Merry & Bright

Sit back and enjoy every page of this very Merry & Bright Exciting Christmas Issue of All About the Table®. One of my dreamy visions of Christmas is a trip to a Christmas Tree Farm in a 1950's vintage candy red pick-up truck. Of course with a fresh cut Christmas tree in the backend. Then making evergreen garlands and wreaths from extra branches sprinkled with homemade snow flocking. The aroma of natural snow flock with its clean mix of fragrant piney wood’s evergreens... you know the smells of Christmas. In my minds eye I see a fully decorated tree with pretty packages, a mantel dressed with garland, twinkling lights, ornaments and more snow flocking. Now the house is ready for entertaining family and friends making everything Merry & Bright with the great anticipation of the visit from Ole St. Nick. All is calm and definitely all is bright! From table settings to delicious desserts to transforming the house, Christmas is full of joy. Christmas is all about dreaming and dreaming big. No matter the age, lets not forget the source that gives us joy and merriment, Jesus Christ the true Reason for the Season. My dream can be yours too as mine was fulfilled for this holiday issue and it was quite the adventure! Dream Big! May your Christmas Always Be Merry & Bright!

A Vintage Christmas Tradition


Nestled under the bare branches of a buckeye tree surrounded by Western North Carolina Mountains and acres of Frasier Fir Christmas Trees we find ourselves in awe of the majesty of natures beauty! Only Father God could create such magnificents. Since 1959, in the Blue Ridge mountains, Cartner’s Christmas Tree Farm of North Carolina has grown and “Individually Hand Pruned to Decorate™” thousands of Fraser Firs for wholesale and choose and cut customers. To my knowledge, the tree farm began where the buckeye tree is planted. As far as the eye can see are rows of beautiful assorted heights and well trimmed Fraser Fir Christmas Trees. It was Sam and Margaret Cartner’s dream and vision that started the farm in 1959. “The farm is now managed by Sam Sr. and his three sons, David, Jim, and Sam Jr” with “Ronnie Beam as the Field Manager.” There is so much more to their story so be sure to go online to read about this amazing family and Christmas Tree Farm.

Make your own... Vintage Christmas Traditions with These Ideas!

