We say goodbye to summer this month and hello to fall in greater Williamsburg. There is much to do and see, including taking in some events during Williamsburg Fall Arts. Many area galleries, theater groups, museums and shops have events happening in September and October for people of all ages to enjoy. This issue features a variety of articles highlighting some great businesses and happenings. Gazette intern Sally Grace Holtgrieve continues her work with us, showcasing local shops including BlueGreenAqua Boutique in New Town, Retro’s on Prince George Street, and La Patisserie on Richmond Road. You will get to meet the business owners and find out the latest. Our featured chef this month is J.C. Morton of Aberdeen Barn on Richmond Road. Morton has more than 25 years of experience at the popular steak house. Check out a couple of his recipes that are included in this issue. You will also get to know Susan Oweis, head of school at Providence Classical. She is featured in our series, Head of the Class. Don’t forget that one of Williamsburg’s most popular late summer events, the Kiwanis Shrimp Feast, will be held this month at the Jamestown 4-H Center. Hundreds of people converge for an old-fashioned shrimp feed and live entertainment—all for a great cause. You will also find features on Precious Pieces, a project of Heritage Humane Society that focuses on handmade blankets for adopted animals, and Colonial Williamsburg’s chocolate program at Taste Studio. Fall into area arts

Arts Month has a new name— Williamsburg Fall Arts, and the events planned are more comprehensive than ever before. Now in its fourth year, the monthlong celebration of the area arts scene takes on a vibrant life of its own. Many of the events are free. Festivities begin Labor Day and run through the end of the month. Don’t forget at the beginning of October, our area celebrates An Occasion for the Arts— two days of art and entertainment for all ages. Here is a rundown of some of the events:

Labor Day Weekend— The Virginia Symphony Orchestra will perform free concerts at two waterfront locations: Lake Matoaka at the College of William and Mary on Thursday, Aug. 28, and at Yorktown’s Riverwalk Landing on Saturday, Aug. 30. Sept. 5 —Arts District Merchants Association kicks off Williamsburg Fall Arts with a celebration of music, “two-wheeled art” and culinary arts at Hog Wild for the Arts! Chef David Everett’s Farm to Table Culinary Arts Celebration,Duke of Gloucester Street. Sept. 5-Oct. 3 —Yorktown’s Riverwalk Landing Rhythms on the Riverwalk concert series takes place every Friday 6:30 – 8:30 p.m. Sept. 6—The Williamsburg Symphonia’s Music and the Brain lecture-concert at Kimball Theatre. Sept. 11-14—New Town Arts Festival, including New Town Chalk Fest at 11 a.m., Saturday, Sept. 13 at Sullivan Square and Center Street. Peninsula Glass Guild exhibition begins Sept. 11-13 in Legacy Hall. Shirley Vermillion’s Tented Art Show Saturday, Sept. 13. Theme is “Under the Big Top.” Hear storytelling in this most engaging, unpredictable, inspiring and surprising format. Sept. 21—Art Speaks: Old and New—Legacy Hall in New Town. Features a live auction of donated new and pre-owned works by regional artists and art collectors. Entertainment. Sept. 27-28— Taste of the James. The riverfront event benefits the James River Association and celebrates Culinary Arts with an emphasis on seafood, wine and micro-brews. Live and silent auctions as well as music and during-the-event-painting demonstrations by local artists assure this event is set to become one of the area’s traditions. Attendees will be able to order limited edition giclee prints that will inaugurate a Lower Waters of the James: America’s Founding River annual artwork series. Sept. 28— Yorktown Art Stroll at Riverwalk Landing, 11 a.m.-6 p.m. Shops, Freight Shed and the newly opened On the Hill Gallery expands this year’s event. Sept. 29-30—The Williamsburg Symphonia presents Opening Night Sensation, the first Masterworks concert of its 31st season. Oct. 2-5 —Williamsburg Celebrates Arts Weekend. J.C. Morton, executive chef, Aberdeen Barn By Ann M. EÀmetz The saying, “there’s no place like home,” could easily apply to Aberdeen Barn’s executive chef, J.C. Morton. For the past 27 years, Morton has headed up the kitchen at the popular restaurant located on Richmond Road. He moved here from Northern Virginia and has never looked back. “This is a place to raise a family,” Morton said recently during an interview at the restaurant. “Williamsburg has a mix of so many kinds of people.” Morton has married and raised a family here, and coupled with his job satisfaction, the gregarious chef has found his niche. His approach to food is simple. “If you use good products then the end result will be phenomenal,” Morton said. “You don’t need to mask the food with other flavors. That is what has worked out for us for a long time.” Food at Aberdeen Barn is presented to give diners the ultimate taste sensation. That is accomplished through purchasing top-rate products and careful preparation. Prime rib is slow-cooked on the bone overnight. The result is a succulent, flavorful cut. “It makes such a big difference,” he said. “People say that our prime rib is the best they have ever had. “ Morton’s culinary expertise pervades all the dishes he creates, including seafood, which, he added is a big seller at the restaurant. Accolades, including those from the annual Taste of Williamsburg event, have affirmed the appeal. “We have fresh, local oysters,” Morton said. “We prepared Oysters Morton for Taste of Williamsburg and people who said they didn’t eat oysters tried them and loved them. It is neat when you can expose people to things they think they may not like.” The scallops Morton purchases are untreated, drypack and are used to create unique recipes. That includes Bacon-wrapped Scallops with Bourbon Sauce, another favorite of Morton’s— and of the restaurant’s customers. “The quality of the scallops is amazing,” he said. Morton is at home preparing a wide variety of dishes, but admits his real passion is the grill. “I like anything on the grill,” he said with a laugh. “If I could, I would grill everything— fish, vegetables, everything. I started out grilling and that is what I really like.”

