In addition to the ambulatory surgery center, our medical complex in Plantation provides comprehensive support services and comprehensive diagnostic imaging. Combating Climate Change

Florida State Rep. Chip LaMarca introduced Florida house bill HB 315 to create an Office of Resiliency to lead the charge on Florida’s response to climate change. The bill is a companion to Florida Senate Bill 514 (SB 514) which will establish a Sea Level Rise Task Force to assess potential damage from sealevel rise and ways to mitigate its effect.

An Empty Nest Surprise

BY SUSAN ROSSER Since becoming a mother in June of 2000, parenthood has come to define me. It's who I am. I am a mother. I have children who require a large portion of my attention.

But my new status as an empty-nester, well, it is surprisingly good too.

I'll admit, being a mother has consumed a significant chunk of my life. I've spent hours upon hours engaged in the physical tasks required of parents. I've changed diapers, made countless school lunches, folded laundry and packed for college.

And, of course, there was an ample amount of time spent worrying about nearly everything. Are the kids doing well in school? Did I remember to schedule dental checkups? In just about every aspect of my life, I am relatively confident in my decision-making process. But, when it comes to my kids, I have often second-guessed myself. (Well, if I am honest, I haven't second-guessed my parenting choices as much as I've wondered if maybe my husband could be right about something. I mean, after 20 years, it's possible. Although probably not.)

Somewhere along the road, our kids learned right from wrong and even how to not only load the dishwasher but empty it too.

Although, I really won't think of them as having flown the coop until they are buying their own health insurance. But for now, they both seem happy at college — even in the midst of the pandemic, they are making their way.

I deserve no prizes, but I earned the certificate of completion for sure.

In January, as the big send-off for our youngest approached, I was wholly ambivalent. While I was so thankful that the start to her freshman year was finally coming to fruition (after a full semester delay thanks to Covid-19), I was secretly dreading her departure. OK, maybe it wasn't such a big secret. As I mentioned, my whole identity has been twisted up with motherhood for 20 years. So naturally, the thought of both kids being out of the house was scary. For years, I dreaded making school lunches every morning. Now, I dreaded not dreading making lunches. I am aware of how little sense that makes.

The prospect of an empty nest made me uncomfortable. But then they were gone. And much to my surprise, life is pretty good.

Naturally, part of the reason I can enjoy my hard-won freedom is that my kids have a bright future before them. They are at a crucial juncture in life when a million paths are ahead. I trust they will make good choices. I do get a little tinge of sadness, knowing I won't be as significant a presence in their lives. But I remind myself that was the goal all along.

Nothing lasts forever. That big and lovely and precious chapter of living with my kids is over.

I've read the atoms and molecules that makeup matter are always moving. And I'd like to think my family is simply a giant molecule. Each of us is continually moving and changing, but we will always be a family. Our bonds cannot be broken.

But for now, I genuinely look forward to the next part of life.

Of course, it will be changed, maybe better or maybe worse or perhaps just a bit different. The good thing is it feels right. Y

Jeff Moral Is Named Lighthouse Point Fire Chief Last month, the City Commission approved the appointment of Jeff Moral as Lighthouse Point’s new fire chief.

“We had a lot of excellent candidates,” said Mayor Glenn Troast. “Jeff rose to the top very quickly.”

Moral’s first day on the job as Lighthouse Point fire chief was Jan. 29. The position opened up when former Fire Chief Shawn Gilmartin retired last October.

Before coming to work for Lighthouse Point, Moral was with the City of Tamarac Fire Rescue for 24 years. He started as an administrative battalion chief, then became division chief of fire prevention. When Tamarac’s fire chief retired, Moral was appointed interim fire chief (20082009), then became assistant chief of administrative services charged with leading the fire prevention and emergency management teams while also serving as chief fire code official.

While working at Tamarac Fire Rescue, Moral also worked as the EMS program director at City College in Fort Lauderdale.

Prior to that, he was with the City of Pembroke Pines Fire Rescue (1981-1996), holding the positions of firefighter paramedic, driver engineer, fire rescue lieutenant and acting battalion chief. Starting when he was 16 years old, he worked in different departments of Hollywood

Memorial Hospital (1978-1990), ultimately becoming an emergency room paramedic.

Moral earned both a bachelor of science degree in public management and a master’s degree in public administration from Nova Southeastern University.

Moral said he was motivated to apply for the Lighthouse Point fire chief position because “it seemed like a perfect fit with the needs of the city,” in terms of the new fire station that is being built, and the current status of the COVID-19 pandemic.

Moral has experience with the construction of new fire stations.

While he was with Tamarac Fire Rescue, two additional fire stations

were built, the most recent of which opened in January.

In his new role as Lighthouse Point fire chief, Moral has implemented a transition team to begin preparing for the transfer of the Lighthouse Point Fire Department to its new fire station once it is built.

“It’s a lengthy process,” said Moral. “We don’t want to miss any of the key points.”

As director of emergency management for the City of Tamarac, Moral had to prepare citizens and staff for possible impacts from viruses such as H1N1 (swine flu) and Zika, which set him up “for being able to better cope with the COVID-19 pandemic.”

Moral’s last assignment before coming to work for the City of Lighthouse Point was overseeing the operation of two COVID-19 testing sites in Tamarac, in partnership with the Department of Health. He said Lighthouse Point is “actively searching” for opportunities to get a vaccination site for its residents.

Moral said his two top financial priorities right now are the new fire station and the purchase of a new rescue truck that has already been approved in the capital budget, but still needs to be ordered and built.

