Shallots and Other Alliums

BY SUSAN ROSSER I have a love-hate relationship with shallots. They’re a small, expensive onion with a delicate flavor. And when I call them expensive, I mean in comparison to other alliums. Perhaps only the esteemed leek rivals the shallot when it comes to price.

I love shallots because they elevate many a recipe. However, I do find myself questioning the expense. Can’t I simply substitute an ordinary onion?

Enter the humble yellow onion and my profound devotion to this ubiquitous allium.

The onion is a pantry staple and the flavor backbone of many recipes. And, of course, they add some budget-friendly bulk too.

During the height of the pandemic, my sister occasionally texted

me that she was “down to one onion.” She was limiting her trips to the market and lived with a constant terror of running out of onions. Who am I kidding? I shared her fear. The dread felt like a gray ceiling of looming rain clouds hovering in the distance, just waiting to ruin my day and my hair.

Of course, there are the onion detractors. Some in this group of

onion-haters object to the sharpness of raw onion. And of course, if misused, raw onion can overpower a dish, but it does have its place.

For instance, a burger without a bit of chopped raw onion can be a one-note fumble. Yes, other toppings and condiments help the hamburger reach its place in the pantheon of fabulous foods. But the crisp, sharp bite of onion is the perfect partner for a fatty and flavorful beef patty. I would argue that those who don’t appreciate the onion simply haven’t been introduced to its magical properties.

Whenever ordering in a restaurant, I have a friend who would always end her directive with, “no onions of any sort.” Yet, we were dining out one day, and she was intrigued by a fish dish topped with caramelized onions. I implored her that to order that particular dish without the onions would be criminal.

Furthermore, having had the dish in the past, I explained that these onions were miraculously sweet and bared no resemblance to their raw and crunchy counterparts. The soft and slow caramelization process rendered them into an entirely different food than the one she feared would ruin her fish. I’ll skip to the end.

She loved them. I won’t judge her. Perhaps she had a traumatic raw onion experience in childhood.

And, of course, there are my dad’s famous onion sandwiches — a weekend staple in my childhood home. He would layer thin slices of onion on a piece of generously buttered crusty rye bread, sprinkle with a touch of salt, and top it off with another slice of buttered rye. For reasons I did not understand as a child, my mother was not a fan of my dad’s onion sandwiches.

The simplest of sandwiches but oh-so-delicious. I have to admit, although I haven’t had one in years, just writing about it now makes me want to run out and procure a freshly-baked crusty rye.

I always have onions handy. Y This column is part of my 2022 series of thing I love.

Marinated Onions — for people who don’t like onions — you will now.

This is a no-recipe recipe — there are no exact amounts required.

Slice a red onion and place in a bowl. In another bowl, mix about 1 cup of olive oil with a tablespoon or two of vinegar (any kind you like) and kosher salt to taste. For one onion, you can also add dried oregano, no more than a teaspoon. Whisk the oil mixture and pour over the onions, so they are submerged. Add more olive oil if needed.

Cover and let sit on the counter for 10-12 hours. The onions are good on just about anything — sandwiches, scrambled eggs, tacos, salads, grilled meats, roast chicken — whatever. My favorite — lay them on a generously buttered piece of rye bread. The onions will keep at room temperature for about two days. You can refrigerate them after their initial marinade, but let them return to room temp before using.

Lighthouse Point Is Set To Get Its First Hotel A La Quinta hotel planned for a vacant site at 4060 N. Federal Highway in Lighthouse Point received site plan approval from the Planning and Zoning Board unanimously last month.

The 4-story, 80-room La Quinta hotel, whose parent company is Wyndham Hotels & Resorts, will be the first hotel in Lighthouse Point, according to city officials.

The hotel site is directly south of the Vintage At Lighthouse Point townhome community and north of Lighthouse Point Gardens North condominiums, both of which are three stories high. The residential area east of the site is mainly fourplexes, duplexes and townhomes.

The hotel rooms will be located on the first three floors of the hotel building. An open-air pool deck and an indoor fitness center will be on the fourth floor.

The hotel’s ground-floor main lobby will include an area that serves complimentary breakfast for hotel guests, but the hotel will not have a restaurant. Hotel guests will be able to purchase snacks, bottled beverages and toiletries at a graband-go space next to the reception desk. Alcohol will not be sold on the premises.

The hotel will have 85 on-site surface parking spaces. A covered area for pickup and drop off will be

located at the hotel entrance, which will face south.

The developer behind the hotel project is MATT Development, a family business based in Long Island.

The original plans were for a 4-story dual-brand hotel that paired La Quinta by Wyndham and Hawthorn Suites by Wyndham under the same roof. The dual-brand hotel was slated to have 93 rooms and 103 parking spaces. It would have included a two-level open-air parking garage at the southeast corner of the property. The pool was going to be an outdoor swimming pool located at ground level between the hotel building and the parking garage.

Thomas DeSousa, general partner of MATT Development, said the parking garage was removed from the plans because “the property’s

zoning does not exclude a raised parking structure, but it doesn’t include it either.”

According to city administration, MATT Development was advised that they would need to propose a change to the city’s code to allow such a structure.

Proposing a change to the city’s code, and possibly going through a court process, would have been too lengthy, said DeSousa.

Without the parking garage, more parking spaces needed to be added at grade level. In order to accommodate the additional grade-level parking, the number of hotel rooms had to be reduced and the pool was relocated to the fourth floor. Because the room count was reduced, the hotel could no longer be a dual-brand hotel.

La Quinta Hotel Gets Approved for Lighthouse Point CONTINUED

La Quinta has “a good name in the industry,” said DeSousa.

All employees of the hotel will be trained by La Quinta.

DeSousa hopes to begin construction of the hotel in 2-3 months. He expects construction to take approximately one year to oneand-a-half years to complete.

The hotel site is just over 1.4 acres, with an approximately 150-foot frontage on Federal Highway. The hotel building will run lengthwise east to west on the property, and will be situated at the northwest corner of the site.

The property is zoned as a Special Business District (B-3A) with an underlying land use designation of Commercial.

The hotel building height will be 50 feet to the flat roof, and 54.8 feet to the top of the elevator and stairwell shafts. An 8-foot perimeter wall will be built between the hotel and the adjacent residential properties, which is a requirement of the city’s code.

