Exclusively for foodies

M

any friends from outside Thailand say there is one experience when they come to visit the Big Mango that they never forget: eating. Bangkok, indeed, is a great place to enjoy the art of eating. Or, if we want to be a little bit fancier: the art of gastronomy. And it goes beyond Thai food. Indeed there is such a wide range of gastronomic possibilities available here, and so no wonder, the city is being called "the new dining capital of the world." It is therefore timely that we devote another issue exclusively for this. So, here is a “foodie issue” again--our humble contribution to the celebration of the ever-growing gastronomical excellence in Bangkok--for all of you. For the first time in years, we have compiled our own list of the city’s 50 best restaurants, although we haven’t done any actual ranking yet as that will come later in the year when we conduct an official poll on the matter. (Watch out for this, by the way.) Eating is a matter of attitude of course. The experience is very subjective and we do not pretend to have the last say on this. But like everyone, we have tried most of the best restaurants we selected and we have our own favorites, which might have influenced our selection. Truth is, we have to prune

our original list of more than 100 places, for so many reasons, which we will not bore you with here. There were places we could have included -- and want to -- but didn’t, but that doesn’t mean they didn’t make the cut. Bangkok is exploding with some of the most exciting restaurants in the world today, and it’s simply impossible to include all in just one issue of a magazine. Its foodie scene is literally sizzling! We suggest that foodies try not only the restaurants on the list but also those that they find suited to their personal taste, preferences, and budget. We recommend that they try the entire gamut of Bangkok’s (or Thailand’s) quintessential gastronomical experience, from the street level to the most fancy restaurants they can afford. Having said that, let us reassure you that we have not forgotten the other stuff that you have always enjoyed in our magazine. To inform, to entertain, to guide, to delight, and perhaps to engage and persuade – we have all our regular sections and departments intact for you to enjoy. Here’s hoping that this special focus on dining and gastronomy will enhance your enjoyment of Look East even more. Happy reading everyone!

Chiangkan is a town in Loei province that can be reached by bus after around 8-10 hours of travel. Located 580km from Bangkok, it is a former Laotian town -founded around 857 AD by Khun Khan, the son of Khun Khua of the kingdom of Lanxang. My family and I visited it recently for the first time, but definitely, it will not be our last. We booked a room at The Husband and Wife guesthouse, a 90-year-old house. It is perfect for those who want to experience the past and the present, which is really what Chiangkan is all about.

Owned by Jodok Bhongrabhebhuvanadh (Jeff), the hotel made our stay in Chiangkan more enjoyable. Jeff is from Chiang Mai. But he traded and his home work – he was a supervisor in a big company for 15 years there -- because he fell in love with Chiangkan. Jeff’s love for the place is mirrored in how he takes care of the hotel and his guests. Jeff welcomes guests at any time, personally assisting them to make them feel at home. His personal touch is evident even in the hotel design, which infuses Lanna and Isan styles using recyclable materials to retain that old hometown feel. This is a “green hotel,” as one can see in all the five rooms and the family room in the attic. Eco-friendly elements adorn the entire hotel, and even the shared bathrooms are “greenhouses.” Jeff has also made sure that his hotel is very affordable. The room rates include breakfast coupons, which give guests the option to eat in any of the five affiliated restaurants. There are complimentary bottles of water for all guests; and unlimited water, coffee, tea, and even

Ovaltine for kids at the common room. Jeff has a coffee shop on the first floor, which people say has the best brew in town. There are free bicycles for guests to use to explore the town. Jeff loves to talk about Chiangkian too. He says that French tourists first discovered Chiangkan, although today one sees mostly Thais, Japanese, and other Westerners. Especially during the peak seasons of October to February when these tourists ensure that the streets are humming with activities. But it’s still easy to imagine how Chiangkan used to be a place where ancient Siamese and Laotians once lived in harmony. Wherever you go, you see a destination that refuses to let go of its glorious history. But, signs are that soon Chiangkan will also be rising to its tourism fortunes. The century-old wooden houses might become memories as even now many of them are already being converted into guesthouses. If you want to see Chiangkan before that happens, make a visit now.

The Akha Swing Festival

What: The Akha hill tribes believe that they came down from God through a swing. Thus, this celebration. My favorite place: Khao Yai Bring there: Go there alone or as a couple Must-do: Sightseeing around the national park, visiting the zoo, enjoying outdoor recreation, and of course dine & wine as Khao Yai is home to several wineries! Must-see: Khao Yai National Park, with safari activities among wild animals Must-buy: A bottle of wine from local wineries such as PB valley or Granmonte Eat at: Chokchai Steakhouse -- it is a must to check out. This is the place to go for homemade steaks, made from beef coming directly from the farm. Drink at: Vino Café at Toscana Valley Khao Yai, where the ambience transports you to Tuscany, and makes you feel like you are sitting under the sun in Italy. Sleep at: Valanta Resort, Hotel La Casetta at Toscana Valley, or any boutique resort inspired by European architecture. There are a number of great boutique hotels with very charming settings here.

My favorite place: Currently, the beautiful island of Koh Samui for its great way of life with beautiful nature, a great dining scene, easy and fast access to some of the greatest cities in the world like Bangkok, Singapore, and KL. Nevertheless, having relocated to Bangkok, I certainly can’t wait making this great city my newest favorite place. Bring there: Sun oil, sunglasses, a lot of energy, and a great appetite so you can enjoy all those great restaurants. Must-do: Two hours ATV Tour up the mountains after a rainy day. A great mix of action, wonderful nature and fun with friends and family. Alternatively a sailing trip to the neighboring island of Phangan where you can enjoy a wonderful local lunch on the cliffs next to the sea. Must-see: The airport… hard-to-miss for most of the people arriving to the island. One of the most beautiful and charming airports I’ve seen. Additionally the Walking Street event at Bophut’s Fishermen village Friday nights is an event not-to be-missed. Must-buy: A fresh coconut in one of the beachside restaurants or from a local vendor on the beach. Nothing more refreshing on this planet! Eat at: Tree Tops Restaurant. This restaurant is most likely one of the most romantic settings you can experience, with a private tree house for each of their eight tables overlooking the sea. Be amazed by their in-house Salt Guru. Drink at: Ark Bar on Chaweng Beach, watching some fire shows and the nightlife develop, if you like it more lively; or Coco Tan in Bophut Beach, if you like it more quiet with some of the best cocktails to zip on a bean bag. Sleep at: One of the beachside villas of Renaissance Koh Samui at Lamai Beach. Beautiful gardens with a stunning view over the sea.

