HELLO WORLD, LISTEN UP! IF YOU WANNA SHAKE THINGS UP THIS THANKSGIVING, YOU GOTTA TRY THIS COX SPATCHCOCK BBQ TURKEY. THIS BIRD’S GONNA BRING THAT SMOKEY, JUICY, TENDER GOODNESS RIGHT TO YOUR DINNER TABLE. LET’S BREAK IT DOWN! ### Prep Time: 20 minutes ### Ingredients: - 1 Whole Turkey (Frozen or Fresh) - Cooking oil spray - 1/4 cup BBQ seasoning

INSTRUCTIONS: 1. First things first, take that turkey outta the package. Don’t forget to remove the giblets and pat it dry, alright? We want that bird ready to soak up all the flavor.

2. Grab some kitchen shears or a sharp knife and cut out the backbone. We’re spatchcocking this turkey, so get in there!

3. Now, cut into the center of the breastbone, then press down on each side to flatten that turkey out. We want it nice and laid out for grilling.

4. Spray both sides of the turkey with that cooking oil spray.

Now, season it up real heavy with the BBQ rub. Don’t be shy—get under the wings and legs too. We’re here for flavor!

5. Preheat your grill to 350 degrees for indirect heat. Place the turkey, skin side up, directly on those grates. Let that grill do its thing.

6. Cook it until the internal temperature of the breast hits 160 degrees. Keep an eye on that turkey every 45 minutes. If it starts to get too dark on the outside, cover it with some aluminum foil.

And if the skin ain’t getting crispy enough, baste it with some melted butter. We want that skin to shine!

7. Once it’s done cooking, pull that turkey off the grill and let it rest at room temperature for about 20-25 minutes. This is key, folks. Then carve it up and enjoy all that goodness!

1. **Fashion Philosophy**: Mz. Inez, you say “Fashion is Yours. It Belongs to YOU!” Can you tell us what that means to you and how you help your clients embrace their unique styles through Anaise Valcour Designs? *First, I have to tell you the origin of Anaise Valcour Designs. Pronounced AH-nah-EEZ' Val-KOO', Anaise Valcour is my grandmother's name who I was named after and it just had that special French sounding flair to it. She was from New Orleans, Louisiana, and I wanted to pay homage to this woman who was God-fearing, simple and yet outstanding. As quiet as she was, she still spoke her peace and we listened. I want her name to live on.

I coined the phrase "Fashion is Yours. It Belongs to YOU!" because YOU are your own fashion and have your OWN style. I just want to enhance what you as a client have in mind. Then for that client to put my clothes on as I put my spin on a person's attire and personality so they can feel good, elegant, handsome and embrace their uniqueness. I've designed a lot of clothes and not everything I've designed is for everybody. But ooooh baby, when a person finds that one outfit or two or three, they feel so good about the choice(s) they've made and they say, "That's me all the way!" or "Gurhl, you did that!" or "That's Fiyah!!!"

I just say, "I am glad I could make you feel like you want to feel or have what you were looking for." I've had many design names before Anaise Valcour Designs, and one was, "ZenVios D. ZignZ". This was a combo name from mine and my daughter and the motto for that line is, "Don't be Envious. Be ZenVios!" You need to be yourself and yet, let me design or find a design that best suits you. Sometimes a client will go in a whole different direction once they gaze upon what I have in my repertoire. I am a one-of-a-kind, material murderer kind of girl. I don't want you to see yourself coming down the street or "the who wore it better" scenario. I want YOU to be unique as your clothes. Stand out! I don't want anyone else to look like you UNLESS you are twins and want the same outfits.

2. **Journey to Design**: With over 50 years of experience, your journey started with your mother’s creativity. How did watching her create clothing inspire you to pursue fashion as a career, and what lessons did you take from those early days? *Now, that's a funny question and a great question. I didn't know my mom sewed when I was a child. Talk about naive, I always thought, when I was younger, there was a cloth fairy. There were five children in the family. Dad was a black man in the service and didn't make a lot of money, but we were comfortable. We would go to sleep at night and in the morning, we would have clothes at the bottom of our beds. Some of you may remember the fairy tale about The Elves and the Shoemaker.

"When it was midnight, two pretty little naked men came, sat down by the shoemaker's table, took all the work which was cut out before them and began to stitch, and sew, and hammer so skilfully and so quickly with their little fingers that the shoemaker could not turn away his eyes for astonishment."(https://americanliterature.com/author/the-brothersgrimm/short-story/the-elves-and-the-shoemaker/) My mom would sew at night and I'm sure she wasn't naked when she sewed, but come the morning after she finished making all of our garments, I was astonished at what I found at what she had created. We were dressed to the Nines.

I initially got into sewing in the eighth grade in Home Ec. You don't hear about those types of classes any more where you could learn how to cook or sew or do automotive or woodshop courses. Those are essential classes we had to take when we were growing up back in the day. I remember the class had a sewing project and we could make anything we wanted. I picked out probably one of the hardest outfits to make. It was a two-piece Tennis set with shorts and a dresslike top with two splits in the front down the legs. I had no idea what I was getting myself into, but I had my mother there to assist me. I still remember the tan fabric with a little floral pattern.

