A Testament to Failure BY SUSAN ROSSER Claire gazed into the camera and muttered, “Don’t show this part.” She had failed. Her disappointment was palpable. Claire is Claire Saffitz, a Harvard educated and French trained freelance recipe developer and video host who rose to food-fame thanks to a series of quirky videos she makes in the Bon Apétit magazine test kitchen entitled “Gourmet Makes.” In each episode, she attempts to replicate a popular junk food item — elevating it where she can. She has tackled Cheetos, Twix, Sour Patch Kids, Mentos and Oreos to name a few. It’s not easy — even for an accomplished food-guru like Claire. She fails a lot. And therein lies the appeal. Claire keeps it real. While most cooking videos are highly choreographed with the singular goal of making a particular recipe appear easy, “Gourmet Makes” is a testament to failure. Claire is 33 years old, yet an unexpected streak of gray interrupts her jet black hair. This might not work on some but Claire carries it off with a certain confidence. She is unafraid of failure, so what’s a few premature grays? She is hilarious, yet also meticulous. This is a woman who measured a Cheez-It. Still, she inevitably messes up time and time again. When Claire said “Don’t show this part,” she was wrapping up day-three of her valiant attempt to reproduce Sour Patch Kids. Gradually, she realized all her work up to that point was for naught. She had to completely rethink everything. I admit, I am a touch obsessed with this woman. Which is what got me asking myself “why?” She is quite funny, but I always come back to her failures. In these times when we are witness to so many highly curated lives on social media, it’s refreshing and incredibly appealing to watch someone with some serious credentials fall flat. And she let’s it show. She doesn’t stand in front of the camera all stalwart and stoic shouting something about onward an upward. Often, she slouches onto the stool behind her work station, slumped over like a 1930s stockbroker. And I can’t help but think “OK this is a woman who found her way to Harvard.” Even her grey streak sends a message to her audience, “It’s OK, no one is perfect.” I recently experienced a bad day in my own kitchen. I was baking an apple cake tatin for a few friends. As I was cleaning up, I noticed the glass on my candy thermometer was broken. Fully aware that no one enjoys glass in their cake, I snatched my cake

from the oven and dumped it. Not to be beaten down, I baked a whole new cake. The recipe calls for letting the cake cool for 15 minutes before flipping it to reveal gorgeously sticky caramelized apples. But I forgot about it. Later, when I tried to flip it, A failed attempt at apple cake tatin only half the cake actually made it out of the pan. Foiled again. At this point I considered serving fruit. But sometime around 3pm, feeling a sense of resolve, I baked my third and final cake of the day — inspired by Claire the whole time. Thankfully, it was perfect. What I hope is that Claire’s failures embolden me to take some more risks in and out of the kitchen. I’m seriously considering sourdough bread — which is apparently an eight-day project. As for outside of the kitchen — stand-up comedy? I find encouragement in knowing that this smart and hardworking woman can’t figure out how to make a Mento. And I don’t think I am the only one. She enjoys a loyal following. Her video entitled “Pastry Chef Attempts to make Gourmet Skittles” had garnered just over 12 million views as of press time. For many of us, fear of failure is a significant obstacle. If there is something you dream of doing in 2020 but are a little afraid, I suggest you watch an episode of “Gourmet Makes.” It’s not easy to make a Mento. I mean where would you even begin?

Holiday Events BOCA RATON HOLIDAY STREET PARADE

Yuletide on Atlantic 2019

Ring in another holiday season with the Yuletide On Atlantic Parade and Celebration. The parade will begin at 6:30pm starting from Riverside Drive, heading west on Atlantic Boulevard and ending at McNab Park. This year’s event will feature fun floats, marching bands, dancers, fire clowns, and a variety of other entertainment. After the Yuletide Parade, head over to McNab Park for children’s activities. Parade goers can write a letter to Santa in the North Pole, have a picture taken at the photo booth ride inflatable slides, and of course, meet Santa and Mrs. Claus. Around Town LIGHTHOUSE POINT YACHT CLUB SMALL BOAT PARADE

Boat Parades Plus GREATER POMPANO BEACH AND LIGHTOUSE POINT HOLIDAY BOAT PARADE

Once again, decorated boats will light up the Intracoastal Waterway. The parade is put on by the Pompano Beach - Margate - Lighthouse Point Chamber of Commerce and chaired by Rhonda Bunker. The parade begins at Lake Santa Barbara in Pompano Beach and runs north to Hillsboro Boulevard in Deerfield Beach. Thanks to the efforts of boat owners in our community, this year will be the biggest parade in the history of this annual event. The parade begins at 7pm. Keep in mind, boats travel at about 3 to 5 knots, therefore the farther north you are the later the parade will start. Atlantic Boulevard and 14th Street Causeway Bridges will be in the upright position by 6:30pm and will not be usable for automobile traffic until the parade concludes. Enjoy this year’s event. THE SEMINOLE HARD ROCK WINTERFEST BOAT PARADE

The Seminole Hard Rock Winterfest Boat Parade starts at Stranahan House traveling east along the New River in Fort Lauderdale to the Intracoastal Waterway as it continues north to Lake Santa Barbara in Pompano Beach. The parade takes approximately two-and-a-half hours to view from one location. Private boats to the giant showboats and corporate megayachts will be adorned with hundreds of thousands of lights, music, entertainment, decorations, celebrities, musical groups and more. The Grandstand Viewing Area is the best place to view with a festival atmosphere prior to the parade.

Member of the Lighthouse Point Yacht Club will be parading their decorated boats throughout the canals of Lighthouse Point. Building a Feminist Archive: Cuban Women Photographers in the U.S.