HEADLONG INTO THE FUTURE For a city that once didn’t have much in the way of food possibilities, Phnom Penh is now a must on any gourmand’s travel list by Dave Stamboulis

P

hnom Penh has joined in the Southeast Asian frenzy of massive development, rushing headlong into the future. Some of it is pretty, some of it isn’t, but the city has firmly put its footprint on the must-visit list, with a rocking new foodie scene that some say rivals Bangkok. It has a whole host of truly lovely places to stay, and a handful of sights to see but there is enough to stay entertained, while resting up from an overdose of Angkor Wat. Most visitors to Phnom Penh will want to check out the handful of attractions along the Tonle Sap

River, which runs through the heart of town. Here you can find the Royal Palace, Silver Pagoda, and National Museum, all built during the French period and stand as fine examples of traditional Khmer architecture. These days, the riverside area is lined with Chinese shop houses, art galleries, and plenty of sidewalk bistros and bars, with terraces overlooking the river and city life below. In addition to sitting and taking it all in, one can hire a traditional cyclo (bicycle rickshaw) to tour around in, or better yet, view the city from the river. Several operators now run


make sure to stop in at the Art Deco gem Psar Tmei Central Market, if only to gape at its amazing ceilings. For boutique handmade Khmer products, call in at the Artisans d’Angkor, the well-known organization that preserves traditional Khmer crafts while providing jobs for rural folks, which has its Phnom Penh branch in front of the old colonial post office building. Make sure to make at least one visit during your stay to bread baker extraordinaire Eric Kayser (http://maison-kayser-cambodia. asia/our-story-and-mission/), which now has four shops in the city, and bakes possibly the best bread and pastries you’ll find anywhere in Asia. Over in the historical central district, The Plantation (www. theplantation.asia) is not only one of the city’s loveliest boutique hotels, with several pools set in tranquil gardens in a restored colonial French house filled with artwork, but it is also home to the newly opened La Pergola (www.facebook.com/ la.pergola.phnompenh), which serves elegant French and Khmer cuisine. Choose from succulent ceviche or millefeuille made with fresh mozzarella and sun dried tomatoes, and move on to a selection of lamb chops or beef, accompanied by a fine wine list (which comes written on a wine bottle). You can enjoy the view over the fountain, pool, and garden courtyard below, making for one of Phnom Penh’s more intimate evening settings. For a further trip into an elegant past, splurge out for a stay at Raffles Hotel Le Royal (www.raffles.com/ phnom-penh), which opened its doors in 1929, and features a marvelous blend of French colonial, Khmer, and Art Deco architecture and design. Even if you don’t stay here, head over to the elegant Le Royal haute Khmer and French restaurant, which does a knockout Saturday brunch with free-flow French champagne and a gastronomic feast of fine meats, fish, and a spread befitting a king. For shopping, head over to the pulsing and hot Russian Market, and

sunset cruises aboard comfortable catamarans, giving views of the palace and Wat Phnom Hill for which the city is named after. You can float down to the confluence of the Tonle Sap and the Mekong, where one can enjoy the last light of the day with a cocktail or cold Angkor beer in hand. Yet even more interesting is a trip into the Khmer architectural past. After Cambodia’s independence, the country’s most renowned architect, Vann Molyvann, led a movement known as New Khmer Architecture. This combined local traditions with international styles, in particular French Brutalism, with lots of exposed concrete and steel meshing with attention to tropical monsoons and heat. Buildings like the Olympic Stadium, the 100 Year Housing Project, and some of the major university buildings all remain today, although many have been threatened with demolition in the massive new property boom that is sweeping Phnom Penh. A small group of dedicated architects and grad students have set up an organization to show off these old treasures, in the hopes it will stop government plans to knock them down, and a half day tour with Khmer Architecture Tours (www.ka-tours.org) is a great way to get off the beaten track and see some of the real Phnom Penh. Far more exciting than the local sights is the new foodie revolution that is bringing world gourmets to Phnom Penh. At The Lost Room (www.thelostroom.asia), a hidden away gem in a dark back lane of town, Australian restaurateur Wendy Lucas presides over an amazing tapas-style kitchen with a dazzling selection of ethnic fused eats from around the globe. Sharing plates of blue cheese and pear spring rolls, beetroot and hummus felafel, chorizo, and lentil stew, seared kangaroo fillets, or sea bass with goat cheese, this mouthwatering spot provides a Michelin-worthy experience at a fraction of the price one would pay in Bangkok, and is absolutely not to be missed.

GO EAST! The Eastern seaboard with its smorgasbord of sights and activities is an ideal place for tourists who don't want to make the long trek to the south of Thailand by Michael Moore

he area along the northern coast of the Gulf of Thailand leading east from Bangkok to Cambodia is often called the Eastern Seaboard. Because of its proximity to Thailand's major metropolis, it has long been popular with both tourists and Bangkokians in search of a good time and a place to get away from the rigors of life in the big city. When Thailand first opened up as an international tourist destination, there were no airports in Phuket or Koh Samui so the Eastern Seaboard, and Pattaya in particular, were where tourists went to have some fun and a good time at the beach. The creation of international airports at Phuket, and later Koh Samui and Krabi, changed all of this and tourists soon flocked to the sun, sand, and clear water that are to be found in the south of Thailand. It’s true, the Eastern Seaboard and Pattaya remained popular, but many people considered the beaches to be inferior to those in the south and Pattaya to be a destination primarily for single males in search of what one might describe as companionship. But in recent years things have changed. Although Pattaya is still known for its naughty nightlife, the attractions in the region are now far broader than this and most activities are suitable for the entire family. In addition, Trat - the easternmost of the Eastern Seaboard’s provinces - has shown that it has beautiful beaches and isolated hideaways that can rival those that are found in the southern part of the country.

