Jamiesons Run Chardonnay 750ml

$ ASIAN-STYLE WHOLE STEAMED FISH Ingredients • 1kg whole fish gilled, gutted and scaled • Sea salt • 10 thin slices of peeled fresh ginger • 2 large cloves of garlic • 3 tablespoons coriander • 2 tablespoons shallots chopped • 2 tablespoons lemongrass chopped • 1 bunch spring onions • 4 small red chillies • 1 small lime • 1 cup vegetable stock • 2 tablespoons soy sauce • 1 teaspoon sesame oil

Method 1. Cut four equally spaced diagonal slits on either side of the fish, cutting through to the bone.

2. Rub the flesh inside and out with sea salt and allow to rest for 30 minutes.

3. Combine the ginger, garlic, coriander, shallots, lemongrass, spring onion and chillies.

4. Place the mixture into the cavity of the fish and sprinkle some on top. Place the fish on a steaming rack.

5. Pour stock, soy and sesame oil into a wok or large pot and bring to boil.

6. Place the steaming rack in the wok and steam for approximately 15-20 minutes with the lid on.

7. Once cooked remove and serve with some fresh lime.

2. Combine braise and peas; divide between 4 x 1 cup-capacity ovenproof bowls or ramekins.

3. Quarter the pastry sheet.

6. Slit tops for steam to escape.