In March, the city’s Community Appearance Board approved the hotel project with several conditions, some related to concerns about protecting the adjacent neighborhood from the impacts of lighting. Lighting shields must be included on all of the ground-level light fixtures along the property lines – including the parking lot lighting – to direct the light downward. must be surrounded by a 6-foot-high screening wall.

A condition set for the landscaping requires that the ground cover (excluding grass), the shrubs, palms and trees must be primarily South Florida native plant species.

The Planning and Zoning Board approved the site plan subject to the following: all of the requirements of the Community Appearance Board

must be met; the pool lights must be shut off at 10pm or earlier; and the lights must be restricted to a downward orientation to reduce the overflow to the surrounding area.

MATT Development purchased the property for the hotel in January 2020 for $2.2 million.

The site has stood vacant for many years. Most recently, it was occupied by Gaucho Rodizio, a Brazilian steakhouse, and prior to that, Chateau De Ville, a catering and event space. The structure that stood on the property was demolished, and the parcel has been undeveloped since.

After building the La Quinta hotel, MATT Development will own and operate it, said DeSousa.

MATT Development built and owns a 4-story building in Rego Park, New York, that consists of a 50-room Wyndham Garden Hotel, a Starbucks, fitness center, BLVD Bistro & Bar, retail space and a 77-space parking garage.

DeSousa, who owns a condominium in Deerfield Beach and lives there in the winter, said his family was looking for property to develop in the area and purchased the one in Lighthouse Point because “we thought it was a perfect spot for a hotel, and it is zoned properly for a hotel.”

“We anticipate our clientele will be couples and families, which is the target market of La Quinta,” said DeSousa.

“It is our desire that the hotel be an asset to Lighthouse Point in terms of revenue, appearance and convenience.”

The convenience aspect is that family and friends coming to visit Lighthouse Point residents will have the option of staying at the hotel, said DeSousa.

DeSousa noted that his son Michael DeSousa, managing partner of MATT Development, was instrumental in bringing La Quinta on board and moving the project forward.

“We are actively looking to either buy or develop property in Florida because we hope to eventually relocate to South Florida,” said Thomas DeSousa. Y

Lighthouse Point’s New Mayor Kyle Van Buskirk Lighthouse Point’s new mayor, Kyle Van Buskirk, was sworn into office on April 4, after being elected unanimously by his fellow commissioners to fill the office left vacant by the passing of Mayor Glenn Troast on March 23.

Per the city’s charter, Van Buskirk will fill the office of mayor until the next regular city election, which is in March 2024. Van Buskirk had held City Commission Seat 4 since 2014.

Van Buskirk did not want to be sworn into office until after the city’s Keeper Days weekend.

“This is a time to honor Glenn’s legacy over this Keeper Days weekend,” said Van Buskirk after being elected mayor.

“There is no doubt he has been a keeper of our city.”

While fulfilling his duties as mayor, which is a part-time position, Van Buskirk will continue his career in the fire service.

Van Buskirk has been with the Broward Sheriff Fire Rescue since 2011, and has held the position of battalion chief since 2013. Prior to that he was the with the Deerfield Beach Fire Department for nine years, until it merged with the Broward Sheriff Fire Rescue.

Van Buskirk said his leadership role as a battalion chief will help him as mayor. He also said that his work schedule – 24 hours on/48 hours off – “will allow me to spend the time that is needed to be a successful strong mayor.”

Lighthouse Point and Plantation are the only two municipalities in Broward County that have a “strong mayor” system, which means the mayor is more involved in running the city.

understanding of budgeting, cost effectiveness and the procurement process. In his current role as a battalion chief at Port Everglades, he has learned about managing people.

“I have captains, lieutenants, drivers and firefighters who, through the chain of command, all report to me,” he said.

Van Buskirk said one of the most important tasks he will be focusing on in his beginning days as mayor is how to best start the process of repairing or replacing city bridges that have infrastructure issues. He said he is looking forward to the completion of the City’s upcoming police contract, moving personnel into the new the fire station, community center and public works building, and finalizing the Tennis Center management contract.

One of the goals Van Buskirk has as mayor is to make sure the City’s code rewrite, which began over two years ago, gets completed. He also wants to make sure the City continuously focuses on resiliency in terms of seawalls and sea level rise. Other issues that he considers important are street paving, employee retention and keeping up a “great employee morale.” His

main focus is to “continuously provide great services to the residents of Lighthouse Point and improve upon them for the future,” he said.

Van Buskirk, who grew up in Deerfield Beach, started his fire service career in 2002 as a firefighter for the Deerfield Beach Fire Department, working his way up to captain.

After graduating from Deerfield Beach High School in 2000, he did his fire training at Florida State Fire College in Ocala, which he chose because “it’s one of the toughest fire academies in the country,” and he “wanted to be the best.” He graduated #1 in his class.

He then did his EMT training at Broward Community College (now Broward College).

Van Buskirk chose to go into the fire service to follow in the footsteps of his father, who retired in 2006 as a battalion chief with the Deerfield Beach Fire Department.

“I share my dad’s love for helping people,” said Van Buskirk. He and his father worked together for four years at the Deerfield Beach Fire Department.

Van Buskirk met his wife Christine Balistreri-Van Buskirk when they were attending Deerfield Beach High School.

“That’s the most important part of this whole story,” said Van Buskirk.

Christine grew up in Lighthouse Point, and her family’s roots in the city go back 60 years.

“Her bringing me into Lighthouse Point is what started my passion for this great city,” said Van Buskirk.

Van Buskirk met Christine when he was a junior and she was a sophomore. “We’ve been together every day ever since,” he said. “It was love at first sight, no doubt about it.”

They have four children – Finn, 8, Parker, 10, Wyatt, 12 and Reagan, 14.

Chaos Fishing Gets Green Light for New Store in Lighthouse Point The property located at 4460 N. Federal Highway in Lighthouse Point — formerly occupied by the Thai restaurant Red Lotus — is set to become a new Chaos fishing gear and apparel store. The Planning and Zoning Board unanimously approved a site plan for the project in April.

Lighthouse Point resident Marshall Gordon, who already has a Chaos store at 4301 N. Federal Highway in Pompano Beach, is making the Lighthouse Point store the company’s flagship location.

The plan for the Lighthouse Point location, which is about one block north of the Pompano store, is to demolish the southeast portion of the existing building, and to remodel and expand the remaining building space. The covered outdoor patio that faces Federal Highway will be enclosed and become part of the retail space. A second story will be added above the patio area for use as office space.

