Bakers and makers are charting new territory when it comes to wedding treats.
Dear Readers, welcome to our first issue of 2025. This year is full of exciting celebrations, and we’re kicking it off with our first annual Special Wedding Issue. These pages are chock-full of inspiration and creativity, ranging from florals to desserts.
It was especially exciting for me to plan this issue because, as a recent bride who planned her own wedding, I know how personal and unique every detail can be. From finding the perfect gown to choosing the flavors for the wedding cake, each choice reflects your story.
This issue is dedicated to helping you bring your own vision to life, from the latest trends in menswear and tips for the big day to make planning a bit easier (pages 14 and 12) and area bakers who are creating unique treats (page 28). Plus, meet a Maple Grove couple who share imagery and details from their special day (page 22). So, whether you’re planning a wedding or dreaming about the future, I hope you find something here to inspire you.

John and Mary Eddy
What comes to mind when you think of weddings? An elegant resort, an azureblue ocean, a garden event or perhaps a warm afternoon with marshmallow clouds? Do you envision an extravagant day or an unassuming one? With thousands of possibilities for planning a memorable event, and thanks to photography and videography, live-streaming and social media, your day can be brought to life again and again.
Not long ago, the written record of a marriage was all that remained after the wedding itself. The first marriage recorded in Maple Grove Township was on February 24, 1857, when Mary Cordelia Evans (05/22/1839–06/12/1915) married John Morrison Eddy (01/15/1830–07/25/1908).
Mary was from Vermont, and her parents died when she was 9. Mary’s brother, Alfred Evans, a dentist, brought his family to the Maple Grove area in 1855. We assume Mary also made the journey. John came to Maple Grove in 1856 from Vermont via California.
John and Mary had four children. John was Maple Grove’s first town clerk, first superintendent of schools and the first treasurer/assessor. John and Mary, potentially some of the original founders of Maple Grove, are buried at Rush Creek Cemetery. When John passed, they had been married for over 50 years. Their wedding day was likely small. Just one photo, and the date, remain.

Consider adding a trendy twist to your wedding guest attire with a pop of color.
As we step into 2025, weddings are set to sparkle with fresh trends that blend tradition with modern flair.
• One standout color that is making waves is Verona Sunset—a stunning reddishorange hue. This vibrant shade is perfect for brides, grooms and guests alike, adding a bold pop to any celebration—plus, it breaks the old-school American taboo of wearing red at a wedding.
• Bridal fashion is also evolving: Expect to see dresses featuring dropped waists that beautifully hug the hips, offering a flattering silhouette. Unlike traditional waistlines, these designs create a luxurious flow that will have every bride feeling like royalty.
• Sustainability is another key trend this year. Whether it’s a vintage find or a gently used gown, incorporating sustainable styles ensures a unique look while being kind to the planet.
• Finally, metallics are shifting toward silver and chrome, channeling a vintage yet modern vibe for a classic yet chic aesthetic.
So, get ready to celebrate love in style— 2025 weddings are all about bold colors, elegant silhouettes and sustainable choices. Let’s make memories that shine.

