Welcome to this February edition of Cheshire’s Golden Triangle magazine.
February, bringing early signs of renewal; crocuses and snowdrops often begin to emerge, their blooms adding spots of colour to the otherwise muted landscapes of our local parks. Birds begin to sing more actively, and some species, like robins, may establish territories or scout nesting sites. All this happening right on our doorstep in our very own Golden Triangle, which stretches from Handforth, into Wilmslow, Alderley Edge, through Mobberley and includes Knutsford.
We hear from the ever excellent school, Wilmslow Prep, as they celebrate some very good news, Tatton Park is the place to be for February half-term, as well as our very own local Wilmslow library with lots going on for the little ones. To our local businesses, and I shine the spotlight on Tony Turner of Smarter Home 4U, and I spend 5 minutes interviewing Simon Bollington who is a travel counsellor. Sarah Laker of Stationery Supplies shows us her latest awards, which we are delighted to celebrate with her, and Bryony (our features writer) takes us for a walk in Mobberley. There must be a pub involved? Smiths of Cheshire have a sweet treat for Valentines, and we have warming recipes for you to try at home, all in this very ‘packed to the brim issue’.
So whilst February may be a time of subtle preparation and resilience in nature, as both flora and fauna await the longer days and warmer temperatures of spring, here at Cheshire’s Golden Triangle it is all go, as we gear up for Spring, and we have lots more to share with you, so until then, stay warm and share the joys of Valentines, with loved ones, family and friends. The Spotlight On: Tony Turner

Tony Turner is the Founder and Managing Director of Smarter Home 4U. They are a trusted choice amongst homeowners, landlords, and business owners for repairs, maintenance, and building work.
Can you tell me about Smarter Home 4U?
We are a family owned, family run business who carry out all aspects of home improvements to a high standard. Our bookkeeper is my mum, and during the school holidays, Rebecca, our Head of Admin and my daughter, may bring in her children, Lyla and Esme to visit. There’ll be four generations in the office that day. And, yes, the grandchildren have Smarter Home 4U polo shirts. Previously, I coowned a Bathroom showroom before striking out on my own, to build a legacy for my family.
What kind of work do you do, and what do you specialise in?

As CEO what is your main responsibility?
We are still relatively small, but we’re growing almost monthly. Building the best team possible, employing tradesmen who match our values, is a critical part of my role.

I am also the first point of contact for our customers and potential customers. If I really thought about it, I’d say my biggest responsibility is to demonstrate the company values in all I do.

We cover everything from a media wall to a full house refurbishment. Our core team are all employed and consist of multi-skilled joiners and bricklayers. Specialist trades: Electrician, Plumbers, Plasterers and Roofers who meet our high standards are brought in as and when required. Well, you only have to look on Facebook to see the answer to that one. Our Lead Multi-skilled Joiner, Chris, was once featured on Cowboy Builders. Fortunately, he was rectifying the mess created by an unscrupulous builder, not us! We are accredited Which? Trusted traders, Trustmark and Trading Standards Approved and that’s what
I’d point prospective customers to. I’d recommend checking out customer testimonials, Google Reviews, Which reviews, etc. Even check out the business on Companies House. Many of our satisfied customers are happy to take a call from our prospective customers and many are even happy to invite them round to their house to see the work we carried out.
How do we know we are getting value for money, and the cheapest quote is the best one to choose?
We’re back to trust here. Unfortunately, the lowest quote quite often doesn’t include all the work. The work starts, and the unsuspecting client gets a revised bill with additional costs. If a quote doesn’t include VAT then the client again may not understand they’re dealing with ‘man with van’ and not a business with depth. We give clear, itemised quotes based on our standard rates. What is your plan for the future of your business?

