in peace and quiet, a favourite time of the year for many.

In this issue we focus on the town’s commemoration of the end of the First World War and the rededication of the memorial to those who made the supreme sacrifice.

There’s a special photo feature on Lyme’s world-acclaimed trademark - the ammonite - which attracts thousands of people to the town in search of a special fossil find.

Mark Hix celebrates 10 years in Lyme Regis T

OP chef and restaurant chain boss Mark Hix has cooked up a double celebration this year - the tenth anniversary of his iconic Lyme Regis restaurant and the sixth anniversary of the successful Food Rocks festival.

HIX Oyster & Fish House in Lister Gardens opened in 2008, since when hundreds of discerning diners have gravitated towards Lyme Regis to taste the culinary delights of one of the most respected chefs in the UK. Foodies travel from far and wide to dine at Mark’s restaurant in Lyme, which commands magnificent views over Lyme Bay, and Food Rocks is now firmly established as one of the most popular food festivals in the South West, with its sixth edition having recently attracted top names such as Michael Caines to give cookery demonstrations in Lyme Regis.

With four highly popular restaurants in London as well as HIX Town House guest house in Lyme, Mark is considered to be one of the most creative restaurateurs in the UK and is a highly respected food writer with no fewer than 11 books to his name and countless columns in newspapers and magazines.

Mark’s dedication to sourcing seasonal British food and drink is unrivalled and he is known and respected for supporting and championing British producers. In

2016 Mark received the MBE for his services to hospitality.

Sitting on the terrace of the Oyster & Fish House with views across Lyme Bay, where Mark first honed his culinary skills and love of fishing, he spoke about how by chance he came across the opportunity to take over the distinctive wood-constructed restaurant after receiving a call from the owners of the property, Carl Salter and Merry Bolton, who live next door.

It didn’t take him long to make up his mind and complete the deal, and within weeks Mark had opened the doors to the Oyster & Fish House, his first business venture in his home county, to wide acclaim, especially from food writers who clamoured to taste the new Hix menu.

With Mark’s love of fishing - which continues to this day - its closeness to the sea and his commitment to the sustainability of fish stocks - it was appropriate that HIX Oyster & Fish House should specialise in ingredients from the sea.

Whilst Mark inevitably spends much of his time looking after his London restaurants, he visits his Lyme operation as often as possible and is looking forward to the completion of his new house in Charmouth, again with glorious views over the Dorset coastline, where he will

resume his regular Kitchen Table events - tickets for which are highly sought after, people travelling hundreds of miles to see him creating dishes in his own home.

Mark’s other Dorset interest revolves around his aim to discover and develop the finest young chefs through the establishment of the HIX Academy at Weymouth College, where he first trained - a fully commercial restaurant run by full-time students and supported by professional Hix staff.

Mark has always been willing to visit catering colleges to help those determined to make a success in a hugely competitive industry.

Looking back over his ten years in Lyme, Mark says tastes have changed very little and the Hix philosophy of sourcing simple ingredients has lost none of its appeal over the years, with all his restaurants remaining as popular as ever.

But he concedes that the hospitality industry, one of the fastest growing sectors in the country, has changed immensely with far more competition, especially in London.

Catering ‘in the blood’ for Fish House manager

Mark, however, welcomes the explosion of food outlets in Lyme Regis, including the recent arrival of SWIM on the seafront and the refurbishment of the Pilot Boat.

He believes that competition is good for other food outlets in the town, with Lyme rapidly becoming a food destination for visitors.

However, he admits that the London market is going through a very tough time with a number of closures of some big players in the capital’s hospitality industry, not least Sir Terrence Conran’s group of three London restaurants, including Les Deux Salons in Soho, which called in the administrators with the loss of 72 jobs early in the summer.

On a recent visit to London I dined at two of his restaurants, HIX Soho and HIXTER at Bankside, and both were clearly doing good business.

And the Lyme restaurant, supervised by general manager Ron Moretto, has had a particularly good summer and on some occasions out performs the London businesses.

Food is definitely the rock-n-roll of this era with more TV cooking shows, food festivals and celebrity chefs abounding.

Mark dislikes the term “celebrity” and rarely appears on television but not for the want of asking. His official role with the HIX group is managing director and creative director, he doesn’t refer to his chain as an “empire” but as a successful private company.

His laid-back appearance and demeanour hides an astute business acumen with further ambitions for his company and staff.