Enjoy this opening reception held during Old Town Untapped. Building a Feminist Archive: Cuban Women Photographers in the US shows the varied contributions of Cuban women artists living and working in the United States since the seventies when the concept of a collective Latino identity became crucial. It is curated by Aldeide Delgado, founder and director of Women Photographers International Archive. The artists in the exhibition started to attend art schools and found themselves inspired by and responding to the social movements of their time. They created new images of their communities and examined pluricultural experiences challenging the notion of being exclusively Cuban or American. This show reveals artwork rarely seen or exhibited, and at the same time promotes reflection on the social, cultural and political identities of Cuban women artists in the United States within the current discussion of Latinx art.

FPL Will Place Underground Lines in Lighthouse Point, Pompano Beach and Deerfield Beach Florida Power & Light has selected portions of Lighthouse Point, Pompano Beach and Deerfield Beach, as well as other areas in Broward County, to be part of a pilot program that will convert certain overhead neighborhood power lines to underground lines. Burying the power lines is part of FPL’s ongoing efforts to reduce outages during storms, particularly hurricanes. The three-year pilot project, which started at the end of 2018, is called the Storm Secure Underground Program. It is being carried out by FPL in different municipalities throughout its service territory, which includes 35 counties, or just over half the state of Florida. In Lighthouse Point and Deerfield Beach, the pilot program is slated to start in the first quarter of 2020, said Tim Hogans, FPL’s external affairs manager of northern Broward County. In Pompano Beach, the pilot program started in November, Hogans said. Overhead-to-underground conversions will take place in strategic areas throughout each city, based on FPL’s internal metrics. FPL estimates that, in all three cities, it will take about one year from the start date to complete the work. Approximately 80 percent of the FPL lateral and service lines in Lighthouse Point will be undergrounded through the program. The cost of the project in Lighthouse Point will be approximately $8 million, which will be covered by FPL. The existing overhead lateral power lines, which go from pole to pole, and the service power lines, which go from the pole to the house,

will be replaced with brand new underground lines. FPL used several criteria to determine the location of these projects, including the performance of power lines during Hurricanes Matthew and Irma, outages on power lines due to falling trees or branches, and the performance of power lines during day-to-day operations. FPL is currently in the process of designing the projects and getting permits. All customers in Lighthouse Point, Pompano Beach and Deerfield Beach who will be affected by the program will receive an official letter from FPL by the end of year, so they can plan and prepare accordingly, said Hogans. There is no cost to the municipalities to participate in the pilot program, and residents will not have to pay any out-of-pocket or upfront costs, because the project costs have been accounted for in FPL’s current rates. Earlier this year, the Florida legislature passed a bill that allows FPL and other electric utilities to increase their rates in order to pay for improvements that will make the state’s electrical grid more resilient against hurricanes. Any rate changes would have to be approved by the Florida Public Service Commission, which regulates the utilities.

Since 2006, FPL has spent nearly $4 billion on strengthening its entire grid, including “hardening” its feeder lines (higher voltage main power lines), which involves replacing existing poles (usually wooden) with thicker, taller concrete poles that can withstand winds up to 150 mph. FPL will continue to harden feeder lines in Lighthouse Point, Pompano Beach and Deerfield Beach, and other municipalities throughout its service area. “Undergrounding the lateral and service lines is the next step,” said Hogans. “Hopefully, we’ll see less outages all around. That’s the whole goal.” Once the new lateral and service lines are placed underground, the power poles will remain in place because AT&T and Comcast utilities will still be on the poles. FPL will remove its power lines from the poles and cut the tops off the poles just above the lines that belong to AT&T and Comcast. FPL will also remove >>>

Once construction is complete, property will be restored

to its pre-construction condition. At the Lighthouse Point City Commission meeting on Oct. 22, City Administrator John Lavisky informed the Commission that Lighthouse Point had been selected by FPL to participate in the pilot program. Mayor Glenn Troast said FPL has already contacted homeowners in the city’s marina area to get easements from them, meaning permission for FPL to install its facilities on their property. All the easements need to be in place before the project begins. It was the consensus of the Commissioners that they would like

FPL to come speak to them about the pilot program. Hogans and members of FPL’s undergrounding program team are scheduled to be at the Lighthouse Point City Commission meeting on Dec. 10, 2019 to give a presentation about the pilot program, and to address any questions from the Commission. There are already some homes in Lighthouse Point that have underground FPL lines, which the customers did at their own expense. The standard practice today, based on state law, is that any new residential subdivisions are required to have underground lines, said Hogans. Y

Two Presentations Scheduled for City Commission Meeting on Dec. 10: • NEW DESIGNS FOR THE CITY’S FIRE STATION AND COMMUNITY CENTER • FPL’S PROJECT TO UNDERGROUND POWER LINES IN LIGHTHOUSE POINT At the City Commission meeting scheduled for Dec. 10, residents will have an opportunity to see the latest designs for the projects that will be funded with proceeds from the $16.5 million bond issue approved by Lighthouse Point voters in November 2018. Currie Sowards Aguila Architects (CSAA), the firm hired by the City to design the bond projects, is scheduled to present illustrations, renderings and site plans to the City Commission. CSAA presented preliminary design concepts for the bond projects to the City Commission at its Aug. 13 meeting. CSAA sought input from the City Commission to get an understanding of its vision for the projects. CSAA used the feedback that was provided by the Commission to create the designs that will be presented on Dec. 10. If the Commission is satisfied

with the designs, the designs, as well as the site plans, would then go to the city’s Development Review Committee (DRC), Community Appearance Board and Planning and Zoning Board. The DRC will look at technical aspects of the projects as they relate to City code requirements. Before construction documents are prepared, everything will be brought back to the City Commission so it can see the finalized plans. Once construction documents are completed, they will go to the Building Department for review and approval, and issuance of building permits. The bond projects include the construction of a new two-story fire station that will have an emergency operations center on the upper floor, and will be rated for a category 5+ storm; a new community center