Gordon purchased the property in Lighthouse Point for $1.65 million in September 2020. He said he liked the site because it is the only commercial property on Federal Highway in Lighthouse Point that fronts a canal. The rear property line abuts the North Grand Canal.

The new Chaos location will include a fishing platform overlooking the canal, so patrons can use it to try out fishing rods.

In addition, Chaos plans to use the platform to host youth groups and teach them hands-on fishing skills in a structured, safe environment, said Gordon.

The 0.63-acre site will be reconfigured with an updated parking area and new landscaping.

The store will be accessible not only from Federal Highway, but also from NE 44th Street, which runs south of the property.

the community, and hopes the new fishing platform becomes a gathering place for local anglers of all ages.

Gordon expects the project to break ground this coming summer, with construction taking 8 to 12 months to complete.

Gordon opened the Chaos store in Pompano — a 6,000-square-foot leased space — seven years ago. His first Chaos store was a 1,500-squarefoot space on Federal Highway, south of Atlantic Boulevard, that opened in 2008. Two Powerful Lessons from Pops

I REMEMBER THIS LIKE IT WAS YESTERDAY. I HAD JUST BEEN HIRED AT THE LOCAL MARTIAL ARTS SCHOOL WHERE I TRAINED TO BE A PART-TIME INSTRUCTOR. I WAS 15 YEARS old.

I was hired to teach three days a week and my hourly wage at the time was $4.25/hour.

Of course, this was back in 1992.

I was thrilled! I was going to get paid to teach martial arts — something I was happy doing for free.

(I still feel that way today! Teaching martial arts is my dream job and I count my blessing every day I get to do it for a living.)

The following day, I was in the kitchen, getting my breakfast ready, when my dad told me he wanted to talk to me. He sat me down and gave me a talk that has stuck with me ever since.

He told me that the school I worked for was counting on me to be there to work certain days, and I had to take that responsibility seriously. He told me never to slack off and make some B.S. excuse about why I couldn’t go to work one day.

My dad was a very gruff, to-the-point kind of guy. He didn’t know how to sugarcoat anything.

He drilled into me that being “kind of” sick or “not feeling that well” was not a reason to miss work. “They hired you. They are counting on you, and you have a responsibility to be there to do your job.”

I got the message loud and clear, and the reason the message sunk in is because my dad lived by that philosophy himself. He never called in sick or ditched work because he was up too late the night before. It just didn’t happen. I can hardly remember him not going to work.

He lead by example. He walked his talk, and I saw it. Message received Pops!

Now for the second message he gave me that morning that continues to impact me to this day. He said, “Craig, you are making your own money now. We aren’t rich people, so when you need or want something, you can pay for it yourself.”

Funny thing, I didn’t think that my dad was being hard on me.

He and my mom were hard workers. They worked hard every day at their jobs and then worked hard on the house during the weekends. They weren’t lazy. They were responsible people.

My dad’s talk taught me the value of money and how important it was to spend it wisely. If I wasted it, I wasn’t going to have the funds to buy what I needed later.

My good buddy and training partner, Bill Storm, says that “old school is good school.” He’s right. These are a couple of old school messages that some may say are too hard or too over the top for a 15-year-old.

I disagree. They have made me the person I am, and I am grateful for them.

I don’t think we should ever get away from strengthening the work ethic of today’s youth. We all need to increase our responsibility and be held accountable so we can reach our true potential. This mindset instills discipline.

By the way, the root word of “discipline” is “disciple,” which means to teach. So, by instilling this philosophy in our kids, we teach them responsibility. We teach them the skills, habits, and mindset to be successful adults later in life.

My father recently passed away, and I have reflected on how much he influenced the person I have become. I am incredibly grateful for the guidance, mentorship, and encouragement he gave me.

Work ethic and don’t be foolish with your money. Got it Pops!

It’s Time to Review That Trust

YOU MAY HAVE ONE OR MORE TRUSTS CURRENTLY SET UP TO HELP YOU ACHIEVE YOUR FINANCIAL GOALS FOR YOURSELF AND YOUR FAMILY. But here’s the thing: If you haven’t reviewed

your trust recently and assessed whether it’s still on track to deliver the results you want and expect, you could be putting some of your future financial plans at risk.

Evaluating the all-important basics One good way to review your trusts is a checklist method. There tend to be several trust-related errors that arise frequently. Before digging deep for esoteric problems, make sure you’ve got the basics covered.

YOUR SUCCESSOR TRUSTEES. Most people name themselves as trustee of their revocable trust (and their spouse as co-trustee) along with successor trustees. Make sure the successor trustees you named are still those you want in that position of authority.

PROTECTION FROM LAWSUITS, DIVORCE AND OTHER PROBLEMS. Is your trust set up to protect your children and

grandchildren from creditors and divorces?

THE CURRENT ESTATE TAX ENVIRONMENT, BOTH STATE AND FEDERAL. Estate tax laws at both the state and federal levels can,

and do, undergo changes fairly frequently based on which way the political wind is blowing. What’s more, if you have moved to a different state since you drafted your trust, you may face higher (or lower) estate taxes.

THE AGES WHEN HEIRS WILL RECEIVE TRUST ASSETS. You may have set a specific age requirement for when kids and grandkids named in your trust will receive their inheritance.

THE FUNDING STATUS OF THE TRUST ITSELF. In our experience, trusts are often set up but never actually funded— that is, the assets designated for the trust are never placed in it.

The next step in trust review Stress testing is a process for examining and challenging some (or even all) of the wealth planning steps you’ve taken so you can assess the likelihood that they will deliver the results you expect them to in a variety of situations and scenarios.

• OPPORTUNITIES. A stress test can reveal whether an effective strategy you’re using can nevertheless be improved upon.

• THREATS. Sometimes a stress test can shine a light on an actual, fundamental problem with a strategy you’ve got in

place—a problem that could potentially “blow up” on you and jeopardize your financial health.

Consider some hypothetical results when a trust is put through the stress testing process.

MAKING A GOOD TRUST EVEN BETTER. A review revealed that one couple had purchased two homes in states other than their primary state of residence during the three years since they had created their trust. Their advisor immediately realized that by tying the two new residences into the trust, the couple could avoid two rounds of ancillary probate (and the many costs associated with them). By ensuring that there would be probate in just one state, they stood to save approximately $100,000.