Inevitably his name is linked with every food outlet that comes on the market in Lyme. He is unlikely to match Rick Stein’s domination of the Cornish town of Padstow, now often referred to as ‘Padstein’, but it wouldn’t surprise me to see an addition to the HIX brand locally.

Will it happen? Mark finishes our interview by flashing me one of those cheeky smiles that I interpret as “you never know!”

LIKE many high-flyers in the hospitality trade, HIX Oyster & Fish House general manager Rob Moretto started at the bottom, washing pans and waiting on tables.

Rob is in his second year as the boss at Mark Hix’s Lyme Regis restaurant and he counts himself lucky to be working in such a beautiful area and for a chef he has known and admired for many years.

Food is definitely in Rob’s blood. His father left Italy as a young man, leaving his wife and two daughters behind, to make a life for his family in England.

He spent three years working in kitchens in London before he could afford to bring his family to the UK, where he became a successful chef, owning and running his own restaurant in Soho.

Rob was educated in London and went to college to study electrical engineering, but when his parents opened their own restaurant he decided to join the family firm, starting at the bottom just like his father.

After graduating to front of house, Rob’s career took off when he moved to some high-profile positions in Central London, ending up as general manager of one of the capital’s most swish restaurants, J. Sheekey, in the heart of Covent Garden, part of Caprice Holdings where Mark Hix was chef director.

When Mark set up his own restaurant group in London and started opening businesses in the capital, Rob and his mates often socialised at Mark’s places, particularly HIX Soho in the heart of theatreland.

After marrying New Zealander chef Amy, the couple moved to North Island, near Aukland, to improve their quality of life and both worked in restaurants before opening their own cafe, which they ran for five years.

With two children, they decided to move back to London after six years with the economy quite tough in New Zealand, and Rob immediately landed the role of general manager at HIX Oyster & Fish House.

The couple are happily settled in Raymonds Hill and their children are pupils at St Michael’s Primary School in Lyme.

Rob enjoys being part of the HIX brand and counts himself fortunate that he is able to continue developing his career in such a beautiful location.

He is also proud of the fact that the Lyme restaurant has, at times, outperformed some of Mark’s larger establishments in London and is keen to help develop his young staff.

Learn Latin dance moves including salsa, rueda, bachata, kizomba and more while making new friends and improving your fitness.

In Harmony Beauty Salon SINCE opening almost a year ago, In Harmony Beauty Salon in Lyme Regis has gone from strength from strength.

Under the management of Lisa Galvani, the salon now employs two local beauty therapists to keep up with its growing client base.

Based in Silver Street, the In Harmony premises was completely refurbished before opening, creating a tranquil oasis where clients can get away from the hustle and bustle of everyday life.

Holly uses her skills to also help cancer survivors and is part of the Pay With A Smile Scheme. This scheme allows clients who have lost their hair due to treatment, to regain their eyebrows with the only payment being the reward of their happiness at the end result. These clinics take place twice a month and are a wonderful way to build client's confidence and ultimately health again.

Lyme Bay Nordic Walking

NORDIC walking courses are now being offered in the Lyme Regis area, offering the opportunity to improve fitness and enjoy the local countryside.

Gillian Butcher set up Lyme Bay Nordic Walking after becoming a qualified instructor with the British Nordic Walking Association.

She offers free 45-minute taster sessions and ‘Introduction to Nordic Walking’ courses, with one-to-one sessions and regular guided walks around the area varying in lengths and intensities.

Nordic walking originated in Finland, where it was developed as a summer training activity for the Olympic Cross Country Skiing team.

Specially designed poles with glove style attachments enhance natural walking, turning an everyday activity into a whole body exercise. With good technique, 90 per cent of the body’s muscles are used, consequently burning up to 46 per cent more calories than walking without poles. Poles are supplied for all walks.

The core muscles, triceps (back of arms) and shoulders are activated as walkers push off with the poles and, because the effort is spread over the whole body, Nordic walking is said to feel easier than normal walking, en-

abling you to walk further and for longer.

The use of poles reduces strain on the joints, helps improve posture and reduces tension in the neck and shoulders.

Public Health England has recently recommended Nordic Walking as an ideal exercise for twice weekly strengthening and balance exercise, necessary for staying well in our youth and independent as we age.