at Dan Witt Park; a new public works fleet maintenance building; renovation of the existing public works building; and the buildout of a second-floor community room in the library. Also at the City Commission meeting on Dec. 10, members of the Florida Power & Light (FPL) undergrounding program team are scheduled to give a presentation about an upcoming project in Lighthouse Point that will convert approximately 80 percent of the overhead neighborhood power lines to underground lines, as part of FPL’s ongoing efforts to reduce outages during storms, particularly hurricanes (see story on page 44). City Beat BY MARIE PULEO Ibis Bridge & Master Pump Station Projects Two major projects got underway in Lighthouse Point last month – the replacement of the Ibis Bridge and the refurbishment of a master pump station – both along Lighthouse Drive, the city’s main thoroughfare, with several long-term road closures taking effect. Replacement of the Ibis Bridge, located on Lighthouse Drive (NE 23rd Avenue) between NE 29th Street and NE 30th Street, began on Nov. 4, and is expected to take about one year to complete. Traffic detours are now in place north and south of the bridge. The portion of NE 29th Street between Lighthouse Drive and NE 22nd Avenue is closed, as well as the portion of NE 30th Street between Lighthouse Drive and NE 21st Avenue. However, access to residences is being maintained at all times. The City has placed temporary speed bumps in some of the detour streets, and assigned a police officer to patrol the area to make sure motorists are maintaining the speed limit and obeying stop signs, which city officials say has been effective. Due to the nature of the neighborhood detours, the City is encouraging motorists to bypass the work zone as much as possible by

using NE 24th Street, NE 29th Street and Sample Road (NE 36th Street) to enter and exit the south end of the city. The Florida Department of Transportation (FDOT) is carrying out and funding the construction of the new bridge at an estimated cost of $2.4 million. The new Ibis Bridge will have a concrete barrier wall on either side of the bridge, as well as a concrete safety barrier to separate the 6-foot sidewalk on the west side of the bridge, which is an improvement over the open railing system of the old bridge, built in 1950. The additional sidewalk approaching the bridge will be 5 feet wide. Per the City’s request, the new bridge will be 10 inches higher than the old bridge to account for sea level rise. The second project to get underway is the refurbishment of the city’s master pump station located at the triangular-shaped median between Lighthouse Drive (NE 41st Street), NE 22nd Avenue and the access road. A portion of NE 22nd Avenue near the pump station will be closed to northbound and southbound traffic, with a detour to NE 41st Street. The access road along the south side of

the station will also be closed. Access to driveways, sidewalks, and side streets will be maintained. The project is estimated to take 8 months, with a completion date of June 30, 2020. The road closures are expected to be in effect until April 30, 2020. The master pump station receives all the sewage within Lighthouse Point from 32 upstream “lift” stations, and pumps it to the Broward County North Regional Wastewater Treatment Plant located at Copans Road and Powerline Road in Pompano Beach. The pump station, which was initially installed in 1976, is being refurbished because it was having issues due to normal wear and tear, and was undergoing frequent repairs. Broward County Water and Wastewater Services Division (WWS) is performing a total maintenance upgrade to the pump station. The refurbishment will bring it up to modern standards to yield more reliability and better odor control. Construction activities will include concrete repairs, replacement of existing pumps, pipes and electrical components, installation of an air quality control system, and landscape improvements. Y

Curated from memorabilia in the museum’s archives, the exhibition features photos and artifacts from previous homecoming parades, proms, sports banquets, and other events. Displays include vintage homecoming crowns and fashion items, as well as interactive components. “Homecoming is an especially significant and emotional time for the alumni of Blanche Ely High School,” said Phyllis Korab, the city’s Cultural Affairs Director. “Students who were fortunate enough to have been molded by Mrs. Ely are forever filled with gratitude for her strong yet loving guidance.” Ely fought to bring quality education to

Pompano’s African-American youth at a time when schools were segregated. Ely, who first came to Pompano in 1923 as a young teacher, earned several degrees, including a master of education degree from Columbia University in New York. In the late 1920s, she was principal of the Pompano Beach Colored School, which was later renamed Blanche Ely High School, and transferred to the site of the existing high school, while Ely was still principal. Lighthouse Point resident and Vietnam War veteran Chuck McLaughlin was honored at the Nov. 12 City Commission meeting for his efforts to create the Heroes Memorial Shrine in Frank McDonough Park, which was unveiled last year. A proclamation was read by Mayor Glenn Troast, commending McLaughlin’s resolve to establish a fitting tribute to local veterans after he discovered that Army Lance Corporal Dale Wilkinson – the only Lighthouse Point combat veteran killed in Vietnam – had not been properly recognized for his sacrifice. McLaughlin campaigned to not only build a formal tribute to Corporal Wilkinson, but to create a permanent memorial to honor all men and women who have served in the nation’s armed forces, as well as Lighthouse Point’s first responders. The memorial received critical support from The Exchange Club of Pompano Beach, St. Paul the Apostle Catholic Church, the Archdiocese of Miami, Gallo Herbert Architects, the City of Lighthouse Point, and an Eagle Scout project headed by Ryan Kolb from Troop 238 in Lighthouse Point. “The City of Lighthouse Point thanks Chuck for his unselfish devotion to his fellow veterans as well as his commitment to see that those who have served are properly honored,” said Troast.

