Cool weather invites a heartier nightcap, and bourbon always does the trick. Distinctly Southern, bourbon is ideal as part of a classic cocktail or sipped neat. All bourbon is whiskey, but not all whiskey is bourbon. So, what makes bourbon different? It must be made of at least 51% corn, made in the United States, and aged in oak barrels. But if you ask anyone who loves bourbon, they’ll know when they taste it.
We’ve rounded up four unique bourbons from all corners of the South for you to sample this season. Bottoms up and enjoy.
Cathead Distillery
Jackson, Mississippi
Old Soul Bourbon Estate Collection #3
Since 2010, Cathead Distillery has claimed the title of Mississippi’s first legal distillery since prohibition, says co-founder Richard Patrick. The name “Cathead” is taken from the blues music tradition and refers to a respected artist. It’s also a nod to the distillery’s live music support.

A bourbon spritz made with Cavehill Bourbon by Rabbit Hole
Old Soul #3 is made in a pot still before barrel maturation – this particular bottle for seven years. The spirit is made with corn, wheat and sorghum grain, all grown in the Magnolia state. “Sorghum is rarely used in bourbon, but we’ve found it brings a beautiful harmony for a wheated bourbon,” says Patrick, adding that Mississippi’s climate enhances the flavor, making the bourbon comparable to a more aged spirit.

Shortbarrel Distillery

Shortbarrel Bourbon Four Grain
Shortbarrel bourbon is blended and bottled at its namesake distillery in Georgia with a tagline that proclaims it’s “born in Kentucky and raised in Atlanta.” It was founded by four friends – Adam Dorfman, Patrick Lemmond, and Clinton Dugan – in 2015.
Crafted from corn, rye, wheat and malted barley, Shorbarrel is enhanced by Georgia’s sticky Southern summers. “Summer temperatures and humidity affect proof by altering the rate of evaporation, which is a major factor in its maturation process,” Lemmond says. “In hot, less humid conditions, water evaporates faster than alcohol, increasing the proof over time. This differs from the effect of cooler, more humid conditions, which cause proof to decrease.”

Rabbit Hole Distillery

Cavehill Bourbon
Rabbit Hole was founded by Kaveh Zamanian and is named for his fervid descent into distilling after a previous career in psychology. Cavehill Bourbon refers to Louisville’s historic Cavehill Cemetery, the final resting place of more whiskey-makers than any other cemetery in the world.
Cavehill’s mashbill consists of corn, malted and honey malted barleys, and malted wheat. It’s aged in hand-selected white oak barrels, then blended as a small batch with no more than 15 other barrels to make the final product.
Interested imbibers can locate Cavehill on the Rabbit Hole website’s store locator, and, upon procuring a bottle, craft the perfect bourbon spritz. Combine two parts each Cavehill, passionfruit liqueur, and orange aperitivo with one part each simple syrup and lime juice. Founded on King Street, Charleston Distilling Co. relocated to Johns Island in 2020. Co-founder Stephen Heilman says the company chose the Lowcountry “for the ideal coastal climate and exceptionally clean water, both perfect for distilling and aging quality bourbon.”
Vesey’s Bourbon is distilled from a mash bill of corn, rye, and wheat, then aged in American oak barrels. As with all Southern bourbons, the warm air of the Carolina coast accelerates maturation and produces a rich, smooth spirit with notes of caramel, spice, and toasted oak – a character that is “unmistakably Charleston,” Heilman says.