A New Food Hall is Coming to Pompano Construction recently got underway for The Bite Eatery, which is set to be the first food hall in Pompano Beach.

Located at 2715 E. Atlantic Boulevard in The Harbor Village Shops, the food hall will feature nine restaurant vendors and one fullservice bar, all under one roof.

The food hall should be ready to open in late summer 2021, according to Jessica Gollel of Gollel Family Properties, the owner and developer of The Bite Eatery.

The vendor spaces will be along the east and west walls of the food hall, and the central area will be for the bar and seating. There will be 209 indoor seats, including 37 seats around the bar. There will also be 58 outdoor seats.

The bar will be the main beverage source, including soft drinks, wine, beer and liquor. Vendors will be able to supply the bar with any of their specialty drinks. The food hall is approximately 9,000 square feet.

Each vendor space will be 380 to 420 square feet.

One of the vendors with a space in The Bite Eatery is Casareccio, which specializes in Sicilian cuisine.

Casareccio already has a restaurant in Pompano Beach, and may operate under a different name at the food hall.

Another vendor, The Raw Bar, will be operated by a new chef. The menu will focus on fresh local seafood.

There will also be a donut shop featuring handcrafted artisan donuts, specialty dessert pastries, gelato and coffee.

Leases are still being accepted for vendor spaces.

Gollel said that getting a Mexican restaurant in the food hall is “high on her list.” She would also like to add Asian, barbecue and burgers to the mix.

specific restaurant category, no other restaurant with the same type of menu will be able to lease a space.

“We don’t want any type of competition or the same menu items on two different menus,” explained Gollel.

Gollel said the food hall is ideal for current or previous restaurant owners, food truck operators and caterers who want to expand their businesses, or up and coming chefs who want to start one.

The Bite Eatery allows vendors to provide a full-service restaurant at a fraction of the cost of opening a storefront restaurant, said Gollel. In addition, “marketing opportunities are much more intensive,” because they’re sharing the food hall with nine other vendors that are also marketing their space.

The vendor is only in charge of the food they cook and the staff needed for their unit.

What About Parking?

The City of Pompano Beach anticipates the need for additional parking for The Harbor Village Shops once The Bite Eatery opens. A plan is being considered to reconstruct the City’s existing right-of-way on NE First Street, just north of the shopping center, to try to accommodate up to 143 perpendicular parking spaces. The project, which is very early in the planning process, would cost approximately $1 million and could be budgeted for the next fiscal year, according to city officials.

The vendors can also benefit from the food hall’s location, which is “perfect” because it’s a short distance from the beach and is in an area of the City that is being redeveloped and revitalized, said Gollel.

Operating amid COVID-19, the food hall will have personnel dedicated to keeping everything sanitized, said Gollel.

A point of sale technology will be provided at each of the tables.

Patrons will be able to scan a QR (Quick Response) code with their smartphone, and then browse menu items from all the restaurants, place their order and pay, right from their table. The order goes directly to the vendor’s computer, then the order is prepared, and a runner brings it to the table. Patrons will also be able to order food the traditional way of going up to the counter.

For patrons who don’t want to eat on the premises, the food hall will also offer pick-up and delivery options.

A New Food Hall is Coming to Pompano <<< opening hours are weekdays from 9am to 10pm. The weekends will have extended hours till about 12am for both the bar and vendors that choose to stay open. There will be brunch on the weekends, with bottomless mimosas.

There are plans for live music from local artists in a variety of genres, probably only on the weekends. There will be a stage and a small area for dancing.

Gollel would like to host small events at the food hall, such as exhibits of local artists. Other ideas include taco Tuesdays, a bingo night and karaoke night.

The décor will have a nautical theme to tie in with the Hillsboro Inlet, the lighthouse and the Pompano pier.

“We’re trying to keep it light and airy and open, because there’s going to be a lot going on in there,” said Gollel. “We want to keep the focus on the food.”

The concept of opening a food hall was inspired by a college semester Gollel spent in Florence, Italy. While there, her favorite place to eat was the Mercato Centrale, a food hall with about 12 vendors. It was the first food hall she’d ever been to.

“I could go to the same location and have something new every time,” said Gollel. “It was always full of people and really had a community feel. I loved it and wanted to create something like that.”

Gollel is working on The Bite Eatery with her father Richard Gollel — who founded Gollel Family Properties — and her brothers Richard and Michael. The family lives in the Hillsboro Shores neighborhood of Pompano Beach, just a five-minute drive from the food hall.

When her family acquired the building in The Harbor Village Shops in 2019, she said: “Let’s just try

this.” And they took off with the idea.

The Bite Eatery will be the second food hall to open in Broward County, following the Sistrunk Marketplace, which opened recently in Fort Lauderdale.

“Food halls are definitely a popular concept popping up,” said Gollel. “Developers and restaurant groups really like them because they are beneficial for each party involved.” Y

Tennis Center Will Be Getting Lighting Upgrades The Lighthouse Point Tennis Center will be getting lighting upgrades soon, including a full LED retrofit for all seven tennis courts.

At its Feb. 9 meeting, the City Commission approved a contract with Southern Lighting Group in the amount of $51,878. The City will be reimbursed $50,000 for the project from a Florida Recreation Development Assistance Program grant that was awarded in 2020.

The existing halide light fixtures will be removed; 18 LED fixtures will be installed and 16 light poles will be painted. Double fixtures will be added to two of the poles to light Court 3 because there are no poles directly next to it.

excited about having an additional court to play on at night, said Parks and Recreation Director Becky Word.