An Important Subject You Were Never Taught in School (HINT: IT INVOLVES YOUR ATTITUDE ) BY CRAIG HALEY IT WAS ONE OF THOSE BUSY SUNDAYS! BOTH MY WIFE AND I GOT OUR WORKOUT IN THE MORNING, RAN SOME ERRANDS THEN HAD TO BE AT A PARTY AT A FRIEND’S HOUSE AT 1:00. After hanging out there for a few hours, we headed to the bowling alley in Pompano for my daughter’s best friend’s birthday party. We hung out there for a couple hours and had a blast. During that time, my daughter was trying to win a Nintendo Switch from one of the arcade games in the alley. She tried, and tried, and tried. With each attempt her frustration grew, and before you know it, the tears and emotions started flowing. This caused us to leave the bowling alley. In the car, she was explaining to me how the arcade game robbed her. In her mind, the arcade game cheated her out of it! To my daughter’s credit, she even pleaded her case to the guy who worked the front counter at the bowling alley. Who knows, maybe she will be a lawyer? I asked her to think about all the blessings and good fortune she had in her life. We talked about her health, nice house, toys, vacations and more. Nothing switched her out of this funk. She responded with, “Dad, I’m sure they have them on Amazon. Can we order one?” I smiled because she was truly focused on solutions, and then politely told her, “No.” Kids! Next, my daughter asked me if there were some chores she could do to earn money for her Switch. I told her we all do chores around the house because we all make the house dirty. We don’t get paid to clean up our own messes. Later, I brought a solution to the table that motivated her. I got this idea from the late, great author, Charlie “Tremendous” Jones. He had his kids read books on attitude, goals and good habits. If they completed the book and demonstrated what they learned, Charlie paid his kids twice: first in the form of cash; and second, he deposited an equal amount of money in their bank account for the future. I decided to do the same thing. I suggested that we read one of my favorite books, “The Little Gold Book of Yes! Attitude” by my mentor, Jeffrey Gitomer. My offer was we would read the book together as many times per week as possible, and we would listen to the audio book in the car on the way home from school. She goes to Virginia Shuman Young in Fort Lauderdale, so we have a good 40-45-minute drive. My offer would turn the driving time into learning time.

Once she completed the book and she started demonstrating a positive attitude, she would have then earned her game. And I would put extra bonus money in her bank account. She was excited, and then asked, “Can we start now?” I smiled, and enthusiastically said “yes!” We read for 40 minutes that Sunday night, and I watched her attitude and emotions improve. She was a different kid in 10 minutes. She was happy and motivated. I was thrilled This approach may not be for everyone; however, it is working wonderfully for our family. More importantly than just handling a meltdown from an 8-year-old, is that she is now learning how to act and think positively. That will serve her for a lifetime. I truly believe that positive attitude should be an ongoing required subject for everyone (both kids and adults). We all know to be positive, however I once heard that successful people don’t need to be told what to do, but we all need reminders. I know I do. That’s why I have become an avid reader of positive, inspiring books. It helps me keep my head on straight. Life skills, such as positive attitude, are a huge part of the character education program at Elite Force Martial Arts. I learned early on from my instructors to be, think, and act positively. How Infidelity Can Creep Up on a Relationship

IT IS QUITE THE MOMENTOUS OCCASION WHEN TWO PEOPLE JOIN TOGETHER IN MATRIMONY. THE HOPES FOR THE FUTURE ABOUND. MANY COUPLES CHOOSE TO ENGAGE IN PRE-MARITAL counseling to look at the common issues over which married people have conflicts: money, religion, sex and in-laws. Every long term relationship has its ups and downs and not all people commit to marriage with the understanding that it will take some work during the course of a lifetime together. This is something I see very frequently. People have unreasonable expectations about marriage and long term committed relationships. From a professional’s perspective, couples can drift apart and there are warning signs when people are at risk for an affair. These things start out as very innocent and can quickly turn into risky business. We need to catch infidelity before it becomes infidelity.

• EMOTIONALLY DETACHING FROM THE MARRIAGE. Spending

less time together, communicating less and not addressing these feelings as they arise and lead to greater issues. • NOTICING OTHERS (RIPE FOR THE PICK’N). When you are not engaged with your significant other it is more likely you will notice others and be noticed. The most important thing in a relationship is protecting it with good boundaries.

Scheduling times to meet because you enjoy each other’s company. • PLANNED PHYSICAL ENGAGEMENT. Purposefully meeting someone to have a sexual encounter.

Don’t open yourself up to infidelity. Discuss boundaries within the relationship with which you both are comfortable. This needs to include social media, messaging others, having friends of the opposite sex that your partner does not know, socializing alone with someone of the opposite sex, etc. It is important to be on the look out for signs that you are drifting away from your partner, or your partner is drifting from you, and address it immediately. It is very difficult for relationships to bounce back from infidelity. It most certainly can be done but it is a difficult road for most. Best to create a strong, committed, loving relationship. FIRST, ALLOW ME TO REMIND YOU OF MY CREDENTIALS, WHICH MAKE ME THE WORLD’S GREATEST PROGNOSTICATOR: I am a graduate of FSU (Florida Seer University), where I earned a B.S. in BS. In a previous life I was an assistant to the Oracle at Delphi. Finally, I am the owner of a genuine Swarovski-Romanian-Gypsycertified crystal ball which, although used, has very low mileage. It formerly was operated by a little old lady only on Sundays, and is the top-of-the-line model from Clairvoyants “R” Us. The following predictions are subject to a plus or minus 2 percent margin of error: • Sylvester Stallone will win an Academy Award for his movie “Rocky and Rambo versus Godzilla,” which will be followed by 18 sequels. • Researchers will determine that cigarettes are good for you — if you eat them. The filters provide excellent roughage.