CORRECTING A POTENTIALLY DISASTROUS ERROR. Another stress test revealed that a couple’s previous advisor had incorrectly structured a special type of marital trust. The husband was a U.S. citizen while the wife was not. The plan should have provided that the husband would leave his assets in a special type of marital trust (a QDOT) for non-U.S. spouses to provide a marital deduction.

It doesn’t necessarily take long for a trust to become outdated or suboptimal — and potentially cost you a lot of money because of it. If your life hasn’t changed, chances are the tax environment has — and vice versa.

YOU HAVE HEARD THAT PROBATE IS SOMETHING TO AVOID; HOWEVER, YOU MAY NOT UNDERSTAND WHY UNLESS YOU HAVE BEEN THROUGH IT. HERE ARE SOME BASIC FACTS ABOUT PROBATE IN FLORIDA: 1. Full Probate (assets over $75,000 or under $75,000 with creditors) takes at least six months to a year or longer. During that time, the assets being probated are tied up. If your heirs want to sell your home in probate, they must go through a formal process. This includes filing a petition to administer the estate. If successful, the probate court judge will sign an order called letters of administration. This could take one to three months.

The next step is a notice to creditors published in a newspaper.

This must be done even if there are no creditors. Creditors have 90 days from the date of first publication to file a claim against the estate. Nothing can be done regarding distribution of the assets until after the ninety days.

A tax ID number from the IRS must be obtained for the estate.

Once the personal representative (executor) obtains the letters of administration and the tax ID number, an estate account can be opened to transfer any funds from an account or future proceeds from the sale of a home or other real estate. If real estate is involved, a court order is generally necessary to allow the closing and another court order may be necessary to distribute proceeds.

A formal inventory must be filed listing the exact date of death values of all assets being probated.

A formal accounting may be necessary if all beneficiaries do not agree to waive it.

Once all distributions are made, the estate cannot be closed without another court order.

If an estate asset is discovered after the personal representative has been discharged by the court, the estate must be reopened and more formalities must be followed.

2. The attorney’s fees can be quite high, depending on the value of the estate. Florida law authorizes a 3% fee on the first million dollars and a sliding percentage after that. The personal representative can negotiate with the lawyer for a lower fee. If the estate is valued at $700,000 and the fee is reduced from 3% to 2%, that is still a $14,000 fee, plus about $1,000 in court costs for filing fees, publication in the newspaper, etc. An attorney can

also charge an hourly rate, but this could easily exceed the 3%, particularly on smaller estates.

3. The personal representative will probably need to pay money out of pocket for initial costs and a retainer for the attorney, plus funeral bills if not already pre-paid. In addition, if real estate is involved, the personal representative may have to pay taxes, utilities, maintenance, mortgage payments etc. until access to estate funds is authorized. The personal representatives will reimburse themselves at that time, but it could cause hardship if personal funds are limited.

4. All of the above is stressful and time-consuming for the personal representative. Although a fee is allowed, this could be an issue if family members or other beneficiaries object.

That is just a brief summary of why it is crucial to have proper and complete estate planning with a lawyer to ensure all assets avoid probate. Please refer to many of my other articles for practical tips on avoiding probate.

The Emotional Toll of Aging Parents

MANY OF US GREW UP THINKING OUR PARENTS HAD ALL THE ANSWERS AND WERE STRONG, PRODUCTIVE PEOPLE WE COULD RELY ON. YOU GET OLDER, HAVE A FAMILY OF YOUR own and before you know it, you notice how your parents are aging. Not you, just your parents, of course! You may notice they are developing physical ailments, chronic health conditions or their memory is beginning to slip. Twenty-two million families have inhome care provided by family members for aging parents, according to the US Administration on Aging. This statistic is a vast number which includes adult children, spouses and other relatives.

Emotional Aspects of Caregiving It is challenging when the roles in the family reverse. The child becomes the caregiver of the parent, and the parent takes on child-like qualities. Many conditions: mental illness, dementia, mild cognitive impairment, and chronic health issues make aging parents reliant upon adult children. It is not unusual for these illnesses to cause the parent to become angry and even abusive to caregivers at times. Even though caregivers understand this behavior stems from a disease process, it is hard for it not to pack an emotional punch.

Stress levels rise when adult children are caring for their parents.

Depression and anxiety can become by-products of this. Becoming a caregiver for a parent may be a lengthy journey. Physical health can be good for years while the mind deteriorates. Children can grow to 52 pointpubs.com •

resent parents who are resistant to the care they are receiving or the changes they are making for the aging parent. The parent you know and love can disappear before your eyes, making the relationship difficult and the reality sad to face.

Keeping Family Relationships Strong If you have not entered this stage yet, speak to your parents and siblings about handling your parent’s affairs and hiring caregivers or how siblings or other family members will participate in their care. Caring for aging parents can solidify family and sibling relationships or cause major riffs in them at a time when caregivers need the most support. There is no clear path guiding who should do what, no roadmap for how siblings should interact as mature adults. While some families can work out differences, many others struggle.

Siblings are often faced with unresolved feelings from childhood.

Every person in a family will view their parents’ age and cope with their death differently. An array of emotions are normal to experience during this time. You may seek approval, forgiveness, love or to be seen as responsible. These feelings may dictate how you interact with your parents and siblings. A sense of competition may surface or feelings of a threat to your position in the family.

Saving Your Sanity And Theirs Set realistic goals and know your limitations. Not everyone is cut out for this job. There are many ways to participate in the care of your parent. Make sure to talk about worst-case scenarios.

The death of a spouse or partner, losing the ability to drive, and financial concerns can cause isolation and withdrawal.

Maintaining social contact and keeping physically and mentally active is extremely important as we age. This stimulation is essential to ward off depression and cognitive decline. There are centers in Broward and Palm Beach County that provide services to seniors. It is helpful to get a professional assessment of your parent’s condition by a neurologist, psychologist, or geriatric care manager to get recommendations as to your parent’s needs and recommendations for the future.

Wining for Asian Dining

I DON’T MEAN TO WHINE. I RECENTLY ATE OUT WITH FAMILY AT A VERY NICE INDIAN RESTAURANT NEAR LIGHTHOUSE POINT. THE FOOD WAS QUITE GOOD, BUT I was disappointed with the wine list. No big deal.

It shouldn’t surprise anyone that a person who writes about wine can be particular about what wines to drink with certain foods.

