PAN SEARED SCALLOPS WITH SAGE AND ROCKET SALAD

Ingredients

Method

• Extra virgin olive oil • 24 scallops, roe on • 80g unsalted butter, coarsely chopped • 1/3 cup thinly sliced sage leaves • 100g rocket leaves • 1 punnet cherry tomatoes, halved • 1 Lebanese cucumber, finely chopped • 1/2 Spanish onion, finely chopped • 1 tbsp pine nuts, toasted (see hint) • 1 lemon, juice only

1. Combine tomatoes, cucumber, onion, pine nuts, a splash of extra virgin olive oil and lemon juice. Season to taste with sea salt and freshly ground black pepper.

2. Heat oil in frying pan over high heat, add scallops and season to taste. Cook for 30 seconds each side or until golden, add butter and sage to pan and cook for another minute or until the butter melts.

3. To serve, combine salad mix with rocket leaves, arrange on plate with scallops and lemon wedges.

Hint: To toast pine nuts, preheat oven to 200C. Spread nuts over a baking tray. Cook for 5 to 7 minutes or until golden.

SLOW COOKED BEEF STEW Ingredients

1. Brown steak well in the oil in a fry pan, do it in batches if necessary to avoid stewing the meat.

500g chuck steak, cubed 1 tsp vegetable oil 1 brown onion, chopped 2 carrots, chopped 2 potatoes, chopped 1 tsp minced garlic 1 tsp Worcestershire sauce 1 glass red wine 1 tsp beef stock powder (optional) 1 fresh thyme sprig (or 1 teaspoon dried thyme) 2 bay leaves Salt and pepper Water

2. When steak has a good colour, transfer to crockpot and pour in red wine. Add the rest of the ingredients into dish and stir. Season well with pepper and salt.

3. Add water to cover vegetables and steak, about 1/2 cm above is good. Cook in slow cooker on high for 5 hours.

4. Half hour before the end of cooking remove lid to reduce the sauce. It should have nice gravy like consistency. If the sauce isn’t thick enough you can add a packet gravy mix to get immediate thickening. The meat should be tender and melt in your mouth. Enjoy!