• Transylvania will produce a new blood-sucking monster who dresses in women’s clothes. A new law will force doctors to pay patients $5 for every minute they wait beyond their appointment time. Of course, this will create a new problem, as cagey patients will try to earn $300 per hour by calling in bomb scares. • Dentists will be required by the American Dental Society to undergo sensitivity training. Once a week, for 30 minutes, they will have to soak in a vat of Sensodyne toothpaste. • Those who can afford it will have a new option upon their demise. For $250,000 one can be fired into geosynchronous orbit above the Earth. For an extra $20,000 they can be fitted with light emitting diodes that spell out their name, or the space can be leased to advertisers such as Cadavers “R” Us. Payback to defray the entire cost of the trip is estimated to be 22 years. The world will end on November 13 (a Friday naturally). Well, not quite. That will be the day that chocolate is found to be carcinogenic. To me that is the end of the world. The FDA will ban smart phones. This will initiate a new illness — Scroll Withdrawal Syndrome. The treatment will be simple. It will require wearing a catcher’s mitt on the hand that did the scrolling. The Florida lottery will come out with a new scratch-off game. A ticket will cost $1,000. First prize will be $1,002. Sales will not be brisk. Finally, astronomers will prove the existence of the mysterious “Planet Nine.” It will be named “Ralph.” Y

Update on New Florida Laws for 2019/2020 BY MARTIN ZEVIN, ATTORNEY IN A PREVIOUS ARTICLE, I DISCUSSED NEW LAWS THAT PASSED THE FLORIDA LEGISLATURE AND WERE SIGNED BY GOVERNOR DESANTIS. THE PREVIOUS ARTICLE DISCUSSED the anti-semitism bill which requires that discrimination against Jewish people be treated the same as acts of racial discrimination in public schools. Anti-semitism is defined in the bill as including speech that makes dehumanizing or sterotypical allegations about the Jewish community, expresses hatred for Jews, calls for killing or harming of a Jewish person, criticizes the collective power of the Jewish community or accuses Jewish people or Israel of inventing or exaggerating the Holocaust. The previous article also discussed a bill that could eventually allow Floridians to gain access to cheaper Canadian prescription drugs; however, this bill cannot take effect without approval from the federal government, which has yet to authorize similar laws from other states. Also, there were budget cuts for state universities but funding was authorized to keep the tourist agency Visit Florida in operation until June 30, 2020. The most important new law prohibits texting while driving and also prohibits holding a cell phone while driving in a school zone or construction zone where workers are present. The new law went into effect on October 1, 2019. There is a grace period in the law requiring police to issue warnings only through the end of 2019. However, as of January 1, 2020, you will get a ticket which will be punished as a moving violation with three points assessed against your driver’s license. You cannot text, e-mail or do anything that involves touching the keyboard of a wireless device while you are driving. In addition, if you are talking on a cell phone in a school zone or in a construction zone where workers are present, the phone must be used in hands-free mode. A first violation will result in a fine plus court costs totaling over $100.00. Subsequent violations within five years will result in steeper fines plus court costs. If you are stopped for violating this new law as of January 1, 2020, you can also be issued a ticket for other violations, such as not using your seatbelt or child car seat infractions.

During the upcoming session of the Florida Legislature the ban on using cell phones while driving may be expanded. Representative Emily Slosberg, a Democrat from Boca Raton, has filed a bill that would essentially require drivers to go fully “handsfree” anywhere they are driving in the state. A new law, which also took effect October 1, 2019, makes it a third degree felony for anyone that actively plans or solicits others to commit a hazing act which ends in a serious injury or death. The new law supplements an existing law that made it a third degree felony

for someone to haze another if the act results in death or serious injury. Now, either actively planning or soliciting others to commit a hazing act is also a third degree felony. The new law also protects from prosecution anyone who alerts authorities to a need for medical care during a hazing incident. Also, as of October 1, 2019, anyone who kills or seriously hurts a law enforcement dog, horse or fire department search and rescue canine will face a second degree felony charge carrying a sentence of up to fifteen years in prison. In keeping with that theme, we give you zucchini latkes (pancakes) for Chanukah. These little babies are an alternative to the classic potato version and seasoned with a hit of Parmesan. Zucchini is sometimes referred to as the Italian squash — so there’s that. And as an added plus, zucchini is lower in calories than potatoes, but the frying might cancel that out. Who care? It’s the holidays.

Ingredients

3 medium zucchini, grated ½ teaspoon kosher salt 1 large egg ¼ cup all-purpose flour 3 tablespoons chives, finely chopped 1 tablespoon cornstarch 2 tablespoons Parmesan cheese, grated Kosher salt and freshly ground black pepper Vegetable oil for frying 1 bunch scallions, sliced (optional) Sour cream for serving

Preparation

Place the zucchini in a colander in the sink and sprinkle ½ teaspoon of salt over it, toss to combine. After 10 minutes, place the zucchini in a clean kitchen towel and squeeze out as much water as you can. Place the zucchini in a large bowl and add the egg, flour, chives, cornstarch and cheese. Season with salt and pepper. Heat the oil in a large pan. Drop about ¼ cups of the zucchini mixture into the pan and flatten with a spatula. Cook until golden brown and crisp on each side. Transfer the latkes to a paper towel lined tray. Garnish with scallions if using.