Pattaya and its Surroundings

Greater Pattaya comprises three distinct beach areas: Naklua to the north, Jomtien to the south, with Pattaya Beach, the largest and most popular stretch of sand, sandwiched in between. Generally speaking, Naklua and Jomtien are more family oriented, while Pattaya Beach is where most of the nightlife and bars are found. Many families, however, prefer Pattaya Beach, especially the northern areas, because of the numerous restaurants, plentiful budget accommodation and the array of water-sport activities available. Most people go to Pattaya by bus. If you are in Bangkok, the Eastern Bus Terminal on Sukhumvit Road at Soi 63 (Soi Ekkamai) has airconditioned buses leaving every 30 minutes. Buses also leave frequently from Suvarnabhumi International and from the Northern and Southern bus terminals, but much less frequently. Travel agencies around

Bangkok, particularly in the Khao San Road area, also offer trips on buses and vans that depart from other locations. Prices vary, but are generally under THB 200 per person. There are Suvarnabhumi limousines, taxis and mini-vans that leave for Pattaya, but these are considerably more expensive than a regular bus. However, if you have a group of people, the per person cost can be quite reasonable. The most popular activities in Pattaya are connected with the water. For many, this means simply lazing around the pool or on the beach. For the more active, watersports activities include banana boat rides, waterskiing, parasailing, windsurfing, and jet skiing, all at prices that are reasonable by international standards. Snorkeling, deep-sea fishing and especially scuba diving are other popular water-related activities. Pattaya is a great place for novice divers who can dive near wrecks or take scuba lessons in order to receive NAUI or PADI certification.

If you tire of the beach, there are oodles of things to keep you busy. You can leap into space and bounce back again at the bungy jump; if you don’t want to bounce back, you can skydive with a parachute attached to your back. If you or anyone in your family has fantasies of being a Formula One driver, dreams can be put into action at a local gokart track. Never fired a handgun? You can blast away to your heart’s content at a shooting range or engage in paintball combat with a group of buddies. Activities especially suited for the entire family include a zipline tour through the treetops of a rainforest, explore a variety of museums, wander around a massive aquarium and have fun in a water park. For those who like to fish, there is a pond where you and junior can hook up with a gigantic fish, land it, have photographs taken and then throw it back in the water for someone else to catch. For many, a trip to Pattaya

In addition to Thai spots and the Italian, French, American, Japanese, Chinese, and Indian food found everywhere, you will stumble upon dining spots serving food from Belgium, Russia, Turkey, Mexico, Uzbekistan, Holland, Sweden, and numerous other interesting places. Dining in Pattaya is always a cosmopolitan treat loaded with excitement and the chance to try something new every night of the week. When the sun goes down, Pattaya’s numerous and notorious bars come to life. Even if you aren’t participating, walking down the narrow sois and watching the action is highly entertaining. If you do stop in at one of the bars, watch you belongings and be sure to exercise some common sense. For those who want to get away from it all without traveling all the way to Trat Province, Koh Samet an island located just 6.5km from the mainland of Rayong Province - provides an appealing getaway. means a golfing holiday. The area has over 20 international standard 18-hole courses within an hour’s drive. Luminaries such as Robert Trent Jones Jr, Pete Dye, and Jack Nicklaus have designed the courses. Green fees, caddy fees and the cost of a golf cart are remarkably low by international standards. For those new to the game, reasonably priced lessons from trained professionals are available. Many hotels offer golfing packages that include green fees and transportation to the golf course. In short, greater Pattaya is one of the best places in the world for golf lovers to spend a holiday. The cosmopolitan nature of the area’s population makes shopping and dining-out a joy. The selection of goods is enormous and virtually everything is available. The assortment of restaurants is mindboggling. All of the major hotels have excellent restaurants and smaller, more humble dining spots, can be found by wandering the sois and stopping at places that catch your

Koh Samet and its beautiful beaches can be reached by ferry or speedboat at Ban Phe in Rayong. Ban Phe itself can be reached by bus from the Ekkamai Eastern bus terminal. There are numerous places to stay on the island and a good collection of rustic restaurants and watering holes. Koh Samet is quite small and much of it can be explored on foot or by songthaew (pick-up truck with benches in the back). Bikes, motorbikes, and ATVs can also be rented. Pattaya and the area surrounding it have made a resounding comeback and are now one of Thailand’s most vibrant resort areas. Easy to reach and with something to do for everyone, there are activities, accommodations and dining opportunities designed to fit every interest and pocketbook.

Located adjacent to Cambodia and 315km from Bangkok, Trat is Thailand's eastern-most province. Although there is much to do on the mainland, it is the 52 islands in the province and their tranquil beaches with white sand and beautiful coral reefs that bring most tourists to Trat. Like Phuket and Koh Samui, Koh Chang, the most popular of Trat's offshore islands, blossomed as a tourist destination with the

creation of an airport. Trat Airport is situated 30km from Trat town and is serviced by three daily flights from Suvarnabhumi International Airport and is operated by Bangkok Airways. Once here, travelers usually take a minivan operated by Bangkok Airways to the car ferry and once on Koh Chang, a minivan to their hotel. In addition to traveling by air, there are numerous buses and vans running to Trat and Koh Chang. Bangkok's Ekkamai (Eastern Terminal), for example, has airconditioned buses leaving for the sixhour trip to Trat town at least once an hour. The first bus leaves Ekkamai at 5:00 a.m. Air-conditioned buses also leave from the Northern Bus Terminal (Mochit) approximately once every three hours. There are also buses and minibuses from Suvarnabhumi International Airport that go directly

from the ferry terminal to Koh Chang four times every day. The primary attractions on Koh Chang, Thailand's third largest island, are its beautiful beaches with crystal clear water and lots of white sand. In addition, because the island is mountainous, there are numerous waterfalls and verdant rainforests. For those who really want to get away from it all, several islands with even more beautiful and isolated beaches can be reached from Koh Chang. The most popular are Koh Wai, Koh Mak, and Koh Kood. The Eastern Seaboard with its mixture of sights and activities is an ideal place for tourists who don't want to make the long journey to the south of Thailand. In addition it provides an ideal daytrip or weekend destination for Bangkokians who want to recharge their batteries before returning again to life in the fast lane.