Discover how florals are becoming the life of the (wedding) party.
By Mollee Francisco
FROM DAHLIAS to delphiniums, lilacs to lilies, ranunculus to roses, there is a seemingly endless array of options when it comes to wedding flowers, and the trends are ever-changing. For those without a vision—or for those looking to bring their vision to life— Lauren Vernon can help.
Vernon is the wedding floral designer at The Wild Orchid, which serves the Maple Grove area. Vernon’s mom, Lisa Minks, opened The Wild Orchid in 2015, and Vernon came on board a few years later. “It was a blessing in disguise,” Vernon says. “I took on the wedding side of stuff, and I loved it. Flowers bring so much life to a wedding.”
Vernon’s creations tend to be airy and organic, with many flowers sourced from
Mono blooms are trending in bridal florals, with each bridesmaid’s bouquet composed of one type of flower and the bride’s bouquet incorporating each of those various blooms.
her and Minks’ gardens. “People are really loving locally sourcing,” she says. Since her finger is on the pulse of what’s popular for wedding florals, we asked Vernon to share her insider expertise.
When it comes to the bridal bouquet, blushes, pastels and whites remain a popular choice to convey a romantic look. On the flip side, she says, “We’re also seeing a lot more color, which is great.” Vernon notes that focal flowers are also popular. “Big peonies, proteas and dahlias draw the eye,” she says.
For bridesmaid bouquets, mono blooms are a hot trend where each bridesmaid has a different bouquet composed of one kind of flower. “All hydrangeas or all delphiniums, for example,”
Vernon says. Each type of flower is then incorporated into the bride’s bouquet, creating a composite arrangement.
Wearable florals are getting a fresh look with many grooms opting for pocket gardens that feature flowers and greenery. “They are designed on a cardboard sleeve that can be slipped into the jacket pocket,” Vernon says.
For the littlest members of the wedding party, floral crowns make flower girls feel like princesses and can be paired with floral balls that are worn like a purse or with floral wands complete with colored ribbons and lights.
Furry friends can wear flowers, too. Vernon says she has seen floral pieces woven into dog collars and leashes. “We can create something and pin it
right into the collar,” she says. Flower crowns are another option if the pet is amenable. Just be sure to pick flowers that won’t harm the animal. “No eucalyptus,” Vernon says. “It is so irritating [for pets]. Italian ruscus is a good alternative.” If a four-legged friend is part of the wedding party, Vernon says she consults a list that highlights toxic plants to avoid.

“It’s going to help get to those deep layers of the skin to help create collagen production [while] vaporizing dirt and bacteria in your pores [and] helping to overall enhance the appearance of your skin over time.”
By Hailey Almsted
Editor Hailey Almsted shares her experience at Cleo Skin + Laser, where she learns about the benefits of laser facials and other services.
WALKING INTO Cleo Skin + Laser, I’m greeted by a warm and welcoming atmosphere. I sit with co-founder and co-CEO Amber McMillan to discuss how to work through my skin needs. McMillan, who has been in the wellness, fitness and nutrition space for two decades, is reassuring in treating my concerns.
Located in The Fountains at Arbor Lakes, Cleo Skin + Laser offers several laser-based services, including the Glass Skin and Skin Shield laser facials, Radio Frequency (RF) Microneedling, and laser hair and tattoo removal. Co-founders and co-CEOs McMillan and Brian DeRosa founded Cleo out of frustration with the lack of accessibility and validation in the skin care world. “Laser treatments are the gold standard for addressing a wide variety of skin concerns, ranging from acne, wrinkles and rosacea to unwanted body hair,” DeRosa says. “We started Cleo to make these treatments more accessible and take the stress out of advanced skin care.”
As a consumer, I approach the Glass Skin Laser Facial with a bit of trepidation—I’ve never had any laser services before—but I’m quickly relieved when the service starts. The therapeutic heat dissipates into the deep layers of my skin, and I walk out of Cleo no more than 20 minutes later with no irritation or redness. In the following days, my skin is noticeably smoother and clearer.
“Unlike typical facials you will find at most spas, [it] has extensive clinical validation from the FDA for a wide variety of skin concerns,” McMillan says of this service. “It’s going to help get to those deep layers of the skin to help create collagen production [while] vaporizing dirt and bacteria in your pores [and] helping to overall enhance the appearance of your skin over time.”
Areas of concern may include acne, fine lines, hyperpigmentation, scarring, skin conditions or wrinkles, and the laser facial treatments utilize premier lasers to deliver high-quality results. The device used for RF Microneedling is a more intensive treatment utilizing radio frequency energy and microneedling to refine texture and tone. For both services, McMillan recommends at least three to four treatments to achieve the desired results. “That’s going to be the best. Then, you can kind of go on maintenance,” she says.
McMillan notes that Cleo’s services are ideal for those preparing for big events—such as bridal showers, bachelorette or bachelor parties and wedding days—and adds that it’s for everyone, regardless of age or gender. “We would love to see brides, grooms … anyone in the wedding party that are thinking, ‘Hey, I know I’m going to be going to something special,’” she says. “We can definitely get your skin ready for your event.”
Although Cleo offers a Red Carpet Facial, which utilizes a combination of infrared and radio frequency therapy typically done on the day of your event, most services are needed in the months leading up to your special day. “It’s not a one-and-done,” McMillan says. “You’re going to feel better and glow after one, but I liken this to working out or strength training. It’s not ‘go to the gym one time.’ We are going to create changes in the deep layers of your skin. That, if we can stick to that ongoing as a part of your monthly routine, you will change your skin.”