Presence of Wine: Mindful Gifts for Wine Lovers BY DAVID EHRENFRIED THOUGHTS THIS TIME OF YEAR TURN NATURALLY — OR MAYBE RELUCTANTLY — TO GIFT GIVING. WHETHER YOU APPROACH THIS TASK WITH A SENSE OF MISSION, DREAD OR excitement, here are some gift suggestions for friends, coworkers, clients, family or others you care about who like wine. The best wine-related present may be quality wine itself… by the bottle or two or three, or by the case if you’re being especially generous or grateful. There are many alternatives to wine — loads of wine-related stuff, in fact. Wine glasses may be the most obvious, but there are also decanters, chillers, cork screws, aerators, wine preservers, wine books and magazine subscriptions, wine totes, and even Champagne sabers (for those who prefer to chop off the tops of their Champagne bottles rather than pop their corks). And beyond wine racks, there are wine refrigerators — big and small — for serious collectors as well as those who simply want their modest wine stash to keep and open at the right temperature when they want to drink it. I’ll start with the “stuff,” which by the way, can be purchased in many wine,

cooking and housewares stores as well as on internet sites, such as Amazon, IWA and Wine Enthusiast. I’ll finish with few quick wine recommendations.

Wine Stuff

WINE GLASSES AND DECANTERS: Accuse me of being a snob, but most wine — red wine especially — is more enjoyable when sipped from glasses that help make it visually appealing and also have a shape wide and high enough to safely swirl the wine and collect its aromas. (For sparkling wine, glasses should have tall, narrow flutes that reduce the surface area from which bubbles will escape. And for sweet wines, like Port or Sauternes, it’s traditional to use shorter, smaller-bowled glasses.) Whether wine glasses have stems or not is a matter of personal preference. Either way, they should be clear, untinted and made ideally of crystal. Crystal helps to make them thinner and harder than regular glass. One popular brand, Riedel, sells a prodigious assortment of wine glasses, each shaped specifically for a different

Try the Wine <<< kind of wine. They’re quite expensive, however. A set of two will set you back $60 or more. It’s debatable whether the shape distinctions will make your favorite zinfandel or shiraz taste better — or worse if served in a glass designed for pinot noir or chardonnay. Fortunately, there are high quality four and six glass sets available for $60 or less that will also serve the best wines in all their beauty and deliciousness. Two such manufacturers are Spiegelau and Schott-Zwiesel, among many others. Most wine glass manufacturers also make decanters designed specifically to help wine quickly aerate. Some of the designs have wide, flat bottoms and narrow necks or exotic curvy shapes. So, if you give someone a decanter, splurge and buy a flexible bottlebrush to go with it. CORKSCREWS: Do you know someone who likes wine and owns a winged corkscrew? That’s the odd contraption with two handles that rise up as you twist the bottle-opener topped screw or “worm” into the cork. For heavens sake, give that person a better, easier tool for opening wine. I use a simple waiter’s corkscrew or “sommelier knife.” They’re about the size and weight of a boy-scout pocketknife. With practice, they’re fast and reliable to use. Inexpensive ones have stainless steel handles in many colors; more expensive models are available with wood or bone handles. The one you give should have a small pullout blade or foil cutter. Another important feature I like is when the stainless steel arm that braces against the lip of the bottle has two flexible parts so the cork can be leveraged out in two easy steps instead of one longer, sometimes harder motion. Also a Teflon-coated worm twists into cork more smoothly than an uncoated one. Manual screw-pull type corkscrews are also effective. But there are now battery-operated devices based on the same principle plus clever lever openers, like the Rabbit, which are great, though they cost more and take up more space. Yet another type of opener is the harder-tofind — but occasionally indispensable — butler’s friend or two-pronged cork puller. It’s small and inexpensive with two slightly curved prongs that store in a short sheath and are attached to a bottle opener shaped handle. It works by shimmying the prongs between the cork and bottleneck and pulling the cork out with a slow twisting motion. It’s especially handy for removing damaged, broken or fragile corks. AERATORS AND PRESERVERS: Aerators are mostly simple and relatively inexpensive devices through which to pour and expose wine to more air than when poured straight from the bottle. It’s an alternative to aerating by decanting or opening a bottle to “breathe” an hour or so before drinking. WINE PRESERVERS include some simple, inexpensive devices like the VacuVin that suck air from an opened wine bottle through a specially made rubber stopper. Preservers also include more costly gadgets that displace air in bottles with nitrogen or argon gas to


preserve remaining wine for days, weeks, or even months. The Coravin device, which costs over $200, makes it possible to pour a small taste or a glass or two of wine by inserting a hypodermic-like needle through the cork and then preserving the rest for later without removing the cork. Other preservers, like WineKeeper, will enable your gift recipient to open, dispense and preserve multiple bottles of wine, providing an everready choice of wines. The preservers housed in refrigerated cabinets you might have seen in a bar or restaurant can easily cost $2,000 or more depending on how many bottles they hold.