underpin the Smarter Home 4U culture. Building on this, we expect to double in size over the coming year or two and will continue to recruit and train at least two apprentices a year. The home-owners of South Manchester and East Cheshire clearly appreciate our work and we will continue to meet customers’ requirements, delivering the high-quality home improvements they desire. We know that some of our current craftsmen have the makings of the managers and directors of the future and succession planning is ongoing. I am confident that Smarter Home 4U will be here for decades. I won’t be at the helm but they will hear my voice at the Shareholder’s meeting!
Lastly, what do you do in your spare time?
Family is really important to me, and I spend as much time as possible with my two granddaughters, Lyla (6) and Esme (3). My grandad had a huge influence on my life and helped me become the person I am today. I want to do the same for Lyla and Esme and help them to become the best they can be in whatever they decide to do in life.
My home life usually involves a combination of dancing, dogs, and my self-built camper van.
Pre covid we got our first camper van and during covid we got our first dog. Now we have a bigger camper van, along with 3 dogs and take every opportunity to get away whenever we can. A weekend away is great for relaxing, but when the time allows, we’ll take full advantage of our surroundings and walk for miles with the dogs. Last summer we got down to the Cotswolds and even managed to take the dogs to visit a dog friendly zoo.
The dancing came about when my wife persuaded me to try a ballroom dance class. I quickly fell in love with it and in addition to the dance class we now have a private lesson every week. We’re also regulars at the many social dances that take place, and I’ve even danced in the Tower ballroom in Blackpool, and danced a tango on the banks of the Seine.

As winter’s chill lingers, there’s nothing more comforting than creating a space that exudes warmth and cosiness. With the right combination of textures, colours, and lighting, you can transform your home into the perfect retreat.

1 Play with Warm Colours
Incorporate warm, rich tones to add depth and warmth to your space. Shades like terracotta, deep reds, mustard yellows, and soft browns are perfect for February. These colours evoke a sense of comfort and pair beautifully with neutral base tones like cream, beige, or light grey. A deep green or navy blue can also be used as accent colours to add a sophisticated edge.
Add warmth to walls using pillows, rugs, or curtains in these colours rather than repainting. For instance, a mustard throw or a burgundy velvet cushion can instantly make your sofa feel more inviting. If you’re feeling bold, a statement wall in a warm hue could be a transformative addition.

Think about incorporating hearts, candles, or romantic-themed details in subtle, tasteful ways in honour of Valentine’s Day. A heart-shaped wreath on your door can nod to the season without being over the top.
7 Keep It Practical and Inviting
Ensure your cosy look is functional. Keep extra blankets within reach in a woven basket or storage ottoman. Add hooks for coats and scarves near your entryway to keep things tidy and welcoming. A steaming cup of tea or hot chocolate on a cold day is a staple, so ensure your kitchen or dining area reflects this comforting vibe too. A tray with mugs, a teapot, and a selection of teas or cocoa can serve as both a practical and decorative feature.

Beer Bread
Inspired by a recent trip to Holme Grange Craft Village and its wonderful artisan bakery, I thought we would try baking something that is very popular at the moment - Beer Bread. This oh-so-buttery and easy beer bread recipe needs only 10 minutes of prep and is made with just 5 simple ingredients! With a tender crumb, buttery crisp edges, and a subtle hint of beer, this no-yeast bread is incredibly flavourful and requires no kneading or rising time. Give this one a go!
Ingredients
375g all-purpose flour
50g granulated sugar
1 tablespoon baking powder
1 teaspoon salt
330ml can or bottle of beer - medium bodied beer with a mild flavour like a lager or pale ale works best
100g butter, melted
The beer stands in for yeast and eliminates any rising time in this beer bread recipe. Gather the few items needed and get ready to be wowed by the easiest loaf of bread you’ll ever bake.
Method
Step 1
Prep the pan:
Grease a 9×5 inch loaf pan and line with parchment paper for easy removal.
Step 2
Mix the batter:
Whisk to combine the flour, sugar, baking powder and salt. Using a wooden spoon, stir the beer into the dry ingredients until just mixed. Do not over stir!
Step 3
Assemble the bread:
Pour half of the melted butter into the bottom of the loaf pan. Pour the batter into the pan and then top the batter with the remaining melted butter.
Step 4
Bake:
Bake for 50 to 60 minutes, until golden brown and a toothpick inserted in the centre comes out clean. Slice and serve warm!
What to Serve with Beer Bread
Soup:
This bread pairs perfectly alongside a cabbage roll soup or a bowl of slow cooked ham and bean soup.
Chilli:
Whether a creamy white chicken chilli or beefy slow cooker chilli, this bread will go with them all!
Southern:
Make a complete southern meal with crispy fried chicken and creamed corn.
BBQ:
Pulled pork or an oven baked chicken are easy options! Don’t forget a side of the best baked beans!