The Leonard London, a boutique hotel that we stayed in while in the vibrant British capital recently, struck us with its understated Old World charm. As can be expected, the individually designed rooms come with the basic mod-cons: mini-bars, flatscreen TV, DVD players, iPod docks and free Wi-Fi; and the suites – which looks very elegant indeed -have separate living areas, and some even come with double-height ceilings and Juliet balconies. The luxury apartments have kitchen facilities. There’s a British restaurant, a lounge with a fireplace, a bar, and meeting rooms are also available. But perhaps the best reason to stay in this boutique hotel besides independence, and understated

luxury, is the warmth and friendliness of the staff. The staff goes beyond and above their usual duties to make guests feel comfortable and welcome. For example, when one of the staff learned that I was from Thailand he offered to bring me spices not only from Thailand, but also from Nigeria. In another instance, when I told a member of the staff that I wanted to go to Ascott to play polo, he brought me to the business center and gave me some suggestions and options on how best to get there. And these are just some of the things they do to meet guests’ needs and exceed expectations consistently. They even remembered our names, a feature I find most charming. Of course, there’s more to The Leonard London that makes it one of the best boutique hotels in London, as some industry award-giving bodies have honored it. But if only for the warmth and friendliness of its staff, we will always remember The Leonard.

Although the area is now a commercial and tourist center, if one looks carefully, remnants of the past can still be found wedged between office buildings and the massive tourist hotels. Most people start their investigations of Bangrak at the skytrain station (BTS Saphan Taksin). It is located right at the river's edge and provides easy access

of the Chao Phraya, connecting longisolated Thailand with the rest of the world. And perhaps most importantly, it is where foreigners first settled, bringing with them different foods, architecture, languages, religions, and ways of looking at the world. Bangrak quickly became a mirror for the world for Thais eager to learn about the world outside of their kingdom.

angkok, as is often pointed out, is a city of contrasts. Nowhere is this more evident than in Bangrak, the area adjacent to the Chao Phraya River where Bangkok first began to assert itself as a commercial center. Although Bangrak is now a postal code area, most people mean the neighborhood wedged between the Chao Phraya River and the Rama IV and Sathorn roads when referring to it. Perhaps the most important thoroughfare in Bangrak is Charoenkrung Road – sometimes called New Road. Paralleling the Chao Phraya River, it was built by King Rama IV in 1861 and was Bangkok's first paved road. It quickly became a place where foreign consuls and rich businessmen paraded their horses and carriages for all to see. Bangrak is also where sailing and steamships from all corners of the world initially docked along the banks

Mahamariamman Temple, known as Wat Khaek in Thai. Located on the corner of Pan and Silom roads is a Dravidian-style Hindu temple built in the late 19th century by a Tamil immigrant to Thailand. The temple is not only an important shrine for Bangkok's Tamil-Hindu community; many Thais and Chinese also view it as an important religious center. Bangrak, the district where Bangkok first began to connect with the world outside of Thailand, is one of the country’s most important business and tourist centers. It is also, if one looks hard enough, a place to get a glimpse of what Bangkok was like in the past.

distance away is the Neilson Hays Library, with a large selection of English medium books and a neverending series of art exhibitions. If you are feeling peckish while in the area, visit one of the numerous Indian restaurants. Bangrak contains a large Indian community, many with roots in Bangkok extending as far back as the 19th century. There are also some fantastic Chinese restaurants that often specialize in only one or two dishes and some of the city's best Muslim restaurants. Perhaps the best way to explore Bangrak is on foot. To do this, take the Saphan Taksin BTS station exit that leads to Charoen Krung Road and turn left, so that you are walking along Charoenkrung toward Silom Road. The walk is interesting as the road is still a polyglot of nationalities with numerous humble, but excellent, Chinese restaurants. At the junction of Charoenkrung and Silom, you will see the massive 68-floor State Tower Building. On top of the building are several restaurants and a bar with some of Bangkok's most spectacular views. Although a bit pricey, a visit to the Sky Bar is always an exhilarating experience and a fabulous way to view most of Bangkok. Once you are at the intersection, most of Bangrak's most popular sights can be reached on foot or by a short taxi or tuk-tuk ride. Something that shouldn't be missed is Sri

to the Saphan Taksin Pier, where a variety of boats can be caught for traveling along the river (see www. chaophrayaexpressboat.com). It is also the pier where shuttle boats – often converted rice barges – stop to take tourists to their riverside hotels. Of these hotels, the “mustsee” is the Mandarin Oriental Bangkok, the legendary hostelry built in 1876. An old wing of the hotel has been preserved and contains the Author's Lounge, a capital place to enjoy tea as luminaries like W. Somerset Maugham did in the past. If you do opt to enter the Oriental, remember this is an elegant hotel so be sure you know the dress code. There are several buildings near the Oriental that are reflective of the past. Perhaps the most interesting is the Assumption Cathedral, the main church of the Archdiocese of Bangkok. The current structure was constructed in 1909 on the grounds of what is now Assumption College, a famous school for boys that has been in existence since 1885. Another good way to get into the heart of Bangrak is to take a boat from Saphan Taksin to either the River City Shopping Center or the Royal Orchid Sheraton Hotel. Nearby are the Bangkok Folk Museum and the conjoined Bangrak Museum. The latter provides an insight into what Bangrak was like and contains numerous artifacts and photographs depicting the district's history. A short

How we help

Clean Drinking Water for Schools - Thailand is blessed with ample water resources, but the availability of clean drinking water is often a problem, particularly in upcountry areas. Many rural children drink untreated or poorly treated water at their schools. Low-Income Communities -- Over the past six years, we have been involved in an initiative to create self-sustaining projects in low-income communities in Bangkok. These communities are made up of honest, genuine people who are hungry for opportunity. They do not want to leave their communities but want the chance to improve them. Essentially, the projects help people help themselves by giving them the dignity of earning their own money. In doing so, the projects have an immediate, continuous impact on peoples’ lives. We are currently working with CIMB Bank and other companies to ensure that their Corporate Social Responsibility funds are employed in ways that allow employees to become involved as they fit into each company’s directives and objectives in giving back to the communities in which they operate. Kids’ Day Out -- Each year The Rotary Club of Bangkok South, the Pakkred Home for Handicapped Children, plus several other institutions work together to organize a day out at the beach for over 200

handicapped and underprivileged children. The Royal Varuna Yacht Club in Pattaya, and Shrewsbury International School provide the venue. The latter sends along 15 to 20 IB volunteers and has been the Event Sponsor for the past few years. Other regular supporters include Castrol, Bumrungrad Hospital, Coca Cola, the Mandarin Oriental Hotel, and Wall’s Ice Cream, many of whom send employees along to join in the day’s celebrations. Up to 150 Bangkok South members, friends, members of other clubs, and students and teachers from Shrewsbury School, volunteer to help these amazing children enjoy the sand, the surf, and the sun. “Kids Day Out” is one of the most rewarding and genuinely heartwarming events of the year for everyone involved. Disadvantaged and Youth -- Each year the Rotary Club of Bangkok South undertakes a number of projects with various institutions that care for the young, the deaf, the blind, the handicapped, and the ill. Over the years, we have funded several projects at Thungmahamek, designed to teach the children skills they can use later in life, or through which they can generate income for the home and themselves. These include tools for batik