I have always been a different child. I was the fourth of five children. Two girls and three boys. Kinda a loner. My brother above me was three years older and my brother below me was seven years younger. As I was growing up, I didn't want to dress like the others with the same things from the store. I began creating my own designs. When I got to be older and on my own, I would sew my wardrobe on the weekend and wear those garments throughout the week. I got that famous question each week and everyday I wore something new, "Did you make that?" I was proud to say, "Yes". Then I began to branch out.

Friends and people would come to me to ask me to make them something or do their alterations, etc. My first design name was Mz. B. Haven. I showed my mom my business card and she wanted to know who that person was. I just laughed and said, "It's me." She said, "You've got that right."

3. **Cultural Influence**: Spending time in Spain while your dad was in the military must have been a unique experience! How did that time shape your design skills and your approach to fashion?

*OMG!!! Yes, it was a wonderful experience and someday one day, I want to travel back. Zaragoza Air Force Base was where we spent two and half years. The base was a closed base meaning we didn't have all of the luxuries of an open base. Everything was limited. There weren't many families. There was a BX/PX, a very limited Commissary, a movie theater, a gym and the church was our schoolhouse with grades kindergarten to the eight.

Sister and brothers had to go to boarding school. If we wanted a lot of groceries, Dad would have to travel about 200 miles to stock up. So since there were very limited choices, we would go downtown in our large red and white Catalina Pontiac station wagon. That was a sight in itself. And then being black, created another sight.

Mom would take me with her to go material shopping and that was fun. We didn't know a lot of Spanish, but we learned quickly what we needed to do to purchase "Tela", which means material. The material was B-U-T-fuuuul.

I was in awe. Laces of all sorts of colors, styles, and yards and yards of other fineries along with buttons and other notions. I was only nine years and in the third grade at that point. I had no idea what I was looking at or the impact it would have on my life as I grew up. I remember my mother making my sister's New Year's dresses and dresses for herself for her dates with dad. Now, I look back and see where God has taken me and the plans and the impact He had for me to put me in play for the design world. That is another reason why I would love to go back and visit my earlier years' childhood town of Zaragoza and places like Madrid, Barcelona, and Malaga. I would then know what I want as far as fabrics and such and have a greater appreciation for my designer's skillset. I'd know what I was looking at and looking for

4. **Signature Style**: You’re known for blending old-school techniques with modern trends. Can you share a bit about your design process and how you create those custom pattern pieces that set your work apart? *As we all know, about every 20 years, styles repeat. Well, a pair of pants are going to be a pair of pants and a skirt is going to be a skirt and so on. How a person puts their spin on it like fabric, added assets, i.e, extra pockets, zippers, snaps, etc., is what makes it their own and gives you a sense of what you are working with. Materials change - they come and go and some are forever. I've had some Fat Albert kids lookalike material since the 1980's which I made a few outfits from recently. They were some hot and fierce items. I looked online to find some more of the same material and, of course, there was none to be found. I like unique and unusual materials and patterns which make an ordinary outfit, bangin'. You can't mimic someone else's intellectual property on Shein or Temu or even think they can recreate what you did. That's too much like "stealing". I've never been formally trained except for that eighth grade Home EC class. I wanted to attend the Institute Academy of Design and Technology, but they wanted too much for the classes. I have trained myself to do what I do. I pattern hack a lot. Which means I take a pattern I like and use what I need to to create the look I want. I combine patterns to get the result I want. There are some skills I would love to hone in on and take to the next level. So there's this thing called the internet and there are classes and projects on, I believe they call it, YOUTUBE. You can learn a lot from other well-known designers, take masterclasses and then you have your up and comers who have these shortcut hacks to make some of your sewing and designing easier. I have made some mock haute couture designs and I have made some urban garments. Haute couture is a French term that refers to high-end, custom-made, and exclusive fashion meaning "high sewing" or "high dressmaking". In France, the term is protected by law and has strict criteria for collections to earn the label. One day, I am going to achieve that title from the French world. When my mother was alive and she saw my creations, she would say, "Girl, I used to sew, but now you sew circles around me." I thought that to be one of the highest compliments EVER. Eventually, my aspiration is to make it to either New York or Paris or London Fashion week. Now THAT is my ultimate goal.

5. **Radio Hosting**: As the host of Let's Do It Radio, you cover a wide range of topics. What do you love most about connecting with your audience through your show, and how do you choose the topics you discuss? *Ummmm, I love connecting with my audience because I get a variety of people from all over. The name of my main show is Mz. Inez Sez - Let's Talk About It! and it is broadcasted on Tuesdays and Thursdays 6P/7M/8C/9E. Then, there is Bible Study alternating on every other Wednesday and we can't forget about "havin' chu'ch" services on Sundays. My show is worldwide and I may not know where my callers are calling in from or tuning in from until they say from where, but I welcome everyone as we discuss topics. Some of the topics come from what's going on that day, what's in the world today to what's on my mind to suggestions from my worldwide audience. Some of the topics (like politics) get to be really heated because people believe what they believe and really are serious about their beliefs.