Wines to Consider

If you’re thinking about giving someone a special bottle of wine for a holiday present, party or dinner, my number one suggestion is fine Champagne or top quality sparkling wine from California. Good bubbly is festive and enjoyed by nearly everyone. It drinks deliciously before and after meals, or with most foods, whether appetizers or main dishes. Quality Champagne will generally cost between $35 and $100 a bottle. Top California sparkling will cost between $20 and $60. Generally, the better — and usually more costly — the sparkling wine, the finer, more numerous, and more long-lasting the bubbles will be. There are many outstanding Champagnes made by literally dozens of producers. Most are labeled as non-vintage (or NV), having been produced using grapes grown in multiple years. Some producers I like are Nicolas Feuillatte, Perrier-Jouët, Piper- Heidsieck, Pol Roger, and Tattinger. For California sparkling wine, look for Domaine Carneros, Domaine Chandon, Gloria Ferrer, and Schramsburg as well as Argyle from Oregon. I suggest buying sparkling wine that says Brut (Dry) or Extra Dry on the label. If you prefer giving red wine and don’t already have a particular one in mind, I suggest giving premium pinot noir from the outstanding 2014-2016 vintages in Oregon and California’s Sonoma and Santa Lucia Highlands regions. The recipient can drink these wines now or set them aside for a few years. Some of my favorite producers are Cristom, Beaux Fréres, Bergström, Domaine Serene, Evening Land, Gary Farrell, Four Graces, Roar, Penner-Ash, Sojourn, and Ken Wright. As for white wine, consider 2017 California chardonnay, ideally from Sonoma or the Central Coast. Nancy Lighter calls her newly renovated Tillotson Square townhouse near the Lighthouse Point Marina, “modern coastal with a well-traveled feel.” Nancy and her husband Jay bought the unit shortly after the complex was constructed 20 years ago. In brief, many other family members and friends rented or occupied the unit until Nancy floated the idea of making the townhouse her main home in the city. Having not seen the unit for a long time, friends and family said “oh Nancy — you’re are not going to like it!” — and she didn’t. Her response involved about two years of renovation and design work to transform the townhouse into the space pictured on the following pages. Her creative endeavors started with photography but her passion for home design started at her summer home in Maine. The house has a 900-square-foot cottage on the property that needed significant work. Then the two-story garage with its 1,800 square feet of space became the family recreation room. She explained the process of removing the walls and raising the ceilings in the Tillotson Square townhouse. “I’m very grateful to my husband Jay for supporting all this,” Nancy said.

ITAL IAN for the HOLIDAYS As a young newlywed, I was invited to my in-laws house for Christmas Eve dinner. You should know that I am Jewish so this whole Christmas thing was new to me. I lucked out that year because my sister-in-law, who loves to cook, decided on an Italian menu. As a Christmas newbie, I was totally down with that plan. I mean who doesn’t love Italian food? During the holidays, many of us adhere to whatever our tradition dictates. But aren’t we all just a little jealous of the Italian families who sit down to feast on big trays of lasagne or chicken Parmesan? Let’s face it, Italian food is universally loved. Everyone is happy to see shrimp fra diavlo on the table. With that thought in mind, we were fortuitous to cross paths with the good people from Flora Foods, a local importer of Italian food and wine. We put our minds together and decided to host a holiday dinner at Café Med at the Wyndham Deerfield Beach Resort. Chef Tulio Castilla put on quite a show for us that night — from pasta to Porchetta — he showed off his Italian know-how. To get the party started, everyone was greeted with a glass of Proseco. Bubbles are always appropriate. Next, we enjoyed a beautiful antipasto spread stretching down the center of our long banquet table. Everyone dug in family style — there were meats and cheeses and artichokes and so much more. We moved onto two pasta dishes, Porchetta, snapper Livornese and two super easy yet delectable desserts. Naturally, a different wine was served with every course. Why it was John Flora himself who encouraged me to have just one more glass of the luscious chianti. Salut! —Susan Rosser

Wine Pairing: Villa San Giovanni Chianti Straw Basket INGREDIENTS 1 pound pennoni rigate (such as Flora) 1/4 cup extra-virgin olive oil 3 cloves garlic, finely chopped 1 large eggplant, peeled and chopped 1 28-ounce can San Marzano tomatoes D.O.P. (such as Flora) salt and freshly ground black pepper to taste 1/2 teaspoon crushed red pepper 1 cup ricotta cheese 20 basil leaves, thinly cut, divided Parmigiano-Reggiano, grated

PREPARATION Bring a large pot of water to a boil. Salt the water, add the pasta and cook until al dente. Drain the pasta and reserve a cup of the water. Heat the olive oil in a large, deep skillet over medium-high heat. Add the garlic and crushed red pepper and sauté until fragrant. Add the eggplant, season with salt and cook until tender (12 to 14 minutes). Break up the eggplant almost into a coarse thick sauce. Stir in the San Marzano tomatoes D.O.P. and heat through, break up the tomatoes as well and stir in half the basil. Simmer for a 5-7 minutes. Season with salt and black pepper to taste. Stir in the reserved pasta cooking water, add the pasta and toss. Serve on a large platter (family style) sprinkle grated Parmigiano-Reggiano. Top with the ricotta cheese — don’t stir it in. Sprinkle the remaining basil and Parmigiano-Reggiano over the dish.

INGREDIENTS 1/3 pound pancetta in 1 piece 2 tablespoons extra-virgin olive oil 1 onion, thinly sliced 1/4 teaspoon red pepper flakes 1 tablespoon fresh Italian parsley leaves, chopped 1 1/2 tablespoons red wine vinegar 3/4 cup of pureed San Marzano tomatoes D.O.P (such as Flora) 3/4 pound homestyle spaghetti or bucatini (such as Flora) Parmesan cheese, freshly grated PREPARATION Bring a large pot of salted water to a boil over high heat. Cook the pasta according until it is almost al dente. Cut pancetta into 1-inch long chunks, and then slice each chunk thinly across the grain. Heat the olive oil in a large skillet over moderately low heat. Add the pancetta and cook until it renders some of its fat (about 5 minutes). Do not allow it to crisp. Add the onions and cook until soft, about 10 minutes. (While the onion is cooking, add the pasta to the boiling water.) Add the red pepper flakes and parsley to the onion mixture and cook briefly. Add the vinegar and simmer briefly until it evaporates, then add the tomato puree and 1/4 cup of the pasta water. Simmer briefly to blend. When the pasta is almost al dente, drain it and return it to the warm pot over moderate heat. Add the sauce and cook briefly so the pasta absorbs some of the sauce, then transfer the pasta to a warmed serving bowl and sprinkle with the Parmesan cheese.