printing, sewing machines, equipment for balloon making and tools for production of decorative display cases and display items. Library Kits – We also have a long-standing tradition of working with local Rotary Clubs throughout Thailand to improve the lives and opportunities of the rural population. Bangkok -- Absolute Hotel Services Group CEO, Jonathan Wigley, has announced the latest addition to its portfolio, the 180-room Eastin Easy Nha Trang in Vietnam making a total of 830 rooms in AHS-managed properties so far for this destination. Thailand welcomes 17 millionth visitor

Bangkok -- The Thai tourism industry recently welcomed the country’ 17th millionth visitor, AL Shaqsi Yaqdhan Hamad Khalifa from Oman. A HOMECOMING OF SORTS Titiya Chooto, GM of the rebranded Anantara Siam Bangkok, says returning to the former Four Seasons hotel is like going home

W

hen the news about the Four Seasons Bangkok being rebranded as Anantara Siam Bangkok Hotel came out, it raised a lot of eyebrows. And a lot more eyebrows were raised when it became known that a woman, Titiya Chooto, would become its general manager (GM). Just a few months later and Khun Titiya, considered one of the most successful Thai female general managers today, is proving them wrong as expected. She is indeed the perfect choice for the rebranding. “It’s like returning home to a property that I know very well and to the people I have enjoyed working with before,” says Khun Titiya, who was hotel manager of Four Seasons Bangkok for three years before she became GM of both the Four Seasons Hotel Chiang Mai and Four Seasons Tented Camp in Chiangrai, where she worked for four-and-half years. “After many years with the Four Seasons, to which I am eternally grateful for giving me such an opportunity to become the first Thai woman GM in their fold, I find the rebranding to Anantara very exciting. Taking the iconic property to the next level is very challenging. In a sense, it opens a new chapter of history for the now flagship hotel. It’s great to be back.” Smart, eloquent, passionate, and with almost 20 years of key managerial experience, Khun Titiya is tasked with building on the success of the previous brand while emphasizing the Anantara hallmarks of gracious Thai hospitality and a warm personalized service. by Percy Roxas As with all rebranding there was the initial challenge of convincing the public that Anantara Siam Bangkok will carry on with the same efficiency and standards of service. But Khun Titiya and her team quickly proved they were up to the challenge. “We all know what to do,” she says, “The hotel is run by the same team; 95-percent plus have been working in the hotel for a long time. Even in our F&B department, we have the same chefs and all.” Building on previous success means that Anantara Siam Bangkok is continuing some activities associated with the Four Seasons brand, such as the World Gourmet Festival this month and the Cancer Care Run in January 2016. “It means not only continuing and doing these things as good as we do them in the past, but also, injecting more energy, more new things, as we go along,” she says. To keep the momentum, Khun Titiya keeps the team well informed about what they need to do to move forward together and consistently prove to clients and supporters that the rebranding has not changed the level of service and standards even as the rebranded hotel aims to be ‘graciously efficient’—a reflection of its Thainess. Their efforts appear to be paying off, as the loyal guests are back, and not only the rooms but also the F&B outlets are hitting their targets. Of course, the challenge does not end there. “After confidence has been regained,” she says, ”people will be looking for something new; so we are already looking at this now. We are thinking of enhancing our legendary F&B offerings, such as the Sunday Brunch, even more. We are working on starting more improvements on

the entire product, from the rooms, to the F&B outlets, and all.” So far, most observers agree that the rebranding has been nothing but seamless and smooth. But they still have a long way to go, she says. “There’s a lot more that we need to do, it’s a just a little over seven months. Once the rebranding process is complete, Anantara will become known worldwide as another big, high-caliber brand that all of us in Thailand can be proud of.” Her hotel associates, whom she cares for a lot, match Khun Titiya’s passion, commitment, and hard work; and she is just as devoted to them. “My biggest satisfaction is derived from seeing them grow and develop, and I get happiness in being able to do something extra for them in work or otherwise,” she says. “Working hard and having a fun atmosphere are something I would like for my team.” As the one holding the reins of the rebranding challenge, Khun Titiya says, “I am the kind of leader who pays a lot of attention on what we do, and I am flexible: I lead in front, in the middle, and behind, when I need to. I don’t ask anything from anyone that I wouldn’t do myself.” But despite her total commitment to career and work, Khun Titiya seems to be always full of energy. There’s always that friendly smile, and that vibrancy that rubs on to whoever she meets. Where does she get the energy to do all the things she does and still find equilibrium between a successful, demanding career and a harmonious family life? “I love what I do,” says the GM who first dreamt of being a diplomat. “When you love what you do it comes out and helps you lead a balanced, productive, successful, and fulfilled life.”

rathan S., fondly called Toom by the guests at Novotel Phuket Karon Beach Resort & Spa, says socializing is the best part of his job. “It’s because I can collect feedback from guests and share it with my team," he says, "so that on one hand they can improve, and on the other hand, I can get accurate information about what the guests want to know. Of course, I like my job the most when everyone follows the work procedures and complete their tasks assigned - as they say - to a T. I am happy to serve my guests and get appreciation for what I do for them.” Toom started his career at the Royal Orchid Sheraton in Bangkok, but moved to Novotel Phuket in November 2014, where he is currently a bellman/concierge. He said he loves working in the hospitality field, but would probably open his own business in Bangkok if he hadn’t followed this particular career path. “Social skills are key to being a great concierge, as well as to gaining productive work experience,” he says, “The person needs to be knowledgeable about social events and happenings, and be familiar with the local attractions. Last but not least, the person needs to think positively at all times.” What makes the job more enjoyable is that it doesn’t feel like work all the time. “It’s fun being with my co-workers," he says.."I enjoy making new friends, I love helping others, and there are many fun moments too!” Toom always carries a waist bag to work at all times because he brings item such as a watch, wallet, pictures, some coins -- and happiness, which to him are. essential to his job. “They mean a lot to me, especially the latter,” he explains. “If a person works without happiness, the outcome will not be good. Because we are here to create happiness for our guests, then we should be happy first and foremost.”