Chicken Potato Soup
There’s just something about a creamy potato soup’s ability to ward off the harshest winter chill. This Chicken and Potato Soup with Bacon will hit the spot. A hearty soup featuring succulent chicken, velvety potatoes, crunchy bacon bits, and savoury seasoning, your family will love this soup after a busy day out in the cold.
Ingredients
4 slices thick cut smoked bacon, cut into shorter pieces
1 small onion, diced
2 ribs celery, diced
1 medium carrot, diced small or grated
1 pound potatoes, cut into 1/2” pieces
2 tablespoons all-purpose flour
2 tablespoons Dijon mustard
1 teaspoon Italian herb blend
1 teaspoon dried chives
3 cups low-sodium chicken broth
1 teaspoon Worcestershire sauce
3 cups cooked chicken, cubed or shredded
1 cup single cream
2 green onions, sliced on the diagonal
1 cup chopped spinach leaves
1 pinch red pepper flakes
Kosher salt and freshly ground black pepper
Suggested garnishes:
Crumbled bacon
Sliced green onions
Snipped fresh chives
Shredded cheese
A dollop of sour cream
Method
Step 1
Cook bacon until crispy, then transfer to paper towel-lined plate to drain and rest. There should be 1 to 2 tablespoons of bacon grease in the pot. Drain off excess, if necessary. Add the onions, celery, carrots and potatoes to the pot. Sauté, stirring frequently, until the aromatics are softened (the potatoes might not be cooked through at this point; that’s okay).
Step 2
Spoon in the flour, mustard, and herbs over the veggies, and stir together. Raise the heat to medium high and begin stirring in the broth 1 cup at a time.
Step 3
Add the Worcestershire sauce and bouillon (if using). Bring the soup up to an active simmer and let bubble gently for 10 minutes. When the bacon has cooled, crumble into small bits and set some aside for garnish at serving.
Step 4
Reduce heat to low. Stir in single cream, followed by the cooked chicken, crumbled bacon, spinach, green onions (reserve some if using for garnish), red pepper flakes and a pinch of black pepper. Let the soup rest for 5 or 10 minutes. The spinach will wilt, and the soup will continue to thicken. Taste, and adjust with salt and black pepper as needed.




Smiths of Cheshire

You’d be forgiven for assuming that the family run Smiths of Cheshire, at Wilmslow Railway Station, is simply a speedy caffeination station. I assumed the same until recently. That is, until co-owner D began enthusiastically waving spoons loaded with her tasty creations at me whenever I was smart enough to grace the coffee shop with my presence.
I remember the first time this happened, when I popped in with a headful of lurgy. D took one look at me, hurried into the back, and returned in full Mary Poppins style with a spoonful of sugar to help the medicine go down. In this case, her spoonful of sugar was some honey, chilli and onion concoction and a promise of me feeling better soon. I don’t know what this wizardry was, but it did the trick.
The next time I visited, a little plate of canapés was lovingly thrust in front of me – crostini, cream cheese and D and Andy’s secret recipe Trinidadian curry paste (AKA their ‘Effing Good Sauce’, available to buy) - a perfect pairing to my prosecco. I’m not entirely sure how the prosecco happened – I am pretty sure I went intending to order a flat white.
On my most recent visit, co-owner Andy told me that he was partway through making a batch of chicken


jollof, a spicy African rice dish with flavours of scotch bonnet, Romano peppers, cayenne, tomato and thyme. I’ve grown to trust D and Andy’s cooking completely, so despite not really knowing what jollof was at the time, I nodded along and accepted the recommendation. I was right to do so, it was fantastic.
In true Smiths of Cheshire fashion, while I waited for my rice, a little pot of potato Trinidadian curry was placed in front of me. I love a potato. So much so that my last birthday party was a potato party (a story for another day, but I will say it is one of my favourite ever birthday parties). As a self-proclaimed potatophile, I was thrilled. The depth of flavour in the curry, the warming chilli and the moreish saltiness meant that this curry could have had anything in it and it would have been fantastic, but the elevation of the simple potato? Perfect.
When my jollof arrived, Andy talked me through the painstaking process of making the paste that gives all the flavour to the rice, which involves frying the

ingredients, cooking them down and refrying them over many hours. I don’t fully know what goes in, I don’t know how they do it, but I do know that it is delicious.
D and Andy have managed to do something that I didn’t think was possible with such a small site, in such an obvious commuter location. They’ve created a place that invites and motivates people to visit even if they have no intention of catching a train out of