Gillian said: “It is suitable for all ages and fitness levels and is now enjoyed by an estimated 10 million people worldwide. For obvious reasons it is very popular in the Nordic countries but the Chinese have embraced it big time!

“I began Nordic walking early last year and, aside from the health benefits, exercising outdoors in our beautiful countryside is the best aspect of it and even better if I’m walking in a friendly and welcoming group.”

THE Beautiful Boat Company opened in March this year, the first company founded by graduates of Lyme Regis’ world-renowned Boat Building Academy, with a workshop in the town.

The four directors - Jamie Chitty, Simon Olszowski, Sam Sheppard and Sam Smith were all in the academy’s class of February 2017. With a shared passion for beautiful craftsmanship and everything boaty, they come from very different backgrounds.

Both Sams are ex-forces: Sam Smith spent 10 years as principal clarinet of the Coldstream Guards Band, having grown up on his parents’ canal marina and collected a good handful of RYA qualifications. Sam Sheppard was in the Royal Navy for nine years and, when he wanted a career change, boat building seemed a perfect fit.

Jamie, a qualified sailing instructor and IT manager for a charity, studied furniture restoration at the academy before signing up for boat building.

While these three hoped the course might lead to new careers, Simon, a shipbroker with his own marine recruitment business, was planning little more than a nine month sabbatical and a gentle slide into semi-retirement.

Like many of the academy’s students, they joined with immense enthusiasm but little specialist knowledge. The course has been described as “squeezing a five year apprenticeship into nine months” and left these graduates expertly equipped for bespoke boat building as well as wooden boat repairs, renovations and non-marine joinery.

Many chats over beer led to the foursome deciding to go into business, relocating themselves and their families to Lyme and finding a workshop inland from the hustle of town but close enough to the academy to enable their close relationship to prosper.

Indeed, the academy’s former principal Yvonne Green invited them to exhibit the two boats they built on the course at the BBC Countryfile show at Blenheim Palace and, at the time of writing, they are polishing these same boats for the prestigious showcase of Southampton Boat Show. And talking of prestige, they were thrilled to win first prize for Best Trade Stand at the Melplash Show last month.

The company will build wooden boats of pretty much any style and design, but no longer than 22 feet so that they can get them out of the workshop door! Their builds to date are The Rascal, a 16 feet high-speed powerboat in the style of a 1930s classic car, and the Beaulieu scow, ‘Ophelia’, an 11 feet 3 inch sailing boat that is perfect for learning to sail.

Not content with slowly finding their feet, the Beautiful Boat Company received its first commission before opening the workshop doors: an estate punt for Hestercombe Gardens near Taunton, where they were asked to copy six photographs from 1904. The process led to ITV covering the story, filming the build in the workshop and the launch at Hestercombe.

The boatbuilders are currently preparing a series of ‘pram’ dinghies that can be adapted for rowing, sailing or have a small engine fitted, and are light enough to be carried to the water’s edge by a couple of people. While these boats are priced to make them affordable for those who can’t (yet) aspire to the luxury of a Rascal or Scow, the builders promise they will still live up to the ‘beautiful’ of the company name.

Lest we forget COMMEMORATING 100 YEARS SINCE THE END OF THE GREAT WAR

S

IXTY-two men of Lyme lost their lives in World War One, many of them from the town’s most recognised families.

Broom, Perry, Gollop, Wiscombe, family names that to this day are prominent in the everyday life of Lyme Regis.

In such a small town, they were familiar faces to all the townsfolk.

Those 62 men, alongside those who made the supreme sacrifice in the 1939-45 conflict, will never by forgotten by the people of Lyme.

Their names are inscribed on the town’s War Memorial in George’s Square which has recently been updated to include some omissions with the addition of rank and regiment.

This work has been financed by Lyme Regis Town Council after painstaking research by Vernon Rattenbury and David Humphrey, who both served in the Royal Navy and are members of the Lyme Regis Branch of the Royal British Legion.

The Lyme Regis branch is one of the most active in Dorset and is playing an important role in a programme of events to commemorate the end of the First World War. Recently, two members of the Lyme branch, former serving soldiers, Daniel Buckley of the Royal Engineers, and Jon Hunt, the branch standard bear who served with The Rifles, the

successor regiment to the Devon & Dorsets, took part in the Great Pilgrimage in Belgium marking the 90th anniversary of a similar event held ten years after the end of the war.

