The Instinct That Changed Everything: Susan Candelaria’s Journey

In April 2017, Susan went in for her routine annual checkup. During her visit, her doctor encouraged her to schedule a mammogram. Like so many of us, life got busy, and the order stayed tucked away in her purse. But then, something inside nudged her—make the call, book the appointment.

That one decision changed everything. Her mammogram revealed calcium deposits, leading to further testing and, ultimately, a diagnosis of Ductal Carcinoma—breast cancer. As Susan absorbed the weight of this news, her doctors recommended genetic testing. The results uncovered something even more significant: Lynch Syndrome, a hereditary condition that heightens the risk of certain cancers.

Susan didn’t stop with her own care. Armed with knowledge and determination, she urged both her parents to get tested. Her father tested positive for Lynch Syndrome. Knowing that colon cancer is its most common risk, Susan encouraged him to undergo a colonoscopy—even though he wasn’t due for one. That proactive step revealed colon cancer, which was later treated with surgery.

I am happy to share today, Susan and her father share the same victory: they are cancer-free, seven years strong. Susan’s story is a powerful reminder that listening to your body, trusting your instincts, and keeping up with screenings can change everything. 1 cup good mayonnaise

1 cup shredded cheddar cheese

1 cup shredded mild Swiss cheese

8 strips bacon , fried until crispy and crumbled

1/3 cup sliced or slivered almonds, for more flavor toast them in a dry skillet until golden, then cool

4 green onions, sliced

1/4 teaspoon freshly ground black pepper

1/4 teaspoon onion powder

1 teaspoon hot sauce, optional

Place all of the ingredients in a mixing bowl and stir until combined. For the best flavor cover and refrigerate for at least 2 hours before serving to let the flavors develop.

Let the dip sit at room temperature for 15-20 minutes before serving. Serve with crackers, corn chips, slices of crispy bread, or veggies.

2. FRENCH DIP SLIDERS

5 Tbsp. unsalted butter, divided

1 large yellow onion, thinly sliced

2 thyme sprigs, plus 1/2 tsp. chopped leaves

Kosher salt

Freshly ground black pepper

12 slider buns, halved

1 lb. thinly sliced deli roast beef

12 slices provolone

1 tsp. chopped fresh parsley, 1/4 tsp. garlic powder

1 Tbsp. clove garlic, finely chopped

1 1/2 cups low-sodium beef broth

1 Tbsp. Worcestershire sauce

Step 1 | Preheat oven to 350°. In a large skillet over medium-high heat, melt 2 Tbsp. butter. Add onion and thyme sprigs; season with salt and pepper. Cook, stirring occasionally, until caramelized, 30 to 40 minutes. Discard thyme.

Step 2 | Place bottom halves of slider buns on a large baking sheet. Top with roast beef, cheese, and onions. Close with top buns.

Step 3 | In a small heatproof bowl, microwave 2 Tbsp. butter until melted. Brush on top of buns.Sprinkle with parsley and garlic powder; season with salt.

Step 4 | Bake sliders until warmed through and cheese is melty, 10 to 15 minutes.

Step 5 | Meanwhile, in same skillet over medium heat, melt remaining 1 Tbsp. butter. Add garlic and cook, stirring, until fragrant, about 1 minute. Add broth, Worcestershire, and chopped thyme; season with salt and pepper. Bring to a simmer and cook, stirring occasionally, until slightly reduced, about 10 minutes.

3. PINEAPPLE BBQ MEATBALLS

Cooking spray

1/4 medium yellow onion, finely chopped

2 large eggs

1 lb. ground beef

1/2 cup plain bread crumbs

1/4 cup finely sliced scallions, plus more for serving

1 tsp. kosher salt

1 (20-oz.) can pineapple chunks in juice

1 cup store-bought or homemade BBQ sauce

2 cloves garlic, grated

2 Tbsp. apple cider vinegar

2 Tbsp. reduced-sodium soy sauce

1 Tbsp. grated peeled ginger

Step 1 | Place a rack in top third of oven; preheat to 400°. Grease a baking sheet with cooking spray. In a large bowl, combine onion, eggs, beef, bread crumbs, scallions, and salt. Using your hands, mix to combine; try to avoid overmixing.