I had hoped for a glass of riesling to enjoy with the delicious spicy dishes we ordered, but the restaurant had none. Its wine list had a section entitled “Sauvignon Blanc, Riesling, and Sparkling,” or something to that effect. Riesling was not listed, however. I asked the waiter about the missing entry, noting how good riesling wine is with Indian food. He had no explanation and pointed to a listing for prosecco sparkling wine, an interesting choice but not riesling. I ordered beer instead.

I haven’t studied Asian restaurant menus or wine lists extensively, so I’m not sure how many of their proprietors understand or care what wines match up favorably with their foods. I suspect, many simply offer the wines their beverage distributors recommend or what they themselves believe their customers will order, such as chardonnay, sauvignon blanc, pinot noir, and cabernet sauvignon. It’s hard to be critical of that logic.

Sales, after all, are a pretty good measure of consumer preferences. Nonetheless, I wish more Indian and other Asian restaurants offered more wines that go really well with their cuisines and then encouraged their customers to order them. A short note would be great next to the Rogan Josh or Chicken Korma that says, “Goes great with our Washington Kung Fu Girl riesling.” (That’s a real wine, as you may know.) Alternatively, of course, we can always order take-out and drink whatever we like at home.

What’s So Special about Pairing riesling with Asian Food?

Now that’s off my chest, what’s so special about drinking riesling wine with Indian and other Asian foods? Isn’t riesling one of those cloyingly sweet German white wines that comes in long slender bottles for people who haven’t graduated to white wines like chardonnay, sauvignon blanc, or Pinot Grigio? Yes to the bottles.

While some riesling can indeed be sweet, it’s a wine that is made in many styles from quite dry to subtly raisin sweet. It’s also made in many countries, always from the same riesling grape varietal. For many wine lovers riesling is the greatest white wine grape because of the wide range of delicious wine styles made from it and because of its robust, often complex and beguiling aromatic and flavor profile. These qualities make good riesling wine wonderful to sip on its own or to enjoy with a wide range of cuisines and from appetizers to dessert.

As for the slender bottles, They’re traditional worldwide for riesling and similar wines, such as gewürztraminer, grüner veltliner, and Portuguese alvarinho. The shape is said to have been developed long ago for economic reasons to be thinner, lighter, and easier to ship on winding river transport.

Anyway, I’m very fond of most kinds and styles of Asian cooking: Indian, Chinese, Korean, Japanese, Thai, Vietnamese, Malaysian, and so forth. I love the distinct flavors and aromas of these cuisines create using spices and other ingredients like cinnamon, cumin, turmeric, coriander, ginger, basil, cilantro, cardamon, fennel seeds, and of course various chilis and peppercorns.

These ingredients alone present an aromatic challenge for many wines, made more difficult by the ample salt and oil used in preparing many Asian dishes. Think, for instance, Indian and Malaysian curries, Thai tom yum soup, Chinese Sichuan-style kung pao chicken, Japanese spicy tuna rolls, and kimchi plus almost any of a long list of popular Korean dishes. Good dry and off-dry riesling wines share a special combination of characteristics or chemistry for complementing these aspects of Asian cooking: low alcohol content; tantalizing fruit and herbal aromas and flavors; citrusy acidity plus refreshing green apple tartness and crispness; and an element of sweetness that should suggest apricots, nectarines, mangos, pineapples, pink grapefruit, or other fruits.

Wine alcohol content is important to keep in mind when eating spicy-hot dishes, because alcohol itself has a warm to hot taste sensation that can intensify the heat in these foods. That combination can overwhelm more subtle flavors and aromas in both the food and wine we’re trying to enjoy. Most riesling has alcohol content of 8-12% or less by volume (ABV). That’s generally lower than many other light white wines like sauvignon blanc, and very low compared to California pinot noir, which often has 14-14.5% ABV, and California cabernet sauvignon that can clock in at 15-16%. We’re all free, of course, to drink our favorite full-bodied red wine with pungent or spicy hot Asian cooking. But trust me, there are better and more enjoyable combinations.

Aromatically, good riesling wine’s focused but pleasing citrus, stone-fruit, and tropical fruit aromas and flavors stand up well to the potent, sometimes exotic smells and

tastes of Asian dishes. Further, riesling’s racy acidity and tartness match up well with Asian foods. Cold riesling’s crisp acidity help to tone down accentuated salty and fatty or oily flavors. riesling’s acidity and tartness also complement ingredients like lime, basil, anise, cinnamon, and cilantro. Likewise, riesling’s tangy sweetness adds a pleasant dimension to saltiness and the heat from hot or mild chili, pepper, and other pungent spices.

Give riesling a try with Asian food, if you haven’t. I think you’ll find the paring of good dry or off-dry riesling wine with spicy Asian food to be a delicious combination.

What Wines to Look For Arguably, the best riesling wines are made in Germany, but many superb ones come from Austria and France’s Alsace region as well. Outside Europe, excellent rieslings also are made in Australia, Upstate New York, and Washington State. Restaurant lists sometimes include relatively inexpensive German riesling wines made by Leitz, Loosen, Nik Weis, and several other large producers.

These will likely be dry or off-dry regional wines made from grapes sourced from many places in Germany’s Rhine River region, or perhaps in a specific subregion, such as Mosel or Nahe. These winemakers also produce more costly wines made from grapes from specific vineyards and in regulated categories of grape quality and flavor intensity. I suggest looking for wines marked Kabinett, Qualitätswein, or Spätlese on their labels.

There are literally dozens of fine German riesling wine makers. Some of my favorites include Dönnhof, Selbach-Oster, Thanish, Gunderloch, Fricke, and Prüm.

They all make excellent wines at many retail price points from $15 and up a bottle. Alsatian and Austrian rieslings tend to be drier than their German counterparts.

Several notable Alsatian producers include Trimbach, Weinbach, Hugel, and Boxler. A few of the many notable Austrian producers include Prager, Pichler, Wachau, and Gobelsburg.

Restaurant and bars that list riesling on their menu’s often carry Washington State’s St. Michelle and 14 Hands, or perhaps Charles Smith’s Kung Fu Girl, an inexpensive but consistently delightful wine. The Upstate New York Finger Lakes region is known for its terrific and affordable riesling wines, but sadly they don’t seem widely available in Florida. Among my favorite producers are Forge, Ravines, Weimer, Red Newt, Keuka Lake, and Boundary Breaks.

