When ready to cook, set the Traeger temperature to 120ºC and preheat with the lid closed for 15 minutes. Turn on Super Smoke mode, if possible.
If your butcher hasn't done so already, remove the membrane from the back of the ribs and trim off any excess fat. Season the ribs on all sides with Traeger Pork & Poultry rub.
Insert the probe into the middle of a rack of ribs, avoiding the bones. Arrange the ribs directly on the grill grates, bone-side down, close the lid and cook until the internal temperature reaches 95°C, 3-4 hours.
Add the apple juice to a spray bottle and spritz the ribs after 1 hour of cooking and every hour thereafter.
Brush the ribs on both sides with the Traeger BBQ Sauce. Return the pork spare ribs to the grill and cook until the sauce has set, another 30-60 minutes.
To serve, cut each slab in half or into individual ribs. Serve with more BBQ sauce on the side. Enjoy!

Combine the apples, lemon juice, sugar, flour, cinnamon, and nutmeg in a large bowl.
Roll the pie crust dough into two 28 centimeter circles. Fit one circle into a 23 centimeter pie plate (try not to stretch the dough), preferably glass. Brush with the apple jelly. Add the apple mixture.
Dampen the crust’s edge with apple juice. Cover with the top crust, pressing the edges together to seal. Trim the pastry, and flute the edges if desired. Make several small
slits in the top crust with a paring knife. Lightly brush the top of the pie with the cream.
Preheat the Traeger to 220°C; this will take at least 15 minutes. Bake the pie for 50 to 60* minutes, or until the apples are tender and the crust is golden brown. Cool on a wire rack. Serve warm or at room temperature. Enjoy!

In a medium bowl combine ground beef, salt and black pepper and mix with hands to combine. Form into 4 balls.
When ready to cook, place a cast iron griddle on the grill grate and set the temperature to high and preheat, lid closed for 10 to 15 minutes.
Wipe the griddle with olive oil. Place the burger balls on the grate and immediately smash them down with a spatula until completely flattened. Pile 1/4 of the onions on top of each patty and press again embedding the onions into the patty. Cook until burgers are well browned.
Carefully flip the burger onion stack and cook until onions begin to soften. Add cheese and top with top bun. Place bottom bun upside-down over top bun to allow it to steam in the onion vapors.
When buns are soft, transfer bottom buns to a plate. Add condiments if desired. Lift up onions, burger, and top bun together and transfer to bottom bun. Repeat with second burgers. Serve immediately. Enjoy!