Step 2 | Form beef mixture into 16 to 18 meatballs about 1 1/2” diameter. Arrange on prepared sheet.

Step 3 | Bake meatballs until browned and cooked through, 15 to 20 minutes.

Step 4 | Meanwhile, in a large high-sided skillet over medium heat, bring pineapple chunks and juice, BBQ sauce, garlic, vinegar, soy sauce, and ginger to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until sauce thickens enough to coat the back of a spoon, about 8 minutes.

Step 5 | Transfer meatballs to sauce and stir until well coated. Top with scallions.

4. ANTIPASTO SKEWERS

2 Tbsp. olive oil

2 Tbsp. red wine vinegar

1/2 tsp. Italian seasoning

Pinch of kosher salt

12 ciliegine mozzarella balls, drained

1 roasted red pepper (from a jar)

12 pitted kalamata olives

24 slices salami (about 5 oz.)

24 large fresh basil leaves (about 1/4 c.)

12 bite-size marinated artichoke hearts

12 cherry tomatoes

12 pepperoncini

Balsamic glaze, for drizzling

Step 1 | In a medium bowl, whisk together the oil, vinegar, Italian seasoning, and salt. Add the mozzarella balls to the dressing and toss to coat. Refrigerate for at least 15 minutes or up to 12 hours. Slice the roasted red pepper into 12 (1-by-1-inch) squares.

Step 2 | Thread the ingredients onto 12 (6-inch) wooden skewers in the following order: roasted red pepper (folded in half), olive, salami slice (folded into quarters), basil leaf, marinated mozzarella ball, artichoke heart, tomato, basil leaf, salami slice (folded into quarters), and pepperoncini. Place the skewers on a platter and drizzle with the balsamic glaze just before serving.

This no-expensespared hand-built tribute to Bill Devin, the 1956 SCCA Champion, was carved from a Brian Stupski rendering and took over 6,000 hours to complete.

2005 AM GENERAL HUMMER H1

This custom 2005 AM General Hummer H1 is powered by a 6.5-liter turbo-diesel engine paired with an overdrive transmission. It has been upgraded with the RPM Night Edition Stage 2 Package, which includes a full custom Kevlar coating, custom aluminum open X-doors, custom upholstered seats, new glass, a custom hardtop and brand-new 24-inch wheels wrapped in 37-inch mud tires.

1972 CHEVROLET G10 “MYSTERY MACHINE”

This 1972 Chevrolet G10 custom van was recently professionally restored as a “Mystery Machine” re-creation, as seen in the 2002 “Scooby-Doo” movie. It is powered by a 327 V8 engine mated to a Turbo 350 3-speed automatic transmission. It is equipped with power steering and power front disc brakes, and rides on brandnew chrome 5-spoke wheels and new whitewall tires.

1967 427 ROADSTER RE-CREATION

This 1967 427 Roadster re-creation is powered by a custom-built 351ci Ford V8 engine rated at 450hp, equipped with MSD ignition and a 750cfm Holley 4-barrel performance carburetor.. It is finished in silver paint with black stripes and features a black interior with a wood-grain dash signed by Carroll Shelby. Instrumentation is provided by a Stewart-Warner gauge panel.

1940 MERCURY CUSTOM CONVERTIBLE

This 1940 Mercury custom convertible underwent extensive modifications, including body removal, frame blasting, boxing and the addition of a Mustang II front end. It is powered by a cammed LS1 Corvette 350ci V8 engine equipped with C&C ported heads, a Sniper EFI intake, heavy-duty valve springs and a Billet Specialties billet drive system.