The selection of Australian rieslings in the United States is relatively small but generally rewarding. Some producers include Leewin, Kilkanoon, D’Arenberg, and Grosset.

Alternatives to riesling There are many other wines that share selected aspects of riesling’s almost perfect affinity for Asian cuisine.

With Thai, Vietnamese, and Malaysian food, for example, consider cava and Albarino from Spain (Alvarinho in Portugal), viognier from France or California, chenin Blanc from France or South Africa, Soave or Fiano from Italy, and sauvignon blanc blended with Semillon from France or California. With Indian food, try torrontes from Argentina, moscato, a semi-sweet effervescent wine from Italy, sylvaner or gewürztraminer from Germany, Alsace, or Washington State, Loureiro from Portugal, and semi-dry vouvray from France. With Japanese sushi or sashimi consider Austrian grüner veltliner, French sancerre or other sauvignon blanc from California, New Zealand or South Africa, a steely chardonnay-style like French chablis, vinho verde from Portugal, and Soave, pinot grigio, arneis, or verdiccheo from Italy. With Chinese food, riesling is my first choice, although any number of flavorful white wines can work depending on what you plan or like to eat. For milder duck, spare rib, or beef dishes, for example, some red wines like syrah, merlot, or zinfandel can pair nicely.

Ultimately, the best wine with any food is the wine and food combination you enjoy best. That said, it’s fun and often rewarding to explore other combinations. If you don’t like a particular combination, chalk it up to just one unfortunate meal and wine pairing in a hopefully long, adventuresome, and enjoyable life. Y

LIGHTHOUSE POINT MAYOR GLENN TROAST REMEMBERED BY COLLEAGUES & FRIENDS The following story was published online March 27, several days after the passing of Lighthouse Point Mayor Glenn Troast. On March 31, Commission President Kyle Van Buskirk was elected the new mayor by the Lighthouse Point City Commission.

n March 23, city officials announced the passing of Lighthouse Point Mayor Glenn Troast. Troast, who had been battling cancer for several years, was serving his third term as mayor, which would have ended in March 2024.

“He will be greatly missed,” said City Commissioner Sandy Johnson. “All our sympathy goes to his wife Marjorie, his daughter Meaghan, his son Evan and his young grandchild.”

When asked to reflect on Troast’s legacy, all five Lighthouse Point city commissioners unanimously said it was the instrumental role he played in helping to get the city’s $16.5 million bond issue approved by voters in 2018, which provided the funding for the infrastructure projects currently underway in the city – a new fire station and emergency operations center, a new community center in Dan Witt Park, a new public works administration building, and the renovation of an existing public works building to be used for fleet maintenance. A first-floor expansion of the library is also planned.

“He helped orchestrate our vision for the Lighthouse Point of the future,” said Commission President Kyle Van Buskirk.

A key step in moving the new fire station forward was Troast’s behind-the-scenes work to secure the property for the new fire station, which was the site of a former gas station. The former gas station building had stood vacant on the site for about 12 years. For almost four years, Troast was in discussions with

the owner of the property, Lighthouse Point resident Jay Lighter, and Lighter finally agreed to sell the land to the city.

Originally, it was proposed that the new fire station be built on the site where Dixon Ahl Hall now stands, but there were concerns there wouldn’t be enough room at that location.

“This is truly a breakthrough that we were waiting for,” said former Lighthouse Point Fire Chief Shawn Gilmartin after Troast announced the City’s intention to purchase the property. “We’ve been looking at this site; this is the place where it’s going to fit best.”

Gilmartin said that his predecessor, former Fire Chief David Donzella, had pushed for the site, “but we thought that option was going to be off the table.”

“The fact that the mayor was able to get this is incredible, and the work it took to get it,” said Gilmartin.

The property will be “a perfect gateway into our municipal campus,” and the new fire station will be “a beacon for the city,” said then Commissioner Earl Maucker at the time.

In February, Troast was able to celebrate the projects he helped spearhead come to fruition at the dedication ceremony for the new fire station and community center.

ABOUT GLENN TROAST

Troast was elected to his first term as mayor in 2014. Before becoming mayor, Troast was elected to a seat on the City Commission in 2011. He also served four years on the Code Enforcement Board (2007-2011). He first ran for office when the City was coming out of its economic downturn. Troast said that as a certified public accountant, he felt his financial expertise would be of assistance to the city.

Troast was a resident of Lighthouse Point since 2002.

However, his maternal grandparents moved to Lighthouse Point in the early 1960s, and Troast visited their home frequently while growing up.

Troast was born in 1957, in Passaic, New Jersey. In 1973, he moved to Clewiston, Florida – a small town on the south bank of Lake Okeechobee – where his parents owned and operated a campground. After graduating from Clewiston High School, Troast attended the University of Florida, where he earned a degree in accounting and became an avid Gators fan. He was a certified public accountant and certified valuation analyst, and was certified in financial forensics.

Troast, along with Lighthouse Point resident Jan Nouss, was a principal of TN Partners, Inc. – a successful business, tax and valuation services consulting firm. Prior to forming TN Partners 25 years ago, Troast was executive vice president and chief financial officer of OMNA Medical Partners, Inc., a physician practice management company. Preceding OMNA, he was the partner in charge of tax services in the Fort Lauderdale office of Coopers & Lybrand, LLP. Troast served on the Board of the Fisher School of Accounting at the University of Florida and was a member of the Rotary Club. An Eagle Scout himself, Troast also served as the committee chairperson for Boy Scout Troop 238 and Cub Scout Pack 238 in Lighthouse Point.

Troast played baseball all the way through high school, and was the head coach of his son’s Lighthouse Point little league baseball team.

MAYOR GLENN TROAST REMEMBERED

In the wake of Troast’s passing, the city commissioners, and other members of the community shared their thoughts about his personal and civic achievements.

City Commission President Kyle Van Buskirk “Glenn was one of the most mentally and physically tough people I’ve ever met,” said Commission President Kyle Van Buskirk.

While doing what was needed to take care of himself, Troast also worked hard to take care of the City of Lighthouse Point and the residents, always looking to better the city for the future, said Van Buskirk, as seen in the bond projects, which are the largest infrastructure upgrade in the city’s history.

“When he and I had a discussion, or even a difference of opinion, he always reminded me that it wasn’t who was right or wrong, but what is best for the city,” said Van Buskirk. “He would close the discussion with that.”

mayor, even while being sick, speaks volumes of how hard he worked to do what he felt was right for the city and its residents. He did it all the way to the end, and never let us down.”