Wilmslow. They are passionate about their customer service and passionate about bringing flavours from around the globe from their expat days. So much so that they now also offer a small tasting menu to allow customers to sample the dishes beyond what they might usually go for when racing for a train.
Each time I visit Smiths of Cheshire, despite the view of commuters and cars, I’m greeted in a way that feels like I’ve stepped into D and Andy’s living room. There’s always a warm welcome, there’s always a delectable spoonful of something to taste and there’s always a cracking cup of coffee with their own bespoke blend.
As I people watch, I can see that in the best way possible, I am nothing special and the way I am treated as a customer is nothing unusual to the Smiths. Everyone who passes through the door is greeted with the same enthusiasm, the same warmth and leaves with the same feeling of being treated like a friend.


Knefe Na’ami - Knefe with Semolina, Mozzarella, and a Breadcrumb Base
With a nod to Levante cuisine, D and Andy at the wonderful Smiths of Cheshire share this rich, buttery dessert with a breadcrumb base, mozzarella cheese filling, and a creamy semolina layer, all soaked in fragrant rose water syrup. Give this a go at home, or nip in to see them next door to Wilmslow train station and it will be ready-made to take away.
Ingredients
For the Base:
1 loaf of white bread with crusts removed, processed into fine crumbs
100 g unsalted butter, melted
For the Cheese Filling:
250 g shredded mozzarella cheese
For the Semolina Layer:
1 litre milk
125 g semolina
1 tsp sugar
For the Syrup:
200 g sugar
120 ml water
1 tsp rose water
1 tsp lemon juice
Method
Step 1
Prepare the Breadcrumb Base:
Preheat the oven to 180°C. Blend the white bread in a food processor until you have fine breadcrumbs.
Mix the breadcrumbs with the melted butter until it forms a damp, sand-like consistency. Press the breadcrumb mixture firmly into a greased bread tin to create an even base.
Step 2
Add the Mozzarella Cheese Layer:
Evenly spread the shredded mozzarella cheese over the breadcrumb base.
Step 3
Prepare the Semolina Layer:
In a saucepan, bring the milk to a gentle simmer over medium heat. Gradually stir in the semolina gently and continuously with a wooden spoon, ensuring there are no lumps. Continue stirring gently over the heat until the mixture thickens to a smooth, pudding-like consistency.
Stir in the sugar and cook for another 2–3 minutes, then remove from heat. Pour the thickened semolina mixture evenly over the mozzarella layer in the bread tin, smoothing it out with a spatula.
Step 4
Bake the Knefe:
Bake in the preheated oven for 25–30 minutes, or until the edges are golden brown and the top is set.
Step 5
Make the Syrup:
While the knefe is baking, combine sugar and water in a saucepan over medium heat. Stir until the sugar dissolves. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes. Stir in the rose water, and lemon juice. Remove from heat and set aside to cool.
Step 6
Assemble and Serve:
Once the knefe is out of the oven, carefully flip it over and pour the cooled syrup evenly over the top while it’s still warm. Let it soak in for a few minutes.
Slice into portions and serve immediately. Garnish with crushed pistachios if desired.
Tips for Success
Stir the semolina gently and continuously with a wooden spoon while cooking to avoid lumps and achieve a smooth, creamy consistency. Use full-fat milk for a richer semolina layer.
Let the knefe rest for a few minutes before serving to allow the syrup to soak in fully.

The Lake District is home to 16 major lakes and countless smaller tarns, each with its own unique charm. The largest, Windermere, is a popular starting point for many visitors. What exactly is a travel counsellor, and are you a travel expert?

I have two favourites; for a city break I love Barcelona as it has everything, the beach, the culture and history. Also with being a family man I love Florida and going to Disney and Universal theme parks.
So, you are really for ‘posh people’ then, are you?
No, not just posh people! I pride myself on providing value for money, so I arrange and book holidays for everyone. I can match the low cost airline companies such as Jet 2, EasyJet and Tui as I am a registered agent to sell their holidays. Everyone loves a good
holiday and I try to find the best holiday depending on the budget and location..