1.Plan a visit to a Christmas Tree Farm to choose & cut your family tree. Be sure to save excess branch stems for garlands. 2. While at the tree farm, pack a picnic lunch with finger sandwiches and sweets. Don’t forget the hot chocolate with all the trimmings. Santa loves this tradition. 3.Find a 1951 Ford -f-1 Red Truck for a Family Christmas Card. Be sure to wear Christmas clothes or have everyone wear a Santa Hat. Santa really likes this idea too! 4.Make home-made snow to flock your fresh cut tree, garland, and wreath. Santa loves the fresh smell of home-made snow flocking. It is made with bars of Ivory soap the old fashion vintage way. Recipe is on page 26 - 27. 5.Decorate your fresh cut tree with stringed popped popcorn and fresh cranberries. Hang garlands on your tree. Make garlands & bird seed wreaths, houses so the birds can enjoy Christmas too. 6.Make home-made Christmas tree ornaments. Gather your supplies and kiddos, then create special ornaments to hang on the tree. In addition shop at antique stores to find vintage ornaments. 7.Add a train and track around the base of your tree. 8.Make your own wrapping paper using brown paper, twine and sprigs of fresh greenery with berries. Put an orange in stockings. 9.Bake cookies together or make a gingerbread house. 10.Deck your halls and table with fresh greenery, ribbons and bows. Fall in Love with Christmas All Over Again Now the God of hope fill you with all joy and peace in believing, that you may abound in hope, through the power of the Holy Spirit.. Romans 15:13 KJV I’m ready to deck the halls—I want some figgy pudding. This is a bit unusual for me since I normally don’t think about putting up any Christmas décor before Thanksgiving. My thought being, why rush the season? But this year is different. I feel like I’m falling in love with Christmas all over again. My parents made sure we celebrated Christmas big during my childhood. We had a real tree loaded with ornaments and those stringy silver icicles that clung to everything they touched. The tree never seemed properly adorned without them. Those things must have been made from electricity because they always reached their tentacles out to grab onto my clothes, my hair, etc. when I even dared to get close. Other fond memories of Christmas include big family gatherings. Tables were piled high with bowls of this and plates of that. Someone always made sure there were plenty of homemade cakes, pies, and yummy candy. Those times were so special. I never wanted them to end, but somehow, they started fading little by little. We tried to preserve the tradition with family Christmas gettogethers as we’ve watched the crowd get smaller each year. School plays and church pageants for those with kids pulled many of them away until our crowd wasn’t a crowd any longer while others had gone on to Glory during the preceding year. Marriage gave me a new family with which to celebrate new traditions. I enjoyed gathering with them to laugh and listen to conversation about times past. My husband and his brothers were always talking about cars or hunting or fishing and seeing who could tell the tallest tale. I looked forward to the new year with anticipation, ready to plan activities to fill up the coming months. Those gatherings, too, seemed to fall by the wayside after my mother and father-in-law passed and a new family bought the house. My Christmas joy seemed sapped after all the changes. Traditions that had filled me with anticipation came to a halt. I wanted to buy gifts and surprise the giftees with surprises selected especially for them. I wanted to make macaroni and cheese and banana pudding, and then figure out how to get it all to the car in one trip without losing anything by the wayside. I kinda felt like a resident of Whoville after the Grinch stole Christmas. Lest I have you crying in your eggnog, I need to interject some glee in this seemingly sad tale. All is not lost. I realize I can’t depend on others to make me happy or inoculate me with a dose of Christmas joy. I’m responsible for my own happy. I’m excited about my excitement for this most joyous of seasons. I want to watch Frosty and cheer all over again when Santa shows up to take him to the North Pole. Even the television Christmas movies that have temporarily replaced my favorite non-Christmas shows don’t have me exasperated as in years past. I find myself wanting to hear holiday music while I walk the sidewalks in town. I realize that’s not the case for everyone. Perhaps you feel a little less than enthusiastic about the coming season. Perhaps you feel... Christmas may be a tough time, or you simply don’t feel the same spark for twinkling lights as you used to. Festive displays and crowds make you want to go home and hide till it’s all over. If that sums up your mood this year, perhaps try focusing on the real meaning of the season. Retailers push the focus on people, what we’re going to give each other and what we’re going to get, but it’s so much more than that. When we focus on the Gift God sent us, it helps change our perspective. If sadness over loved ones long gone threatens to ruin things, picture that person enjoying Christmas in heaven with Jesus. How awesome to be in the presence of the very one who came to us from heaven that night of nights. Maybe your family isn’t close enough to celebrate with you in person. Think about opening your home to others who will be spending Christmas alone. Plan a potluck, make some eggnog, and gather to enjoy homemade food, conversation and the goodness of the season. While you’re at it, have someone read the Christmas story while everyone enjoys dessert and that yummy eggnog.

Making Natural Snow Flock

Fresh Fraser Fir

Whether you choose to lightly dust or go heavy with the snow; your evergreens will lend a wintry yet warm appeal to your Christmas decor. No spray flocking or glue, just a few bars of Ivory soap and liquid starch. Your home will smell great too using this natural recipe. Can use this recipe also on faux trees, wreaths and garlands.


Vintage SnowFlock Recipe

Ingredients: Light Snow 3 1/2 cups grated Ivory Bar Soap-2-3.17 oz 1/2 cup liquid starch, Argo Brand is a powder* 3 Tablespoons hot water To Make Liquid Starch* 1/2 cup cold water +1/4 cup Argo starch, stir together. Gradually add 2 cups boiling water to starch. Cook over medium heat stirring constantly until transparent. Makes 3 cups. Instructions: 1.Grate bar soap with box grater small enough to see little curls of soap. Place in medium size mixing bowl. 2. Add 1/2 cup liquid starch, whip on high speed with stand or hand mixer. Add hot water. Beat until light and fluffy. 3. Apply by hand to tips of evergreen branches, allow to dry before second application. Once dry it will stay but can chip off. Flock tree after lights & ornaments. Note: This recipe will make enough snow with light application for 1-6'garland or 124" wreath. Double recipe for medium application, Triple for heavy snow. For 7' tree light application you will use 6 -3.17 oz Ivory soap, 1-1/2 cups liquid starch, 9 tablespoons hot water.