They took with them a wreath from the town of Lyme Regis with a message written by St Michael’s Primary school pupil Louis Martin.

Highlight of the commemoration programme will be the rededication of the war memorial and a visit to the town by The Rifles Regiment who have accepted an invitation from the Mayor, Councillor Michaela Ellis, to march with fixed bayonets through the town on Saturday, September 22.

Lyme was the first town in Dorset in 1945 to award the Freedom of the Borough to the old Dorset Regiment, later amalgamated with the Devons and then replaced by The Rifles.

The Regiment will march through the town centre at 11.45am to Monmouth Street for the rededication ceremony, conducted by the Vicar of Lyme Regis, the Reverend Jane Skinner.

The unveiling of the new plaques containing all the names of Lyme’s war dead, will be carried out at 12 noon, after which The Rifles will march to the seafront and form up on Marine Parade for the salute.

After the ceremony, The Regiment and civic guests will gather at a reception at the Woodmead Halls, hosted by the mayor.

URING the First World War (1914–1918) much of the fighting took place in Western Europe. Previously beautiful countryside was blasted, bombed and fought over, again and again. The landscape swiftly turned to fields of mud: bleak and barren scenes where little or nothing could grow.

Bright red Flanders poppies, however, were delicate but resilient flowers and grew in their thousands, flourishing even in the middle of chaos and destruction.

In early May 1915, shortly after losing a friend in Ypres, a Canadian doctor, Lt Col John McCrae, was inspired by the sight of poppies to write a now famous poem called 'In Flanders Fields'.

McCrae’s poem inspired an American academic, Moina Michael, to make and sell red silk poppies which were brought to England by a French woman, Anna Guérin.

The (Royal) British Legion, formed in 1921, ordered 9 million of these poppies and sold them on 11 November that year. The poppies sold out almost immediately and that first ever 'Poppy Appeal' raised over £106,000, a considerable amount of money at the time. This was used to help WW1 veterans with employment and housing.

The following year, Major George Howson set up the Poppy Factory to employ disabled ex-servicemen. Today, the factory and the Legion's warehouse in Aylesford produces millions of poppies each year.

The demand for poppies in England was so high that few were reaching Scotland. Earl Haig's wife established the 'Lady Haig Poppy Factory' in Edinburgh in 1926 to produce poppies exclusively for Scotland.

Over 5 million Scottish poppies (which have four petals and no leaf unlike poppies in the rest of the UK) are still made by hand by disabled ex-Servicemen at Lady Haig's Poppy Factory each year and distributed by the Legion’s sister charity Poppyscotland.

The Ammonite ‘Lyme’s trademark’

IF you ever get the chance to visit the Natural History Museum in London take a look at the contribution Lyme Regis’ very own Mary Anning has made to the world of fossils.

Walk around and you’ll see numerous fossils, including Lyme’s very own species, the Ichthyosaurus - first discovered by Mary - and many others with Mary’s name attributed to them.

The largest Ichthyosaurus that I have ever seen was found by professional palaeontologist Tony Gill. The skull sits in his shop and was found just 300 metres from his workshop. Tens of thousands of people, including Tony, had walked past the signs in the rocks many times before something caught his eye one morning - he had hit the jackpot.

But rather than a two foot row of razor sharp teeth on an Ichthyosaurus, our trademark in Lyme Regis is the humble ammonite.

From street lights to welcome signs, images on the sides of buses and even shop names, ammonites are here to stay and take on the mantle which brands Charmouth and Lyme as the fossil bonanza of the south coast.

Those aren’t my words; it was that great man Sir David Attenborough who, on a recent visit to Charmouth, declared the area as the “best in the world”.

Looking up the word ‘Ammonite’ on Google makes you realise there is more to the little blighters than first thought. They were swimming around our coast 240 to 265 million years ago and it seems that their close relations could be squid, cuttlefish even the octopus.

What makes them so popular is that everyone has a good chance of finding ammonite fossils of all different sizes on the beach between Lyme and Charmouth - from professional palaeontologists to amateurs inspired by Mary Anning.

Of course, the professionals know the cliffs like the back of their hand. When an overnight cliff slip occurs they are on it even before the sun comes up - they have to be, it’s their living.

People shouldn’t worry about future availability of ammonites, they will still be there for our children’s children and even their children to find.

She sell sea shells on the sea shore...