Knights Chamber outfits grooms in suits to last a lifetime.
By Rachel Schuehle
CHOOSING THE PERFECT OUTFIT can be one of the most taxing tasks, especially for one of life’s most important days. Finding a suit that looks great and fits perfectly can feel like searching for a needle in a haystack, until walking through the doors of Knights Chamber. Located in Maple Grove, this formal wear boutique has perfected the suit and tux game for men.
Knights Chamber opened in 1973 as a locally owned and operated business—today, the boutique is stocked with a large selection of wool and blended suits and has been voted
as a Best of Maple Grove winner. It is co-owned by Chris Bitzan, whose father opened the business, and Tariq Isaacson, who has been in the industry for nearly a decade and has mastered the art of guiding people through the decision-making process—from color and texture to pattern and accessories.
At Knights Chamber, every customer purchases their suit. Isaacson says. “Most of the specialty stores have gotten out of the rental business, and most rental stores have folded.” Knights Chamber sells suits for the same price as renting but with the added perks of
custom tailoring as well as the longevity and future use of the suit. There is no deposit required and no hassle of pick up/drop off windows. “We can take care of changes or adjustments weeks before an event,” Isaacson says. Size offerings are expansive, outfitting young ones as small as 6 months and in-stock suit options up to 64L.
Isaacson encourages wedding parties to plan ahead, as outfitting the groom and groomsmen can sometimes take a back seat to other wedding priorities.
“Most wedding parties come in three or four months before the wedding,” Isaacson says. “I’d plan closer to six months ahead to ensure everything goes smoothly with choosing products, ordering and tailoring.” Once scheduled, appointments are hosted in the wedding consult area with over 50 fullsize samples of the offerings to touch and explore hands-on.
There are certain colors and styles that remain favorites from year to year and trends that reveal themselves as customers come in to make selections. “Black and navy are our top sellers, hands down,” Isaacson says. “Close seconds are charcoal and light gray, but past that, there are certain colors that surprise us.” In the last year, brown tones were the center of attention for weddings—sand, beige, chocolate and earthy tones took the cake (so to speak), while shades of green were seen at many ceremonies prior to this year. Most guests lean toward a polyblend fabric based on affordability, but wool blends are an option as well.
Ties are often preferred over bow ties and skinny ties over regular width— it often boils down to personal preference. “Sometimes, the bow tie is the differentiator between the groom and groomsmen,” Isaacson says. And for that, the options are endless. “If the groom is trying to stand out, a different colored vest works great,” Isaacson says. “Cufflinks or tie bars, suspenders, style of shoes or even a nice hat for the party portion of the night are all available to consider.” Cufflinks with gem stones or wood grain inlay, argyle and paisley socks, belts with fun buckles are great possibilities for the final touch on a suit that’s uniquely yours.

The celebration of love and unity and the start of a new chapter in life—weddings bring together family, friends and cherished traditions while creating new memories to last a lifetime. In this, our debut wedding issue, we’re pleased to share the beautiful wedding stories of two of our staff members: Hailey Almsted, managing editor and editor of Maple Grove and Woodbury magazines, and Zoe Yates, editor of St. Croix Valley and White Bear Lake magazines. Come along, as they share a closer view into their special days, filled with unique touches and personal moments—reflective of their individual love stories. It all begins with that first meeting …
While they both grew up in Woodbury, Hailey and Nathan didn’t cross paths until meeting as incoming ninth graders at Woodbury High School; they were 13 and 14 years old at the time. After growing together through some of life’s important milestones, the couple was married on a lovely September day at the Hewing Hotel in Minneapolis, where, amid the rhythm of the city, the couple curated an intimate ceremony, suited to their style.
On the campus of Western Washington University in Bellingham, Washington, the future was foretold in more than one way. Zoe and October met while working on staff for a student—magazine! After graduating and eventually moving across the country to the Midwest, the couple exchanged vows on a warm June day on their idyllic property in Polk County, Wisconsin. The scene was something only they could create as bucolic beauty and beloved family and friends came together.
Editors share the stories behind their unique, intimate weddings.
The bride’s vintage dress was purchased and altered at Sienna Cole Bridal. Owner Lisa Ramlet replaced the original skirt with a flowy, organic fabric. Zoe balanced the look with her great-grandmother’s pearl jewelry, secondhand clogs and a blusher veil (also from Sienna Cole).