Mini Lemon Bundt Pound Cake

4.Add eggs one at time, then sour cream, and extracts. Whip to blend, Ingredients: 5.Add lemon zest and dry ingredients on low speed. Whip to 1 3/4 cup all purpose flour incorporate but don’t over mix. 1 teaspoon baking powder 6. Pipe or spoon batter into 1 teaspoon baking soda prepared mini bundt pans 2/3 full. 1/2 teaspoon sea salt 7. Bake 17-25 minutes or til cakes are 1 cup salted butter, softened lightly golden and spring back when 1 cup granulated sugar touched. Remove from oven, allow 4 large eggs, room temperature to cool 5 minutes before removing 1/2 cup full fat sour cream from pan. Invert pan on cooling 1 1/2 teaspoons vanilla extract rack. 1 1/2 teaspoons lemon extract 8. Mix juice of one lemon and sugar, zest of one lemon Juice of one lemon + 1 teaspoon microwave 30 seconds. With fork prick cakes and brush with glaze. sugar reserve for glaze Instructions: Preheat oven to 350° F. Brush mini bundt cake pan with softened butter, dust with flour. Set aside. 2.Whisk flour, baking powder, baking soda, and salt together in large bowl. Set aside. 3. In bowl of stand mixer fitted with paddle attachment, beat butter for 3 minutes, then gradually add sugar. Whip on medium high speed until creamy about 3 minutes. Scrape down sides and bottom of bowl.

Cream Cheese Frosting 4 ounces cream cheese, softened 1 cup confectioners sugar 2 -3 tablespoons heavy cream Garnish: 30 fresh cranberries, 60 mint leaves (2 per berry-3 berries per cake x 10 cakes). In small mixing bowl, combine cream cheese, sugar, and cream. Whip together until smooth, frosting should be thick. Spoon frosting over top of cake. Garnish with fresh cranberries & mint. Yield: 10 mini bundt cakes

Christmas Cannoli

Ingredients: 1 lb ricotta whole milk or part skim 4 ounces cream cheese 1/2 cup confectioner’s sugar 1/2 teaspoon vanilla 1/4 teaspoon ground cinnamon ¼ cup mini semisweet chocolate chips 2 tablespoons diced candied red cherries or dried cranberries 2 tablespoons diced roasted pistachios 2 tablespoons fresh orange zest + ½ teaspoon juice 12 mini 3”cannoli shells-tested Frank & Sal Bakery

Taste for sweetness, add additional confectioners sugar if needed. 5.Stir in chocolate chips and candied cherries or dried cranberries. 6.Fill disposable piping bag with large round tip with cannoli filling. Pipe one end of shell with filling, turn shell around and pipe the other end extending filling to end of shell. 7.Fill shells right before serving. Filling can be made ahead and chilled until serving time. 8.Garnish with sifted confectioners sugar, extra diced cherries and pistachios if desired. 9. Serve immediately so shells remain crisp. Yield: 12 mini cannolis

Instructions: 1.Line large strainer with cheesecloth place strainer in slightly larger bowl to catch drained liquid from ricotta. 2.Add ricotta to bowl, cover with excess cheesecloth or plastic wrap allow chill overnight in refrigerator. 3.Drain and discard ricotta liquid from bowl. Slightly squeeze cheesecloth to remove excess liquid. Remove ricotta from cloth place in mixing bowl. 4.Whip ricotta and cream cheese on medium speed until smooth and creamy. How to Make Rose Centerpiece and Cranberry Topiary Supplies: 24 dozen red roses 20 sprigs of fresh boxwood 3-5 bunches red hypericum berries 1-6" x 6" white hobnail container 2 blocks of oasis floral foam pruning shears Instructions: 1.Place floral foam in sink or large container. Allow running water over foam until fully saturated (about 2030 minutes). 2.Trim ends of roses at an angle, remove leaves on stem except leaves closer to the head of rose. Cut rose stems 8" long. Remove thorns. 3.Insert roses around the base of container forming a ring. Stems should touch rim of container. Insert a rose in top center of container, fill in with roses between center rose and ring of roses. 4.Cut boxwood into sprigs, fill in around roses and gaps within the arrangement. 5.Cut hypericum berry stems 8" lengths, then fill in around roses and boxwood all over arrangement. How to Make a Cranberry Topiary Centerpiece

Topiary will last up to 12 days if kept in cool room.