Are you really able to help save people money on their holidays?
It is not always about just saving people money all the time but actually saving them time, which for very busy professionals is a valuable commodity. The Spotlight On: Sarah Laker

Sarah Laker is the owner of Stationery Supplies in Marple and Wilmslow, a business we often feature in our magazines. She is a well known local entrepreneur, with a clear passion for what she does. Recently, Sarah won a prestigious national business award in recognition of her hard work.
Announced at a glamorous awards ceremony in Birmingham last week, Sarah took the top prize for Campaign of the Year, beating off fierce competition from global companies and international brands, including both Nestle and Pukka Pads.
The annual awards are hosted by the BOSS Federation and recognise excellence amongst individuals and businesses in the Stationery and Office Supplies Sector and see hundreds of entries from businesses of all sizes.
The award recognises Sarah’s hard work, success, and commitment to National Stationery Week, which is an annual campaign celebrating all things stationery. Comprising ‘seven days of stationery’, the NSW campaign is the stationery and office supplies sector’s biggest marketing opportunity of the year, uniting suppliers, retailers, and consumers in their love of stationery and craft.
It was an engaging campaign that at a conservative estimate reached over 100,000 social media users, via over 300 social
media posts, it made a real impact in the online community and the industry itself.
A passionate stationer, Sarah owns two shops, one in Marple and here in Wilmslow on Chapel Lane which she runs alongside her daughter Molly and her enthusiastic team.
Delighted to win such a prestigious award she commented, “I am still speechless! To be shortlisted at such a huge event as the Boss Awards is an achievement but to win is beyond my wildest dreams. As an independent business owner, it can be daunting to go up against such big organisations and high street brands so to actually win just makes it even

more special.”
Sarah has big plans for National Stationery Week in 2025 and went on to say, “Stationery is my passion, and I intend to continue to share that through my shops and my work on National Stationery Week for many years to come.”

News From Wilmslow Prep
Wilmslow Prep is Celebrating a Glowing Inspection Report
The renowned prep school, nestled in the heart of Wilmslow, has been celebrating a well-deserved achievement following the publication of a glowing inspection report in January. The report highlights the school’s commitment to academic excellence, student well-being, and a nurturing learning environment, reinforcing its reputation as a leading educational institution in the region.
A team of Inspectors from the Independent Schools Inspectorate (ISI) conducted their rigorous inspection in November. They found that the school met the five regulatory standards which cover all aspects of the school’s educational and pastoral provision analysed over:
• leadership, management and governance
• the quality of education, training and recreation
• pupils’ physical, mental health, and wellbeing
• pupils’ social and economic education as well as their contribution to society, and safeguarding.
Speaking about the report, Headteacher, Bradley Lavagna-Slater said;
“We are delighted with the inspectors’ findings which bear testament to the hard work and dedication of our teaching staff and the Wilmslow Prep team. It also reflects the efforts of our wonderful pupils and the support they receive from their families. We pride ourselves on providing a strong,

all-round education which nurtures each pupil to be their very best, and we see this ethos reflected in the report’s findings.”
Understanding pupils’ needs
Inspectors commented that “Staff know pupils well and ensure that individual needs are understood and met.” They went on to say “Leaders model the behaviours they expect of pupils so that pupils learn the importance of respecting and caring for others in school and the wider world.”
Extensive range of activities
The school received praise for engaging pupils in an extensive range of activities outside the classroom and how “Teachers use a range of activities which help pupils to learn and make good progress.”

Strong literacy skills
The report highlighted pupils as ‘articulate speakers and attentive listeners’ stating that “They develop fluency and expression in their reading, enjoying the books that they read. Pupils use sophisticated language and structure to good effect in developing creative writing skills.”

Preparation for future education
Inspectors said that “Pupils are provided with opportunities to gain the knowledge, skills, and understanding they need in all subjects. Pupils make good progress and are well-prepared for the next stages of their education both within and beyond the school.”
A rich history
Wilmslow Prep was founded on Grove Street in Wilmslow in 1909 by Miss Mead and Miss Barber. The school was originally located above a butcher’s shop and moved to its current location on Grove Avenue in 1912.
Each September pupils and staff celebrate the school’s birthday with a cake and each class makes and sends a birthday card to the school, presented at a special assembly.