Word said the color of LED lights is more consistent and better for playing tennis, with less spillage into the streets. LED lights also use much less energy and the bulbs last for decades rather than a few years.

United States Tennis Association standards will be used for the new LED lighting.

Installation of the lighting upgrades is expected to start this month, and should take about two months to complete, said Word. The work will be done court by court to allow the tennis center to remain open.

The new lighting system will provide a control system that will

allow staff to access the lights remotely and turn each court on or off individually.

As part of the City’s capital improvement plan, numerous upgrades have been made to the tennis center in recent years: in 2016, the remodeling of the Ash Mills Pavilion; in 2017, installation of a new paver patio and drainage; and in 2018, new landscaping. All the building and sidewalk lights at the tennis center were changed to LED in 2019.

The current lighting project is part of the overall plan for the renovation of the tennis center.

The tennis center’s existing halide fixtures date to 2006. They were installed with FEMA funding after Hurricane Wilma damaged the lights that were there before. Y

Ibis Bridge Reconstruction Is Expected To Be Completed This Month The project to replace the Ibis Bridge, located on Lighthouse Drive (NE 23rd Avenue) between NE 29th Street and NE 30th Street, is expected to be completed at the end of this month, according to the Florida Department of Transportation (FDOT) construction team for the project.

The project began on Nov. 4, 2019, and was originally expected to be completed in fall 2020. The completion date was subsequently changed to late 2020, and then early 2021.

The construction activities scheduled for this month are paving and installation of signage and pavement markings, which will be followed by inspections and a final walkthrough.

According to the construction team, the project has taken longer than expected due to unforeseen issues resulting from inclement weather and the COVID-19 pandemic.

As of mid-February, a total of 60 weather days and 34 holidays had been granted to the contractor.

After the City Commission and mayor expressed concern about the delays to the FDOT project administrator during a commission meeting last October, multiple crews were brought in to perform simultaneous work, in order to accelerate the completion of the bridge.

FDOT also decreased the number of holidays that would normally have been granted to the contractor.

In addition, crews began working on Saturdays and Sundays.

However, due to complaints from residents, the crews have been

working most Saturdays, but not on Sundays, according to the Lighthouse Point’s Public Works Department.

Pompano Beach Gets It Largest, Most Expensive Public Artwork Installation of the city’s largest and most expensive piece of public art has just been completed at the north entrance of the Pompano Beach Cultural Center, located at 50 W. Atlantic Blvd.

The artwork, called “Current,” is a bronze and stainless steel sculpture with a hand-painted patina standing 15 feet tall and weighing 1,200 pounds.

The sculpture, which resembles a giant infinity symbol, was created by San Francisco-based artist Michael Szabo.

The cost of the commissioned artwork is $97,000, making it the most expensive sculpture the city’s Public Art Committee has purchased to date.

COVID-19 Vaccination Site Is Set Up At Pompano Citi Centre The City of Pompano Beach has set up a COVID-19 vaccination site in the south parking lot of Pompano Citi Centre, the shopping center located at the southwest corner of North Federal Highway and East Copans Road.

The initial plan was for the vaccination site to start operating on Jan. 25, but that date was postponed by the Department of Health, due to a shortage in vaccines, according to Pompano Beach Emergency Manager Kimberly Spill-Cristiano.

BY CRAIG HALEY WE ARE ALL HOPING FOR A STRONG YEAR IN 2021. LAST YEAR CAUGHT US ALL OFF GUARD. MANY PEOPLE SAW THEIR INCOMES REDUCED. BUSINESSES WERE SHUT down, stress and anxiety increased, and, sadly, many people died.

As we look forward to 2021, we know we have to be more focused, more disciplined and have great clarity on our goals to win big. We will need to take massive action to realize the massive results we are all craving.

To reach that level of success, we will need an abundance of physical, mental and emotional energy.

We have all seen young children and puppies run around with a seemingly endless supply of energy; however, it seems to dwindle as we get older.

How do we get it back? How can we generate ample energy to achieve our goals and enjoy the process?

Author Brendon Burchard conducted an in-depth study of high performers to determine how they reached their goals. He studied what actions they took and what strategies they utilized to optimize their health and energy.

What he found were a few key actions that allowed these achievers to win in life and have plenty of energy left over to enjoy their hobbies, have ample family time, and enjoy the process.

Strategy #1: Release Tension, Set Intention High performers have brief pauses in between activities to take a break, refocus their thoughts and recapture their energy, so they can work at a high level.

They stop, close their eyes, breathe deeply and focus on releasing negativity. They center their thoughts on their next task and doing it with excellence and ease. They set a clear intention on their next activity and visualize themselves doing it at a worldclass level.

Strategy #2: Bring the Joy Oprah Winfrey has a sign up in her office and her boardroom that says, "You are responsible for the energy you bring into this room." What she is saying is, be intentional about being positive, optimistic and happy.

Top performers are intentional about being positive, friendly and joyful. They don't wait around and hope something happens to put them in a good mood. They intentionally bring the joy in everything they do. It's no wonder everyone loves being around them.

Protect Yourself Legally During This Pandemic

If you need to be hospitalized in Florida, you must have a designation of health care surrogate and living

will with proper wording so there will be no problems.

Your surrogate will be able to make medical decisions for you if you are unable to communicate. Even if the hospital does not allow any visitors due to the pandemic, your surrogate will be able to talk to the doctors and make decisions on the phone or e-mail.

