How worthy of honour is the sea.

Loch Fyne Oysters was founded in 1978 by Johnny Noble and marine biologist Andy Lane and has now been growing oysters for more than forty years on the shores of Loch Fyne, ini(ally selling them from a small shack on the main road passing through Cairndow.

Johnny successfully developed UK and interna(onal markets such as Hong Kong where we have traded oysters for most of our history.

Due to this increased popularity of our oysters, we then began working with partner growers, selec(ng from different farms throughout the year, to provide oysters of the best quality.

We are the only oyster farmers in the UK to have our own hatchery and nursery, where we grow the Pacific rock oysters (Crassostrea gigas). Each year we retain enough seed oysters for on-growing on our beach sites, with the remainder supplied commercially to our partner growers throughout the islands and the west coast of Scotland.

At the heart of our organisa(on is respect for the animals in our care, the well-being of our employees and the desire to offer our customers excep(onal products and service.

GROWING OYSTERS

Our oysters are grown in a variety of ways including innova(ve baskets that are purpose built to allow them to be “rumbled” through the mo(on of the (de, resul(ng in a well shaped shell with excellent meat content.

A8er two to three years of care and a9en(on on our sandy shores, the oysters reach marketable size.

Once harvested, every oyster is transferred to our depura(on facility at Cairndow. Here, each oyster is size graded and purified in filtered natural seawater.

While depura(on is only required when shellfish water classifica(on is Grade B, Loch Fyne depurate for at least the minimum of forty two hours even when the waters are Grade A, alongside a programme of tes(ng to ensure that all shellfish are posi(ve released prior to being received at the purifica(on centre or placed onto the market for maximum consumer confidence. At no (me are chemicals used and this is an en(rely natural process.

Once ready, they are hand selected, packed and despatched live to our customers.

As well as visually checking each oyster prior to packing, we use a special, tradi(onal technique to ensure all our oysters are alive and in the best condi(on. Tapping two healthy oysters together will give a sharp sound like pebbles from the beach and we do this with every single oyster we send out!

MORECAMBE BAY OYSTERS

Species: Crassostrea gigas.

Growing area: Cumbria, England.

Availability: Year round.

Tas(ng notes: Salty with a plump meat and refreshing a8ertaste.

GOLDEN SHELL MUSSELS (SEASONAL)

Loch Fyne's dis(nc(ve Golden Shell Hebridean Mussels, are grown on ropes in the pris(ne waters of Loch Roag on the Isle of Lewis. They are a natural, nutri(ous and delicious shellfish showcasing the very best of Scotland's larder.

Loch Fyne Oysters is the first ASC approved "My(lus edulis" mussel grower in the world.

In 2017 Loch Fyne Oysters Ltd. was recognised as the first blue mussel producer in the world to receive cer(fica(on against the ASC bivalve standard, awarded by the Aquaculture Stewardship Council.

The ASC cer(fica(on includes Chain of Custody informa(on, which involves full traceability from farm to fork. This assures our customers that the mussels they buy have been ethically sourced from Loch Fyne Oysters Ltd.