Grilling seals in juices and provides a flavor that is satisfying, he said. Customers at the restaurant enjoy the open grill and the taste that’s accomplished through the process. He has noticed customer’s tastes changing in regards to how they like their steaks cooked. “People are eating steaks that are cooked rarer than before,” he said. “People had become phobic about eating rare steaks, but at the restaurant we call it a ‘perfect pink.’” Aberdeen Barn has a loyal clientele of repeat customers who enjoy the knowledgeable and friendly wait staff, the food and the ambience. The restaurant, which is only open for dinner, can serve more than 200 people on a busy night. “We have lots of locals who come year round,” he said. “That is really a tribute to the staff.” The restaurant also has an affiliation with the Athletic Department at the College of William and Mary, often hosting dinners and other events, including tailgate parties at Plumeri Park. Morton is continually thinking of interesting ways to prepare food, including when he is away from the restaurant. “I cook when I am at home,” he said with a smile, adding, “I even do dishes.”

What changes do you anticipate in the next 20 years? Although technology will continue to become more sophisticated and will enable us to be more efficient, we will realize that we still need to be able to communicate with people face-to-face. We will realize how important it is to hear the tone in someone’s voice rather than try to figure out the tone of what they are saying through an e-mail. I believe the human mind is the most powerful computer ever created. I think education will return to its grassroots because we will realize that in teaching children to use electronics to communicate on a much large scale, with far more people, we have created a student who speaks to others without ever opening his mouth. We need to hear children, we need to see children and we need to interact face to face with children to help them learn best.

A taste of France on Richmond Road

Rosie Castillo of La Patisserie on Richmond Road said she bakes everything as if she’s making it for family. The bakery opened in April, and already has found a loyal following. Previously Castillo worked in catering in California, but when her daughter and son-in-law were accepted to William and Mary 32

Law School, she decided to follow them across the country and open a bakery. “It’s exciting to build something of your own,” she said, pleased with the number of steady customers she has already acquired. Castillo estimates that about 50 visitors drop in each day. She also is enjoying a brisk custom cake business. La Patisserie’s most popular

treats are the chocolate decadence cake, tiramisu and a wide assortment of cookies.

Castillo admitted with a laugh that there is a considerable difference between Williamsburg and California. She was quick to add, however, how much she enjoys getting to know local residents and visitors. She has found the area quiet and more traditional, which she considers positive. The name ‘La Patisserie’ is inspired by the bakery’s emphasis on French products. Castillo had the opportunity to take some bakery classes in France, while she studied in England during her college years. While living in California, she furthered her passion for French baking through her affiliation with a French pastry chef. Her love of the culture is evident in La Patisserie’s Parisian inspired decor and the music that plays inside. Future plans include expanding the bakery into a coffee shop with more sit-in space. “I want you to walk into La Patisserie and feel like you are visiting a friend,” she said.

American Heritage Chocolate isn’t your grandparents’ chocolate. It’s your great, great, great, great, great grandparents’ chocolate. And it’s much more than the simple cocoa, milk and sugar that go into most types of modern processed chocolate. American Heritage Chocolate – a recipe created when Colonial Williamsburg teamed up with the Mars corporation after folks at Mars read a newspaper story about a Colonial Williamsburg researcher’s chocolate discoveries – draws on the flavors of cinnamon, star anise, annatto, nutmeg, vanilla, orange peel, chili pepper, cocoa nibs, salt and raw sugar to replicate what chocolate tasted like centuries ago. “When you think about the flavor profiles of today, it’s very different from what chocolate would have been like,” says Chef Rhys Lewis, executive chef at Colonial Williamsburg “Hands-on with American Heritage Chocolate” is held at 2 p.m. Saturdays at Colonial Williams-