All your surrogate needs to do is e-mail or fax a copy of your document to the hospital. If there is no hope to save you, that surrogate would be authorized to "pull the plug" based on the living will. If you have

these documents from another state, or older Florida documents, you should review with a Florida attorney.

The documents probably need to be redone.

The durable power of attorney is also extremely important to allow someone to take over your legal and financial affairs. The Florida law changed in 2011. If you have an old durable power of attorney, it should be redone. Our current document is 26 pages and covers everything allowable under the new law.

If you should die, your will or revocable living trust will determine who inherits your assets. The trust is important to consider if you own your home or other real estate because it avoids probate.

Probate can tie up your property for many months and prevent your heirs from selling without a court order. They would have to continue to pay taxes, maintenance, mortgage, utilities etc., in addition to thousands of dollars in attorney fees and court costs. A life estate deed is another option to consider to avoid probate. Your attorney can discuss the different options and the benefits of each one.

Even if you believe that all of your documents are fine, it makes sense to review them with a Florida estate planning attorney just to be sure.

In these unsettling times, putting your house in order can provide peace of mind. Once you have valid documents, hopefully, you won't need them. Yogi Berra used to say: "That's the insurance when you don't have it, that's when you need it."

Develop Daily Routines THE IMPORTANCE OF STRUCTURE

BY DR. JILL SELBACH IN THE LAST YEAR, LIFE FOR ALL OF US HAS CHANGED. MANY ARE OUT OF WORK, OR WORK ENVIRONMENTS HAVE CHANGED. SCHOOL FOR YOUNG PEOPLE AT ALL LEVELS HAS changed drastically, and many are still attending remotely. All of these changes have caused a whole host of issues.

Loneliness and fear have led many to become anxious and depressed. We can go back to basics to get things back on track.

Remember when you were a child or when you were parenting young children? There was something very comforting that was provided to you as a child, or you provided for your child or children. Structure.

Structure is to give a pattern or organization to something and is so very important in our lives. Many of the people I see on a weekly basis are struggling due to the lack of structure in their lives. Structure provides us with comfort because we know what comes next. It enables us to be more productive and keep going in tough times; provides a sense of normalcy.

I spent ten years working at a shelter that served young people 21 years old and under. I learned so many things working with homeless, pushed out and runaway youth. These young people

struggled with many emotional, economic, mental health and family issues. One of the fundamental pillars of the philosophy of this organization was structure. Providing people whose lives had become unmanageable with a daily routine brought them back to some semblance of normalcy. It gave them organization, an order to the hours ahead and a sense of control.

Creating a daily routine takes away the stress and anxiety of what to do next. We are creatures of habit, and our brains like repetition. Creating a chain of events for every day is extremely helpful to get your life back on track. U.S. Navy Adm. William H. McCraven gave a commencement speech that became very popular to graduates at the University of Texas. He spoke about the importance of starting the day by making your bed. I really liked this! I frequently talk to my patients about taking baby steps and breaking down a task into very small manageable pieces. Admiral McCraven "If you make your bed every morning, you will have accomplished the first task of the day," he said. "It will give you a small sense of pride, and it will encourage you to do another task, and another, and another. And by the end of the day, that one task completed will have turned into many tasks completed."

In any treatment setting to help people whose lives have left them feeling out of control, dysfunctional or addicted, structure is the basic component of treatment.

Retired four-star general and former U.S. Secretary of State, Colin Powell once gave a powerful TED Talk on the importance of instilling structure in children. The most successful people live their lives with structure. If you are feeling that life is unmanageable look at creating a daily structure or routine for yourself. Why not start by making the bed, waking at the same time daily and eating on a schedule. Set aside time each day to exercise, make phone calls and check emails. Assign a general time for each regular task such as cleaning and laundry. It really does make a difference in efficiency and a sense of control. What you probably have not heard about are the new vaccines that will become available next month. I got this information through my connection in the World Health Organization (WHO).

A company called Vaccines “R” Us will debut its version on April 15. It will only be available to those who have not filed their income tax returns and owe the government money. The U.S Treasury wants to keep these people alive until they pay up.

Ralph's Independent Pharmaceutical Operations Fulfillment Firm (RIPOFF) has a unique vaccine. It is guaranteed 100 percent effective, but only if the shot is administered while crossing the equator aboard a tramp steamer registered in Liberia.

The Centers for Disease Control (CDC) has initiated a program called V-Safe, an after-vaccination health check to follow up with recipients after their shots. It is a smart-phone based app and uses text messaging, which means that millions of us senior citizens will have no idea how to use it.

The Indian Health Service (HIS) has a program for Native Americans to report adverse reactions to the injections. Forms will be available at ”Blackjack” tables in casinos across the country.

Finally, I wish someone would invent a vaccine for computer viruses. I don’t mind wearing a mask when I am on the internet, but social distancing from my desktop is a problem. Y

Organic Wine

WHAT IS IT ANYWAY?

IT SEEMS THAT MORE AND MORE PEOPLE OF ALL AGES CARE ABOUT THE PURITY AND WHOLESOMENESS OF THE FOOD AND BEVERAGES THEY EAT AND DRINK AND HOW THEY’RE MADE. At least, I hope that’s true. If you’re one of these people, and you also like wine, this column about organically and sustainably made wine may be just for you.

Let me start by saying, when enjoyed responsibly, I don’t think we have to be terribly concerned about the contents or safety of most wines sold by reputable stores, wineries, or online retailers.