Mary Anning was born on May 21st 1799 in Lyme Regis and lived on the site now occupied by Lyme Regis Museum. She was a fossil collector, dealer and paleontologist who became known around the world for important finds she made in the Jurassic marine fossil beds in the cliffs around Lyme Regis.

Her findings, including the first ichthyosaur skeleton correctly identified, contributed to important changes in scientific thinking about prehistoric life and the history of the Earth. Mary has inspired generations of keen fossil hunters and paleontologist, who flock to Lyme Regis and neighbouring Charmouth in their vast numbers to seek out their own Jurassic souvenirs.

Lyme Regis Museum opened the Mary Anning Wing in her honour in 2017, and houses a vast collection of local fossils. A campaign was recently launched to honour Mary with a statue in her hometown, as her grave at St Michael’s Parish Church currently acts as the only memorial to her.

For whom the bell tolls...

B

ACK in time when loud man-made noises didn’t exist, the clang and dong of the church bell would often unnerve and disturb the minds of our 7th century ancestors, instilling a sense of awe and wonder at such an unnatural clamour; it was often used to warn people of an approaching enemy or some great catastrophe.

Some 1,400 years later the fear and terror generated by that distinctive dome now brings a feeling of warmth and wellbeing; the bells rang out across the country to announce the end of World War II and the nationwide knell has been a regular feature for many a royal wedding.

So it comes as no surprise that these historic channels of communication are considered an important part of our national heritage. But with some chimes going back to pre-reformation (the oldest surviving peal of bells, cast in Britain during the 1440s, hangs in the tower of St Lawrence Church in Ipswich), it takes more than muscle power to preserve these weighty historic artefacts to maintain their ding-dong.

“I started tinkering with bells in 1981, it was a hobby that got out of hand” says campanologist and Lyme Regis resident Andrew Nicholson, who runs the Dorset based bell hanging company Nicholson Engineering, a highly specialised and skilled business of which there are only four others in the country.

A trained musician, church bell ringer and a mechanical engineering background has to be the perfect balance for someone who is going to maintain and hang some of the world’s oldest and most precious bells.

But working with something that can weigh several tons and is the size of a car, needs plenty of room and some fairly hefty lifting gear. Up until 1993 the company worked in a rented workspace and lock-up garage but the business was growing, so when the 1930 ‘Old Generating Station’ that was originally built to supply mains electricity to the town of Bridport came up for rent, they wasted no time in moving into the huge defunct building.

Having been shut down in 1946 when the National Grid took over, this enormous cavernous property was of little use and stood empty for many years.

However it was ideal for Nicholsons with masses of floor space and even more roof space for an overhead crane.

The Sussex Downs Coombes single church bell they recently worked on was cast, probably in France, in about 1070. Nicholson Engineering restored it, made new fittings and rehung it.

Andrew (pictured) said: “We saw an ad in the local press for ‘commercial premises to rent’; it was derelict without any doors and ironically there was no electricity supply - it had never been connected to the National Grid!”

no easy task to move their gear into place but it also meant they could start investing in bigger technology starting with a large radial drill.

“We had an investment programme, we knew what we wanted and it had to be income based but we were busy from the offset and it grew like Topsy, within two years we were chockablock,” says Andrew.

He now has a team of eight, including works manager Martin Lloyd, Richard Farrant who joined in 1995 and Allan the blacksmith, who has been there for 12 years.

“People don’t seem to want to leave once they’re here” he said.

With just five companies nationwide dedicated to the maintenance of our church bells, you would think it’s a cut throat business, but it seems old fashioned values are still very important and as with any type of repair, if a church wants to get a grant to carry out essential works, they must have three quotes.

“We are in competition with each other but inevitably we all know each other well and our trade is generally very gentlemanly,” says Andrew.

But Nicholsons are not restricted to the UK, they have worked in Hong Kong several times, Pretoria, Oregon and Chicago.

Far from a dying art, the skill and craftsmanship that goes into restoring our church bells is becoming not only prized but highly specialised; it is one of the few

industries that aim to design or manufacture a component that will last at least 100 years without anything more than routine maintenance being required.

Andrew said: “When you think of the working conditions for those men hundreds of years ago and the skill and dedication they had to have, we just hope we are achieving something similar.”

