Rainer Becker’s Seared Tuna on a bed of spicy red onions, with a chilli ponzu sauce and fried garlic

Introduction

Germany-born Rainer Becker honed his craft in Tokyo before making his name in London with the celebrated Japanese restaurant Zuma.

Method

I didn’t have the inspiration of a famous chef to become one myself. I think when I first helped my mum, I probably was six or seven years old. I didn’t know anything about cooking, so the inspiration came really from the products.

I liked going in the garden, picking strawberries and cherries, and that fascination went up another level when I discovered the incredible flavours and tastes of Asia.

That’s why this spicy seared tuna recipe means so much to me – it combines so many intense yet complementary flavours, and every time I cook

this it transports me off to a different culture and different place.

1. Cut the tuna into blocks, season and sear in a very hot pan with a little oil until coloured. The tuna should be raw apart from the outside 2-3mm. Place on a lined tray and refrigerate.

For the onions, sweat off the finely chopped garlic, ginger and dried chillies for a few moments, then add the sliced red onions and cook till semitransparent.

2. Add the soy, sake, rice vinegar and sugar and bring to

For the tuna

• 800g tuna loin

• 500ml ponzu sauce

• 100g chilli daikon

• 80g spring onions – thinly sliced

• 20g deep fried garlic

For the chilli braised red onions

• 5 red onions

• 100ml soy sauce

• 100ml rice vinegar

• 100ml sake

• 60g caster sugar

• 12g ginger – finely chopped

• 2 garlic cloves – thinly chopped

• 1½ dried red chillies – large (seeds removed)

the boil, remove from the heat and strain, then allow to cool on trays. The onions should still be al dente, spicy and a little sweet.

3. Thinly slice the spring onions. Fry off the sliced garlic till crisp and golden brown and grate the chilli daikon.

4. Place a pile of the spicy onions in the centre of a salad bowl, cut the tuna into slices and roll up, then place six rolled-up slices of tuna on the onions in a pyramid shape.

Add a little chilli daikon to some of the ponzu sauce and pour over the tuna, garnish with the fried garlic and sliced spring onions. Finally, finish with a small pile of extra chilli daikon.

He’s a brilliant presenter, accomplished gardener, talented novelist and all-round horticultural inspiration. This month, Alan Titchmarsh talks about the most common mistakes we make in our gardens.

I always say, as a golden rule, prevention is better than cure, so with that in mind here are my top seven gardening mistakes… and how to avoid them!

Firstly, you can have too much of a good thing! Less is more when it comes to good gardening, and if you cram too much together it’ll look a mess, or worse still, will die!

Another big error is over- and underwatering. Be regimented over your watering routine and adjust it depending on rainfall to ensure your garden is nicely hydrated at all times.

Next, always ensure what you’re pulling up are weeds and not slow-developing flowers. We can sometimes find ourselves being particularly ruthless with what grows in our gardens, so remember, everything grows at a different rate and sometimes the most mundane of plants will flourish to become the most beautiful…

but only if they’re left in the ground!

Another big thing is failing to prepare your soil. Give your plants a chance by ensuring the soil they’re in is in good condition. A simple testing kit will let you know if you need to re-compost, add fertiliser, or simply switch to a different soil type.

You should also steer clear of what I call ‘the bullies’! Japanese knotweed and Russian vine are particularly unruly and will literally

My final piece of advice is to try to spread the love around your garden. We are a friendly walking group who meet on the 2nd Wednesday of the month. We travel by coach and start at Fleetwood picking up in Cleveleys, Thornton, the River Wyre and the main road at Little Eccleston.
