Blackberry and Lemon Layer Cake
This lovely moist and tangy family cake is also great made with blueberries or raspberries.
Serves: 8 Preparation time: 20 mins Cooking time: 60 mins
Method lllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllll Sieve the flour, salt and baking powder into a large bowl. Rub in the fat until it resembles breadcrumbs and then add 110g of sugar. Beat together the egg, milk and lemon rind (save a little for the topping) and then stir into the dry mixture until you have a thick batter. Rinse and dry the blackberries on paper towel then halve any very large ones. Preheat the oven to 180C /350F/ gas mark 4.
You’ll need • 350g plain flour • 1 tsp salt • 1 tbsp baking powder • 1 tbsp chopped fresh sage • 175g butter or margarine Pour a good half of the mixture into a lined and greased 15• 200g demerara sugar • Finely grated rind 1 large 17.5cm loose-bottomed tin. Sprinkle on half of the blackberries lemon and sugar. Bake for about one hour until firm and golden. It offers its members personal and social opportunities whilst supporting Guiding and Scouting. It is a branch of Girlguiding but maintains a separate identity. The first virtual switch-on of Blackpool Illuminations generated more than 225,000 views with people watching from all around the globe.
performance in Blackpool’s Empress Ballroom, and a series of “at home” performances featuring Melanie C, Becky Hill, Fleur East, Tom Grennan, Joel Corry, as well an exclusive routine by Diversity.
The freely-accessible streamed show, which culminated in seven of the UK’s Corona Heroes switching on the Lights, created the biggest ever audience for a Switch-On event and a very special moment in Blackpool Illuminations history.
Blackpool-born singer-songwriter Rae Morris performed two live songs in the ballroom, where she was joined by hosts Jordan and Perri, Blackpool Illuminations creative curator, Laurence LlewelynBowen, and the seven Switch-On stars.
At one point, the show was trending at number six in YouTube’s top ten videos with people watching in Australia, Brazil, Netherlands, France, Ireland, Cyprus and America. Around 86,000 people watched the stream on the YouTube channel, a further 141,000 on Facebook.
They included an NHS consultant, frontline nurses, a hospital catering manager, extraordinary fundraisers, and a therapy dog and his owner. Each carried an illuminated strip that was attached to the main switch so that they could all play a part in triggering this year’s Blackpool Illuminations.
Over the past few years, the Switch-On has been staged in an outdoor arena on the promenade with a live audience of around 18,000 people. Due to coronavirus restrictions, this year’s outdoor concert was cancelled. Instead, it was replaced by the virtual event, produced by MTV, with a mixture of live

A further 47 Corona Heroes have illuminated images of themselves included within that section. They were chosen from hundreds of nominations from across the UK. It has already been announced that the Illuminations will be extended by two months, starting on September 4 and ending on Sunday 3 January, 2021. It will be the first time the Illuminations have shone over Christmas and New Year.

Leona Harris: The nurse from Rossendale has worked as a COVID-19 frontline nurse at Fairfield Hospital in Bury since the start of the pandemic. Not only that, she has helped raise £75,000 and bought i-Pads for patients in hospitals, care homes, and hospices all over Britain to keep isolated patients and families connected. Her remarkable efforts earned her the nickname of “The Angel from the North”. Rachelle Sutton: For three months, the nurse moved out of the family home and lived in a hotel so that she could complete 12-hour shifts at the Nightingale Hospital in Manchester at the height of the pandemic. During that time she won the “star award” from Nightingale for her dedication and compassion for end-oflife patients.
Will Ritchie: The sixyear-old boy from the Wirral was born with a severe visual impairment and suffers with epilepsy. During lockdown his parents took the opportunity to increase his exercise tolerance. Over several weeks, he went from 100m to 1500m a day and then completed a challenge for June – Will’s Marathon Month. Inspirational Will has now completed 30 miles and raised more than £14,000 for the Wirral University Teaching Hospital Foundation Trust COVID-19 Support Fund.