inspired your wedding day aesthetic and ambiance?
Hailey Almsted (HA): We both knew we wanted a more intimate wedding with the people closest to our hearts. Our two-year engagement allowed us plenty of time to focus on the elements we truly desired. We blended the elegance of traditional weddings with the peace fulness of elopements. To ease our wed ding day jitters, we chose a private first look and personal vow reading before the ceremony. Into the evening, we opted for a dinner party atmosphere, which we and our 40 guests enjoyed. Our day was about us—and we felt surrounded by love.
Zoe Yates (ZY): We decided early on that we wanted a wedding that was true to our relationship and lifestyle, fun for our 60 guests and as sustainable and community-focused as possible. During our venue search, it became clear that our 5-acre property would be the best place to host our wedding, which we dubbed Zoctober Fest. This choice allowed us to spend more time with our friends (many camped on our land) and invest in home and property renovations.
What special details and traditions were incorporated into your wedding day?
HA: Our ceremony was highly curated for us as a couple. We began with a ring-warming ceremony, where each guest held our rings, silently warming them with blessings, prayers and wishes for our marriage. At the same time, our officiant, my aunt Nicole Almsted, read sentiments she had gathered from several of our family members about how our love has impacted their lives. Following our traditional vows, we held a unity candle ceremony with our mothers. Finally, we honored both of our grandmothers, who had life-long marriages to our grandfathers, by asking them to sign our marriage certificate— another tearful moment for all.
The bride’s lustrous satin gown from Vow’d Weddings was altered and customized by Heather Baldridge from Custom Sewing by Heather, who added satin buttons— flown in from Serbia—down the back of the gown. The look was paired with a chapel-length, angel-cut pearl veil from Tailored Tulle, pearl-drop earrings and white, satin heels, featuring dazzling bows. In the evening, the veil was exchanged for pearl gloves, also from Tailored Tulle.

The groom’s suit, from Milbern Clothing Co., included a sophisticated black jacket with satin lapels and a textured floral tie. His look was complete with Calvin Klein Brodie Oxford shoes and a gift from his bride: custom cufflinks adorned with the faces of their pets.

ZY: The morning of our wedding, we chose a private vow/letter exchange, with our photographer out of earshot. During our ceremony, we did a handfasting ceremony, a Celtic ritual in which two hands are joined with a cord to symbolize the binding of two lives, and read mirrored vows that incorporated our shared Celtic and Scandinavian heritages that was deeply personal to our relationship. My friends gathered flowers for the reception tables, and we had a DIY beverage station and a homemade taco bar. We purchased secondhand plates, compostable utensils and Mason jars that we’ll reuse for canning. For dessert, we had an assortment of cakes, including one prepared by my 95-year-old greatgrandmother that was topped with the cake topper from her wedding.
What unique touches made your wedding memorable for guests?
HA: First, our favors: framed customized sketches of our guests created in real-time by Maria Ahrens. It’s a joy to visit our family and friends and see the sketches displayed in their homes. We had disposable cameras around from start to end, but we didn’t develop the photos until our first anniversary in September. Lastly, we had a traditional write-in guest book, paired with a vintage phone from After the Tone, where our guests left us voicemails and well wishes. We treasure hearing the voices of family and friends, who were so important to us on our special day.
ZY: The informality of our wedding day was a breath of fresh air for many of our guests. At the comfort of our home, there was an opportunity for everyone to relax and play. Our chickens roamed the property. My grandpa organized a game of Hammerschlagen with a giant log he procured. We had a bonfire, and the kids enjoyed racing around our forest trail and climbing tiers of hammocks, hung from our white pines. Our friends played live music late into the evening, and we danced in the grass under the full Strawberry Moon.

a couple says, “I do” at the place where love feels most like home.