Nonetheless, you may be curious about wines labeled as having been made organically, sustainably or biodynamically. What are these wines exactly, and what differentiates them from conventionally produced wines? How do organic and sustainable wines differ? Do these wines taste better than conventional wines?

Are they healthier or more enjoyable? Do they cost more?

Unfortunately, the wine industry, including most retailers, hasn’t made it easy to answer some of these questions. For starters, if you peruse the wine shelves of your local wine store or supermarket, or shop for wine online, you may see some bottles that say “Organic” or “Made with Organic Grapes.” A handful might say "Sustainable" or perhaps "Biodynamic." You may see some American wines sporting the now familiar, green and white circle with the letters “USDA Organic” across the middle. You may see other organic or sustainable certification logos, as well, for wines made in other countries as

well as the United States. In fact, in addition to the United States Department of Agriculture (USDA), there are more than a dozen organizations around the world, some formed by governments and others by growers and winemakers, that provide organic, biodynamic and other sustainability certifications or approvals, each with its own symbol.

Believe me, it takes some research to make sense of all this.

But, before explaining further, I’d like to clarify a couple of things.

These designations don't guarantee the quality or better taste.

Regardless of the agricultural or production methods used, high-quality fruit is the central ingredient required to make any tasty, high-quality wine. As with conventionally made wines, poor quality organically grown grapes will not make great wine. So there are very good and highly enjoyable wines in both categories, and many not so good wines, as well. Such factors as vintage and producer reputation are as important to bear in mind when considering buying organic or sustainable wines as they are when buying conventionally made wines. I like to think people choose organic or sustainable wines with an expectation of enjoyment and the promise of greater purity and the satisfaction of drinking wine made responsibly and in ways that respect and maintain the environment. That said, you might very well find some particular organic or sustainable wines you enjoy a lot more, simply because you know the grapes were grown without using >>>

Organic Wine: What is it?

What constitutes organic wine varies from country to country, but basically, wine is organic if it’s made with organically grown grapes using organic winemaking methods. In the United States, strict federal laws and regulations govern what foods and beverages can be considered organic and, by extension, which products can display the “USDA Organics” logo. The rules are sometimes a bit less stringent in other countries. Specifically, wine is organic when the grapes used have been grown without artificial fertilizers, insecticides, and other non-organic soil or plant treatments. In addition to the grapes, all

other ingredients used in winemaking must be organic such as ambient or wild yeasts for fermentation, and also non-GMO. There can be no non-organic additives, such as artificial flavorings, coloring, manufactured tartaric acid, and other synthetically derived chemicals. In the U.S. and Canada, this includes added sulfites, or sulfur dioxide. All wines contain some sulfites, since low levels of sulfites are a natural byproduct of the winemaking process.

Without additional sulfites, low organic wine sulfite levels are an important consideration when buying North American-made organic wines. Sulfur dioxide is the best available preservative for keeping wine from oxidizing prematurely, but only at sufficient levels. U.S. and Canadian organic wine standards prohibit sulfite levels exceeding 35 parts per million, about the level naturally produced when making wine. However, that's usually not enough to give wine a long shelf life or multiyear aging potential. So when you buy certified American organic wines, take care to store them in a cool place and drink them relatively soon after purchase or the vintage date. They may spoil otherwise.

European Union’s "E.U. Organic,” typically permit organic wine sulfite levels (both natural and added) of up to 100 parts per million for red wines and 150 parts for whites and rosés.

Most reds seem to average 50-75, and most whites and rosés exceed 100. (Yes, white wines usually have more sulfites than red wines.) The industry claims the added sulfites pose few if any health risks, except to a tiny percentage of the population who are allergic or sensitive to sulfur products. They also don’t affect wine taste or quality other than obviously preserving these attributes over time.

What about wines marked, “Made with Organic Grapes”?

For domestic wines, this is a USDA designation that means the grapes used to make these wines met organic agricultural standards. These wines must generally meet organic winemaking standards, except that these wines may include added sulfites up to 100 parts. Many outstanding wines fit this category.

What are Sustainable Wines Sustainable wines are made according to specific sound agricultural, environmental risk mitigation, and winemaking practices that respect and maintain vineyard and surrounding ecosystems and contribute to wine quality and purity. “Sustainable” vineyards and winemakers adhere, for example, to standards or principles governing responsible soil conservation, water and energy use, greenhouse gas emissions, community relations, and treatment of employees. In many countries, there are organizations formed by growers and winemakers that set and promote these standards and award sustainable wine certifications. One of the largest is the California Sustainable Winegrowing Alliance (http://www.sustainablewinegrowing.org). It has over 2,200 members, including many of the state’s most prominent and prestigious vineyards and producers. Some others are listed in the sidebar. Their websites usually provide the names of member vineyards and winemakers.

It’s important to appreciate that not every organic wine is sustainable and not every sustainable wine is organic, although many are both, particularly in countries where

organic wines may have higher sulfite levels. In the United States, for example, many sustainable wines may be fully organic except that sulfites were added to lengthen shelf life or enable them to improve with age. Others may have been made more conventionally. The wine bottle’s back label might give specifics, or you can check the producer’s or distributor’s website for details.

Biodynamic Wines Biodynamic agriculture predates current sustainable or holistic wine practices, having been initially developed in the early 20th century by Austrian philosopher, social reformer and architect, Rudolf Steiner. Steiner saw human beings and their surroundings as interconnected both practically and spiritually. He developed biodynamics as a way to merge science and spirituality to create self-sustaining ecosystems. Today biodynamic winemaking continues to incorporate highly specific practices, for instance, for composting soil and using lunar cycles and the astrological calendar to time vineyard cultivation and harvesting activities.