City Commission Vice President Jason Joffe “He was a dedicated public servant,” said Commission Vice President Jason Joffe. “We certainly didn’t always agree on everything, but I never once questioned how hard he worked or the sacrifices he made for Lighthouse Point.”

Joffe said he will miss the Tuesday morning “check-in calls” from Troast before the city commission meetings, when Troast would listen to his input about the agenda items for that night.

“In spite of a very difficult situation with his health, he continued to work for the residents of Lighthouse Point until the very end,” said Joffe, “and it was, quite honestly, amazing and inspiring.”

Commissioner Michael Long “For me, he was a friend, a close advisor and confidante,” said Commissioner Michael Long. “We could talk about a lot of different things in the world, not just politics or city issues.”

“He was a very caring person, and would always go that extra mile,” said Long. “If you asked a question, he would say, ‘I can help you with that.’” Whether it was his involvement with the city, the church or scouts, “he was just very passionate about what he did.”

In addition to the bond projects, Troast was very involved in the Lighthouse Point Yacht Club redevelopment plans as they moved through the City’s approval process, which took approximately three years. He looked out for the city’s interests because he realized what it would mean to the city if the redevelopment were done wrong, said Long.

Long said Troast kept the city in strong financial condition as it went through COVID-19 and changes in revenue stream, and was “the right guy at the right time for that.”

“He was the strongest person I’ve ever met when it came to dealing with his own issues,” said Long. “And I think that is part of his legacy too, just being so strong and always so positive.”

Commissioner Sandy Johnson The Lighthouse Point mayor position is not full-time, but Troast was always there, said Commissioner Sandy Johnson. Even though he had a business to run and a family to take care of, “he never missed a beat in being right there every second that he needed to be for the city.”

Johnson described Troast as “a brilliant guy” and “one of a kind.”

“Through his whole ordeal with his illness, I’ve never seen anybody remain so upbeat as he was,” she said. “He always had a positive attitude.”

Johnson said the Commission had a very cordial relationship with the mayor and with each other, and most of the time didn’t disagree on things because “we all have the city at heart.”

“That type of attitude starts from the top, and Glenn exuded that attitude and it came down to all of us,” said Johnson.

“He’ll be greatly missed,” said Johnson. “He’s irreplaceable at this point.”

Commissioner Patty Petrone “I have known Glenn for many years,” said newly elected City Commissioner Patty Petrone. “He was truly a gentleman.”

Petrone heads up the annual Nautical Flea Market, and prior to becoming commissioner, was on the Marine Advisory Board.

“I think the thing that impressed me the most was that he remained mayor even as sick as he was,” said Petrone. “He

just continued to put the city first.”

“He was a loving family man and very involved with the Boy Scouts,” said Petrone. “He did a lot of public service.”

Former Commissioner Earl Maucker “I think his legacy is ‘brick and mortar’ in the fire station and community center and the new public works building that will be a beacon for many years to come,” said former City Commissioner Earl Maucker.

“He was a very smart guy, and financially astute because of his background as a forensic accountant,” said Maucker. “He had an incredible understanding of the financial picture of Lighthouse Point and because of that was able to position the city to be in absolute excellent financial shape.”

Maucker noted that, in the 10 years that he worked with Troast on the City Commission, “we never once raised our tax rates other than the bond issues. We were very conservative financially, based on his leadership,w because he really understood finance.”

“It’s a sad day for the city to lose Glenn,” said Maucker. “I know everybody feels that, and he would want us to march forward, which we will do.”

Monsignor Willie Dever, Pastor, St. Paul’s Church Troast was a longtime parishioner of St. Paul the Apostle Catholic Church in Lighthouse Point.

“He was held in very high esteem by the people of Lighthouse Point and everyone who knew him,” said Monsignor Willie Dever, pastor of the church.

Troast was an active participant in St. Paul’s community, especially through scouting, since the church sponsors the charter for scout troops in the area. Troast and his son Evan, along with several other scouts and their fathers and mothers, installed the Stations of the Cross and the Mysteries of the Rosary that are in the Meditation Garden.

There’s a contract between the church and the City that allows the City to use the church parking lot, and in return, the City maintains it. Dever said Troast “was very diligent in making sure the details of the agreement were upheld.”

“Personally, I found him always approachable and cooperative in supporting the relationship between the City and the church,” said Dever.

GLENN TROAST: A TRUE EAGLE SCOUT

“That was just the beginning of his lifetime achievements,” said Schramm. “He was a go-getter; he was not a procrastinator. He got things done.”

Schramm and Troast were involved in Boy Scout Troop 238, based at St. Paul the Apostle Church in Lighthouse Point, where Schramm’s two sons and Troast’s son Evan were scouts.

Schramm said that when Troast was involved in the planning of scout camping trips, there would always be a challenging schedule, with lots of things to do from sunup to sundown.

“He was a true Eagle Scout,” said Schramm. “He did anything that he physically was able to do to help the troop and contribute, because he was of the mindset that, if his son was in the troop, he should be part of it.”

Several years ago, the troop drove to Tennessee for a five-day “high adventure” trip, which included zip-lining, hiking and camping every night. Troast “wasn’t feeling 100% at that time, but he still went anyway,” said Schramm.

Troast enjoyed teaching the boys new skills, such as how to make a fire, or whatever merit badge was designated to be worked on at the campout he was on.

“He lit up,” said Schramm. “He would lead that teaching with gusto, and there was no goofing around – not to say he was hard, but he was on point.”

For many years, Troast was part of the board of review for scout rank advancement, as a volunteer.

“The boys knew what they were in for when Glenn was on the board,” said Schramm. “He was going to ask some tough questions. He challenged the boys to be better.”

Scouting played an important role in Troast’s life, starting at an early age. Troast earned his Eagle Scout rank when he was 14 years old, which is much earlier than most scouts, said Charles Schramm, the city’s public works director.

While he was mayor, Troast worked many hours, including weekends, Schramm noted. “He was always working on making something better, whether it was his business, the city, the scouts or all the other things he was involved with.” People would call him directly; people would knock on his door. He was very service-oriented to the residents and always made himself available with his own personal time.

“He had a lot of knowledge and wide-ranging experience, outside of being a successful businessman,” said Schramm.

pring is upon us, and the winter winds have settled; many sportsman’s hearts are wild with yellow gold fever and a desire to hunt yellowfin tuna across the gulf stream from South Florida.