Dr Jason Cupitt: The consultant led the COVID response at Blackpool Victoria Hospital’s Intensive Care Unit, working every day and most nights at the peak of the pandemic, spending only a few hours away from the hospital over several months. His constant presence provide encouragement and reassurance to staff and patients in the struggle against COVID-19. David Anderson and Jasper the therapy dog. Hospital chaplain David and his cockapoo have provided support and comfort to sick patients as well as boosting morale for the staff on wards at East Lancashire’s NHS Hospitals. Earlier this year, Jasper was presented with an “employee of the month” award for his services to the hospitals.
Donna Doyle: Employed at Alder Hey Hospital for more than 40 years, the restaurant manager led her catering team through some unprecedented challenges, instantly doubling the number of meals produced on site to provide a free service for patients, families, volunteers and staff, and initiating a delivery service that took free food and drink to front-line staff.
Kirsty Jones: The nurse from Blackpool’s Trinity Hospice moved into a flat by herself in order to continue her work but also protect her husband who had an underlying medical condition and was on the shielded list. After moving out of the family home on April 15, Kirsty was only able to make daily contact with her husband and two children through FaceTime calls. She was eventually able to return home and be reunited with her family five weeks later.

fter months of renovation there is now a new creative hub in town called ‘Market House Studios’. The new studios are part of the Fleetwood Market complex and are thanks to a grant secured by the Council of £772,085 which is part of a wider £1.22m redevelopment project. Although Fleetwood Market was first opened in 1840 the large Victorian Market House was not built until 1891. It was the home of the Market Manager, his family, and servants. The building has stayed true to its Victorian heritage and in 1990 the market was extended and is now one of the largest markets in the North West of England.

For 25 years the Market House had remained empty but now it has a new lease of life and is ready to make a creative contribution to Fleetwood Market. The Community space will host local exhibitions and other activities including school visits and workshops, attracting a new mix of customers. Set up by Wyre Council and funded by the Coastal Communities fund, the studios will be managed by a full time Studio Coordinator. The position has been given to Wyre born and Blackpool based artist Adrian Pritchard. Adrian who has experience of setting up and managing artist studios across the country has exhibited his own work nationally and internationally in both solo and group exhibitions. He began his professional career as an artist in Cornwall in 1998 and has received several awards for his tremendous

Creative studio spaces at Fleetwood Market offers a new arts hub for Fleetwood work. Shortlisted for the John Ruskin Art Prize in 2012; awarded the visitor’s choice at the Neo Art Prize in 2013 and a solo show at the Grundy Art Gallery in 2018 are just to name a few. As well as running with the day to day management of the Studios; Adrian hopes to raise funds for artist bursaries, residencies, and a radio podcast from the Market. He is also keen to raise money for further studio developments and projects off site within the community. Adrian says, “The new studios at Market House will provide affordable workplaces for creatives while also building connections between local communities and businesses; opening the door for future developments through the creative industries, artist opportunities and training courses.”

aunched 8th August, Fleetwood Wellbeing Way is a new resident-led initiative, created in association with Lancashire Mind. For the initial pilot there are signs and banners along a 1.83km route on the upper promenade between the sea cadet base and the old pier site. The group have
worked with Wyre Council and Lancashire County Council to re-purpose the disused bus stop signs. These signs display tips to support better mental and physical health, plus there are challenges to take part in which will be changed monthly. For those unable to get out and about, or people just wanting some addition challenges, there are more activities on the group’s Facebook page, and these are changed fortnightly. The group are forging links with local PT instructors, mindfulness coaches and local historians to find fun and engaging challenges to share with the local community. Take a look at the Fleetwood Wellbeing Way route and join the Facebook page today. We all know it’s important to look after our mental and physical health and never more so than now. If everyone incorporates these actions into their daily lives and shares their experiences and suggestions for future challenges Fleetwood can build up another great community group who can support, share ideas and encourage each other.

The new exhibition for 2020 is ‘ Take A Deep Breath’ - the story of the world famous lozenge, Fisherman’s Friend. The exhibition, sponsored by Lofthouse of Fleetwood, features the only bottle of James Lofthouse’s original linctus still in existence! Fleetwood’s last Arctic trawler, Jacinta, a floating museum in the port since 1995, is being scrapped due to weaknesses in the structure of the hull. Many artefacts from the trawler have been donated to Fleetwood Museum by the Jacinta Trust. Some items are on show in the deep sea gallery. The museum shop has numerous local interest books on sale, Fleetwood postcards, children’s pocket money toys and unusual gifts. Why not pop in to look round?