The result is fruit and wine that generally qualify as organic today. However, under the rules of the two biodynamic wine certification organizations, Demeter (demeter-USA.org) and Biodyvin (biodyvin. com), higher sulfite levels are permitted as with other sustainably made wines.

So that’s organic and sustainable wines in nutshell.

A couple of questions remain. Do these wines cost more than conventionally made wines? Generally no. As with conventionally produced wines, key drivers of an organic wine’s price relative to other wines are its grapes’ cost and the wine’s demand, popularity and prestige. Are they healthier? Perhaps, but let’s remember that all wine contains alcohol.

Wine should be enjoyed safely—or not at all—and definitely in moderation. If the wine you’re drinking is not organic or made to sustainability standards, there's the possibility, especially if it's been massproduced, that something you might object to in other food products was used or done to make the wine. Synthesized fertilizers and insecticides to grow or additional flavorings and chemicals to alter the color or taste may have been added.

You’ll need to be your own judge, based on what you can learn and trust about the wines you drink.

Bear in mind, though, that most people involved in making premium artisan (as opposed to inexpensive mass-produced) wines care deeply about wine quality and purity. Whether using sustainable or conventional means, such growers and winemakers go to great lengths to ensure their ability to make the best wine possible year after year. Y

In January, former Lighthouse Point city commissioner and current state representative Chip LaMarca introduced a Florida house bill — HB 315 — that, if passed, will create a statewide Office of Resiliency, housed within the Executive of the Governor, to lead the charge on the state’s climate change response strategies.

HB 315 is the companion bill to Senate Bill 514 [SB 514] filed by Sen. Ray Rodrigues (R-Estero). Under the Office of Resiliency, HB 315 & SB 514 will also establish a nine-member Sea Level Rise Task Force to scientifically assess the potential damages of sea level rise and suggest efforts to combat its effects along the state’s 1,350 miles of coastline.

HB315 is currently working its way through the appropriate house committees. If passed, the bill will go into effect on July 1. The appointed Chief Resilience Officer is then tasked with convening the Task Force by no later than Oct. 1, 2021. By Jan. 1 of 2022, the task force will submit its sea level rise projections to the Environmental Regulation Commission. If the task force’s projections are adopted by the Environmental Regulation Commission, they will serve as the state’s official estimate of sealevel rise and flooding impacts to develop future state plans and programs.

“Approved by Congress in 2000, the Comprehensive Everglades Restoration Plan (CERP) encompassed 68 components to be completed in 20 to 30 years at a cost of $7.8 billion. The plan includes constructing reservoirs, removing levees, filling canals and building structures like the S-333N. Rep. LaMarca said HB 315 was a logical extension of Gov. DeSantis’s 2019 appointment of a Chief Resilience Officer (CRO). Florida was only the third, and the largest state (joining Rhode Island and Oregon), to designate resilience offices with clear executives that report directly to the governor.

“Gov. DeSantis clearly has his heart in the right place for the state of Florida.

Environmental issues are important to him. They’re important to us. They should be important to everyone in Florida,” said LaMarca. “But there can, and will be a day, when Gov. DeSantis is not the governor.

And whether it is two years, or four years, we wanted to codify the issue in statue, and also create the position of the Chief Science Officer.”

Who will serve as Florida’s CRO going forward, is still unclear. In August of 2019, Gov. DeSantis appointed Dr. Julia Nesheiwat as Florida’s first CRO. Less than sixth months later, Nesheiwat accepted a position under President Donald Trump as a Homeland Security Adviser. Department of Environmental Protection Secretary Noah Valenstein agreed to serve as an interim CRO, taking on dual roles, but lawmakers and activists have been eager for an independent resiliency chief to be named.

“We don’t have any idea who that [the CRO] will be right now. The obvious person, who is serving as the current Chief Resiliency Officer, is also the department of environmental protection secretary, Noah Valenstein. He is doing a great job, but clearly has a lot on his hands.”

LaMarca said he is confident HB 315 will pass. Last year, however, Florida senators passed a bill that would have created a Statewide Office of Resiliency under the Governor’s purview, but that bill floundered in the House at the end of the Session. Interview with State Rep. LaMarca If the bill passes, Rep. LaMarca said he hopes he will have the privilege to be appointed as the one member of the House of Representatives to sit on the Sea Level Rise Task Force. As a potential Task Force appointee, Lighthouse Point magazine interviewed LaMarca about issues pertaining to climate change. Below are some highlights from the interview: [Some responses have been edited for length and clarity.]

Coral Reefs “The largest living coral reef in the contiguous United States lies seaward of the Florida Keys. This coral ecosystem is more than 130 miles in length, making it the third largest coral reef tract in the world. Extending south from Miami to the Dry Tortugas, the reefs are home to more than 5,500 marine species. The reefs also act as a natural buffer to protect the Keys against catastrophic storm surges from hurricanes.Climate change could threaten the reef through warmer ocean temperatures, changes in the salinity of water from Florida Bay, and increases in the water’s sediment load from coastal erosion. Corals worldwide can tolerate temperatures only a few degrees higher than normal high temperatures for their particular region. Q. There has been an obvious shift in tone about issues regarding climate change, especially compared to Gov. Rick Scott’s time in office. How do you account for the tone change?