This trip is not for the faint of heart, for it takes long days, a gazillion gallons of fuel, hundreds of baits, the strongest of tackle and even stronger backs.

If you intend to hunt the mighty yellowfin tuna, you need to be prepared and have a battle-tested boat with excellent radar, live wells and a sound strategy. I hope to help with the strategy part.

You need not make the trip if you don’t have the weather to move around and have clear radar.

Safety First

There are so many ways to keep loved ones informed about your whereabouts. You are likely to be fishing 20 to 60 miles from civilized land, so don’t skimp on the safety equipment. If you don’t own a satellite phone, I suggest renting one. Take it from the seasoned veterans at this game — sooner or later, you will wish you had one.

Maybe a visit to your cardiologist before the trip would be advisable — because if you read this article and take our advice, you better be fit to fight. Its strongly recommended to leave a float plan with loved ones and have a satellite tracker and satellite phone.

Where the Wild Things (Tuna) Are

Now that you have the stuff, you need the strategy. It is probably best to run straight to Lucaya or West End (Grand Bahama Island) early in the morning and check-in through customs and wherever you are staying. You don’t know when you will be coming home, and it’s best to have these things checked off your list and have room

keys in case you come back late.

The tuna are in the NW Providence Channel all year. We have seen them there every month. They hang out north of the west end, down through tuna city (an area offshore of the SW corner of Grand Bahama Island. 26.37.5/79.06.1 – 26.23.0/78.55.2) and into the fingers of the channel.

The tuna rarely go southwest of Isaacs Light and occasionally will be deep in the channel to the east or just off the Gingerbreads.

You may find them further west in the channel out to tuna city earlier in the season. Later in the season, they are usually further east in the channel and holding on the fingers (areas where the canyons carve what looks like fingers on the seafloor).

If you are a member of The Lighthouse Point Saltwater Sportsmans Association, you will have access to crucial information about the latest whereabouts of the mighty yellowfin. Your local tackle shops listed above may also have some tips on where to look.

The Stuff Make sure you plan for the best so you don’t experience the worst. Far too many times, the best fishing comes upon the illprepared. The standard is to head out with blacked-out live wells full of pilchards and at least four flats of sardines.

Don’t forget the ice. Lots of ice!

You can go with chunking sardines or live baiting. It is best to be prepared to do both.

TACKLE • 4 bent butt 50s (2 with 60# mono and 2 with 80# mono) • 4 heavy-duty spinning combos full of braid topped off with

florocarbon top shots • 4heavy-duty jigging spinners full of braid • several of the newer high gear ratio smaller 30s (lighter tackle) designed explicitly for this fishing.

• extra line (mono, braid and florocarbon) in breaking strength from 40 – 80 lbs.

You will want to have several different sizes and strength hooks. #3 -#6 with various live bait and circle hook sizes. You may want to shop around at the local tackle stores and ask for advice about tackle. (Check out Big Dog Tackle, RJ Boyles, Custom

Rod & Reel, Chaos).

The proven rigging is to have your main line tied directly to your leader (double uni or other).

Your leader should be 30 – 60’ of fluorocarbon.

It is also helpful to bring cedar plugs — natural and colored and don’t forget the tuna darts! Dark colors with chrome heads usually work best for the darts. Vertical jigs can be a game-changer!

Bring multiple sizes, shapes and colors. Bring drinks, breakfast, lunch, dinner and snacks so if your day stretches into night, you won’t be without food, water and Gatorade.

It is wise to look for birds as you come through tuna city. If you see flocks of birds, I would start there and move east.

They could be on the southern side of the channel or the northern side.

Your best bet is to run right through the middle of the channel headed toward fingers 26.13.42/78.11.00 and keep the radar tuned in 3-6 mile range.

Make Your Move

If you get this far — do not screw it up now.

When you finally find those birds circling, everyone will be excited and anxious, but the next few moves will separate the hacks from the professionals.

Hopefully, you have your rods ready; your sardines cut into chunks in buckets on ice, long-handled bait scoopers, bottom machine on (without chirp), vertical jigs rigged, and your cedar plugs on stand by.

Not every flock of birds will be holding on to yellowfins. The flocks with turns, gulls and frigates are usually good. The fast-moving schools that seem to be moving erratically and are hard to catch up to are likely skipjack tuna and may not be worthy of your time. Try to determine your drift and what direction the schools of tuna and birds are moving before setting upon them.

The best strategy is to try and get ahead of the school and up current. As you come up to the school, it’s best to slow down and keep the noise down. Don’t try driving right at them; you will likely push them down or scatter the school. As you pass around to get in front, start trickling out bait — live or chunks. Start with live bait first and stick to one type of bait if it’s working.

The fish may like live over chunks, and they may get picky if you do both together.

As you slow down and start deploying chum baits, let two lines out the back with whatever you are chumming. The idea is to bring the school to you. If you are not hooked up already, stop the boat, throw a few handfuls of baits, and deploy the rest of your spread. Remember to carefully hide your hooks in the chunks or place your hook in the live bait to account for dragging the baits.

Let your bait out as naturally as you can. The idea is for it to drift down with your chum baits. You can pull the line off the reel by hand with the bent butts in the rod holder or by holding the rods with smaller rigs or spinners. Keep an eye on the birds and the bottom machine. It would be best if you marked them below.

Once you start getting bites, remember the fish will likely stay around if you have

baits/chum in the water, even if the birds move off. Don’t forget to try vertical jigs!

Be careful not to chum too much! Just a handful every few minutes should be enough.

If you have trouble stopping right on them and getting hooked up, then try trolling the cedars and darts around the birds. When you get them on the troll, execute the same strategy as above — as you pull in the tuna on the trolling rods, start chumming and letting lines back. As you pull the tuna in, you will be bringing the school to you, so you want your baits going out as you are pulling the trolling lines in.

Sometimes you have to work at it and try multiple packs of birds in different areas. Early morning and late afternoon tend to be better. Maybe you have a favorite deep drop spot you can hit at high noon in between peak bites. Hopefully, you see those bright yellow sickle fins pinwheeling below and feel rich with pride as you head back with a boat full of yellow gold. You will have likely paid your taxes to the taxman. There are rumors of methods to defer your taxes, but you’ll have to stay tuned for more of those secrets.