Boxwood & Berries

Supplies: Yield: 1 20-30 sprigs of fresh boxwood 3-12 oz.bags fresh cranberries 1-6" round styrofoam ball 3-4 wooden skewers or picks scissors-pruners for boxwood 1-Mossy Mat peel & stick 1-6" x 6" white hobnail container 1 block of oasis floral foam Floral adhesive Instructions: 1.Place floral foam in a sink or large container. Put foam under running water until fully saturated (about 20-30 minutes). 2.Cut 1/4" slice off styrofoam ball so it will sit flat. Peel & stick sheet moss to styrofoam ball. 3.Fill white container with wet oasis floral foam. Cut boxwood stems 7" long, insert around container edge filing until full. 4. Insert wooden skewers or sticks in bottom of moss ball, Insert into center of boxwood pieces in container. 5.Place fresh cranberries in bowl, sort for similar size, attach berries in rows with floral adhesive Recommend you work outside when using glue. Hot glue red felt to middle of tube. Overlapping barely.Trim if necessary to fit around tube. 3.Cut 6-1/2" wide by 6 1/4" strips of black felt for Belt. 4.Cut 6-1" x 1" square gold foam for belt buckle.Cut 1/2 x 1/2" black felt and glue to center of gold buckle. 5..Cut 6-1" x 6 1/4" strips white fur.Cut in half lengthwise to make 12. Cozy comfort makes Dining Divine

Mini Cran-Apple Lattice Pies

Set the table in style with beautiful festive salad plates sporting woodland elements. Bright red cardinals, pinecones with berries and traditional red poinsettias make it easy to create new schemes year after year. A playful mix of red and green plaid set a cheery tone as the cozy comfort of cushioned chairs, and Christmas pillows. Even bright red throws are draped for snuggling after dinner. Oh, what fun it is to dine.The warmth of the fire keeps everyone comfortable and provides dining by fire-light. Above the mantel hangs an evergreen wreath with the same elements seen in the center of table while amaryllis topiaries are decked out with cardinals and pinecones. Mini Cran-Apple Lattice Pies

Ingredients: 3 cups finely chopped granny smith apples 1 teaspoon lemon juice ¾ cup granulated sugar 1 ½ tablespoons cornstarch ½ teaspoon salt ½ teaspoon ground cinnamon, nutmeg ¼ teaspoon ground all spice ¾ cup whole fresh cranberries ¼ teaspoon orange extract

All Butter Pie Crust- Makes 2 crusts 1 stick pure butter, grated and frozen 2½ cups all-purpose flour 2 tablespoons granulated sugar ¾ teaspoon salt 3 tablespoons ice water ½ teaspoon white vinegar 1-4½”Mini Hand Lattice Pie Mold-Williams & Sonoma Egg-wash:1 beaten egg+1 teaspoon water Garnish: sparkling sugar-optional Instructions: Cran Apple Filling 1.Place chopped apples and lemon juice in large bowl. Add sugar, cornstarch, salt and spices. Toss to blend. 2.Pour mixture in large saucepan add fresh whole cranberries. Over medium

heat bring mixture to a boil. Stir constantly until mixture is thickened and reduced to 1½ cup’s. Mixture will be red in color. Remove from heat add ¼ teaspoon orange extract. Stir to blend. Place filling in 2-cup bowl- cover and chill one hour or overnight.. Pie Crust: Chill time 30 minutes 1.In food processor with steel blade, add flour, salt and sugar. Process a few seconds. Add frozen shredded butter to flour mixture. Pulse processor until mixture becomes clumpy, as butter begins to form with flour. Add only 3 tablespoons icy water and vinegar. Process until mixture forms a ball around the sides of the food processor bowl. 2.Remove from bowl flatten into two rounds. Cover with plastic wrap chill 30 minutes. Prepare baking sheet, (one that will fit in your refrigerator or freezer) with parchment paper. You will be chilling the cut rounds & mini pies before filling and baking. 3. On floured surface, roll both dough discs slightly thicker than 1/8 inch. Using top of mold with lattice, dip in flour then cut out 7 tops, use a toothpick to remove the dough caught in the lattice, re-roll these pieces with leftover dough. 4.Place tops on parchment baking sheet and chill. With bottom mold cut out 7 rounds and chill before assembling pie.

Preheat oven to 375 degrees. Assemble Mini Pies 1.Position one solid chilled crust in bottom well of mold, press gently to extend dough up and on top of the mold edge. 2.Fill with 2 tablespoons cran apple filing. 3.Place lattice crust over the top of the filling.