A 20-something pretty therapist then ushered me into one of the treatment rooms upstairs, but we took a peek at their five other treatment rooms: The Foot Massage Pavilion (five seats), the Astrology Room, the Western Treatment Room (two rooms), the Thai Treatment Glasshouse (eight beds), and one Treatment Suite. I was thinking about my prior conversation with Yui, the spa manager, about how the Wat Pho inscriptions on the art of ancient Thai healing have inspired this massage facility. Should I then

expect an ancient kind of treatment ala Wat Pho? In that dimly candle-lit room, I might as well have. Then the sweet smell of ginger oil grazed my nostrils, and I tried to quiet my mind. Massage is always a sensuous experience for me, albeit healing and relaxing of course, and I decided to just enjoy my time. I tried to remember every single stroke of her hands. hile Bangkok has become the next big thing on the world foodie circuit, with its dazzling combination of rooftop restaurants, ethnic cuisines, and trendy fusion joints making headlines around the food world, good oldfashioned street food remains the pride and joy of the City of Angels. The city has always been famed for its street eats, which range from curries and noodle soups to traditional sweets. Knowing how brutal it can be to sit on a stool in the sweltering heat, some of the more popular places have gone slightly more upscale, throwing in a few metal tables under an awning and a fan. However, even some of the small, hole-in-the-wall hovels can be considered to serve up street food.

Here’s a list of some of the top eating spots and a look at the variety of dishes available.

Jae Fai

(327 Mahachai Rd, Tel. 02 223 9384): This street-side eatery has achieved almost legendary cult status, ever since New York Times food critic Bob Halliday was taken here and got blown away by the food. Come here at 6 p.m. and you’ll be treated to the spectacle of new Mercedes and BMW’s rolling up to the curb, all vying for a table in this decades-old shop house. Here, an old auntie stands over a flaming wok and serves up Bangkok’s tastiest and most expensive pad kee mao drunkard’s noodles. While a normal plate of pad kee mao costs no more than THB 40 anywhere in town, at Jae Fai they go for THB 400, mostly due to the whopping large prawns and fresh seafood used in the cooking. Featured in street food tours and now in most guidebooks, Jae Fai is at the top of most visiting foodie’s must-try lists.

Korpanich

(431-433, Tanao Rd, Tel. 02 221-3554): While khao niaow mamuang (mangoes with coconut milk and sticky rice) is one of Thailand’s most popular desserts or even main dish treats, there are a few spots that are known for being the creme de la creme. Korpanich, a family-run business that has been around for over 80 years, is one of them. Located in the atmospheric Saochingcha Giant Swing district of old Bangkok, where there are no shopping malls or high rises, Tanao Road is home to specific one-dish shop houses, which have been in business for years. The original matron of this establishment worked in the Royal Palace kitchen, and claims that the recipe is from there, and Korpanich uses the finest mangoes, along with the top coconuts from Chumphon Province in the south, and the best sugar from Kanchanaburi. Just a whiff of these sweet mangoes when walking past the shop is enough to draw folks in.

Khao Raat Gaeng Jek Puey

(corner of Charoenkrung and Mangkon, Chinatown, Tel. 02 222 5229): More popularly known as “rice and curry musical chairs” due to the fact that there are no tables here to eat on, just individual chairs that get pounced on immediately upon anyone getting up, this is one of Bangkok’s most delicious and atmospheric traditional rice and curry eateries. Khao raat gaeng means rice and curry, and is the number one lunchtime option in Bangkok, with stalls usually having an array of curry dishes to spoon on top of rice. This stall, built up against a wall, has been here for decades, and is usually sold out of food by 4 p.m. Customers choose from an array of toppings, from fiery coconut curries to other food that get dished out over rice. Even in the rainy season, with no umbrellas to take shelter under, they still draw a crowd and they don’t have enough chairs to satisfy the musical stool group.

Nai Mong Hoi Tod (539 Soi Prapachai, Tel. 02 623 1890): It

doesn’t look like much from the outside: a small awning in a cul de sac off Charoenkrung Road in Chinatown hiding a few tables inside, but the Shell sign posted up on the wall says it all. Awarded a “Shell Shuan Shim (outstanding dish award)” for its seafood omelets, the lady behind the griddle here whips up Bangkok’s best hoi tod oyster and mussel crepes, served piping hot and fresh. The crepes can be ordered regular or super crispy, with aficionados lining up for perfectly thin crepe, mixed perfectly with succulent seafood, served with a chili dipping sauce. English isn’t spoken here, but they now have an English menu to handle all the visiting foodies who have learned about this delicious hole-in-the-wall.

PAD KEE MAO Known as “drunkards noodles,” pad kee mao is not named for having alcohol thrown into the pot. Some say it is due to the noodles being so spicy that the person eating it must be smashed enough to withstand the heat emanating from the dish. A more prudent argument bets that in order to withstand the spice, the diner needs to drink a lot. Yet another says that due to the spices, drunken noodles are actually a great cure for a hangover. I also heard one opinion that it isn’t the patrons who are drunk, but rather the chef, attesting to the wide array of vegetables and meats thrown into the dish, along with the abundant spices. At any rate, pad kee mao is a delicious dish, made from broad rice noodles that are stir fried along with meat, fish, or tofu, bean sprouts, and plenty of chilies and basil. Vinegar, sugar, and soy sauce are also often thrown into the mix, leading to a sensory overload of flavors, maybe just enough to get intoxicated by! KHAO NIAOW MAMUANG Often served for dessert, but heavy enough to be a main dish, mangoes and sticky rice is one of Thailand’s most favorite foods. The ingredients are highly important, and the best places serving it are not cheap, as they use the best mangoes, coconut milk, and sugar. Another secret to getting the perfect blend is ensuring that the coconut milk is served at the ideal warm temperature, directly onto the gelatinous sticky rice. This is a hot season dish, best enjoyed during the heat of summer when the mangoes are at their most flavorful. KHAO RAAT GAENG is not actually a single dish, but a style of eating popular both for lunch and other meals, there are many stalls and small shop houses serving khao raat gaeng throughout Bangkok. Favorite toppings include green and red curry dishes, fish, vegetable offerings, and dry dishes with holy basil or peppercorns on top. It’s common for most customers to get two toppings served with rice. Hoi tod While most foreigners are enamored with pad thai, Thais often go for hoi tod, which is the seafood version. Cooked on a hot iron griddle, hoi tod means fried shellfish, and usually oysters or mussels are the seafood of choice. They are spread onto a light crepe batter and cooked at very high heat and tossed, so that the seafood becomes completely entwined with the crunchy batter, with bean sprouts added to the mix. And of course, it all gets served up with chili sauce and lime. SEPTEMBER 2015 | 55

