the Sweet Potato The sweet potato is a truly remarkable vegetable. Available as a Kentucky grown vegetable year round, the sweet potato is serves as a staple for many families, because of its long shelf life, nutritional value,and versatility. It can be baked, boiled, microwaved, and mashed as it serves as a great accompaniment to any meal, while serving as an excellent source of fiber, complex carbohydrates, and vitamins A and C. If stored in a cool, dry dark place with good ventilation, the sweet potato will retain its quality for up 2 months or at room temperature for 2 weeks. It’s vibrant color also adds interest to any dinner plate.