And it’s not just about restoring a bell to its former glory, there’s an entire history book embedded in these age-old masterpieces where Andrew and his team often find coins embedded into the mould including pre-reformation examples they have found in the head of the bell. Founders also had their own trade mark and post reformation foundries started to put their name and date on the bell, perhaps as the fire, hell and damnation of the Roman Catholic Church started to subside.

“When a bell is cast or recast the founder will include their name and date but we never put anything on the bells we repair,” he said.

With an average of 200 annual visits Andrew may be in Canterbury, Manchester and Belfast all in one day and the visit will include a full survey of the church, tower and bells before he can prepare a plan with recommendations based on what the client is trying to achieve, which isn’t always possible so there is often a lot of discussion.

It’s a constant balancing act for many churches as they have seen their money dwindle but fortunately many have been financially helped through the National Lottery Funding, the Incorporated Church Building Society and English Heritage.

There are some who argue it is not money well spent but as the fabric of our society continues to fray and unravel, surely the dedication and responsibility shown by the craftsmen of centuries past is something we can all learn from and think more about longevity rather than a quick short-term fix.

“When we take the bells away the whole community come out to watch, most will have never seen them before and are unlikely to see them again,” said Andrew.

“We are privileged to become part of the history of the parishes we serve.”

A SPECTACULAR SIGHT NOT TO BE MISSED!

OWNS up and down the country will be celebrating Guy Fawkes Night this November but there can’t be many locations better suited than Lyme Regis to host a stunning display of fireworks and a beach bonfire.

The annual celebration commemorates the capture of Guy Fawkes – Britain’s most notorious traitor – who attempted to blow up the Houses of Parliament with barrels of gunpowder in 1605.

Disappointed by the failure of James I’s peace treaty negotiations with Spain to improve their position, a handful of young Catholic gentlemen from the Midlands, some of whom had been involved in previous plotting, decided to take action.

In May 1604 Robert Catesby proposed a plan to blow up the King, together with the House of Lords and the House of Commons during the ceremonial opening of Parliament, and later seize Princess Elizabeth, the only one of King James' children who would not be at the ceremony.

But on November 4th 1605 Guy Fawkes was caught red-handed in the basement of the House of Lords with 36 barrels of gunpowder, and his capture is now commemorated each year with bonfires and burning effigies.

Organised each year by town crier Alan Vian and wife Lynne, bonfire night is always a highlight of the winter calendar in Lyme Regis, with this year’s events being held on Saturday,

November 3rd.

It’s a real community affair – with residents and businesses donating wood for the fire, volunteers from the local football club and town council staff helping to build it on the sand, and the gig club helping to clear away the debris the next morning.

A spectacular fireworks display will light up the harbour as it’s set off from the Cobb and the Mayor of Lyme Regis, Councillor Michaela Ellis, is expected to light the bonfire as they finish.

So get those sparklers ready and grab a front-row seat on Marine Parade or in Lister Gardens – this is a show not to be missed!

THE Vintage Shed is a fabulous retro, vintage, craft and antique shop set in the beautiful East Devon town of Colyton. In fact, it sits on the car park of the Electric Tramway which runs from Seaton to Colyton from March to October each year.

Steve Goode and wife Alex took over the running of the The Vintage Shed in March 2017 and have just finished their second summer season, which has proved to be yet another bumper summer.

However, just because the summer is almost at a close it does not mean the hard work stops. Steve explains that the shop is open all year round and, of course, the next big event is the build up to Christmas, which gets earlier and earlier every year.

The Vintage Shed has more than 30 wonderful traders selling everything from tools, jewellery, linen, books, collectables and now a fabulous record shop selling vintage vinyl, CDs, DVDs, T-shirts and loads more.

“We opened the record store upstairs in the shop and it has taken off beyond our expectations. I'm so pleased it has taken off,” says Steve, “as record collecting has been a passion of mine for years.”

EET the family team which has taken over the running of the new-look Pilot Boat in Lyme Regis - Robin and Angela Collyns and their son Ben.

Robin and Angela are the recently appointed licensees of the Palmers Brewery pub and restaurant, son Ben is the general manager responsible for customer service and daughter Ellie works as a general assistant.

Mr and Mrs Collyns say they are delighted with the response after their first summer trading, after the pub was closed for several months for the extensive refurbishment, the result of a significant investment by the Bridport-based brewery.

Mr and Mrs Collyns and the family come to Lyme Regis with extensive experience in the hospitality trade.