For Erik and Monica Goetzke (née Lasley), a weekend at the lake is now a sweet reminder of their everlasting love. On July 13, 2024, the Maple Grove couple shared their “I do’s” in front of their closest family and friends at the Lasley family cabin in Deerwood, Minnesota.
“We love the outdoors and the Northwoods, so we wanted to incorporate that into our wedding,” Monica says, noting the cabin also served as the venue for her sister, Savannah Johnson’s, wedding three years ago. Together, the couple, whose love first ignited on the dating app Bumble, shared a moment as a soon-to-be-wed couple during their private first look and vow reading.
Elements such as the round backdrop adorned with Sola Wood Flowers, rustic centerpieces and place cards, and the handwritten wooden welcome sign, set the stage for their celebration on the dock near the shores of Crooked Lake. During the ceremony, Monica and Erik held a unity sand ceremony, signifying their newly unified life. Monica’s younger brother, Logan Lasley, officiated, making the ceremony all the more touching. “It definitely made our ceremony more special having him be the officiant,” Monica says.

Memories of Their Lives: The couple married at Monica Goetzke’s family’s cabin, a location that already held beautiful family memories. “The ceremony was on the beach … The bar was in the garden shed on a workbench of Monica’s great-grandfather that her father refinished,” photographer Tim Larsen says. “Everything was so familiar and comfortable to everybody in the wedding.”
“Erik and Monica kept a good perspective on their wedding day, remembering that it was about them committing themselves to each other.”
Tim Larsen of Tim Larsen Photography
Tim Larsen of Tim Larsen Photography says the key to a peaceful and enjoyable wedding is all in the planning. “A peaceful day leads to better photography because you have emotional space to have the emotions of your wedding day rather than always having the emotional overlay of worrying about how things are going logistically,” Larsen says. If you feel comfortable planning your day, take charge—if not, Larsen recommends considering an event planner to point out unexpected details.
When connecting with photographers, Larsen recommends finding a photographer who is willing to take charge in the moments when needed—but not one who commandeers your day. Larsen also poses questions to take into consideration: “Are you hoping to enjoy reminiscing about your day every anniversary and sharing your photographs with your children to show your love, personality and story? Or are you hoping to make a splash on social media to garner likes from your friends or followers?” he says. “Neither is right or wrong, but knowing this will help you pick a photographer you love.”
Guests dined together under a canopy, embellished with twinkling lights, while the newlyweds shared a private moment at their sweetheart table, looking out to their loved ones. The reception was complete with touches unique to their family. “My dad refinished his grandpa’s workbench into the bar for the wedding,” Monica says. “And we both love Margaritas, so we served those at our wedding, too!”
Stationed appetizers included Brie-Fig Pear Bites, Marinated Steak Crostinis and Buffalo Meatballs. The plated dinner included an Arugula Pear Salad accompanied by dinner rolls, followed by three options: Mediterranean Chicken, Beef Medallions or Salmon.
For the cherry on top, the Goetzkes added a quintessential Northwoods touch—Betty’s Pies—a favorite of Erik’s. “We thought it would be fun to have something a little more unique than cake,” Monica says, noting apple, blackberry peach and bumbleberry were the three flavors served up. “It was a hit!”
The July evening was an idyllic backdrop for their intimate wedding, and the Goetzkes were present with each of their guests. “We kept the wedding small, so we had enough time to connect with all of our guests,” Monica says.
The beautiful evening ended with a sparkler send-off— lighting the way for the new Mr. and Mrs. Goetzke.
An Idyllic Bride: Monica Goetzke’s wedding dress from David’s Bridal is the epitome of a beautifully rustic bridal look. The allover lace embraces romance, while the rhinestone crystal belt adds a touch of glamour to the bride’s look.
Something Blue: Erik Goetzke’s suit from Men’s Wearhouse showcases a classic groom’s look. The shades of blue found in the accessories elegantly pair with the gray three-piece suit.

Bakers and makers are charting new territory when it comes to wedding treats.
Written by Editorial Staff — Photos by Chris Emeott
THE TOPOGRAPHY of the reception dessert table is evolving. The towering white wedding cake is no longer a given, and it’s ceding space to more varied terrain. Whether you want to scale a donut wall or explore rolling hills of ice cream, modern weddings are letting couples choose their own adventures. If you’re feeling a bit lost navigating this uncharted territory, don’t worry. We’ve discovered bakers, makers and vendors who are mapping new
