Spiced Festive Biscuits Introduction
Rustle up a little festive cheer with these delectable and delicately spiced biscuits, ideal for hanging on your tree or just for brightening up your tea break.
Top Tips
• Turn your biscuits into tree decorations by making a hole into each one before baking, using a skewer then thread through ribbon once cooled. • This dough can be made ahead by placing in the freezer after having been wrapped in cling film to chill. Simply defrost and roll out to bake. • Pre-made icing or chocolate that is ready-to-melt in a tube is a great option for those who feel less confident using a piping bag.
Method
1. Gently warm the butter, sugar and golden syrup over a low heat until it has melted. Combine the dry ingredients in a large bowl making a well in the centre to pour the wet 26

ingredients into. Mix until a workable dough forms. Once cooled, wrap the dough in cling film and place in the fridge for at least one hour to chill. 2. Preheat the oven to 190°C, fan 170°C, gas mark 5 and line two baking sheets with baking paper. Meanwhile, roll out the biscuit dough onto a lightly floured surface to around ½cm thick and cut out your biscuits using festive shapes of choice. Reroll leftover dough and cut until you have none left. Bake for 10-12 minutes until a golden brown.
For the biscuits 350g plain flour – plus extra for rolling 200g butter 175g dark brown sugar 1tbsp golden syrup 1tsp bicarbonate of soda 1 large egg ½tsp ground cinnamon ½tsp ground nutmeg ½tsp ground ginger For the decoration 100g white chocolate (melted) OR 100g icing sugar Sprinkles or silver baubles
3. Once cooled, preferably on wire racks, place either melted chocolate or icing sugar – that has been mixed with water to form a thick paste – into a piping bag and use to decorate the biscuits, adding baubles and other decorations while the icing is still wet. Let dry completely before hanging.

Paul Wilson from Poulton-le-Fylde works for the Blackpool office of fast-growing home care company Alcedo Care Group. Since the beginning of this year, Paul has delivered therapeutic dance sessions to Alcedo Care clients across the Lancashire region, either dancing for them or with them, to raise their spirits, give them an emotional release and help them manage their lockdown stresses and his work has been recognised with a First Class Degree in Dance from Edge Hill University. Based on the results of his research, Paul made a series of recommendations outlining how dance can be adopted into all domiciliary settings to improve the lives of home care clients; something that Alcedo Care is now incorporating widely across its regional offices.
Paul said: “Dancing can bring so much joy and stress relief in times of pain and pressure. It has so many physical, emotional and health-related benefits including bringing people together and helping people feel less isolated and lonely. Local Free Computer Clinic celebrates Eight Years The West Fleetwood Community Computer Clinic recently celebrated its eight-year anniversary and what a year it has been. Started on 2 September 2013, the Clinic, which meets every other Monday at Fleetwood’s Rossall Tavern, has seen many changes but the pandemic lockdown has brought the biggest challenge. “Our first seven years were a ‘walk in the park’ compared to last year”, said Dave Carlos one of the Clinic’s ‘geeks’. “Our past experience gave us all the skills needed to assist local schools to provide connected devices to their pupils, so that they could continue classes at home. We received over 400 donated devices and managed to distribute 315 to local schools after refurbishment”. The team of five ‘geeks’ all worked from home, reviving the donated machines. This involved cleaning all data to certified standards, mending broken machines, reinstalling basic systems

before doing a thorough physical clean and donating them to the schools. A corporate sponsor, AFD Software, provided the financial support needed. Every primary school in Fleetwood which needed machines was given at least one batch of devices and some received over 20 for their pupils. The Clinic even delivered machines as far away as Crewe and Macclesfield after a corporate donor gave 220 machines on the condition that some benefitted schools local to them. The others were donated to Fylde schools. The Clinic celebrated its anniversary by restarting its regular sessions at the Rossall Tavern on Larkholme Lane in Fleetwood.