Indeed, those first few months will forever be a badge of honour, saying you stuck it out and earned your stripes. There are no shortcuts to learning an instrument.”

Cyber Security for Businesses
Free, Police-Backed, Cyber Security Training in Cheshire
Businesses across Cheshire are being warned of growing cyberattacks in 2025. With recent Government stats finding that a whopping half of all businesses experienced a cyberattack or breach in the last year, this is sage advice for 2025. In addition to this, new technology such as generative AI, has made phishing attempts much more sophisticated and convincing.
In order to combat this growing threat to businesses, Cheshire Police and the Cheshire Police & Crime Commissioner have funded a county-wide initiative which offers free one-to-one cybersecurity training to protect your business from criminals.
The initiative has been rolled out by the North West Cyber Resilience Centre, a not-for-profit body set up in 2019 to provide free or low-cost training and advice for businesses. The programme has 150 free training and membership places for the NWCRC.
Any type of small to medium business is eligible for the training, from retail, beauty, medical, cafés, bars and restaurants, right through to professional services, such as accountants, solicitors and lawyers.


Detective Inspector Dan Giannasi (pictured above) head of cyber and innovation at the NWCRC, said: “A cyberattack can be incredibly stressful for any small business and hugely damaging both financially and for their professional reputation.
“Cyber fraudsters are getting incredibly sophisticated, and phishing emails, for example, can be really difficult to spot. Cyberattacks on small businesses can involve phishing attacks to gain access to their computers, or even their supply chains, through to invoice fraud or data breaches.
“We are calling on business owners to take up the free training sessions which will help their employees spot potential scams or phishing attempts, and help them stay safe against fraudsters.”

I do not like walks. There, I said it. That is not to say I do not like walking. I am grateful for my legs. They are incredibly useful. What I don’t like is walks without purpose. I want to know why I’m walking, and I want to know where I’m going. A walk is fine if I have a dog with me – the purpose is the dog.
An ambling walk is fine if it’s for my mental health – the purpose is to feel like I’ve achieved something. My favourite purpose of walking is the smugness of going and doing some nature stuff with the reward of a pint in a cosy pub at the end. The Church Inn, Mobberley, have very kindly put directions on their website for a 4 mile walk that starts, and finishes at the pub - perfect.
1. From the car park, go through the metal kissing gate on the left and head diagonally right across the field to two gates. Take the right-hand gate, keeping the hedge on your left, and continue straight.
2. Pass through another kissing gate and follow the grassy path past farm buildings. Cross Newton Hall Lane carefully, turn left on the pavement, then turn right at the “Friends of Nature Burial Ground” sign.
3. Follow the track past houses to a sign saying “footpath to Moss Lane avoiding cattle.” Continue along this route until you reach Moss Lane.
4. On Moss Lane, turn right after you pass some houses and the path narrows. Follow the path to a T-junction. Turn right again and continue until you reach Knutsford Road.
5. Turn left (dogs on leads at this point) and walk past Sunny Bank Farm on your right. At the ivy-clad building, enter through the doorway, cross a stile, and head across the field to another two stiles. Go over both, cross the field diagonally. You’ll then cross another two stiles.


6. Head towards the main road, passing a pond on your left and stables on your right. Cross the road, go over the bridge, and turn right onto a gravel track. Look for a kissing gate on your right. Pass through it, cross the field and a stile, then turn right.
7. Keep the fence on your right and head towards the houses. Pass through a kissing gate, follow the path through a housing complex, and exit onto a car park to your right. Go through another kissing gate on your left, walk with the hedge on your right, and cross a wooden bridge with stepping stones.
8. After crossing the stile, walk diagonally right across the field to another kissing gate. Here you get to a double hydration station with both The Roebuck Inn and The Bull’s Head across the road from each other.
9. Walk down Mill Lane (The Bull’s Head on your left), cross the road and go over the stile. Go through the gate, then diagonally across the field, eventually crossing the next stile.
10. Keep the fence to your right in the next field and walk to the wooden bridge, then cross it.
11. Again, keep the fence to your right, going round the edge of Mobberley Cricket Field, go through the kissing gate at St Wilfrid’s Church, then turn left, going straight until you reach the gate in the graveyard. Go through the graveyard, turn left at the church entrance then exit to get yourself back to The Church Inn for a well-earned pint.