risara Phuket inches itself closer to the heart of local and regional foodies with the recent launch of an exciting monthly dining concept that offers guests a truly unique gastronomical experience: The “Trisara Culinary Series,” which kicked off with a “Kaiseki Dinner” in July, followed by the “One Night in Bangkok” event in August. “We are pleased to offer guests unique experiences with our new and innovative dining concept,” says Quentin Fougeriux, Trisara’s director of food & beverage. “The Trisara Culinary Series” takes diners on wonderful journeys beginning with menus inspired by unique cuisines from all over the world. At the heart of the concept are exclusive one-time dinners that showcase more than just

our chefs’ creativity. The aim of the series is to create events involving boundless creativity from our culinary team and following different themes or concept. We hope to redefine the dining scene in Phuket.” The choice of a “Kaiseki Dinner” for the launch event was fitting, as it allowed Trisara chefs to use their creativity to highlight local delicacies according to their personal style, in particular the 8-course dinner. Trisara chefs, led by Chef Jimmy Ophorst, took the liberty of enhancing each dish with seasonal ingredients, making each stand out when paired with the sake recommended by certified sake specialist, Suriyond Kalyavanongs. Holland-born Chef Jimmy is known for creating innovative cuisine incorporating unique combinations

A PASSION FOR TASTE An Italian restaurant with a feel for food - Il Bolognese also boasts an atmosphere that is relaxed and friendly by Christopher Scott Dixon

ake a large, two-level renovated house set in a lovely garden, located in a leafy soi just off the main Sathorn Road. Throw in an enthusiastic manager and an extensive menu, and you have Il Bolognese. Formerly named Sambucca, the restaurant combines attentive customer service with a superb range of food. When we went along on a Sunday afternoon the outside dining area with

a beautiful water feature was busy, as was the interior area. The centerpiece is the wood oven where the pizzas -regarded as the best in the city -- are cooked. The color and décor give the place a rustic feel: creams, maroons and greens, terracotta tiles, and dark wooden furniture. Replicating the hospitality and laidback style of the city of Bologna from where the restaurant gets its name is crucial, manager Andrea Bernardi explains. “It doesn’t matter

how much people spend,” Andrea says. “We care about them and the fact that they come to the restaurant. We put our soul into our food and it’s the same in the way we treat our guests. We want them to enjoy their experiences with us.” The mix of customers greeted by Andrea certainly confirms that many are regulars. They arrive almost as if it’s their second home. The atmosphere is always relaxed and friendly. A moreish Polpette Di Melanze (eggplant balls with tomato sauce and stracciatella) was scoffed within moments of the plate arriving at our table. Equally worthy of praise was the Caramelle Croccanti homemade pasta filled with blue cheese and speck in a delicious white truffle cream

parmesan sauce. Just writing these words makes me hungry for it again! Strozzapreti Alle Canocchie, which means “strangle the priest" -- traditional homemade pasta with crayfish in a creamy tomato sauce -- was enjoyed next. You must let Andrea tell you the story about the name when you go. The pizza passion is evidenced by the fact that there are two dedicated pizza menus: a standard and a special. “Artisanal dough slow-matured up to 72 hours, thick on the edges, and thin inside,” says the quote from the menu. We sampled an aromatic, taste-packed Parma E Stracciatella pizza bread with rosemary, parma ham, burrata, and oregano. We were not without liquid refreshment as we drank a gentle–on-the-palate

Poggio Del Sasso 2014 white wine. The second pizza was as delicious as the first; this time a standard but impressive Partenopea with imported buffalo mozzarella, extra virgin olive oil, basil, and oregano in a rich Italian tomato sauce. The energetic Andrea appeared again to provide us with a new dessert called Zabaione E Gelato made with warm Italian custard from an old recipe with egg, sugar, and marsala topped with vanilla ice cream -- in a word it is yummy. Il Bolognese: Premium ingredients, quality food, and good service in a cozy environment.

he hotel’s name may have changed from Four Seasons to Anantara but its culinary heritage has seamlessly transitioned, as it hosts the 16th Annual World Gourmet Festival, Sept. 7-13. This promises to be a week of unashamed gastronomic indulgence that brings together some of the best chefs, winemakers, and food experts from around the world. Seven chefs from five countries with a common passion for using locally-sourced ingredients are joining the annual event.

They are: Chef Francesc Rovira, Fonda Xesc, Gombrèn, Girona, Spain

A traditional Catalan cuisine specialist, Chef Francesc learnt the art of cooking from his mother working at the family-owned village inn, La Fonda. After finishing high school he enrolled at the Escola d’Hosteleria de Barcelona. The legendary Santi Santamaria, the first Catalan to be awarded three Michelin stars, guided his career. He returned to La Fonda to introduce new dishes while the kitchen was run by his mother. He and his sister finally took over and elevated the kitchen inn into an acclaimed restaurant, and it was awarded 1- Michelin star in 2009. Chef Francesc likes to use local ingredients, such as mushrooms, which are vital ingredients in Catalan cooking and mushrooms are arguably his signature ingredient.

He worked with Alain Passard of the 3-Michelin starred L’Asperge, and Jacques Maximim at the 2-Michelin starred Ledoyen and The Elysee Lenotre, which gave him confidence and motivation, resulting in his own Michelin star at the Zebra Square Restaurant in Monaco. He has an instinctive contemporary style and he is a man of the soil and a staunch advocate of using seasonal local produce. He and his team at the Cap Estel are proud that they use vegetables from their very own garden.