A. “I would blame the initial tone on putting politics before policy and environmental issues…I had an interview with Public Radio and the questions were all about the Paris Climate Accord. I said, well the bigger issue here is politicizing something that shouldn’t be politicized at all. And that’s science.

“Whether it’s the pandemic or the environmental changes that we are experiencing and dealing with, we’ve got to come up with common sense solutions and deal with them on that level. I think the answer to your question is that Gov. DeSantis kind of jumped in with both feet and said, ‘Well I’m not gonna be owned by one side of this argument or the other, or donors on one side or another.’ He just said ‘Look this is important for the longterm of Florida.’…

“We did coastal management and some other environmental bills that we’ve gotten done over the last couple of years.

I know my fellow elected republicans in the Florida House — people like Rep. Toby Overdorf and Rep. Lawrence McClure — and other folks that are very interested in the environment — they’ve actually earned a living and worked in that world.

So there’s certainly not an issue of deniers or believers anymore. I think that that stuff is behind us…

Owners of the Beach House have plans to open a Mexican restaurant.

Brimstone Restaurant Group, which opened the Beach House restaurant in the Pompano Beach Fishing Village in 2018, now has plans to open a Mexican restaurant across the street. The restaurant would occupy a currently vacant parcel, known as Parcel R3, at 250 N. Pompano Beach Boulevard.

The parcel is located on the southeast corner of the Pompano Beach Fishing Village site, west of the pier.

Last November, Brimstone Restaurant Group signed a lease for Parcel R3 with PPA, LLC, an affiliate of Pompano Pier Associates, the developer of the Pompano Beach Fishing Village. The restaurant plans are currently going through the City’s review process.

The restaurant would be in a one-story building with roughly 6,500 square feet of interior space and a 2,500-square-foot patio. There would be two full bars — one inside, one outside. The outside would have a small fireplace. A 40-seat private dining room would be available for parties and other events.

The restaurant, which has not yet been officially named, would be open for breakfast, lunch and dinner seven days a week.

“It’s not going to be a traditional Mexican

restaurant,” said Andy Fox, operating partner of Brimstone Restaurant Group. “It’s going to be a scratch-made kitchen serving a lot of fresh seafood with a Mexican flair.”

The menu will also feature tacos, pizzas, quesadillas, fajitas and fresh-made guacamole.

“We will make everything in-house,” said Fox. “We’ll cut our own fish, and our own steaks.”

The goal is to have about 10 beers and seven wines on tap. Margaritas would also be on tap, with sour mix made with freshly-squeezed juices.

Breakfast options include huevos rancheros and eggs Benedict with a Mexican twist, “but you’ll also be able to get bacon and eggs with toast,” said Fox. “There’s always a lot of beach traffic early in the morning, so we knew we wanted to do some breakfast there,” said Fox. The plan is to have garage doors — like the ones at the Beach House — on the east side of the restaurant, facing the beach, so in nice weather the interior space can be made

open-air. The patio would be at the restaurant’s south end, with a straight view of the ocean.

Parking for the restaurant would be in the Pier Parking Garage.

According to current plans, the height of the restaurant building would be 23 feet 8 inches.

New York-based Lovin’ Oven Catering had plans to build a catering hall and event facility on Parcel R3, but those plans were canceled last year. Members of the community had expressed concern about traffic, parking and the height of the proposed building, which was higher than they had anticipated – 41 feet 10 inches to the roof deck, and 55 feet to the top of the stairwell and elevator tower.

“We want to be a good neighbor,” said Fox. “We’ve gone out of our way to make sure we don’t block any condo or hotel views.”

Parcel R3 is the last parcel in the Fishing Village that has yet to be filled.

had always wanted to do a Mexican concept on the parcel because Jeffrey R. Anderson — who along with his sons J.R. Anderson and Anders Anderson founded Brimstone Restaurant Group — was one of the original people behind Chi-Chi’s Mexican Restaurants, and was the largest franchisee of ChiChi’s on the east coast of the United States.

“We were interested in that spot from the beginning,” said Fox. “Once it became available again after the deal for the catering facility fell through, we jumped on it.”

In addition to the Beach House, Brimstone Restaurant Group also owns Brimstone Woodfire Grill in Doral and Pembroke Pines.

The Pompano Beach Fishing Village development includes the Beach House and Oceanic restaurants, Lucky Fish Beach Bar and Grill, Alvin’s Island and the Pier Parking Garage. Still under construction are BurgerFi, Kilwins, Cannoli Kitchen and a dualbranded Hilton hotel.

The Hilton, BurgerFi, Kilwins and Cannoli Kitchen will be opening soon.

After various delays — some related to permitting and COVID-19 – construction of four new businesses in the Pompano Beach Fishing Village will be completed soon. The 5-story dual-branded Hilton hotel (Hilton Home2Suites and Tru by Hilton), located south of the Pier Parking Garage, is expected to open by the beginning of April, according to the developer Aashish Patel of the Fort Myers-based Madhav Group.

Currently, all the interior and exterior finishing work is being done, such as the carpet, tile, painting, installation of cabinets, landscaping, outside paver work and signage.

Patel said the COVID-19 pandemic delayed the opening by about three months because it was difficult to procure furniture, fixtures and equipment, and during construction, there were fewer workers.

“We’re looking forward to the hotel opening,” said Patel. “For the businesses that are open and are about to open, we really hope to be a good complement and to help bring a lot more people to the Fishing Village.”

The new BurgerFi restaurant expects to open in early April. The interior buildout and the outside dressings of the building are being completed.