My regulars know me and I don't allow cussing, but sometimes those cuss words may slip out. $25 fine. (LOL!) My shows on BlogTalkRadio are recorded for four hours, but if the topic is deep and we want to continue, it can go on for another three to four hours into the morning and many of them have many parts. These shows can be listened to ON DEMAND as well. I have a loyal listening base who I can count on. They also look forward to my shows and what topics I choose.

6. **Living with Lupus**: Your story of overcoming Lupus is so inspiring! How has your journey with the illness influenced your outlook on life and your approach to encouraging others facing similar challenges? *Lupus is a life altering autoimmune dis-ease that causes the immune system to believe that the body's tissues are foreign pathogens, and as such, attacks tissues and is common for Asian Americans, African Americans, Hispanic/Latinos and those of Native American descent. There are two different types: Systemic and Discoid (SLE/DLE - Lupus Erythematosus). People who are affected by DLE usually experience skin sensitivities; particularly when the skin is exposed to the sun. Lesions can develop on the skin, leaving behind scars after they heal. SLE is the more serious form of lupus, as it not only affects the skin, but it also affects internal organs and can cause inflammation and damage to the tissues and muscles that connect the joints, as well as the membranes that surround the heart, lungs, kidneys, and brain. There is no cure for lupus, but it can be treated. The earlier it is diagnosed, the earlier intervention can begin, which reduces the development of more serious problems and can improve a patient's comfort.

I was diagnosed with Discoid Lupus which was discovered by a lesion behind my ear in 1996. Discoid lupus are disclike sores or rashes that are often red, scaly, and raised. Over time, these sores can cause scars, permanent hair loss, or skin discoloration. Discoloration was also in my ear. I thought my earring was digging into my head until the lesion just wouldn't go away. I finally went to have a punch biopsy done of the area and the prognosis was Lupus.

That joker hurt. I was like dang it, man. I had not heard of lupus before, but I believe my oldest brother may have had it, but didn't know it. I found a rheumatologist and was prescribed a steroid called hydroxychloroquine or plaquenil.

You may have heard of hydroxychloroquine which is what Donald Trump had taken for him to be treated for COVID. I was and am not one for taking medicine, but I did for a while. I was hardheaded. My dosage was to take two a day and I weaned myself down to one tablet of the steroids a day. I didn't want to gain all of that weight, even though it was a low-grade dosage. There were times I had missing spots in my hair and I had to do the combover or cover up.

During that time, I was relaxing my hair and it seemed like the lye from the relaxer would kill or heal the scab in my hair. It burned like hades, but I persevered through it. I told myself I was not having it - not having lupus. Not in denial, but I was done with it. I told the devil he was a lie and no weapon formed against was going to prosper. One day during a checkup, my doctor told me I didn't have lupus anymore. I did the happy dance, kissed him on his forehead and had not been back. That was in 2006. Earlier in this story, I said there was no cure, but it can be treated. I was treated and haven't looked back since.

So many of my friends or people I have come in contact with have lupus and they are suffering. I try to keep in contact with those I can to offer encouragement or a listening ear. One of my friends wanted to commit suicide because it IS so painful without the usage of her hands and she is unable to be as active in her life as she used to be.

They want to know how I defeated it. I gave it to God and He has been taking care of me. I may be one of the fortunate few who caught it early enough to be treated. I've been to the doctor recently for some blood work up and he said my lupus is at bay, but to me, it's gone away.

7. **Message of Hope**: What’s one key piece of advice you’d give to someone struggling with their own health issues or trying to find their personal style? How can they embrace their journey and express themselves creatively? *My Message of Hope - Faith. I've been rooted in the church for as long as I can remember. My parents were a deacon and a deaconess in the church and they kept me in God's good graces. There we were sitting in church as a family and we grew as a family. Some of the family members are still grounded and rooted in chu'ch and some have gone astray.

Whenever I have any kind of issue I am unable to solve, I turn to God. I know I am human, but God has gotten me through so much. We all deal with our struggles in different ways. Some pray. Some meditate. Some stress (not good for lupus). Some talk. Some workout or exercise and some are not sure how to handle it. Some have support groups. I am that listening ear if you ever want to talk.

As far as advice on finding their own personal style, sometimes you may need to experiment and see what fits you best, what looks good on you or what's your fave style. Maybe you may need an upgrade. Let me UPGRADE U! (Beyonce voice) At times, a person doesn't even know what their style may be. You are not alone and are more than welcome to contact me and we could do a consultation to try to "FIND YOU" and what suits you best. For a person to embrace their journey, you have to be willing to take a ride and go through a few ups and downs and ins and outs and always be ready to alleviate some garbage. You may come across commercials where you'll see even older people who have found their style. It's not ever too late to express yourself creatively. You just have to be up for the challenge.

Which means sometimes I may be tired and I may not want to go to school or practice but i have to remember my goal and that’s winning both sports wise and academically.