Chef Francesc Gimeno Manduley transmits emotion, passion, and sincerity with his cooking. At the end of 2006 he opened a tapas bar, which progressively became a restaurant where there was an overflow of creativity drawing on the various styles and inspirations from the different renowned establishments he had worked in. Developing the tapas food-style theme, Chef Francesc plays with the concept of miniature presentation of numerous dinner dishes to choose from starting with a pasta-based appetizer before completing the meal with a dessert.

angkok’s latest tea lounge recently opened on the first floor of Gaysorn Shopping Center, which can be seen from the skytrain as it arrives into the Phrom Phong station. This is the first example of the Ronnefeldt Lifestyle Tea Lounges, a concept created by the Next Hospitality Group - an innovative, detail-focused F&B consultancy founded by industry professionals Russell Paine and Harry Littlewood in 2012. But inside you’ll find Karn Liangsrisuk, runner up in the Thailand Best Bartending Competition, mixing craft cocktails the likes of which you’ve never tasted before. The man is an absolute encyclopedia of knowledge when it comes to alcohol, tropical fruit, syrup, infusions, and the way to mix them all to perfection. There is no drink menu at Escapades. You just tell Karn what kind of alcohol you like, what you tend to normally drink, and how strong you like it, and he will create something sublime for you. This has to be the only bar in Bangkok serving customized drinks of which two are never alike. Oh, and in case you get

hungry, the hovel happens to be a gourmet hamburger joint as well.

Mikkeller had its ori-gins as a gypsy brewer in Denmark, meaning it didn’t operate its own brewery, but rather collaborated with others to create experimental and avant-garde brews. With a branch in Copenhagen and San Francisco, the craft beer gourmets decided to open shop in Bangkok, and they inhabit a lovely old house and garden tucked away in one of the back alleys of Ekkamai, where they serve over 30 hard-to-find craft beers from a rotating tap, as well as run a bottle shop. Sample a bit of Vanilla Shake Imperial Stout, and you'll be hard pressed to think that you're drinking beer, as it tastes far more like a fine coffee with a hint of Belgian chocolate.

Sukhumvit 49, Tel. 085 147 7085): Nori Tsobouchi, the Japanese miracle worker behind Hanakaruta, which popularized handcrafted ice balls and homemade plum wine, decided to open his place and it’s worth a trip to this Soi 49 hole-in-the-wall to see the master at work. Nori makes a variety of homemade umeshu plum wines, creates whisky highball drinks using a variety of fine Japanese brands, and is a serious master craftsman when it comes to alcohol knowledge. Anyone who appreciates good bartending should make a pilgrimage here. The array of single malts and high-end whiskies here is staggering. And again, there are just a few places to enjoy a thirst-quenching drink in Bangkok.

While the foodie scene gets much of the press, beverages deserve just as much spotlight, with some great options for drinking fine cocktails, craft beers and more, and with some master craftsmen plying their trade behind the bar. Here are a few of the top reasons why no one should go thirsty in Bangkok:

Mary (which the St. Regis claims to have invented at its New York bar), called the Siam Mary, with spicy chilies and coriander thrown into the tomato juice based mix and served in a silver goblet. They also continue the St. Regis tradition of champagne sabering every night at sunset. Meanwhile, downstairs in the lobby is Zuma, the fusion style Japanese restaurant, whose award-winning bar-tender is constantly coming up with new concoctions. Before charting into the latest creation, make sure to sample the signature “rubabu," which combines rhubarb infused sake and vodka that is chilled at -42 along with passion fruit and is served as a martini.

here it was, as the fading sun slipped below the horizon, the House on Sathorn. It is quite simply an oasis of charm and elegance amid the bland modernity of the nearby lofty office blocks. It is located just off the Sathorn and Narathiwas intersection in Bangkok and it nestles close to the W Hotel. This 126-year-old former colonial and royal mansion boasts a long and distinguished history and was once the home of the Russian Embassy. It is now welcoming diners and guests to experience its stylish and opulent interior. Better known as The House, it comprises a restaurant aptly named

The Dining Room. The Bar is available for informal drinks and The Courtyard is an al fresco bistro for dining and afternoon tea. Upstairs is an exclusive club lounge with live music and hospitality suites, which serves as a private function space. The design concept marries classical and contemporary styles in the form of tapestries, art work, photography, sculptures and paintings, a successful and respectful union of old and new. Entering the Dining Room, which has a capacity of 38, helping to develop a more intimate atmosphere, we perched on high bar stools at the counter and had an ideal view overlooking an open cooking station


to watch Turkish-born Chef Fatih Tutak create the dishes we would be sampling. His culinary credentials are as impressive as the venue, with experience in the former world number one restaurant Noma in Denmark and stints at other top establishments in Singapore, Bejing and Tokyo. The chef’s dining concept reflects not only his obvious passion for his art, but incorporates his travel experiences and background, as he explains: ‘Each dish has its own identity and a tale behind it. I want to take people with me and create a relationship with them and the food.’ The menu is small but perfectly formed, and items are changed regularly so as to maintain variety. It uses clever headings such as “Start to Explore,” “Continue to Savor,” and “Sweet End,” to signpost the different food stages; and this is indeed a skilled international gastronomic journey derived from Chef Fatih’s career.

We sipped on a refreshing Lavau Chardonnay 2011 and were presented with a snack called “The Birds Nest” - a cute and tasty concoction of deep fried potatoes, mushrooms, truffles and a basil dressing. Diving into a starter called Deep and Shallow, we were greeted with a flavorful marriage of pancove mussels, squid ink, seaweed oil, horseradish snow and salty fingers. As the evening sky outside the high windows turned to ebony, we embarked on the next stage called “From My Childhood”, which is a delicious fusion of eggplant, eggplant puree, hummus, grilled okra, tomato paste and powder, and a clear jelly. My wife and I metaphorically visited Japan with “Early Morning at Tsukiji Market” - a scrumptious blue fin tuna sashimi with avocado and wasabi. The Dining Room was filling up with a mix of diners as eclectic as the menu, as we moved onto the mains. We were generously treated to

four dishes, but space permits me to discuss only two of them. Pier 9 continued with the Japanese seafood theme with a succulent jumbo river prawn, cheese sauce, and Kabocha pumpkin. “Hunting” was a tender duck breast with onion noodles and a pomegranate sauce. With the evening lengthening, for dessert we tried the aptly named “On My Way Home to Silom”, which is a moreish baked banana with a banana mousse and toffee. Followed by “Everybody Loves Chocolate”, which was a wonderful hot chocolate biscuitfused dessert, with matcha green tea and Okinawa sugar ice cream. The House on Sathorn is rich in history, offers a classy but fun environment with a flamboyant chef and ingenious menu.