The BurgerFi in the Pompano Beach Fishing Village is locally owned and operated by franchisee Foiled By The Burger, LLC. “It’s been a really long time coming, but we’re so excited that it’s finally getting closer,” said Kevin Koury, managing owner of Foiled By The Burger. “We

can’t wait to serve the community and be a part of Pompano Beach moving forward.”

Cannoli Kitchen expects to open its doors the first week of April, according to Christiana Kavadas, one of the owners. The buildout of the restaurant’s interior is in progress. Kavadas is also one of the owners of the original Cannoli Kitchen that opened 26 years ago at 2001 N. Federal Highway in Boca Raton.

“We are eager to open,” said Kavadas. “I’m excited to bring a variety of pizzas and Italian favorites to the residents of Pompano, served in a fast and friendly environment.”

Kilwins, specializing in confections such as chocolates, ice cream and fudge, is also busy with its interior buildout but is aiming for an opening on March 1, 2021.

The Kilwins in the Pompano Beach Fishing Village is owned and operated by South African-born Sean and Jody Kotzen of Pompano Beach.

“It is a challenging time for us to be opening a store,” said Jody Kotzen, “but we’re excited about it, and we feel that we can offer a safe environment for our neighbors and friends to come in and have a fun outing while they’re at the Fishing Village. This new and long-awaited spot on Federal Highway in Pompano Beach is a welcome addition to the local food scene. (I mean, is there even such a thing as too much pizza?)

My husband and I shared the Chicken Parmesan dinner, and we even had a little bit leftover. The dinner came with garlic knots, but we had to try the spinach and feta pizza roll too. The day just cried out for carbs.

That turned out to be a wise decision — it was the perfect combination of chewy and salty and cheesy, but there was spinach too — so no guilt, right? What a pleasure it is after a long day’s work to merely log-on, choose from an extensive Italian menu. Then, soon after that, dinner appears at your door. is, and a lot of these are, but as if this is the critical life-saving issue of today, like the end of the world is coming. Again these are major, major issues. But they are issues we can solve. We can’t say that none of the other things that you want to talk about are important until we do this. I don’t think that’s the case. I think the new tone has been: let’s include this in the things we are trying to do — put everyone to work, create a safe community and a quality of life, and this kind of falls into both of those categories.”

Q. Oftentimes sea level rise is discussed in terms of flooding. However, Florida also faces the threat of having its fresh water sources, like the Biscayne Aquifer, contaminated by saltwater. Will the contamination of our fresh water sources be addressed by the Sea Level Rise Task Force?

A. “I would hope so. My goal is not just to pass this bill and have the governor assign the task force, but it’s also to endear myself to the speaker of the Florida house to make me the appointment to the task force, so if I have the opportunity and the privilege to be on the task force, certainly it’s something that I will press. Certainly we have salt water intrusion, and we have our massive system of drainage, and flood gates that are also reaching levels of half a foot until they are surpassed by saltwater, and we’ll have intrusion on the inland. So that’s going to cause a major issue, not just for our drainage, but our water sources as well.”

Q. One of the problems climate change could cause is coral bleaching and the death of coral reefs.

Not only is this a problem from the perspective of Florida’s tourism industry and economy, but coral reefs play a critical role in our protection from superstorms. Can you speak to this?

A. “You bring up a great point. I remember back to 2012, it was the day after Thanksgiving, Superstorm Sandy had already passed by in October, roughly Halloween, and we were still experiencing after effects from that storm system. We had some major

erosion and damage at Fort Lauderdale beach up along the finger streets, which is about a half mile of area that was impacted. We lost all the coconut palms, the lifeguard stand, all the beach. The road was nearly eroded away from underneath structurally.

“Ultimately that was a perfect example of why we need beach hardening and sand dunes and other structures. That community there, where the damage was, was always anti-dune because it took away the view. Well now the reason for the dunes and the science behind it is clear. What I’m getting at is that was a hot spot, and it was a hot spot because we had no coral reef structure out in that specific area.

So, even separate from the bleaching and the dying of our coral reefs, there just wasn’t a reef in this particular area. You literally saw the hotspot where it just wiped out. So it’s tremendously important…

So the answer to your question is yes, I would make sure, whether I’m on or off the task force, that this is an issue we study.”

Q. You have said that Florida needs to be a leader in how to address climate change. Why is Florida in a position to be the leader?

A. “There’s one area where we really need to improve.

And then I’ll tell you why I think we can lead. And why we are. We don’t have an overall plan for our statewide water projects, environmental impacts or water projects, that we can go to the federal government with. There is a reason why Louisiana, which is about 30 percent of our size, is receiving about four times the money we are in Florida…the reason is because they have a comprehensive plan for their water projects…

“That being said, we can do that. We can work with organizations like American Flood Coalition, and other organizations that are dealing with water and environmental issues. From that point forward, why are we, and why can we continue to be a leader?

Because look of the way we are situated.

“From an economic standpoint, we’re the first point of contact for a lot of cargo, freight and tourism from Central and South America, from Europe, from a lot of a different trade and tourism routes. That being said we’ve got 1,200 or so miles of coastline, we’ve got over 600 miles of actual sandy beaches, we’ve got the Everglades, we’ve got the Keys. I’m sure there are other states that can compete and go past us as far as natural inland environments — state parks or estuaries, different things like that. But we have so many opportunities to continue to flourish on what we have…I think as we look at Florida, we’ve got to do it all. We can’t be great on the economy and terrible to our environment.” Y