Before taking over the Pilot Boat the couple, who met when they both worked for Berni Inns in the 1980s, ran the City Gate Hotel in Exeter and before that The Godolphin Arms in Marazion in Cornwall.

With the front part of the building retaining its pub atmosphere, the former ‘Inn Plaice’ and back bar at the Pilot has been converted into an ultra-modern bar and restaurant with an open air terrace seating 60. In all the establishment offers seating for around 185 diners for meals throughout the day, including breakfast.

Mrs Collyns said the Californian-style service was proving very popular with customers but they were keen to seek advice and suggestions from all those visiting the pub.

The Pilot also has three well appointed bedrooms, one overlooking the sea, which becomes available this weekend.

Around 50 staff are currently being employed at the Pilot, 20 of which will be permanent, with some of them being accommodated at the former Angel Inn in Mill Green, which has been converted into staff quarters by Palmers.

Mr and Mrs Collyns are keen to immerse themselves into the community life of Lyme Regis and have already recognised what a popular and vibrant the town it is with a growing reputation for high-quality food outlets.

As the summer draws to a close, they will be hosting a number of regular events at the Pilot Boat, including weekly quiz nights starting on Thursday, September 27. The quiz will be for teams of two and more with free entry and a £100 jackpot prize every week. There will also be a cash prize for the winning team and a booby prize for the team that comes bottom on the night.

The Pilot is also looking for a quiz master to take ownership of the initiative and other volunteers who would like to help with compiling the quizzes, etc. Anyone interested should pop into the Pilot Boat to discuss their possible involvement.

Popular singers Grace Gillan and Jake Miller and Adam Sweet will appear on alternate Wednesday evenings, 8.30pm to 10.30pm, with two cocktails for £10 between 8pm and 10pm.

The quiz nights with the £100 jackpot prize will take place on Thursdays and there will also be live music on ‘Fizzy Fridays’ (9pm to 11.30pm) when a bottles of prosecco will be on offer for £15 between 5pm and 7pm.

The Pilot Boat is launching a new winter menu with daily specials on October 2 and is also planning to convert the bar and restuarant into a Winter Wonderland with festive specials and Yuletide drinks for Christmas.

Beatrix Potter was inspired to write ‘The Tale of Little Pig Robinson’ while staying at the hotel when she was just 17.

Beatrix Potter isn’t the only historically important figure to have stayed in the hotel. In 1805 the three Philpot sisters moved to the area and lived in the building while collecting fossils, for which they later became famous. HE popular Penny Black Café in Lyme Regis is now under new ownership, with Ben and Nicky Taylor keen to keep up its excellent reputation.

Tucked behind the post office on Broad Street, the vintage café is named after the world's first adhesive postage stamp used in a public postal system, which features a profile of Queen Victoria. They still remain highly sought after today and were recently voted as the world’s favourite stamp by collectors.

New owners Ben and Nicky took over at the beginning of September and plan to keep the café’s retro style and build on its popularity.

Open from Tuesday to Saturday, they will be serving cooked breakfasts from 9am to 11.30am, light lunches including sandwiches, toasties and jacket potatoes, plus soup of the day and one other hot special, followed by tea time specials such as crumpets, tea cakes, scones and Nicky’s homemade cakes, as well as a selection of the popular Jessica’s Cakes from Bridport.

Ben and Nicky will also been keeping Penny Black’s popular American-style thickshakes on the menu, with a wide selection of flavours available. There is also plenty of gluten free delights and options to suit other dietary requirements.

Having previously worked at the Good Food Store and the Town Mill in Lyme Regis, Nicky has developed a passion for baking and she and Ben, who previously worked at St Michael’s Primary School, have dreamed of running their own café for 15 years, but said it has never been the right time until now.

“The stars aligned,” said Nicky, “we saw this place was up for sale and we love it, we have always thought it was a brilliant café.

“It’s a new adventure for our family, as our eldest son will be helping us out, as well as my mum. It’s a real family business.

“Penny Black has a really great reputation so we want to keep it the same. We’ve already been overwhelmed with support from our customers.

In 2009 Stephen was drawn back to Dorset where he became head chef at The Bridge House Hotel in Beaminster where he has held 2 AA rosettes for the last five years cooking good quality British food using local produce.

After recently becoming a father for the first time, he decided that it was time for a new work challenge and joined the team at Lyme Regis Golf Club.