Porchetta

INGREDIENTS 1 2-3-pound boneless, center-cut pork loin, trimmed 1 5-pound fresh pork belly (skin on) 3 tablespoons fennel seeds 2 tablespoons crushed red pepper flakes 2 tablespoons fresh sage, minced 1 tablespoon fresh rosemary, minced 3 garlic cloves, minced kosher salt 1/2 orange, seeded and thinly sliced

PREPARATION Put belly skin side down; arrange loin in center. Roll belly around loin so the short ends of the belly meet. If any of the belly or loin overhangs, trim meat. Unroll; set loin aside. Toast fennel seeds and red pepper flakes in a small skillet over medium heat until fragrant, about 1 minute. Tip spices into a bowl; let cool. Finely grind spices in a spice mill and transfer to a small bowl, along with the sage, rosemary and garlic and set fennel mixture aside. ASSEMBLE PORCHETTA Set belly skin side down. Score the belly flesh with knife in a checkerboard pattern 1/3” deep so roast cooks evenly. Using a meat mallet, pound skin for 2 minutes to tenderize it. (This helps make crispy skin when roasted.) Turn the belly and salt skin and loin; rub

with fennel mixture. Roll belly around loin; tie with kitchen twine at 1/2” intervals. Trim the twine. Transfer roast to a wire rack set in a rimmed baking sheet. Refrigerate roast, uncovered, for 1 day to allow skin to air-dry; pat occasionally with paper towels. Let porchetta sit at room temperature for 2 hours. Preheat oven to 500 degrees. Season porchetta with salt. Roast on rack in baking sheet, turning once, for 40 minutes. Reduce heat to 300 degrees and continue roasting, rotating the pan and turning porchetta occasionally, until an instant-read thermometer inserted into center of meat registers 145 degrees, 1 1/2-2 hours more. If skin is not yet browned and crisp, increase heat to 500 degrees and roast for 10 minutes more. Let rest for 30 minutes. Using a serrated knife, slice into 1/2” rounds. INGREDIENTS 1/2 cup extra virgin olive oil 1 red onion, diced 3 ribs celery, sliced 1/4-inch thick 6 plum tomatoes, chopped 2 tablespoons pine nuts 2 tablespoons currents or white raisins 3 tablespoons capers, rinsed and drained 1 cup dry Marsala wine 3/4 teaspoon fennel seeds 3/4 teaspoon hot red pepper flakes 1 bay leaf 3 pounds jumbo shrimp, peeled and deveined kosher salt and freshly ground black pepper fresh parsley or basil for garnish PREPARATION In a large pan, heat the olive oil over medium heat. Add the onion and celery to pan and sauté until it is soft and translucent. Add the tomatoes, pine nuts, currents, capers, marsala, fennel seeds and bay leaf. Bring the mixture to a boil and then reduce the heat. Once the mixture is at a low simmer, add the shrimp. Toss to combine and cook until the shrimp are pink and cooked through. Serve as is or over polenta. FOR THE POLENTA In a large pot, bring 4 cups of water to a boil over high heat. Reduce the heat and slowly add 1 cup of the polenta in a steady stream, whisking as you go. Whisk constantly to avoid lumps. Add salt and pepper to taste and keep stirring, now using a wooden spoon for about 10 minutes until the polenta is thick. Remove the pan from the heat and stir in about 1 cup of grated Parmesan cheese and 2-4 tablespoons of butter. Add salt and pepper to taste.

INGREDIENTS 1 1/2 pounds asparagus, trimmed 2 lemons, juiced and zested 1 large orange, juiced and zested 2 garlic cloves, finely chopped 4-6 tablespoons fresh parsley and mint or basil cut into chiffonades 1/4 cup extra virgin olive oil flaky sea salt PREPARATION Trim off the woody bottom part of the asparagus. Bring a large pot of salted water to a boil. Prepare an ice bath for the asparagus. Add the asparagus to

the boiling water and cook until bright green and tender. This happens very quickly – about 1 minute — so keep an eye on it. Remove and submerge into the ice bath. Swoosh it around so there are not hot spots. Once it is cool, let the asparagus dry off on kitchen towels. In the meantime, make the dressing by combining the juice, zest, garlic, herbs and oil. Toss the asparagus with the dressing and then arrange on a platter. Pour any dressing left in the bowl over the asparagus. Serve warm or at room temperature. Top with flaky sea salt. a change in your restaurant rotation, take a trip back to the old country at Checkers Old Munchen. The restaurant’s exposed wood framing is reminiscent of the German half-timbered architectural style and the walls are lined with classic German beer steins. For a traditional German meal, try the wiener schnitzel — it’s divine — a lightly breaded veal cutlet sautéed in lemon butter and topped with homemade brown gravy. The spaetzle (German noodles) are a real homemade treat and not to be missed — throw a little of that brown gravy on them and they could be a meal unto themselves. The red cabbage is both classically sweet and sour and there are other side options too including potato dumplings, potato salad and even hot potato salad. As you look around, you can’t help but get the feeling that most of the patrons are returning customers. And the next time we get a hankering for some schnitzel, we know where to go. FAIRMONT LE CHÂTEAU MONTEBELLO My husband Richard and I virtually stumbled upon Fairmont Le Château Montebello while driving to Montreal without a hotel for the night. We were on vacation in the Adirondacks in upstate New York and at the last minute took a jaunt up to Canada. (Thankfully we had packed our passports.) As Richard drove, I researched hotels on my phone. I was able to book us a room at Le Château Montebello about 1 1/2 hours west of Montreal —man, did we luck out. The hotel is the world’s largest log cabin — imagine The Breakers, but it’s made out of logs and it’s in Canada. The resort is steeped in history and the grounds are breathtaking. And if by chance you harbor a secret desire to try curling — you’re in luck. The hotel offers lessons and curling is even included in the resort fee.