burg’s Taste Studio, visitors get more than a demonstration. They get to touch, smell and taste it. Chef Rodney Diehl, Colonial Williamsburg’s head pastry chef and a Williamsburg native, leads small groups in the creation of chocolate bark and chocolate truffles using the historic recipe combined with a modern twist: The addition of toppings such as shredded coconut, nuts, peppermint candy, M&M candies, powdered sugar and more. Diehl offers an extensive history of chocolate, from its early cultivation to its widespread appreciation across the world. He says Thomas Jefferson had predicted that consumption of chocolate would surpass consumption of coffee or tea. According to Diehl, that prediction eventually held true. Following the workshop, guests can chat with the chefs and take photos. Scruggs operated a Texaco station for 25 years while Sharon Scruggs bought and renovated stores and opened businesses to re-sell. She also worked on renovating the building next door to Retro’s, which her grandfather built in 1933. It’s now home to the couple’s Fife and Drum Inn. Billy oversees the Inn and Sharon heads up Retro’s. Retro’s has five full time employees and five part-time. A majority are William and Mary students. “This is a lifestyle, having two businesses that are open 365 days a year,” Scruggs said. “Sometimes we have to vacation separately so someone can maintain things here. We are fortunate to have such great help, so usually we can leave knowing it’s in great hands.” Customers are vocal about their praise of the restaurant. “A lot of people say we should franchise,” Scruggs said. “But that’s not my motivation at this time in my life.” Recent additions to the menu have featured milkshake flavors including Pina Colada and a “Shamrock Shake” available in vanilla and chocolate mint. They are also happy to create custom blends. “If you want your chocolate Oreo shake to have peanut butter cups in it too, we can do that,” Scruggs said. “It’s just like adding toppings on a pizza.” The restaurant averages 250 tickets a day, which can consist of a single

person or a large family. Over the recent Fourth of July, the restaurant fulfilled approximately 500 tickets— including one that consisted of 17 hot dogs. The Scruggs said the Fourth of July is among their busiest days, with spring posting the most brisk visitation, due to visiting school groups. “Because Billy and I are from here we particularly like interacting with visitors,” Scruggs said. “We feel like we have a lot of tips to share. I tell visitors they need substantially more time than they might think to see everything Williamsburg has to offer and to plan accordingly.” The Scruggs, who will soon be grandparents, enjoy interacting with those who visit the restaurant. “We see lots of tourists,” Scruggs said. “But we also have a lot of grandparents who like to bring their grandchildren in for custard, or groups of moms who come to socialize with their young kids. We love to see stuff like that—it brings a special sense of place.”

For the past 34 years, the Shrimp Feast has gathered people from across greater Williamsburg to enjoy delicious food and hear live entertainment. By Ann M. EÀmetz Last year more than 50 people volunteered their time and talent to create blankets for adopted pets at Heritage Humane Society. The initiative, Precious Pieces, incorporates the handiwork of volunteers who knit or crochet the distinctive, colorful blankets that are given to each family adopting a new forever friend. According to Michael Rhodes, director of communications and

outreach at Heritage Humane, more than 3,500 blankets have been made by more than 50 volunteers. “Adopters get to choose one of the handmade items to take home with their new pet,” Rhodes said. “We find that any comfort item that eases the transition into new home

helps set the pets up for success. Just one more example of the many ways volunteers make Heritage Humane Society such a vibrant program.” For more information about the program or to volunteer, call Heritage Humane Society at 221-0150.

A youthful eye for business By Sally Grace Holtgrieve

Megan Behan’s eyes are described by her fiancé as “blue, green aqua.” It’s also the name of her boutique—that she calls her “dream come true.” The store opened in New Town in October 2013, and is owned by Behan and her boyfriend, Jeff Waters. After graduating from Old Dominion University in 2012, Behan, now 24, toyed with the idea of pursuing wedding planning, but admitted store ownership was her real goal. The store has become popular, especially among young women. And, most who come in, buy. 60

“We hear all the time that people are hesitant to come in because they think it’s going to be expensive, Behan said. “But all the clothes are less than $50. I try to keep it all in the $30/$40 range.” Behan describes her business as “a trendy, vintage-inspired boutique for the modern girl,” though she also stresses that it is “adorable and affordable.” The concept is to order popular online brands and display them appealingly. Most important, the pieces are available to try on before purchase. “The boutique concept has been kind of new to locals,” Behan said. “We only order a limited amount of things, so if you like it today it probably


won’t be here next week. But the benefit of that is people know they’ll have something unique.” Behan eventually wants to expand the current shop, or even open stores in other locations. “Jeff says I think big and long term,” Behan said. “We definitely are not planning on this being it.” She also envisions an even larger online presence, despite currently posting on Facebook and Instagram several times daily. Every week she has a photo shoot at the store that features new merchandise which is posted online. “My two best friends are the photographer and the model,” she said with a laugh. In June, Behan organized an open casting call for customers and selected five girls to be featured in the regular photo shoot. They modeled summer styles in locales at Colonial Williamsburg. Behan considered the shoot a success and plans to repeat it. “As much as people say they support local, I want to keep pushing that concept,” Behan said. “It’s so important. I want people to feel like it’s their store and take pride in it too.” Behan realizes that starting the store was a risk, but one she feels has paid off. “The best part about it all is that I’ve fulfilled a dream and it’s gone well,” she said. “And I get to work with the love of my life every day.”
